ISSN 1296-3259 Anglais EDITORIAL Some of you use the designations "National Board", "National President" or "International President". I understand the expectations of such use. I would point out that the Board as the President, have the title of "Board of the Académie Culinaire de France", “President of the Académie Culinaire de France" for all members wherever they live in the world. By its statutes the Académie Culinaire de France, lives in oligarchy; Emerites and Titulaires members represent all members. They elect a Board and a President who manages the Académie Culinaire de France. The Board and the President report on their activities at the General Meetings. To ensure an effective run of the Académie Culinaire de France, the President, in some countries, has given delegation. The Auditor member is then “Delegate President” and his responsibilities are reflected in the statutes. Gérard DUPONT President ADMISSION CEREMONY SWITZERLAND –FEBRUARY 10, 2011 Second meeting of the Swiss branch of the Académie Culinaire de France Restaurant Hôtel de Ville of Crissier, For its second meeting, the Swiss branch of the Académie Culinaire de France has expanded the number of its members: were admitted Philippe Chevrier of “Restaurant Château-Vieux » in Geneva and André Jaeger of “Relais Château Fischerzunft” in Schaffhausen. During the ceremony, Roland Pierroz, former head of Rosalp in Verbier, received the Gold Medal of the Academie Culinaire de France and his diploma in recognition of his outstanding contribution to the reputation of the Swiss gastronomy. The ceremony was attended by Gerard Dupont, President of the Academie Culinaire de France, Gerard Bor, secretary of the Academie Culinaire de France, Benoit Violier Delegate President of the Swiss branch of the Academy, Albert Mudry, Secretary of the Swiss branch of the Academy, the members Fredy Girardet, Philippe Rochat, Henri Gleiber and thirty guests. Gérard Rabaey was unable to attend. Roger Bourban, former winner of the race of the bartenders, presented the event. The ceremony was followed by a cocktail and a dinner prepared by the brigade of Restaurant Hôtel de Ville of Crissier. Dr Albert Mudry Secrétaire de l’Antenne Suisse LAMB DAYS SWITZERLAND - May 9 -10 - 11, 2011 The lamb days were held in a vocational school in Montreux (9 and 10 May) and in the restaurant of the Hotel de Ville in Crissier (May 11) The Culinary Art and Butchering sheep across borders ....... this idea came from three institutions of the Canton of Vaud (Switzerland). The organizing committee consisted of: - Daniel CHATAGNY, Director of the vocational school in Montreux - Jean Pierre GOLAY, President of the “Amicale Vaudoise” - Benoit VIOLIER, Chef, restaurant of the Hotel de Ville in Crissier and Delegate President of the Swiss antenna of the Académie Culinaire de France. The object was to create links between France and Switzerland by combining three professions: food, food service and butchery. The purpose was to convey to these apprentices the skills and knowledge to be acquired in excellence. Six breeds of lamb were on the agenda. Day 1 - Bourbonnais – Sisterons - Mt Saint Michel Day 2 - Pyrénées – Swiss Charolais - Valaisan with black nose Each day, in presence of butchers and cooks, teachers and MOF Butchers presented the Swiss and French techniques of cutting, boning and preparation of meat. Recipes were prepared by joint teams composed of apprentices and Chefs under the supervision of MOF: Day 1 - Benoit VIOLIER Day 2 - Gilles BLANDIN A total of 18 recipes, made with lamb, were cooked with their toppings. The third day, M. Albert Mudry, Doctor, Historian and Secretary of the Swiss Antenna of the Académie Culinaire de France, gave a conference. The three days ended with a gala dinner around the lamb, prepared and served by the cooking and catering team of the “restaurant Hotel de Ville” and apprentices of the vocational school in Montreux. Congratulations to all participants Gérard BOR Secrétaire Général CEREMONY OF ADMISSION IN CONCARNEAU – MAY 9, 2011 This meeting took place in Jean-François Sicallac’s Restaurant, "La Coquille" in Concarneau. We were about 50 people to share