Who says you can’t go home again?
Here’s my homecoming story if you care to read it.
My coffee career started as a job in a specialty retail shop back in 1984 called That Coffee
Place owned by Jim and Jan Rich. While I took the job for a paycheck it soon became much
more to me. Who knew that the coffee world was so interesting? I surely didn’t know the
first thing about it, never having even drank a cup at that point in my life. I started training
on the 24 different types of coffee we sold and I was hooked. Where it was grown, the history of the bean, what made them all taste different and that coffee started out as a cherry on a
tree! Talk about being green! I was, and so is a coffee bean when it’s raw. That Coffee Place
became so popular that the Rich’s decided to open their own roasting plant, Coffee Masters.
This is where I started my roasting career in 1985. Coffee Masters opened using a Sietvz
fluid bed roaster. I enjoyed learning how to roast, knowing when to tweak the incoming air to
make amazing things happen within the bean. Like a great chef I could make things happen
with my “stove”. At that time Sievtz only had a “half bag” roaster and we out grew that in
1988. In came the big boy, a Farina. A drum style roaster with a “2 bag” capacity. I
enjoyed learning to roast with this new style roaster but I truly missed roasting with the
Sievtz. I left Coffee Masters in 1990 and started Chicago Coffee Roastery, using a Sivetz
roaster. So here I was competing against the very company I helped build. Nerve wrecking
and heart breaking at the same time. Could I do this? Well like the little engine that could I
did, for 24 years. While I couldn’t say anything bad about my competition, heck it was kind
of my baby too, I just liked the taste of the coffee better out of a fluid bed roaster than a
drum roaster. Coffee Masters continued to grow and branched off into the coffee gift
business while still selling to the specialty stores.
When the call came in March of 2014 that Coffee Masters was for sale and they were giving
me first option, I was deeply touched, and jumped right onboard. On July 16th, 2014 the
deal was done. I was now the owner of Coffee Masters! I bought the Spring Grove facility in
Jan 2015 and slowly started moving Chicago Coffee Roastery in. What a task. What an
awesome facility. I’m home again and couldn’t be happier. My life has come full circle.
Please join me in this very exciting time of joining the 2 companies together under the name
CM Coffee Products. There will be many positive changes with new product lines, better
inventory control, new packaging designs and so on. I grew Chicago Coffee Roastery by
listening to your needs. I will do the same with CM Coffee Products. I hope to see you at
one of the upcoming trade shows.

Which roaster is better: Drum vs. Fluid bed
The truth? Only you can decide, it’s a matter of your taste.
Drum roasters work very much like your clothes dryer. Can you roast coffee in your clothes dryer? I wouldn’t try it
if I were you! There is a perforated drum inside a cylinder that spins. The beans are in the perforated cylinder and
the heat is applied from below. The beans sit and drop, sit and drop until they reach the desired temperature and
then are dropped out into a cooling tray while still hot (anywhere from 450 – 550 degrees) and that is what stops the
roasting process. The cooling tray is round and has a perforated bottom with an arm that circles/stirs through the
beans keeping them moving while cooling the beans down to room temperature.
Fluid bed roasters work like the lotto ball machine. While it too has perforated steel in it the air blows through the
bottom keeping the beans in consistent motion. The beans are always moving and never sitting on hot steel. Once
the desired temperature is reached a spray of water (quenching) is introduced to stop the roasting process. When the
beans cool to 300 degrees they are then dropped into a cooling tray which does not contain the circling arms since
they are not danger of catching on fire.

We have 1 Farina drum roaster with a 300 lb capacity for high volume roasting. We also have 2 Sievtz fluid bed
roasters: One that does 5-25 lbs. roasts and one that does 70 lb roasts. The Sievtz allows us to custom roast for you.
With this combination, we can meet all your roasting needs.
Know the Lingo, Know your Coffee
The flavor of coffee is made up of 3 characteristics; Acidity, Aroma, and Body
Aroma - brings across very subtle characters of coffee. Aroma is the combination of fragrances before and during drinking.
Acidity - is a desirable characteristic. It is the sensation of dryness that coffee produces under the edges of your tongue and on the back
of your palate. Acidity in coffee,plays the same part as it does in the flavor of wine. It provides a sharp, bright, vibrant flavor. Coffee
without good acidity will tend to taste flat.
Flavor - is all three of these characteristics combining together. Everyone has different perceptions of the components of coffee, and
everyone will describe the same coffee in different ways. No coffee is better than any other coffee; it is a matter of personal taste.
Body - is the feeling that coffee has in your mouth. It is the thickness, heaviness, or richness that is perceived when you drink it. Heavy
bodied coffee is often described as earthy or nutty. A good example of body is the way whole cream feels in your mouth compared to
water.

