neither are her clients. As the new resort
and healthy living manager, Cheri keeps
busy designing and organizing Vintage
Hotels’ resort activities. Open to all ages,
Cheri’s weekly program runs the gamut
from yoga classes, gingerbread making
and wine tastings to aqua pilates, floral
seminars and book clubs. “It’s important
that our guests take an experience home

with them,” Cheri explains. “We’re really
lucky because we have a lot of great teams
to draw on for our programs―like our
culinary chefs and clippings department.”
Guests can take part in Cheri’s activities
as part of their accommodation. However,
corporate teams and the general public
can also buy an annual membership to
take advantage of the many programs,
activities and gym facilities on site. A
graduate of the leisure studies program at
Brock University, Cheri ran her own highend boutique―White On White―in St.
Catharines for several years before moving
out to Winnipeg to be a corporate trainer.
Now that she’s back in Niagara, Cheri
says she having the time of her life. “It’s a
perfect marriage of everything I’ve done,”
she says of her new position. “I just love it!
I have the best job in the world.”

C HR IS SM Y THE HAS GONE B AC K to his roots these days―
in more ways than one. The Niagara Falls native began his
career as an apprentice at Prince of Wales in the summer
of 1989. After running fast-paced kitchens at Riverbend
Inn & Vineyard and Queen’s Landing, however, Chris was
named at Executive Chef at Prince of Wales in 2011. “You
have to fit the demands of the client,” he says of his
role, “so I give them a taste of Niagara―a little
piece of what we’re all about.” To Chris that
means working hard to keep his menus upto-date, adding seasonal produce whenever
possible. He’s also made a concerted effort
to build a “farm to table” philosophy
by developing partnerships with local
farmers. “We’re very fortunate being
from this area,” Chris says. “The
bounty here is amazing.” Whether
it’s managing his Millenial CO-OP
students or acting as a calming
influence in the kitchen, the
25-year culinary vet says
running a Four Diamond
establishment in the
middle of farm country
is simply the best
of all worlds. “I love
being able to do what I
do,” he explains. “I’ve
had a lot of job offers to go
elsewhere but I’ve never taken
up the opportunity. Niagara ticks
a lot of the boxes for me.”

“I was born into it.” A self-confessed foodie, Mark
spent many of his formative years living above
his family’s restaurant in Dunnville called The
Heart Forest. Here, he’d often help his chef
parents out, cutting carrots and peeling
potatoes when the need arose. Years
later, that early environment would
fuel his passion. A Niagara College
graduate, Mark eventually
became Niagara’s youngest
certified chef, joining the
Moffat Inn’s kitchen staff
at the age of 20. These
days, at Pillar & Post,
Mark prides himself on
providing their guests
with upscale traditional
dishes made completely
from scratch―comfort
food that they keep
coming back to time and
again. Even though he’s
been a member of the
Vintage Hotels team for 20
years, Mark is forever learning
something new―and brings that
sense of perfection right to the
table. “Fine dining is a journey,”
he says, “not the destination.”

Using a stainless steel bowl and your
hands, combined all ingredients
together (excluding the panko crumbs)
Add ¼ of the Panko until a firm
texture has been achieved
Form the mixture into 2 oz size
cakes until all mixture is used
Using a hand blender or food
processor take the remaining bread
crumbs and blend to a fine texture
or powder like consistency
Coat each cake in the fine
panko crumbs
Heat olive oil in a pan
on medium heat. Place
the cakes in the pan and
cook until golden brown
before flipping. Cook
until both sides are

HEN M AR C LY ONS W AS GR OW ING U P , his friends would
often get footballs and hockey sticks for their birthdays.
In Marc’s case, he’d get cookbooks. And it was a sound
investment. Marc is now executive chef at Queen’s
Landing, having worked at various four diamond
restaurants in the Vintage Hotels chain for the
past 16 years. Using classical French and
Asian cooking influences, Marc and his
team try to keep it fresh by developing
menus that tempt and surprise their
guests. “The biggest trick is trying
to find that happy medium,” Marc
explains. “You try to make it more
uniform for the guests. At the same
time, you want to take it up a notch
and have a couple of shock items
on there.” Having taught at the
Niagara Culinary Institute, Marc
is a big believer in mentoring the
next generation. Every year, he
invites Niagara College students
to work in his kitchen on CO-OP
placements. “They’re all pretty
green when they get here,” he
says of his 18-year-old charges,
“so it’s a bit of a culture shock. But once
you throw them into the fire, you get to
watch them grow.” To Marc, working as a
chef at a jewel in the Vintage Hotels’ crown
like Queen’s Landing is a dream come true.
“It’s definitely a labour of love for me,” he
says. “If you can find that balance between
family and work, it’s a life well-lived.”

2016 highlights like “Alice In
Wonderland.”