this lunch with professionals and local cooking associations. The Deputy and the Mayor were present. Our President, Gerard DUPONT participated and presented the diplomas, medals and address books to Paul GANDILLON and Remy BESOZZI. Eric CHISVERT apologized. Congratulations to those newly promoted. Thanks to the Academicians for the organization as well as M. and Ms. Sicallac for the excellent lunch. We were greeted by Mr. Gilles ARTERO, Sales Manager, and Gilles MORESTIN, Branch Manager. The presentation of the participants was made around a coffee and pastries. Nearly 50 years of experience has allowed DAVIGEL to create efficient facilities, animated by a team of 30 professionals (managers - engineers - nutritionists - experts). With an exceptional know-how, Davigel, work to improve the quality at all stages of production through selection and control. This rigor at all times distinguish the product line "Land and Sea" fresh and frozen. Mr Christopher CLARIGO, product development Manager and Patrick DUPONT, Commercial Director, guided us in visiting the premises. A tasting lunch was served with the products 'Earth and Sea "(shellfish-crustacean-fish-meatvegetable-fruit-bakery). The members of the delegation congratulate and thank all the team of DAVIGEL. ADMISSIONS CEREMONY IN MONTREAL - May 30, 2011 It was on a beautiful boat on the St. Lawrence River in Montreal that the ceremony of admissions took place for MM. Cédric BARBERET, Olivier de SAINT MARTIN, Florian BELLANGER, Jean Pierre TARDY, Pierre Albert ZIMMERMANN, Serge DEVESA and Michel RICHARD was by Jean Louis GERIN as Delegate President of the Académie Culinaire de France for the USA. President Gerard DUPONT presented to each newly admitted member his diploma and medal. As usual, the ceremony of the chair, started by Jean Jacques DIETRICH, was held and Gerard DUPONT offered to Alain MONOD, Delegated President of the Académie Culinaire de france in Canada, the chair of “Michel MALAPRIS”, President of the Academy from 1978 to 1996. CAREER SUMMARY OF ALAIN P. MONOD After an apprenticeship at the “Roseraie” at Maisons Laffitte and academic courses at school Ferrandi (Paris), you got your “CAP Cuisine”. 1964, military service in the Navy at Hourtin in Gironde. 1966, back in Paris, Assistant Cook in the kitchen at the hotel of the Universe and Portugal. 1967, Vegetable Cook at Lucas - Carton, Place de la Madeleine, with Michel Comby. 1968 to 1970, Hotel Crillon and Chez Pauline in Paris. (Paul Genin). 1970 – 1972, A Season in South Finistere and departure for Brussels to manage a luxurious restaurant Avenue Louise. 1972, Arrival at Cassis, Restaurant “Chez Gilbert”. First star in the Michelin guide. 1973 -1975, Chef at “l’Escale” in Carry-le-Rouet with Charles Bérot (2 stars in the Michelin guide and Relais Gourmand). 1976, Back to 'Chez Gilbert' in Cassis after the sale of the “Escale” and in the end of December the big trip to Quebec. First job at the restaurant 'Les Trois Arches' in Pierrefonds West Island. Six years of working well recognized by customers and the press. 1983 - 1986, The Center Sheraton welcomes you as assistant Executive Chef at the restaurant « Le Point de Vue ». Admission to the Académie Culinaire de France by René Varot, President Délégué. 1987 - 1990, Executive Chef at The “Chateau Champlain”. Six restaurants and nearly 80 employees in the kitchen. The sale of the Hotel by the Canadian “Pacific” drove you to accept the offer of the University Club of Montreal. From 1988, you were nominated Delegate President of the Académie Culinaire de France in Canada to replace Francis Cabannes. From 1990 to date, you were in charge of the kitchens of the University Club of Montreal, famous for its wine cellar and gourmet meals. Thus, after nearly 50 years of experience, you're still curious about new developments in our French cuisine and especially in the excellent work done by our winemakers and other wine experts. You are awarded the title of Chevalier du Mérite Agricole in 2008. Then after a short speech, the President of the Académie Culinaire de France presented the cord of Delegate President for the USA to Jean-Louis Gerin. SPEECH OF THE PRESIDENT GERARD DUPONT You were born at August 4, 1957 in Annecy - Haute Savoie. 