Iapyx- 2012 - Canyon Wind Cellars
2012 Iapyx Creation The god of the northwest wind, Iapyx, was often associated with Boreas (the god of the north wind) and represented the cooler days and nights indicative of the onset of winter. 2012 was a warm season from start to finish and developed into the earliest harvest in the twenty-one year history of our vineyard. The hot days, cool nights and early start to the season provided us with the perfect combination of growing conditions to reach 28° Brix at harvest, while maintaining the delightful fruit characteristics typical of Pinot Gris. A late harvest Pinot Gris, the 2012 Iapyx was slowly fermented in order to capture the delicate, bright fruit aromas of plantain, pear, cinnamon and a touch of rose water and lavender. Flavors of peach, kumquat, cinnamon and the slightest hint of sour apple combine delightfully for a perfect sugar-acid balance.
