Forty years
of passion
In April 1973 “Eurocanditi”, a small artisanal candied fruit factory located
in Roccavione, a small town of Piemonte, near Cuneo and France, moved
few kilometers, to its new and modern headquarters of Borgo San Dalmazzo,
changing its name to Azienda AGRIMONTANA and thus commencing a
revolutionary new history, anticipating many now established trends.
was created with the core purpose of providing to

pastry chefs semi-finished product (candied-fruits in particular), that the
artisan baker was no longer able to produce himself, due to the excessive amount
of work required and growing labor costs, whilst retaining the features of
artisanal production. The historical product is the candied chestnut, together
with the candied orange peel “cube”, true pillars of the AGRIMONTANA
tradition, the authentic bulwarks against the barbarism of primitive industrial
production techniques that contributed to demean wonderful products, often
rendering them “unwanted” by the consumer. Traditional candying process,
revolutionary preparation of fruits: the implementation (which was back then
extremely rare) of freezing and the total abandonment of sulfur dioxide, marks
the path that others will try to imitate later only.
During the mid-seventies, the production of jams, for both consumers and
pastry users, commenced. The eighties marked the introduction of the marron
glacè, with a decisive effort to position the product alongside innovative
“consumer” product lines.
In recent times, collaboration with the ILLY group has been forged, with ILLY
becoming a stakeholder in AGRIMONTANA. This collaboration has
fostered the development of industrial and commercial synergies, culminating
into the introduction of a top of the range chocolate line for laboratories,
that is produced by another company of ILLY Group: DOMORI.
Thanks to the strong investments by the Group in highly modernized
plants producing chocolate covertures for artisanal laboratories,
AGRIMONTANA is today able to supply professional chocolate of absolute
quality excellence.
While devoting maximum efforts in research and development towards the
classic pastry channel, AGRIMONTANA recently entered the market of
high-quality ice cream, with semi-finished products fully complying with the
traditional philosophy of completely natural ingredients and non-invasive
techniques of production: the “ARTISTI DEL GELATO” group that follows us
with enthusiasm is the living proof of this statement.
The fantastic support that “TEAM MASSARI”, which is headed by Italy’s best
pastry chef (an understatement), is giving our clients and our commercial
network must also be mentioned.

INSTRUCTIONS FOR CORRECTLY OPENING THE PACKAGE
Agrimontana directly follows the production chain through its
various stages: harvest, selection, steam peeling and candying.
Carefully selected by cultivar, size and color, the chestnuts
are placed by hand in tins and then dipped in Bourbon Vanilla
extract.
Once pasteurized, they are made available to the pastry chef
who will proceed with the glazing. The Agrimontana marron
glacé is available in three different origins, each of which in
several sizes.
• The prestigious Marron “Turin” (Susa Valley – Piedmont
cultivar). Refined and delicate, for true connoisseurs.
• The “Piemonte” from the best Italian varieties.
• The “Val Calore” unique selection of the Naples Chestnut, it
is grown in the heart of the Cilento valleys.
N.B. Carefully follow the instructions that are included in each
package for both opening and draining of the chestnuts
and the following glazing process.
Flip the can over.
Open the can at the bottom, taking care to avoid leaving
smudges on the edges with the can opener. (Fig. 1)

Cover the chestnuts with the first sheet of sealing that usually
remains attached to the lid.
Overlay the can with a strainer with large holes or grill and flip
simultaneously onto a grill and tin container. (Fig. 2 and 3)
Allow to drip at room temperature for 30 minutes. If the
temperature of the tin is less than 10 degrees, double the time
of the dripping to at least 1 hour.
Punch one or two holes into the cover of the upper part of the
can. Slowly lift up. (Fig. 4)
The chestnut will be released and well adjusted, making it easier
for manipulation.

The Agrimontana small chestnut is ideal for decorating cakes,
garnishing tarts: perfect to dip in chocolate.
The chestnut in pieces offers two options, to be eaten as it is, or
to enrich creams and mousses, or again (along with chestnut
cream) for a magnificent marron glacé ice cream.
The chestnut paste, produced with the simple refining of
candied chestnuts in pieces is indispensable for a thousand and
more recipes (e.g. Mont Blanc).
The marron cream is produced from peeled frozen chestnuts,
to get a fine and pure taste, compared with those who make it
from chestnuts with peel.

