All across the Great Lakes basin, there is a renewed interest in the health of the Lakes, and an increased awareness about the importance of this freshwater resource to the social and economic vitality of North America. Dubbed ‘inland seas’ by early European explorers, the Great Lakes have some of the most spectacular wilderness scenery on Earth, and a fifth of all of the planet’s freshwater. Eat like a Sturgeon Lake sturgeon are omnivorous and feast on various fish and plant life found throughout the Great Lakes. The life thread through the Mysteries of the Great Lakes story is a remarkable species of fish that pre-dates dinosaurs and the efforts to bring it back from the edge of extinction. The lake sturgeon is the largest freshwater fish in the world. This living fossil has survived for over 100 million years, virtually unchanged. It can grow to weigh an astonishing 300 pounds, and can live to be nearly 200 years old. • Crayfish Scampi • Mussels topped with a bourbon rosé sauce Delicious desserts Enjoy Great Lakes-themed pastries • Maple syrup tartlets • Blueberry cheesecake • Raspberry mousse cake • Cranberry crumble • Coffee and tea We are proud to bring the Great Lakes to you by providing you with a feast for all of five of your senses! Shipwrecks near Fathom Five Provincial Park Fathom Five National Marine Park, located at the mouth of Georgian Bay, is a diver’s paradise featuring 22 shipwrecks and several historic lighthouses. This underwater national park is Canada’s first National Marine Conservation Area and is a popular destination for SCUBA divers and glass-bottom boat tours. In the early days of shipping on the Great Lakes, sailors’ diets were generally monotonous and various preserves sustained sailors during their long voyages on the Great Lakes. • Pickled assortment including asparagus, garlic, stuffed olives, dills, carrots, beets • Cured ‘charcuterie’ platters with fresh breads • Lemon sherbet Presque Isle State Park • Ratatouille tartlets • Fresh herbed mini quiches • Duck confit on fresh baguette rounds Niagara Falls • Legends Estates Wine Tasting • Artisanal Cheeses • Chocolate Fountain ‘Falls’ About 10,000 years ago, with the after effects of glaciation, Niagara Falls underwent a dramatic transformation slowing to a virtual trickle. The ice disappeared from the southern portion of the Great Lakes first and was free from the weight of the ice. This caused the ground to rebound and a new falls was formed at the entrance to Georgian Bay. For almost 3,000 years the upper lakes drained north, but eventually the north too rebounded, reversing the flow, and sending the water back south towards Niagara. The remains of this ancient, once roaring waterfall now sit silent, 100 feet below the surface of Lake Huron. Eagles of the Apostle Islands To capture the stunning footage of Bald Eagles on the Apostle Islands, the cameraman had to climb 80 feet up to a blind in a tree. When a sudden storm that Lake Superior is famous for blew through, he had to leave the blind and make the perilous trip back to Earth. The day became even more interesting when the boat carrying cameraman, camera and crew took on water on the way back to the mainland and almost became part of the shipwreck lore of Lake Superior! • Sushi (Nigiri & Sashimi) • Smoked splake (a true Great Lakes fish!) • Smoked whitefish mousse • Gravlax (cured salmon) Caribou of the Slate Islands • Grilled, farmed caribou on a fresh baguette topped with a birch syrup and blueberry sauce • Classic caribou meat balls
