It gives me great pleasure when my
husband prunes my rose bush in the
courtyard just outside my kitchen
window. His mother Lillian was a
devoted gardener, and I am not sure
whether he just inherited her green
fingers or if she just taught the art of
pruning roses from a tender age.
After he has pruned my rose bush, it is
only a matter of weeks until it just goes completely ballistic, it seems to try to outdo
itself in dramatically producing as many roses as it possibly can!
Another one of my pleasures is going out with friends to a lovely restaurant on a
Sunday and enjoying a long
leisurely lunch spread over the
whole afternoon. This does not
happen very often due to
financial and time restraints,
but at Easter we made a special
effort. This was mainly due to
the fact that I saw a new
restaurant advertising a rather
tempting menu with tantalising
lamb shanks as the main
course and only $20 for the
whole meal. I was pleased to
hear that the owners had
spotted a bit of a gap in the
market in that there are not
many restaurants open on a
Sunday, which is when quite a
few people would actually like
to go out for a meal, so they
decided to just serve Sunday
lunches. In fact I originally
thought that it was rather like
those pop up restaurants that
you hear about in South Africa.

The Telecel Drag Racing Series 2014's
First Edition of the Four held annually,
kicked off on a high note, as usual with
hundreds of supporters turning out to
enjoy this exciting event. Despite the chilly
weather, I was ready for anything, armed
with my camera, and I managed to
secure a nice viewing point near the
Finishing Line.
By my observation, Drag Racing is
proving to be Zimbabwe's fastest growing
motor sport. With 68 vehicles registered
to compete on the day, clearly a marked
increase from around 45 registered for
the last Drags, to spice up the event, for
the first time in my experience (since the
2013 editions), you could see go-carts
from the Karting Club burning some
rubber the Burn Out way, as well as the
BMWs showing us how to do the Burn
Out on the track. In addition, the
glamorous Telecel models took to the
tracks and tested them half way, setting
the crowd on fire with cheering in the
process.
As a new and grand finale, there was a
fabulous Parade of all the vehicles and
bikes which had participated on the day.
If you failed to make it to this fun event,
and still haven't tried out a happy day at
the Telecel Drag Racing, do not worry
yourself. Luckily for you, there are at least
three more events for 2014 lined up and
this makes for a great day out with the
family. The crowd this sport draws is
extremely diverse, drawn from all
communities and all ages, and it is very
social, with plenty of entertainment for the
kids, food and drink on sale, and a very
festive, friendly atmosphere. Don't miss

might even want to enter the Drags – it's
open to anyone using any vehicle they

Siba is a young and dynamic
food enthusiast who brought
style and charisma to South
African TV. She is the cooking show host of Siba's Table
on Food Network which
debuted in September 2013
and was an instant hit; airing
in more than 90 countries in
Europe, Middle East and
Africa. She is also popularly
known for her award winning
previous cooking show,
Cooking with Siba, which
aired on MNET's Mzansi
Magic during her term as
food editor at Drum
magazine.
This part time beauty model,
wife and mother is also
skilled in public speaking and
MC's various food and other
events, accepts invitations to
be a motivational speaker to
scholars and students where she
uses her celebrity status to
positively influence and inspire the
youth throughout the country,
advocating education and hard
work as the key to success!
Siba is a woman of faith and
believes in giving back and is now a
patron for Foodbank South Africa,
an organisation that fights against
hunger and malnutrition through
food rescuing. She also assists in
other community based projects that
help women, teenagers and children
affected and infected with HIV/AIDS.
Siba is excited to be coming to
Zimbabwe for the first time
to be the celebrity guest judge
at The Rainbow Towers Food Fest.
The Rainbow Towers Food Fest was
born out of the need to create an
annual event around the Africa Day

holiday, from the 23rd-25th of
May 2014. The food festival
will allow the public an opportunity to celebrate food, and
its differences across cultures
and borders.

