Our Passion
To combine their passion for Hawaii and Italian
gelato, Dirk Koeppenkastrop and his wife
Nicole Lueker founded IL Gelato Hawaii in
2010. As a University of Hawaii graduate with
a Ph.D. in physical chemistry and a corporate
food background, Dirk studied at Carpigiani
Gelato University in Bologna, Italy.
Later, he trained and worked with the
“world champions” in Europe.
His background in the natural sciences
allows him to bring gelato making to a
new level. Inspired by Roy Yamaguchi
and Alan Wong, Dirk always wanted to
fuse Hawaiian and Asian flavors with traditional
Italian gelato making.

is an Italian style gelateria making handcrafted,
natural and delicious authentic Italian gelato
and non-fat sorbettos.
We use only the very best and freshest
ingredients and do not use any
preservatives, artificial colors or flavoring.
We take pride in excellent quality and

Our gelato is freshly made in Hawaii.
By using local farmers and suppliers we support the “farm to table” movement.
We are dedicated to true artisanship of handcrafted gelato the way it is done
by the finest gelaterias in Italy, using our own recipes, original Italian gelato
equipment, and authentic processes.

We usually supply 5 liter (6 quarts),
10 liter (3 gallons) or 20 liter containers
per flavor, which we will provide on a
deposit/return basis.