Coffee Roasting Levels
All coffee is roasted to order, with your choice of the following roast levels
on Single Origins, Reserve Selection, Organics, and flavors.
Raw Coffee Beans
We start with only the highest possible grade of raw coffee beans. To find the best beans, we evaluate
the following: bean size, bean color, uniformity of color and size, occurrence of any “defects” which can be
broken beans or stones within a sample, and most importantly the flavor of the roasted coffee when brewed.
From any single country there will be several different grades of quality, we choose the best which may carry a
higher price but produces a better cup of coffee.
American Roast
The best raw coffee can be completely ruined by improper roasting. Correct roasting is a delicate
balance of time and temperature. As coffee roasts, it changes from green to shades of golden-yellow to its
familiar brown. American Roast is the point where coffee beans have achieved their rich, medium brown color
without any of coffee’s natural oils appearing on the surface. American Roast is the traditional roast level of
American style coffee. Roasting time for American Roast coffee is approximately 9 to 10 minutes.
Recommended at this level:
Hawaiian, Guatemalan, Kenyan, Mexican, & flavored coffee
Vienna Roast.............................VR
Vienna Roast is characterized by a slightly deeper color than American Roast, with small spots of oil present
on the bean’s surface. This oil, which comes from within the coffee bean, is brought to the surface by the
prolonged roasting time. The oil is important in the flavor of brewed coffee at higher roast levels, the greater
presence of oil is what gives dark roasted coffee its distinguishable taste.Vienna Roast slightly intensifies the
character of each coffee from different origins, as well as bringing out flavors that may remain hidden at the
American Roast level. This is perhaps the most difficult roast level to master, just moments too long in the
roaster will result in too much oil on the bean’s surface, and if the roast is finished seconds early no oil will
appear. Roasting time for Vienna Roast coffee is approximately 10-11 minutes.
Recommended at this level: Colombian, Costa Rican, & Ethiopian Yirgacheffe
Full City Roast..........................FC
Distinguished by the deep brown color and heavy oil on the bean’s surface, Full City Roast
further intensifies the unique character of each different coffee. Coffee does not become bitter when
roasted darker. Bitterness in coffee is from poor quality beans or improper roasting. Dark roasted coffee
should have a heavy, rich flavor, never burnt or bitter. The extended time in the roaster not only makes
coffee darker, but also lighter in weight. Coffee contains water, that water is turned into steam during the
roasting process, steam pressure causes the beans to swell in size. After roasting, coffee can weigh up to
25% less from the loss of the water within the bean. Roasting time for Full City Roast coffee is
approximately 11-12 minutes.
Recommended at this level: Sumatra and Tanzanian Peaberry.
French Roast............................FR
Roasting coffee just slightly longer brings the beans to the French Roast level. With more oil on the bean
and a little darker color than Full City Roast, French Roast brings coffee to the height of its flavor. French
Roast creates a deep heavy flavor, some of the more subtle flavors of coffee will be hidden by the dark
roasted smokeyness. As coffee is roasted longer, the unique character of each Varietal, such as Kenya or
Sumatra, is diminished, all coffee would taste the same roasted dark enough. Roasting time for French
Roast coffee is approximately 12 minutes.
Recommended at this level: Any coffee used as part of a blend
Espresso Roast........................ER
Espresso Roast flirts on the edge of ruin. Coffee is roasted to its extreme limit, the beans are nearly black
with very heavy oils. Seconds too long in the roaster will completely destroy all of the natural oil in the beans.
Traditionally used for espresso and espresso-based drinks, this roast level has seen diminished use in favor of
Espresso Blends which combine the flavors of different Single Origins at varying roast levels to create great
espresso.
All coffee is roasted to American Roast unless otherwise specified. Add 5¢ per level of roast thereafter.

Our coffee is strictly Arabica. Our flavored coffee contains natural and artificial
flavors. Both contain no nutritional value. Our flavored coffee contains no sweeteners,
sugars or calories, just oil based flavoring extracts.
Do you sell parts for the equipment you sell?
Yes, we can order in parts for the equipment we sell and even for some we don't sell. Call