The Agrimontana marron glacés comes in two different
varieties, each of which is available in several sizes.
The glazing process is performed in the confectionery
tradition: the candied chestnuts placed on grills go in the oven
and are covered by the glaze of icing sugar.
The method of packaging reflects an industrial innovation:
after glazing and drying, the Agrimontana chestnuts are packed
in trays with protecting atmosphere.
It removes the oxygen that would cause a rapid hardening of
marrons glacés, and replaces it with an inert gas, nitrogen.
The tray made from polypropylene has also a special barrier
that prevents oxygen from re-entering the package.
This sealing technique allows preservation of the flavor and
natural softness of newly glazed chestnut.

THE ORIGINS, THE SUPPLY CHAIN AND ITS PROCESSES
Citrus fruits
Agrimontana expresses all its know-how in the traditional
candied fruits, paying an extreme attention to:
• the supply chain (Calabria oranges and citron from Diamante
village, Sicilian lemons...);
• the treatment of the raw material (hand peeling, immediate
freezing...);
• the candying on the whole fruit that does not use sulphuric
anhydride and is a long lasting process, traditionally.
The cutting in strips, dicing into small cubes and milling
in paste are strictly carried out after candying, in order that
essential oils are fixed by sugars in the peels and are not lost.
Proposals
• Calabria orange peels are in quarters, cubes, paste, strips
and whole oranges in slices;
• Sicilian lemon peels are in quarters, cubes, paste, strips;
• Diamante Citron in halves, small cubes and paste;
• whole tangerines from Calabria;
• Calabria pink grapefruit peels in quarters and paste.
With the same methods and rigorous controls, Agrimontana
also produces:
• real Amarena sour cherries in their candying syrup;
• whole apricots with stone;
• whole pears;
• pineapple slices;
• pineapple in pieces
Suggestions of use
• in the variety of leavened cakes (“panettone quattrostagioni”,
plumcake, “panbiscotto”, etc.);
• iced and frosted;
• iced with chocolate;
• garnishes (they stay for a long time fresh and bright also with
cold weather).

NEUTRO 5
Neutro for ice creams or fruit “sorbets” is made with natural
flours as thickeners and natural lecithins as emulsifiers, without
mono and di - glycerides of fatty acids.
Cream Base 50
The structuring package (Neutro 5) is enriched:
1 )with whole milk powder to “warm up” ice cream (body and
chewing ability);
2)with milk proteins to facilitate the incorporation of air and a
better resistance to thermal shock;
3)with a mix of sugars such as anti-caking agents in the
preparation of the mixtures.

The structuring package (Neutro 5) is enriched:
1 )with a mix of sugars;
2)with a natural vegetable fiber (inulin) that is soluble in
water, which favors the binding together of the molecules
of the fruit, increasing their compactness, as well as the
creaminess and the spread ability of the ice cream.
EASY AND QUICK WEIGHT BASES
As a further evolution of Neutro 5, to make the preparation of
the recipes easier, Agrimontana has pre-weighted for you some
ingredients, such as milk in powder, glucose, dextrose and
other sugars to create an “Easy weight” Base that is ideal for
ice-creams. For fruit sorbets Agrimontana enriched its Neutro
with vegetal fibers (inuline), dextrose and fructose to obtain a
specific Water Ice Fruit “Easy Weight” Base. With these Bases
you will need to add hot water and sugar only, besides the
characteristic ingredient that gives the chosen flavor. For those
who prefer to use their own milk, “Quick Weight” Base exists,
without milk in powder.

Sour cherry Stracciatella, traditionally famous for the true
Amarena sour cherries (that are candied without sulphuric
anhydride, with only their own color and flavor), Agrimontana
offers a sour cherry stracciatella (for “variegato” ice cream) that
is absolutely natural: 80% made from sour cherries, sugar, sour
cherry juice, fruit pectin... and nothing else.
Apricot Stracciatella: the Saluzzo (Piemonte) Sunburst round
apricot in par-candied pieces in its syrup of juice and sugar, for
