Real Chocolate vs. Candy Coating
Real chocolate is the best to use when using chocolate as an ingredient for
recipes such as cheesecakes, pies, mousse, brownies and other desserts. Real
chocolate includes both cocoa powder and cocoa butter. Cocoa butter gives
chocolate an excellent taste but makes it more difficult to dip or mold with
than candy coating. Real chocolate must be tempered, which involves dipping
and molding at the right temperature. When using real chocolate as an ingredient (example: fudges or cheesecakes), it does not need to be tempered. Note:
Real white chocolate has cocoa butter, but no cocoa powder so technically is
not chocolate. It will also require tempering when dipping or molding.
Candy coating contains palm kernel oil or other fats and requires NO tempering. You simply melt, and it’s ready to go! Candy coating is delicious and is
ideal to use for making suckers, dipped bon bons, molded bite size pieces and
more!

What is the relevance of Cocoa Content?
The percent cocoa solids (or cocoa content) is the percentage of
cocoa that is in the chocolate. The percentage can include the
cocoa bean, the nibs, chocolate liquor, cocoa butter and or
cocoa powder. Generally, the higher the percentage of cocoa,
the darker and more intense the chocolate.

Shelf life of Candy Coating
Candy coating can be kept for several months; however, after a couple
months, the candy coating may be less creamy and be thicker when
melting. Store unused candy coating in an airtight container at room
temperature.

Melting Real Chocolate and Candy Coating
Place wafers or chopped real chocolate in a glass or plastic bowl. Microwave for 40
seconds. Stir. Microwave for 30 seconds. Stir. Continue microwaving only a few seconds at a time, stirring between each time, until wafers are nearly melted. Remove from
microwave and stir until all the wafers are melted.
Keeping Candy Coatings Warm
If you’ve melted your candy coating in a bowl in the microwave or if you have poured
your melted chocolate in a squeeze bottle, you can keep it fluid. Turn an electric skillet
on the lowest possible setting. Line with 4 or 5 dry dish towels. Place bowl or bottle
in towel-lined skillet. This method works wonderfully! You can make candy all day
without remelting!

Double boilers are a pair of nesting saucepans. When you bring a couple inches of water to
almost a boil in the lower pan, then fit the
two pans together, you can melt with the

Tempering Chocolate For Molding and Dipping
Real chocolate requires tempering for dipping and molding. To use as an ingredient, just melt, no tempering necessary. Below are directions for tempering. If chocolate is not tempered properly, one
or more of the following may happen:
1. Chocolate remains sticky.
2. Chocolate gets white streaks.
3. Chocolate takes a very long time to set up.
4. Chocolate will not fall from the mold.
Start with one pound real chocolate. Set aside 1/4 pound chocolate. Place the remaining 3/4 pound real chocolate wafers or chopped real chocolate chunks in a
microwaveable bowl. Microwave on high for 30 seconds; stir. Microwave for 30 more seconds; stir. Microwave for 20 seconds, stir. Continue process (microwaving
and stirring) for 10 seconds at a time until 2/3 of the chocolate is melted. Remove from microwave and put chocolate tempering thermometer into the chocolate. Stir
frequently. Begin dipping or molding with it when temperature goes down to 89° for white or milk chocolate and 90° for dark chocolate. Milk chocolate or white
chocolate may be worked with between 84° and 89°. Dark chocolate may be worked with between 86° and 90°. Always have unmelted chocolate in the bowl to keep
the chocolate tempered. As the chocolate is melted, the 1/4 pound that was set aside may be added to “seed” the melted chocolate. Tap molds frequently while filling
to avoid air bubbles. When temperature goes below 84° (86° for dark chocolate), place in microwave for a few seconds. Add some unmelted chocolate and place
candy thermometer in chocolate. Stir frequently. When temperature reaches 89° or 90° for dark chocolate, chocolate is ready to work with again. Note: You may also
use a double boiler. Control temperature of chocolate by lifting top pan off hot water to cool chocolate and replacing hot water when necessary to warm chocolate.

