Message from Mayor Burcroff
First I want to thank those that came to my State of the City address last
month. If you weren’t able to attend, please take a look at our Cable
Channels or visit YouTube to watch the entire presentation from home or at
the Senior Center. I’ll also be giving you an overview of my State of the City
Address at the Valentine’s Day luncheon on the 17th. I’d love to hear your
feedback on our plans for this coming year—my door is always open for you.
February is Black History Month and this is a time to remember and honor
the many, important contributions people of color have made not only in our
country, but in Romulus and around the world. I hope you’ll join us at the
free, annual Soul Food Dinner which kicks off Black History Month here in
our City on Tuesday, February 9th at 6:00 p.m. at Romulus High School.
There will also be other events to celebrate this month including a local
historic Bus Tour and others at the High School and Library. Please check
our website for all the details.
Have a wonderful month and I look forward to seeing you at the Valentine’s Day luncheon.
Sincerely,
LeRoy D. Burcroff, Mayor of Romulus

Recipe Exchange: Panera Cheese and Broccoli Soup
Ingredients
1 T. melted butter
1/2 medium onion, chopped
1/4 c. melted butter
1/4 c. flour
2 c. half-and-half cream
2 c. chicken stock
1/2 lb. fresh broccoli (about 3 cups), chopped into
bite size pieces
1 c. carrot, julienned (can buy matchstick carrots
in produce section)
1/4 t. nutmeg
8 oz. grated sharp cheddar cheese (2 cups)
salt & pepper
Directions
1. Sauté onion in 1 T of butter. Set aside.
2. Cook the 1/4 cup melted butter and flour using a
whisk over medium heat for 2-3 minutes. Stir
constantly and add the half & half.
3. Add the chicken stock and simmer for about 10
minutes.
4. Add the broccoli, carrots and reserved onions. Cook
over low heat 20-25 minutes.
5. Add salt and pepper to taste. You can leave the soup
chunky, or blend about 1 cup of the soup and stir it in
for a smoother soup (recommended). Return to low
heat and add the cheese. If your heat is too high, the
soup can get grainy. Stir in nutmeg.
6. Serve with crusty bread.