However, after my spontaneous first reaction,
I did start to get in a bit of a panic, as there
were no reviews of this restaurant and I
started to think that it might be absolutely
terrible. In fact, as I get older I realise that I
have to fight against being an overly cautious
type of person and make a special effort to
get out of my comfort zone more often.
Usually when I go to a restaurant, I make
sure that a friend has recommended it and
been there fairly recently. I am a bit fussy
when it comes to eating out in that I do

expect the food to be better than I can cook
at home and ideally there should be some dishes which I do not usually cook myself.
Anyway seeing as the price was so reasonable, we decided to throw caution to the
wind, and risk it.
I have to say that my reservations were totally unfounded and we discovered a
wonderful new place to eat on a Sunday. “Simple Pleasures” is run by two delightful
sisters, Mary and Sue, who love to cook in memory of their late mother, who was a
passionate cook. Mary also does catering at

Expat events and Sue is an accountant. The
Lamb Shanks were superb and succulent and
lived up to all expectations. Although I had
mine with roast potato wedges, I quite
enjoyed a taste of my husband's “sadza ne
mapfunde” which was a very delicious but
wholesome type of sadza that I had never
tried before. We loved the unusual salads,
especially the lentil and spinach one.
Everything was cooked with flair and nobody
found anything to complain about at all,
even Lisbet, my Norwegian friend, who like
me, is also a bit of a foodie. The setting was
also just perfect, the tables are on a huge
veranda where you can just gaze out at the
garden away from the hustle and bustle, feeling very chilled out.

This week's recipe makes use of another
favourite plant in my garden, my faithful
Rhubarb, which I planted about 4 years ago.
It seems to need no attention and usually I
make a very easy rhubarb crumble pudding
each week with custard. Since it was the
holidays, I thought that I would try another
recipe for Rhubarb, which uses almonds
instead of white flour. I love to cook with
almonds and this recipe is very similar to

Bakewell Tart. People often ask me for
gluten free recipes and this recipe is ideal for anyone who is gluten intolerant. I also
find my husband and son do not boycott this tart since it is made of almonds rather
than white flour and therefore it fits in with their diet ideas. They can devour it quite
quickly after a race so it does not last very long, which is an advantage for me.
For this recipe, it is quite easy to make your own flour in the food mixer. It is also a
lot cheaper to buy the whole almonds and oats rather than the flour that is sold in
the shops. You will

Rhubarb Almond Tart
Ingredients
Gluten Free Pastry:
˜ 3 tablespoons of butter
˜ ¾ cup of oat flour
˜ ¾ cup of almond flour ˜ 1 tablespoon of sugar
Filling:
˜ 500g rhubarb, sliced
˜ 100g sugar
˜ 150g butter
˜ 150g sugar
˜ 200g ground almonds
˜ 100g rice flour
˜ 2 eggs, beaten
˜ ½ teaspoon of almond or vanilla essence
˜ Icing sugar to dust
Method
˜ In a food processor, add all the ingredients and
pulse for about 30 seconds. The mixture should
form a ball or at least be able to be pressed
together without crumbling apart.
˜ Butter a pie dish.
˜ Press the pastry flat on the bottom using a spoon
or your fingers.
˜ Bake at 180°C for about 10 minutes.
˜ Remove from the oven and let it cool while you
make the filling for the tart.
˜ Preheat the oven to 190 °C.
˜ Put rhubarb in a saucepan and cover with sugar.
˜ Simmer for about 10 minutes until softened.
˜ Strain off any excess liquid.
˜ Cream the butter and sugar until pale and fluffy.
˜ Fold in the ground almonds and ground rice,
alternating with the eggs.
˜ Stir in the essence.
˜ Spoon the rhubarb into the pastry case and then
plop on the almond mixture.
˜ Gently spread over with a knife so that the
almond mixture covers the rhubarb evenly.
˜ Bake for 30- 35 minutes until golden.
˜ Dust with icing sugar when cool to serve with tea
or coffee.

Animal Welfare and Wildlife Conservation
AWARE Trust is run by vets and focuses on animal welfare, wildlife conservation and
research. Campaigns in rural areas adjacent to wildlife areas vaccinate, sterilise, detick, de-worm and improve quality of life for domestic animals. This assists in broader
goals by contributing to improved farming, better quality of life for rural people,
resultant decreased poaching, and preventing spread of diseases from domestic to
wild animals. AWARE educates children and adults on animal care and conservation,
does research on health of wild and domestic animals living adjacently, rehabilitates
and releases wild animals injured by snares, vehicles, people, and dehorns rhino. To

SPCA FUNDRAISING & PROJECTS UPDATE: Since the start of the SPCA fundraising
project, amazing strides have been taken in the upgrading of the kennels and surgery.
The surgery has had a total face lift; The parvo unit has been moved and rebuilt away
from the surgery and recovery kennels have rebuilt. Surgical equipment, vaccines,
heart and oxygen level monitors, latest blood testing equipment and more have been,
or are being purchased. The incinerator has been installed and is working well. The
SPCA can now charge a nominal fee for use of these facilities.