Molding and Painting Details
Melt any candy coating. Add flavoring if desired. Pour into a squeeze bottle (#81-7 works well). Squeeze candy coating into mold. Place mold in
freezer until the candy feels cold and the mold is
cloudy. The candy should pop right out. If it
does not, leave in the freezer a little longer. To
Paint Details: With melted candy from candy writers, squeeze the candy directly into a clean dry
mold, painting the details. Let each color set up at
room temperature before painting an adjoining
area. When the colors are completely set, fill the
mold with the main color. Place the mold in the
freezer. When cold, the candy will fall from the
mold. Use a fine brush if details are small.

Squeeze Bottles
Using a squeeze bottle is a great way to fill molds with candy coating. Melt
the coating and pour it into a squeeze bottle. Clip the opening for larger hole
if needed. Cleaning the Squeeze Bottle: Remove cap and wash in dish water. Dump all the chocolate from the squeeze bottle onto parchment paper (you
can remelt coating). Place squeeze bottle in the freezer for a few minutes.
When hardened, squeeze the bottle and dump out excess candy (you can

Cake Wrap
Cut a strip to fit around cake. Between perfection strips of the same size, lay the cut
transfer sheet with textured side up on a silicone mat or piece of parchment paper. Pour approximately one pound of candy coating or tempered chocolate onto the transfer sheet. Use a cookie sheet with a straight edge to smooth the chocolate. Allow to
set until not tacky. Immediately place around an iced cake.
Garnishing Desserts

Decorate Cookies and Candies
Cut the transfer sheet to fit on treat. Dip treat, such as a piece of caramel or a cookie
in candy coating or tempered real chocolate. Immediately place cut transfer sheet on
dipped treat. Allow to set until chocolate is completely firm. Remove transfer sheet.
Molded Candies with Designs
Cut the transfer sheet to fit the candy mold cavity. Place the cut piece in the cavity with
raised side up. Carefully pour melted chocolate or candy coating over the top of the
design, into the mold. Place in freezer or refrigerator to set up. Remove candy from the
mold and peel off sheet. Design will remain on the chocolate. Transfer Sheets on Fondant
Roll fondant to desired thickness. Place transfer sheet texture side down on top of
fondant. Place a silicone mat and a piece of parchment paper on top of the transfer
sheet and fondant. Gently press warm iron on top of parchment paper moving frequently. When entire transfer sheet has been heated allow to sit and cool. Remove
parchment paper, silicone mat and transfer sheet. Cut and use fondant as desired. (Note: may not completely transfer design as when using chocolate.)

If you want a special color you can add candy color which is oil based to your chocolate or coating. Cake colorings are water-based and may ruin your candy. If you are
trying to make a color darker, start with a lighter shade of the color you want to

Heat oven to 300. Butter a 9” x 9” pan. Thickly cover
the bottom of the pan with pecan pieces. Cut pieces of caramel
and form into 1” ball. Slightly flatten. Place flattened balls on pecans
about 1/2” apart from each other (not all will fit at once). Put into oven for
about 2 minutes or until caramel “just” smooths itself and pecans stick to
slightly melted caramel. Remove from the oven. When the caramel cools, place the
caramel with pecans onto parchment paper. Melt candy coating or melt and temper chocolate.
Spoon melted chocolate over patties. Push remaining pecans in pan together, add more caramel
flattened balls and soften in over. Repeat until all the caramel is gone.

