catazine for real women (and their men!)
Welcome to the fourth issue of Size 5, Wolky’s very own “catazine”: a cross between
a catalog and a magazine for you and your feet. Size 5 (European size 38, US size 7½)
has been the shoe industry’s sample size for many years. It’s a light-hearted nod to
the fashion world and its fixation on size 0 models. Size 5 doesn’t think in categories
but makes space for real women – inspiring and enterprising girls and women of all
ages, types and sizes. Size 5 is for women with their own style who won’t be dictated
to by fleeting fashion trends but make a conscious decision to opt for quality and
comfort. Women who express their personality in the way they dress.
We also thought about the men, as you can see on page 30. Here you can find some
models from our Cloud 9 collection, the menswear label from Wolky.
Size 5 is published twice a year to coincide with the launch of Wolky’s new shoe
collections: the spring/summer and fall/winter collection.

In step with Wolky
I was in Rome again last fall. This time with my mother and my daughter.
And as the saying goes, “When in Rome, do as the Romans do.”
Oh, how we suffered (not)! So every morning we had our first cup of coffee of
the day in one of Rome’s famous little bars. We lunched on fine pasta and a

good glass of Italian wine. And we had another hot meal for dinner after 9 pm.

But there was one area in which we didn’t follow hot on the heels of Roman
women. Because we had left our high heels at home.
And if there’s one city that’s totally unsuitable for high heels, it’s Rome. Just
think about the great cobbled Appian Way or the many beautiful squares
with their uneven flagstones. Brave is the girl who can cross them without
damaging her ankles or her heels.
Naturally, we all had our Wolkys with us; as I work for the brand, we have quite
a few pairs between us. And it was a good thing we did. You see, I wanted to
show my daughter as much as possible, so I had come up with a program so
jam-packed that other people would probably have needed three trips to Rome
to fit it all in.

so they haven’t been cleaned
partly by foot and partly by bike (being Dutch!). Not only in the old city center

something I never managed to do B.W. (Before Wolkys).
It just confirms what we at Wolky have known for a long time: we don’t make
shoes to sit around and look pretty in. In Wolkys you can explore the world.

designer. Because Leontien Zijlaard-van Moorsel has got together with Wolky to design this limited
edition of Flow 4351 Zela. Like Leontien, these boots are sporty, accessible and feminine. And incredibly
comfortable too! The slightly upturned toe gives the foot an easier roll-off, the footbed is removable and

“Flow doesn’t just

“The way I felt when I had anorexia is something
I wouldn’t wish on my worst enemy,” says Leontien
Zijlaard-van Moorsel. As a professional racing
cyclist she won almost everything there was to
win and is regarded as one of the most successful
Dutch sports stars of all time. But her greatest
victory was not at the Olympics or in the Tour de
France. It was conquering her eating disorder.
Leontien: “When I look back over my career, I would
do it all again – except the time when I had my
eating disorder. When you have anorexia you think
that’s the only thing you’re good at. It takes control
of your entire life. It’s really difficult and lonely.”
Leontien conquered the illness after ­battling for
many years. “That feeling that you are in balance
again – you just can’t compare it with anything.
I know now that you can come of it stronger, and
I want to show people that.”
Leontien has been raising money for eating
disorder-related projects through the Leontien
Foundation for many years, and later this year
the Leontienhuis (Leontien House) will be opening
its doors. “It isn’t a treatment centre,” Leontien
explains, “but an addition to the fantastic help
that is already available. Our aim is to help people
with an eating disorder on their way to a healthy,
positive future. By offering a sympathetic ear,
discovering what their qualities are, where their
interests lie.”
The help available at the Leontienhuis will be
completely free, because Leontien doesn’t want
to exclude anybody. “I just couldn’t find it in my
heart to do that,” she says. To make this all happen,
she is trying to raise as much money as possible
through fundraising, donations and even designing
her own shoe: a limited edition version of the Flow.
“I’m a total fashion freak,” says Leontien, “and
this shoe looks so cool. Plus it’s also incredibly
comfortable.”
The toe of Leontien’s Flow turns upwards, making
the foot roll off more easily. The wedge heel lends

“I love doing something different every time”
Not too many frills and flounces, just simplicity
and quality. Marieke Jacobs’ leather shoes, bags,
wallets and cases are designed to give their owners many years of pleasure. Email now and win

She has more than 50 pairs of shoes in her closet.
A number to be jealous of, sure, but the story
becomes even more special when you find out that
Marieke Jacobs designed and made most of her
collection herself. “My earliest memory is being at
home drawing,” she says. “I think I went through
my entire school career drawing. So the logical
step was to go on to the HKU University of the Arts
in Utrecht.”
In between she also studied architecture for a
short time, but ultimately the shoe design course
at Nieuwegein beckoned. “Architecture is so big
and all-encompassing. You have to negotiate with
lots of different people. But I found that I preferred
being in charge myself. And I can do just that with