“SOMETHING OLD, SOMETHING NEW” is a
saying we often associate with weddings.
But it’s also an adage that perfectly
describes Niagara-on-the-Lake’s Shaw
Festival―a seamless marriage of tradition
and innovation that’s been part of the
fabric of Niagara since 1962.
Tim Jennings, Shaw Festival’s executive
director, feels it’s a harmonious relationship
that has paid immense dividends to
business owners and ticket buyers alike.
“We’ve been a major driver of the
economy for a long time,” he explains.
“Right now, Shaw accounts for one
fifth of the cultural economy in Niagara.
When it comes to ticket buyers, most of
them go to see multiple productions,
and 60 to 70% of them stay overnight.”
Now entering its 55th season, the
Shaw Festival performs the works
of George Bernard Shaw as well as
his contemporaries, and some select
modern playwrights.
Attracting audiences from Canada and
the U.S., Shaw produces 10 to 12 plays
each year at its four stages―the Festival
Theatre, the Court House Theatre, the
Royal George Theatre, and the Studio
Theatre. As the fifth largest repertory
theatre company in North America in terms
of size and budget, the Shaw Festival gives
more than 600 performances annually to
over 250,000 people.
This year marks the final season for
longtime artistic director Jackie Maxwell.
However, Shaw Festival’s 2016 lineup offers
a little something for everyone with many
of Jackie’s favourite stories. That includes
Oscar Wilde’s explosive “A Woman of No
Importance,” Thornton Wilder’s beloved
“Our Town,” and one of the highlights
of the summer―“Alice In Wonderland”
based on the book by Lewis Carroll.
In the case of “Alice In Wonderland,”
this is the very first time a commissioned
work has appeared on the Festival
Theatre stage.
“We’re trying to attract the next
generation to the Shaw with the show,”
Tim says. “We’ve developed something
that’s accessible to the whole family.”
“Alice In Wonderland” is taking
things to a whole new level for Shaw in
several respects. Over 100 costumes are
being used and nineteen original songs
have been written especially for the
production. While the performance relies
on cutting edge videos and fantastic
special effects to tell Alice’s tale, the
mammoth production is firmly based in
the realities of the Victorian era.
“This is the most ambitious production
we’ve ever done,” Tim explains. “It’s not
the Disney story at all. It’s very much
based on the original book.”

M ATT TATTR IE IS B U ILD ING SOM ETHING special in
Niagara-on-the-Lake. Originally planning to get
into the construction trade, a summer job in the
kitchen at Pillar and Post made him realize
just how much he loves the creativity on
the plate. Flash forward to 2016, and
Matt has given up building houses for
building that perfect meal at Zees
Grill. “My style is scratch,” says
the executive chef. “I’m very
focused on using local ingredients
and things like fresh cheeses,
jams and granola―instead of
importing stuff in.” At Zees, much
of his work involves ordering,
preparing food, and creating and
costing menus. “I give our guests
that little something extra,” Matt
says of his menus. “At the same
time, you want to have something
for everyone. That means making sure
I have the basics like fish, chicken, steak
and vegetarian meals.” Open for breakfast,
lunch and dinner, Zees Grill is located right
across the street from the Shaw Festival.
With their busy theatre-going traffic, Matt
and his staff serve over 500 patrons on a
typical day―but it’s a workload they enjoy.
“People want to be in and out,” Matt
explains, “so we have a fast menu, one
that’s fine dining and upscale at the
same time. It’s all very fast paced―but
creativity is definitely allowed.”

Lamb sirloin
Honey
Finely crushed pecans
Truffle oil
Green French beans
Beef jus
Ground 5 peppercorn blend
Regular mashed potatoes
Vegetable oil
Butter
Salt & Pepper

Make your Mashed Potatoes.
Cut top ends off French beans and
blanch them in boiling water for 2
minutes. When done take them out into
a ice water bath.
Preheat a sauce pan to medium
high heat. Add oil. Drop your rack of
lamb fat side down along with your
lamb sirloin in the pan. Add salt &
pepper to the lamb as needed.
Sear the lamb for 30 sec. in the
pan, then transfer the lamb into
the oven for 15- 17 min. (Med Rare)
Once lamb is cooked to your
desired preference takeout of the
oven and let it rest for 5 minutes. While
Lamb is resting add your honey and
pecans to each piece of lamb.
In another sauce pan heat up your
beef jus and add the ground pepper.
Take another sauce pan and heat to medium
high heat and add your butter. Take your beans
out of the ice water(drain) and sauté your beans in
the butter for 2 minutes. Add salt & pepper to taste.
Take your mashed potato portion of your desire
and add the truffle oil.

EVER Y D AY , J ENNIFER HOLM ES turns a simple request into a work
of art. A graduate of the Niagara Parks School of Horticulture,
she originally worked as an independent floral designer.
However, Jennifer began doing contract work for Vintage Hotels
and ended up joining them full-time in 2010. As their lead
designer, she works in “Clippings”―Vintage Hotels’ in-house
floral and decorating department. “I like having the flexibility
to do what I love,” Jennifer explains, “and here, you’re doing
multiple things at one time.” Based out of Niagara-on-theLake’s historic Miller House, Jennifer and her team take care of
decorating seasonal decor for special occasions like Christmas,
Easter and New Year’s Eve. They also take care of in-house
functions and weddings, and provide flowers arrangements for
dining rooms, lobbies, and guest suites. They even offer design
classes and tutorials for guests and the community alike. It’s
an exciting job, and one that always makes Jennifer―and her
clients―smile. “I have a passion for making things beautiful,”
she says, “and I love getting to use my creativity.”
