Greetings from the Isle of Capri. I am very excited to announce that Mike McKay has joined the Isle of Capri family as executive chef. Mike comes to us from Ameristar
Casino in the St. Charles area with great culinary knowledge and has a lot of new ideas for recipes and food service outlets. Guests will be able to meet and hear from him
in upcoming cooking demonstrations and articles. I’m sure
he’ll be excited about that once I spring it on him. If you
see a new face in chef whites, flag him down and say hello.
I’ve already told him how nice of a community this is, and
I feel he will fit in just fine.
For those that may not know, I have a cooking demonstration of my own coming up on February 9. I will be talking about great recipes for Valentine’s Day. Tickets can be
purchased at the Banana Cabana gift shop located in our
lobby for only $10.
For the first course, we are planning pan seared crab
cakes with spicy remoulade sauce. It’s a fresh plumb crab
cake, pan fried and served with a “kicked up” tartar sauce.
For the entrée course I really want to introduce everyone to risotto. Risotto has been in the spot light a little due
to the Hell’s Kitchen show. \Seems they are always making risotto, so I’m asked a lot, “what is this stuff and why
is it so hard to cook.” I’m going to show you that it’s
not that hard to cook, and will be serving it with
wild mushroom pork.
When you think of Valentine’s Day everyone
thinks of chocolate. I didn’t want to disappoint anyone so the dessert course will be
a twist between crepes, cherry cordials,
and chocolate truffles. I will leave you
hanging with that. You definitely
don’t want to miss it.
For my recipe today, I decided to
give you a “sneak peak” to the crab
cakes that will be featured during my
upcoming cook demonstration on February
9 at 6:00 p.m., just in case you cannot attend that evening.
Pan Seared Crab Cakes with Spicy Remoulade
Servings – 6
Ingredients:
1 lb crab meat
¼ red bell pepper, diced small
¼ green bell pepper, diced small
3 tablespoons yellow onion, diced small
½ cup bread crumbs (more or less as needed)
1 whole egg
¼ cup mayonnaise
2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce
1 Teaspoon Old Bay Seasoning
Salt and pepper to taste
Olive oil as needed
Sauté pepper and onion in skillet until translucent, then
set aside.
In large bowl, combine mayonnaise, egg, mustard,
Worcestershire and Old Bay Seasoning. Fold in crab meat
being careful not to break up. Once incorporated, add
bread crumbs until cake will stick together and hold its
form. Cake needs to be fairly dry. Adjust seasoning as preferred.
In a medium heated non stick skillet, add olive oil and
brown each cake for 3-4 minutes on each side.
Remoulade
2 cups mayonnaise
2 sweet pickles, diced small
1 tablespoons lemon juice
1 tablespoon Cajun seasoning
2 tablespoons Dijon mustard
Combine all ingredients and
refrigerate for 30-45 minutes.

Tell me a little bit about yourself and why you chose
to be a teacher?
I've always loved children. As a child, I had wonderful
teachers who made school exciting and fun. They inspired me to pursue a degree in education.
What has it been like working at a private school
such as S.S. Peter and Paul and how long have you
worked there?
I've been at S.S. Peter and Paul for 20 years. I feel very
fortunate to teach in a private school. I attended a
Catholic grade school and high school for 12 years. When
my husband and I came to Boonville 21 years ago, a
Catholic education for our kids was important, I interviewed for the 4th position and have been there ever
since. The people I work with are great. We have a great
support system of parents, faculty, staff and children.
What is the most enjoyable thing to you about teaching?
Seeing the eyes of a ten your old light up when they understand a difficult concept for the first time makes my
job so rewarding.
What advice would you give teachers just starting
out or people who are thinking about pursuing that
profession?
Teachers shape the minds of the future generation. It is
our responsibility to inspire. Very few people impact lives
each day like teachers. We will be remembered for our
contributions. We decide how to be remembered.
Are there any particular stories you would like to
share with our readers of your experiences?
Teaching is so rewarding. Hearing a student say "You
were my favorite teacher," hearing a parent say, "My
child learned so much from you," means a lot.
One of my former students asked me to attend his high
school graduation and for what ever reason I could not
make it. Later he graduation from MU with a degree in
Journalism and he invited me to his college graduation. In
his invite he told how I inspired him to write. He went on
to say he remembered what I had said to him and how
when he wanted to quit Journalism school, he remembered me and how he couldn't let me down. That child's
(young man's) letter changed my life. Although I inspired
him, he made me realize what I do is noticed.
What are the advantages of working at a private
school?
There are plenty of great school systems out there.
Boonville schools are full of caring adults who inspire
young minds. Working at S.S. Peter and Paul, I believe
our Christian morals and beliefs we instill make us
unique. We have tons of parental support and this is why
our school works

