We are excited April is here and we are gearing up for our wonderful new
programs like the Pinterest class I’m leading on April 14th. This is a great
online resource filled with all kinds of new, wonderful information, education,
and decorating and beauty tips. Come sign up and join the fun.
Did you say baseball? Get ready to join us for our Tigers games for the
summer, seats are limited so please sign up early.
If you are interested in the Senior Olympics it's time to start practicing! We
are ready to bring home the gold for our City! Get on board, challenge

Message from Mayor Burcroff
Spring is here and I know how excited we all are for nice weather. This is the
perfect time to start being more active and getting together with friends.
Baseball is something we all can rally around, and the Senior Center makes
the perfect venue to sit around and cheer on our Tigers.
Or take advantage of some of the great deals on trips to Comerica park that
the Center has planned.
My annual Mother’s Day brunch is coming up next month and we need you
to RSVP by April 25th. This is one of my favorite events and I am really
looking forward to this time where I can show appreciation for all that our
mothers, grandmothers and aunts do for all of us.

Recipe Exchange: Whole Grain Salad with Asparagus and Parmesan
Ingredients
2 c. dry grain of choice*
3/4 lb. fresh asparagus, trimmed
1 c. red/yellow cherry tomatoes, halved
3/4 c. chopped walnuts
3/4 c. dried cranberries
1/2 c. chopped fresh parsley
1/3 c. chopped fresh chives
1/4 c. balsamic vinaigrette, or to taste
1 c. shaved Parmesan cheese, divided
*Any whole grain works well. Try farro, spelt,
wheat berries, quinoa, barley or jasmine rice.
Directions
1. Cook your grain of choice according to package directions and allow to cool.
2. Bring a large pot of lightly salted water to boil. Add the asparagus and cook uncovered until
tender, about 3 minutes. Drain in a colander, then immediately immerse in ice water for several
minutes until cold to stop the cooking process. Once the asparagus is cold, drain well, and
chop. Set aside.
3. Place grains, asparagus, tomatoes, walnuts, cranberries, parsley, and chives in a large bowl.
Drizzle the balsamic vinaigrette over and sprinkle about 3/4 cups Parmesan cheese, then toss.
Top with the remaining 1/4 cup of Parmesan cheese. Serve at room temperature.