1975 - Graduated from the Hotel School of Thonon-les-Bains 1974 - Auberge du Père Bise and 1975 - Auberge de la calanque in Bormes-les-Mimosas September 1975, the drama : a motorcycle accident put you out of work for 6 month. In 1976 - Auberge du Père Bise under Francois Bise, your first Master. 1977, Oustau de Baumanière with Jacques Picard. Your Head of Section was Jean Pierre Tardy, admitted at the Académie Culinaire de France, today. In 1978 - Barrière de Clichy. Working with Guy Savoy, your second Master. In 1980, Guy Savoy opened his restaurant and asked you to become his Second-Chef. In 1983, Guy Savoy opened the "Guy Savoy Greenwich”. After a successful beginning, the success started to decline slightly. Guy sent you for "vacation" to Greenwich. When you returned, you made your report and he offered you to take over Greenwich. You agreed with joy and gratitude. 1984. You decided to rename it "Restaurant Jean Louis" 1986, Guy Savoy offered you to buy the restaurant. The same year you married Linda Chardain, daughter of the famous chef Rene Chardain. She was the Second Chef of his father but became Headwaiter, Wine Steward and Manager with you. It has been 25 years since you are in Greenwich. The restaurant has doubled its size (especially the kitchen). The decoration is renewed every 5 years. News of the Académie Culinaire de France: President invited the attendance to observe a minute of silence in memory of Jean-Pierre LEBLAND. The President presented the certification file for culinary programs of the Académie Culinaire de France (Regulation and selection criterion) and thanked M. Bruno NEVEU for his participation in the development of this program. Then the floor was given to MM.. ROUX and DUCROUX who gave results of the contests in which they participated. Georges ROUX commented The Culinary Trophy Jean Sabine held at Soissons on March 23 and highlighted the remarkable work of young candidates. This event was a real success. Pierre DUCROUX gave news about the Trophy Emile Tingaud. This Trophy is reserved for students of vocational schools of Seine et Marne. Georges Roux announced the opening of a subscription in order to finance the purchase of a commemorative stone to MM. Jean Jacques BARBIER, Jean Pierre LEBLAND and S.G. SENDERS and suggested adding the name of George BONTEMPS. He will ensure the perception and management of donations. OTHER TPOPICS: Marc Foucher: 1) Why does the Admission Committee refused to recognize Mr. Christian DUBOIS as a member Auditor while have just been accepted as such Mr. QUINAUT which has the same profile, occupies a comparable position and works in the same company. Answer: The Board has registered the request. Being part of the Commission, the Board can not stay the decision of this Commission. The rule to follow is to write to the Commission and the file will be represented at the next Commission. 2) Why such an animosity against us for 3 years. This situation is not understood and considered unacceptable by a large majority of the antenna and even by some members of the National Office. Answer: I personally have no animosity against the member of the antenn a. What bothers me is a general lack of responsibility. It is an Auditor member who signs the letters and not yourself. The antenna is assigned by one or two Emerite or Titulaire members. 3) A lot of members of the Antenna Bretagne Pays de Loire asked the National Office to take into account the request made by Yvon GARNIER to reorganize the antenna. A project has been submitted to the President DUPONT two years ago. Answer: The antennas are driven by the representatives appointed by the Board and the Board has all direct and administrative expenses. Patrick Dufaud, Winner CHAMPIONSHIP OF NORWAY BAKERY CONTEST 2011 Patrick DUFAUD, member of the Académie Culinaire de France in Norway received the first prize of Pastry Arts in Lillestrøm on February 8, 2011. He was competing against five other candidates. At 40, he has always been fascinated by artistic creation. Behind these results there is a lot of training and a lot of technique.