Tips To Avoid Overspending
(StatePoint) Cash or credit? It's
probably one of the most important decisions you'll make at the
store.
All too often consumers overspend without realizing it, by
reaching for their credit cards
without thinking twice. And for
many people it takes months or
even years to pay off bills for unnecessary expenses.
"It's important to not get caught
up and overspend at the store or

Michael McAuliffe, president of
the non-profit Family Credit Management Services. "Charging your
purchases is not the problem.
Emotional or impulse spending is

* Create a detailed shopping
budget before hitting the mall. If
the total is too high, decide
whether to scale back or delay certain purchases.
* Avoiding "window shopping" (in-store or online), which
increases the temptation to buy
items not on your list. But when
you are shopping, either locally or
online, check out coupon websites
and in-store discounts.
* When shopping online beware of "recommendation software" that convinces you to buy
things that a few minutes earlier
you didn't even know existed. If
your life was fine five minutes ago
without it, you don't need it now.
* Use a debit card instead of
credit, but make sure you know
how much is in your account --
you don't want to bounce checks
or be charged overdraft fees.
* Steer clear of new department store credit card offers of immediate savings. They usually
charge higher interest rates than
the major cards such as Visa or
Mastercard and will simply add to
your debt. Just opening one may
negatively affect your credit score.
* Make your own gifts for
birthdays and special occasions.
The most cherished gifts are frequently the "heirloom gifts,"
passed down through family
members. Or you can use your existing talents and skills to create

Ruins of
brewery
cellar in

The rocks and stone that formed the foundation of a 19th
century brewery's cellar, and later ruins explored by
Boonville residents, now sit on Bozeman Trail ready to be
sold.
The property off of Oregon Trail was a cellar for the Haas
Brewery, a business that Robert Dyer writes in his book
"Boonville: An Illustrated History" served as "the source of
the town's reputation in the latter half of the 19th Century as
the 'Vine Clad City'."
When Dan Brewer purchased the property 16 years ago,
what was left were ruins— vaulted stone archways— of the
brewery that burned to the ground. He said the hand chiseled and hand sawed stones are a difficult find today and in
demand in cities where building codes require that construction materials match historical designs.
Since after Thanksgiving, palletes stacked with rocks and
stones from the ruins sit in the middle of Bozeman Trail, a
one way street with no homes.
Brewer said he tried for 15 years to have the property restored as part of a historical district. When he decided to tear
it down, he said the structure was caving in and had become
a public danger.
"It's a real shame for us to have to take it down," Brewer
said.
Emile Haas, a German immigrant, started the brewery,
which became known as the Boonville Wine Company in
the 1850s and its Catawba wine captured a complimentary
notice at the Missouri State Fair in 1854
A fire in the early 20th century shut the brewery down
though, and its remnants became a site of historical interest
and a play area for people growing up in Boonville.
Judy Shields, a Boonville resident and historian, said during the 1940s and 50s she and her friends ventured over the
hillside behind Harley Park to the ruins, "for an adventure."
"It was just something kids in the summer time did for
fun," Shields said. "It was all overgrown and the weeds were
five foot high."

water, said the operator for Public Water Supply District
No. 2.
The switch marked a return to the supplier that had
pumped water into Cooper County properties before the
water district's board of directors decided to build a well
and use that as a source starting in July 2009.
Scott Hern, the interim district operator, said he thinks
a lighting strike on Dec. 30 hit the tower and damaged a
transducer and a motor in the well pump. The equipment
did not stop functioning until the following Tuesday.
Still having the plumbing in place from when it received
city water, district officials contacted Boonville Public
Works Director M.L. Cauthon, who opened up the valves
to pump water to the Cooper County residents. The city
supplied them with water from Jan. 4 through Jan. 6.
Judge orders Bugg, Boonville
to produce more evidence
A Cooper County Circuit Court judge yesterday ordered
Boonville resident Eldon Bugg and the city’s attorney to
submit more evidence to support their cases.
The court also asked Bugg to amend the language of
one of his allegations to include “conflict of interest” of a
City Council member who voted to approve the Kemper

A fire gutted a log house on New Palestine Road near
Bunceton on a snowy Monday morning.
Three tankers, an engine and 10 men from Cooper
County Fire Protection District brought the blaze under
control in four and a half hours.
Neither of the two residents of the house was injured.
The cause of fire is uncertain but it started in the attic,
said David Gehm, Cooper County fire chief. One of the
residents told him it started from a hot tub, Gehm said.