Dipping in Chocolate or Candy Coating
May use candy coating or real chocolate. If using real chocolate, chocolate must be tempered.
Commercial Fillings, Caramels and Coconut: There are several flavors of centers
that are ready-to-use. Select from Burkes or Byrnes and Kieffer Redi Centers, Coconut
Dough, and Peter’s Caramel. Dry fondant is a powdered mix that you add whipping
cream and butter to achieve a cream center. Add your own flavoring, nuts, icing fruit,
etc, to get a variety of different centers. Roll into balls (use cookie scoops for uniform
size, then roll). Add dry fondant to the Redi Centers if a bit too soft for rolling easily. Place a ball into the melted candy coating and lift ball out with candy dipper #81-10. Let
excess candy coating drip back into the pan. Drop the dipped candy center onto parchment paper.
Commercial Bars: Peanut Logs and Heath Toffee bars (page 203) are delicious readyto-go mini bars. Immerse a bar into the melted candy coating. Lift log out with candy
dipper #81-12. Drop onto parchment paper. Dried Fruit: Hold one end of the dried fruit. Dip 3/4 of the dried fruit in melted
candy coating. Let excess candy coating drip back into pan. Place on parchment paper
to set up.
Twisted Pretzels: Immerse a pretzel into the melted candy coating. Lift pretzel out
with candy dipper #81-14 . Let excess candy coating drip back into the pan. Drop the
dipped pretzel onto parchment paper. Sprinkle sanding sugar or non pareils over melted
coating.
Ritz™ Treats: Melt one pound Cocoa Dark Coating. Add 15 drops of peppermint oil
(#42-580, page 201). Place a Ritz™ cracker into the melted candy coating. Lift cracker
out with candy dipper #81-14. Let excess candy coating drip back into the pan. Drop
the dipped cracker onto parchment paper. Add a sugar lay-on if desired.
Nuts: Place nuts into the melted candy coating. Lift nuts out with candy dipper #81-10. Let excess candy coating drip back into the pan. Drop the dipped nuts onto parchment paper. Use the dipping fork to separate each nut.
Strawberries: Wash strawberries and lay on paper towels to dry. When dry, hold by
stem and dip 3/4 way into desired melted candy coating. Set on parchment paper. When dry, serve immediately or keep in refrigerator no more than 4 hours, or store them
in a cool room.
Peanut Butter Balls: Combine 1 cup peanut butter, 1 stick softened butter, 1 1/2 cup
powdered sugar, and 1/4 cup corn syrup. Mix well. Roll into balls and drop a ball into
the melted candy coating. Lift ball out with candy dipper #81-10. Let excess candy
coating drip back into the pan. Drop the dipped candy center onto parchment paper.
Graham Cracker: Place a cracker into the melted candy coating. Lift cracker out with
grid candy dipper from set #CM-5600.

Replaces regular sucker sticks. Fits on the end of a pencil.
Most of our sucker molds have a cavity for these, with the
exception of some of the larger suckers.
Use an ordinary decorative pencil, a pencil pop
sucker stick and a chocolate or hard candy mold
to create a novelty chocolate or hard candy addition for baskets, impulse sales, fund-raisers and
party favors. Current CK sucker molds styles have
an impression to fit the Pencil Pop Sucker Sticks
(unless otherwise noted). The Pencil Pop Sucker
Stick attaches securely to the top of the pencil
covering the eraser. Not for use for children
under three.

How to use PENCIL POPS
Fill chocolate or hard candy mold with candy
coating, chocolate or hard candy. Place the thin
end of the pencil pop into the mold cavity. Rotate the cylinder part of the pencil pop to
ensure thin end is covered. (Do NOT attach to
pencil during the molding process.) If using
chocolate, place in the freezer for approximately
5-10 minutes. Once mold is removed from freezer, invert it onto a flat surface and tap to remove
the candy pieces. If using hard candy, allow candy
to cool before removing candy with pencil pop
from mold. After the sucker is molded, hold onto
the cylinder and twist pencil (eraser end) onto the
pencil pop until it clicks into place.

Combine 8 3/4 cups powdered sugar, 1/2 cup
melted butter, 5 to 6 Tablespoons cold water, 10
drops cinnamon oil, 10 drops peppermint oil
and 1 teaspoon butter flavor in a large bowl On
a smooth, dry surface, knead until mixture is
smooth and the consistency of pie dough. Add
more water, a drop at a time if necessary.
Knead in food coloring. Pinch a small piece and
roll into a ball. Ball may be rolled in sugar, or
spray mold. Push into a mold (rubber molds
are easiest to use). Remove any excess candy. Push another glob of the candy against candy in
the mold to pull molded candy from mold. Let
stand at room temperature 2 to 4 hours, then
store in an airtight container up to 4 weeks.
