• Hotels are looking to take the fine dining experience of their restaurant up to the

Wine stations which allow a greater variety of wine to be “on tap” properly stored and preserved, while
available by the glass. A great way to improve profits on price-ier options and introduce patrons to new
wines.
Comparing 2012 against 2011, the number of wine bottles ordered in restaurants and bars declined 13
%, while the number of wine glasses increased by 4 %. The average bottle costs over $43 and the
average glass costs $9.60 (Source: Guest Metrics 2012)
Growing varietals in wine service: Sauvignon Blanc, Pinot Noir, and Malbec. And declining variety in wine
service: Chardonnay, Cabernet Sauvignon, Merlot, and Pinot Grigio. Despite the loss in share for those
varietals they still held the top spots for 2012.The top 5 varietals for 2012 were Cabernet Sauvignon,
Chardonnay, Pinot Grigio, Merlot, and Sauvignon Blanc. Wine glass shapes must meet those changing
demands.
Guest checks with only wine sales are 25 percent higher than checks with only spirit sales and 78
percent higher than those checks with only beer sales.