Bugg filed a lawsuit against the city of Boonville on
Nov. 12 alleging an ordinance that rezones a piece of property for the Kemper Village Homes development is invalid
because “it is arbitrary, capricious, unreasonable, or in certain circumstances incapable of being enforced.” Bugg has
asked for a permanent injunction of the city’s approval.
The court ordered Bugg and the city of Boonville’s attorney, Louis Leonatti, to submit more evidence by Feb.

Dr. Randall J. Miles
Dr. Miles is a soil scientist on the faculty of the University of Missouri Department
of Soil Environmental and Atmospheric Sciences. Dr. Miles’ current research deals
with on-site wastewater treatment and disposal and soil site characteristics. He is
Director of the Missouri SmallFlows Wastewater Education/Research Training
Center. He is Director of Historical Sanborn Field, the third oldest continuous
research field in the world. He is also curator of the Historical Duley-Miller soil
erosion plots. Dr. Miles is a member of the Board of Directors of the Missouri
Smallflows Organization and the National Onsite Wastewater Recycling Association.
He is also a member of the Executive Committee of the Consortium of Institutes for
Decentralized Wastewater Treatment. In the early 1990’s he served as the Chair of
the committee which pushed to get the current onsite wastewater code and in 1999
was co-chair of the state-wide stakeholders committee which reviewed the code and
suggested changes to that code.

HOW TO SUBMIT A PHOTO
The Entry Fee, couple photo (the “Photo”) and the name, address and phone number of the Entrant (the “Entry Information”) (together with the Photo and
the Entry Fee, the “Entry Materials”) must be submitted to the offices of the Publication one of the following ways:
1. Postal Mail: Entrants should mail the Entry Materials to the following address: Boonville Daily News, 412 High Street, Boonville, Missouri 65233, Attn:
Cutest Married Couple Contest.

2. Hand-Deliver: Entrants should hand-deliver the Entry Materials to the Publication located at 412 High Street in Boonville, Missouri. The offices of the
Publication are open Monday through Friday, 8:00 a.m. until 5:00 p.m. CT, and closed on Saturday and Sunday.
ALL ENTRIES MUST BE RECEIVED AT THE OFFICES OF THE PUBLICATION BY THE SUBMISSION DEADLINE.
CONTEST RULES
1. The object of the Contest is to showcase to the Publication audience a photo of a “cute married couple” (the “Couple” or “Couples”).
2. Entrants can enter the Contest multiple times. Each Photo must include the Entry Fee and a separate Entry Form.
3. Photos taken by a professional photographer must be accompanied by a written release from the photographer, satisfactory in form and substance to
GateHouse Media. If the Photo contains any material or elements that are not owned by the Entrant and/or which are subject to the rights of third parties, the Entrant is responsible for obtaining, prior to submission of the Photo, any and all releases and consents necessary to permit the exhibition and
use of the Photo in the manner set forth in these Rules without additional compensation.
4. The Photo must not be under consideration for publication or prizes elsewhere.
5. The Photo must be of the Couple only. No other persons should appear in the Photo.
6. The Photo must be in natural color or black and white. Sepia tone and duotone Photos are not acceptable.
7.Photos that have been altered, manipulated or enhanced using computer software programs will not be accepted. Minor adjustments to the Photo such
as lightening or darkening areas of the Photo, slight contrast or color adjustments and cropping are acceptable. If GateHouse Media determines a Photo
has been altered, manipulated or enhanced, GateHouse Media reserves the right to disqualify the Photo.
8. By entering the Contest, Entrant represents, acknowledges and warrants that the submitted Photo does not infringe on the copyrights, trademarks, moral
rights, rights of privacy/publicity or intellectual property rights of any person or entity, and that no other party has any right, title, claim or interest in the
Photo.
9. The Photo must not, in the sole and unfettered discretion of GateHouse Media, contain obscene, provocative, defamatory, sexually explicit, or otherwise objectionable or inappropriate content. GateHouse Media retains sole discretion as to what constitutes objectionable or inappropriate content.
10. GateHouse Media will not be responsible for any incomplete, lost, late, postage due or illegible entries. Proof of mailing does not constitute proof of
delivery.
11.Photos will not be returned to the Entrant, unless the Entry Materials include a self addressed, stamped envelope.
12. GateHouse Media reserves the right to cancel the Contest if twenty (20) entries are not received by the Submission Deadline.
JUDGING OF THE PHOTOS — Ten (10) Photos will be selected by staff of the Publication (the “Winning Photos”). Judging of the Photos will be based
on the following criteria: (a) overall “cuteness” of the Couple, as decided by the judges and (b) the technical quality of the Photo, which should be sharp,
properly exposed and feature the Couple prominently in the frame (30%). All decisions by the judges will be final and binding.
VOTING — The Winning Photos will be published in the February 4, 2011 special section of the Publication.
Members of the public will be invited to vote for their favorite Couple (the “Vote” or “Votes”). The voting ballots (the “Ballot” or “Ballots”) will be available
in the February 4, 2011 edition of the Publication. The Ballots will also be available at the offices of the Publication beginning February 4, 2011 until February 11, 2011. Voting is limited to persons eighteen (18) years of age or older. There is no limit to the number of Votes a person can cast.
Voting Period — Voting on the Photos will begin at 8:00 a.m. CT on February 4, 2011 and end at 5:00 p.m. CT on February 11, 2011 (the “Voting Period”). The Couple receiving the most Votes during the Voting Period will be declared the Winner of the Contest. In the event of a tie, a random drawing