shoes, even though I only make them for myself
and friends and family at the moment. Eventually
I would like to sell them in stores, but that hasn’t
happened yet.”
That’s because while she was working on shoes,
she fell in love with another product: bags. “On
the shoe design course I learned how to work
with leather and discovered how flexible it is, all
the things you can do with it, and how wonderful
it smells. It is incredibly versatile; it comes in lots
of different types, colors and finishes. I thought:
I have to do more with this. And that’s what gave
me the idea of designing my own leather bags and
accessories.”
My Little Pony
Marieke’s collection is on sale at Etsy.com, and
besides leather bags it features wallets, brooches,
clutches and chains. “My designs are characterized
by their simple shapes,” says Marieke, who has a
studio full of sketches, materials, and tools behind
her house in Groningen. “Not too many frills and
flounces. For me it’s all about the shape, the structure, the material. And ease of use, because my
designs are really intended to last for years.”
She usually finds the inspiration for her designs
spontaneously. “I follow fashion trends and developments in architecture and art a little, but I think
up most of my ideas while I’m going about my daily
life. For example, I recently found a My Little Pony
at the market, like we used to play with when we
were young. I saw all those colors and suddenly
came up with an idea for a range of cases with different colored zippers.”
In the same way, a beautiful cloud inspired her to
create a clutch with a strap in the shape of a cloud.
And now she has produced this clutch in a different color especially for Wolky. Marieke: “That’s
another new challenge. I love doing something different every time. My bags are usually one-offs, or
I might make a few more the same afterwards. But
all my designs are limited editions. I love staying
small-scale.”

Marion Thus & Henk Meinsma: culinary duo
wining & dining
It’s the kind of place where you step inside and think: yes, we’re going to enjoy this. It doesn’t just serve
great food, it has a great atmosphere as well. A 30-minute drive from the Wolky's Emmerich offices is
the Raedthuys, a restaurant and bar in the Dutch town of Doetinchem. It may look like an old-fashioned
Dutch pub from the outside, but the food has star quality. Owners Henk Meinsma (48) and Marion Thus
(42) share one of their favorite recipes especially for Size 5: home-smoked Irish salmon with piccalilli
bavarois and crème de Vacherin.
“People walking in for the first time often assume
we only serve bar snacks,” say Raedthuys ­owners
Marion and Henk. “Because on the inside it looks
like an old-fashioned Dutch pub. It’s a really snug
interior and there are album jackets all over
the walls. But when you sit down at your table,
you immediately realize we are not just another
­average Dutch bar. There are linen tablecloths
and gleaming wine glasses on the tables, we have
trained our staff to be as helpful as possible, and
we have an extensive menu ranging from homemade tomato soup and Irish salmon to American
rib-eye and lobster.”

Marion and Henk met at the Herberg De Gouden
Leeuw hotel restaurant in the Dutch town of
Bronkhorst. Henk was the master there and Marion
the apprentice. Henk and Marion: “Since then
we have both worked at various Michelin-starred
restaurants, but we have never really made a big
deal of that. When you have a Michelin star, people
tend to think it will cost a fortune to eat there. They
come up against an imaginary threshold. But at the
Raedthuys we aim to serve food that is exceptional
but also affordable. Behind every dish there is a
story that Henk or one of our staff explains at the
table. The bread, the ice-cream, the patisserie.
We make everything ourselves and cook with seasonal products from the surrounding region, the
Achterhoek, wherever possible.”
Elegant presentation
For many years Marion and Henk spent every day
among the pots and pans in various top restaurant
kitchens. Marion and Henk: “When we started the
Raedthuys, we had to decide who was going to
do the cooking. We didn’t both want to be in the
kitchen.” So Marion is in the kitchen and Henk
manages front of house, but they always create the
menus together. “What is special is our elegant
presentation and the focus on flavor. Our abiding
principle is that we never make concessions with
the products we use. For example, last year some-

Home-smoked Irish
salmon with
piccalilli bavarois and
crème de Vacherin
Henk: “I chose this recipe because it is typical of
the Raedthuys. We smoke the salmon ourselves over
particular types of wood chips. But, if you don’t have
your own smoking oven, you can buy lovely smoked
salmon from a good fishmonger. In combination with
the bavarois and the Vacherin, it makes for a very
exciting plate of food.”
Serves 4. Ingredients:
• 62 g. (4 tbsp.) piccalilli
• 65 ml. (2 fl. oz.) vegetable stock
• 125 ml. (4 fl. oz.) cream
• 3 sheets of gelatin (or 3/4 tbsp. powdered gelatin)
• Approx. 250 g. (8 oz.) Irish salmon
• 1 heaped tbsp. Vacherin cheese
• Herb salad leaves to garnish
body came along offering to sell us some racks of
lamb. When we asked what it was, it turned out
to be frozen meat from New Zealand. So we sent
them packing. We would never do that. We only use
fresh lamb.”

Method:
• Home-smoked Irish salmon
Buy a nice piece of smoked salmon from your
fishmonger. Or smoke it yourself! To do that, place
some wood smoking chips in a smoker pan (use
oak and Jack Daniels wood chips) and heat on the
stove until they are glowing. Place the salmon on
the rack in the smoker pan. Put the smoker pan in
the bottom of the oven (do not switch the oven on).
Leave to smoke in the cold oven for about 30 minutes. Remove the skin and cut into slices, then roll
each slice into a little rosette.

iccalilli bavarois
Puree the piccalilli in a food processor. Add
the gelatin to the hot vegetable stock. Add the
­piccalilli. Allow to cool. Whip the cream with a
pinch of salt and a little ground pepper until it
has the consistency of cream. Mix into the cooled
­piccalilli mixture. Press the mixture into a square
mold and leave to set.
• Crème de Vacherin
Mix the Vacherin cheese with a dash of cream.
Put into a piping bag.
• To serve
Cut the bavarois into 2 cm. (half-inch) square
cubes. Put some herb salad leaves in the middle
of a rectangular plate and arrange the bavarois
cubes on top. Pipe the crème de Vacherin over the
bavar­ois. Arrange four rosettes of salmon on each
plate.
