TORTILLA de bacalao
Tortilla de Bacalao
Another traditional dish from the Basque country, Tortilla
de bacalao. A delicious cod omelette made from simple
ingredients. Perfect paired with our Rioja Viura.
1. Remove skin and bones from the cod and flake into small
pieces. Finely chop the garlic cloves. Cut the peppers and
shallots into julienne strips. Place them in a frying pan with a bit
of olive oil and sauté.
2. When they start to turn golden brown add the cod and fry for
3 to 4 more min. Set pan aside and strain off any remaining oil.
3. Beat the eggs, season with salt and chopped parsley and then
pour into the pan. Place the pan on a low heat and cook the
omelette for a further 5 min until the eggs are set and the
bottom is golden (use a spatula to look underneath).
4. Place a plate on top of the pan and carefully flip over the
tortilla. Add some more oil if necessary and slide the tortilla
back into the pan. Cook for a further 3 to 4 min and serve.
What you will need:
• 400gr of cod
• 6 eggs
• 2 green peppers
• 2 shallots
• 2 cloves of garlic
• Olive oil