ODDS OF WINNING; NOTIFICATION OF THE WINNER
Odds of winning depend on the number of Photos received by the Publication.
The Entrant who submitted the Winning Photo (the “Winner” or “Winners”) will be notified by phone, e-mail or overnight mail in accordance with the contact information provided on the Entry Form. If the notification to the potential Winner is returned as undeliverable or the potential Winner is otherwise unreachable for any reason, GateHouse Media will select an alternate winner in a random drawing.
PRIZES
One (1) prize package will be awarded in this Contest. The Winner will receive a prize package (the “Prize”) which includes (a) dinner (does not include
beverages or tip) for two (2) at Farraddays Restaurant in Boonville, Missouri in February 2011 and (b) overnight accommodations for two (2) in a standard room (honeymoon suite, if available) at the Isle of Capri Hotel in February 2011. Total approximate retail value of the Prize is $300.00. One (1) day
spa package at A Touch of Claas in Boonville in February 2011 only. Total value $100.
The potential prize winner must sign an Affidavit of Eligibility, Liability and Publicity Release in order to be eligible to accept the prize. No substitution or
transfer of the prize will be allowed, except at the sole discretion of GateHouse Media. In the event of non-compliance with these Official Rules, or if prize
is refused or cannot be accepted for any reason, the prize will be forfeited and an alternate winner will be selected in a random drawing. Upon forfeiture
or refusal, no compensation will be given. GateHouse Media reserves the right to substitute prizes of equal or greater value. All local, state and federal
taxes incurred by accepting a prize will be the sole responsibility of the prize winner. The prize has no cash value and may not be redeemed for cash at
any time. GateHouse Media shall not be responsible for any cancellations, substitutions or any acts or omissions whatsoever by the hotel, the restaurant
or any other businesses providing any of these services and accommodations. Winner is responsible for any and all local, state and/or federal taxes, as
well as any other costs and expenses not specified herein, including, without limitation, ground transportation, meals, beverages, activities, spa services,
gift shop purchases, incidentals, telephone calls or other personal expenses, extra hotel fees, or other hotel charges incurred. Sponsor is not responsible for changes in schedule of any component of the Prize.
Decisions of GateHouse Media regarding the Contest are final.
CONDITIONS
By entering, Entrants agree to comply with these Official Rules and the decisions of GateHouse Media, which are binding and final, and release GateHouse
Media, and each of its divisions, affiliates, parent companies, subsidiaries, advertising and promotion agencies and anyone associated with the production of this Contest, and their respective directors, officers, employees and agents from any and all liability for any claims, injuries, losses or damages (including attorneys fees) of any kind arising out of their participation in this Contest or resulting from acceptance, possession, use or misuse of any prize.
The potential prize winners waive the right to assert as a cost of winning the prize any and all costs of verification and redemption or travel to redeem said
prize and waives any liability or claims (including attorneys fees) which might arise from redeeming or seeking to redeem said prize. In the event of noncompliance with these Official Rules, or if prize notification is returned to GateHouse Media as undeliverable, if prize is refused or cannot be accepted for
any reason, the prize will be forfeited and an alternate winner will be selected in a random drawing. Upon forfeiture or refusal, no compensation will be
given. Acceptance of prize constitutes permission to use the winner's name, photograph, likeness, Contest photo submissions and/or statements attributed to winners regarding the Contest, for advertising and publicity purposes without further compensation or consent. All entries become the property
of GateHouse Media. This Contest shall only be construed and evaluated according to the laws of the State of Missouri, without regard to the principles
of conflicts of laws and submission of any entry constitutes acceptance of such laws. This Contest is void where prohibited. All federal, state and local

In the Illustrated History, Dyer waxes about his experience gazing onto the ruins:
"I am looking west, up to the river, watching, the sun turn
red as it nears the horizon..... Below me, hidden in a tangle

Haas Brewery, the last remains of the extensive wine and
beer making operations brought by the German immigrants
