“In Vino Ventus” Creation The god of the northwest wind, Iapyx, was often associated with Boreas (the god of the north wind) and represented the cooler days and nights indicative of the onset of winter. 2011 was a mild season from start to finish and developed into the latest harvest in the twenty-year history of our vineyard. The extended season provided us with ample time to hang the fruit until we reached the desired sugar of 33° Brix at harvest. The 2011 Iapyx is a late harvest Pinot Grigio produced in the style of a Hungarian Royal Tokaji. Slowly fermented to ensure we captured all of the delicate and bright fruit aromas, Iapyx enchants the nose with scents of lychee, apricot and honey. Flavors of apricot, clover honey and the slightest hint of cinnamon combine for a sumptuous mouthfeel and perfect sugar-acid balance.
