Inaugurations n°71 P A R I S N E W S // J U N E 2 0 1 2 With the last days of spring comes the end of work at several Parisian hotels which have had a pre-summer makeover: extension, renovation, conversion … all promise exceptional interior decor and unequalled comfort. Leisure activities are also plentiful with a new way of travelling through the city, Italian style, hundreds of ideas for creative activities, and no less than two ways of discovering Paris from the Montparnasse tower block: on the terrace or at a table in the highest gastronomic restaurant in Europe … Accommodation // Le 9Hôtel***, a haven of peace in the most Parisian of districts Opened in 2007, the 9Hôtel*** has just been extended into the neighbouring building and now offers 48 bedrooms instead of 35. The hotel’s original concept remains the same, that of a ‘home away from home’. The lobby, now a large living space with a cosy atmosphere, is organized into different spaces where it is pleasant to sit and linger, with in particular, a library and a table d’hôte. The decoration features soft soothing shades, a palette of warm inviting colours. All the bedrooms are wellequipped and decorated with a great sense of detail: free Wi-Fi, towel heater, slippers, etc. The new Club rooms have an iPod reader and a courtesy tray. Located in one of the trendiest districts in Paris, the 9Hôtel innovates by offering an ‘express coffee service’ in the morning, enabling those in a rush to take breakfast with them, and also ‘afternoon tea’ or even a picnic basket for an impromptu summer evening on the Pont des Arts or on the banks of the Seine. Just a stone’s throw from the hotel, trendy little addresses rub shoulders with Indian restaurants and gourmet shops, and the covered passageways and major department stores. > 9HÔTEL*** 14 rue Papillon, Paris 9th Tel +33 (0) 1 47 70 78 34 www.le9hotel.com Hôtel Original ... so original indeed! Rather an unusual designer / boutique hotel has just opened in Paris. Located between Place de la Bastille and Place des Vosges, the Hôtel Original is the creation of Stella Cadente and invites the visitor on a journey out of the city and out of time. The rooms, all very different, are largely inspired by fairy tales: ‘Chambre aux merveilles’, ‘Chambre joker’, ‘Chambre reine de cristal’, ‘Chambre forêt enchantée’ … a whole world lies behind each door. Already well-known in the world of fashion, perfume and decorative arts, the designer has chosen select fabrics, carpets, lights and furniture to decorate each of the 38 bedrooms. The other areas of the hotel are equally refined, including the staircase itself where the choice of colours emphasizes the geometry. The surrounding district has long been one of the most vibrant in Paris with craftsmen and art galleries, certainly in phase with the originality of the Hôtel Original. > HÔTEL ORIGINAL 8 boulevard Beaumarchais, Paris 11th Tel +33 (0) 1 47 00 91 50 www.hoteloriginalparis.com PARISNEWS // THE PARIS CONVENTION AND VISITORS BUREAU N°71 // INAUGURATIONS // JUNE 2012 1 Hotel Montmartre mon amour or the creation of a veritable romantic cocoon Ideally situated in the heart of Montmartre, a few steps from Sacré-Cœur, this new boutique hotel has been designed by the creator of atmospheres Sandrine Alouf to whom we owe the Sublim Eiffel or One by the Five. The 24 contemporary guest rooms are decorated with photographs and quotations about love. The theme of the eight Deluxe rooms is the love of famous couples of the 19th and 20th centuries. From the turbulent affairs of Charles Baudelaire and Jeanne Duval to the tormented love of Rimbaud and Verlaine, visitors are invited to step back into the midst of historical love stories. As for the 16 other bedrooms, they are given evocative names such as ‘Secrets d’amour’, ‘Baisers volés’, ‘Montmartre mon amour’ and ‘Paris je t’aime’. Parisian by adoption, the BelgianLebanese designer Sandrine Alouf honours the beauty and poetry of Paris in these themed rooms. This city which lives, buzzes and never ceases to amaze; the romantic city par excellence where so many places are conducive to declarations of love. > MONTMARTRE MON AMOUR HOTEL 7 rue Paul Albert, Paris 18th Tel +33 (0) 1 46 06 03 03 Hilton Paris La Défense**** The Hilton Paris La Défense**** has had a makeover. It is located in the biggest business district in Europe, below the Grande Arche, in the mythical CNIT, a modern listed historical building. After three months of work, it now reveals its two categories of bedrooms: the Double Double Deluxe Rooms (with two queen-size beds for up to four people) and the Deluxe Plus Rooms. The hotel now has 153 bedrooms instead of 148, all with contemporary decor in soothing shades and marble bathrooms. One entire floor of the hotel can accommodate up to 240 people and is devoted to seminars with eight modular meeting rooms with natural light and a panoramic view. Situated only a few minutes from the Charles de Gaulle-Étoile and Opéra metro stations, work is soon forgotten with many opportunities for sightseeing and shopping on the Champs-Élysées or in department stores! > HILTON PARIS LA DÉFENSE**** CNIT, la Défense Tel +33 (0) 1 46 92 10 10 www1.hilton.com Leisure // 2 Wheel Tours, or sightseeing in Paris with a difference Guided sightseeing tours on a Vespa is a brand new way of visiting Paris. The Vespa, the little scooter reminiscent of La Dolce Vita, is an idea of individual transport or transport for two, which offers a great way of getting around quickly and everywhere, in and around Paris as far as Versailles. Four guided tours are available: a general half-day tour of Paris, a more in-depth full day tour, a visit to Versailles, through the woods and villages to the west of Paris, and a visit on the theme of Napoléon, to Paris and the Château de la Malmaison. Other tailor-made visits are possible on request, as well as simple Vespa rentals. Helmet, insurance and locks are provided and delivery is made directly to the hotel. This is what the Montparnasse Tower has to offer from its panoramic terrace on the 56th floor. After several months of renovation work, the Tower now welcomes visitors for a unique experience that begins with an express 38-second ride in Europe’s fastest lift that whisks visitors up to a height of 200 metres. PARISNEWS // THE PARIS CONVENTION AND VISITORS BUREAU N°71 // INAUGURATIONS // JUNE 2012 2 The 56th floor offers visitors numerous audiovisual and interactive installations that enable them to make the most of the view and explore the city in greater depth: exhibitions of 185 photos of historic Paris, multimedia activities, tactile viewpoint indicators, etc. All day until late into the evening, more than 70 monuments can be seen from this unique point — a subtle alternative to the Eiffel Tower or the Arc de triomphe. To round off the visit, a shop and panoramic bar ‘The 360 café’ — the highest in Europe — have been fullyrenovated and offer visitors leisure and relaxation. The proof with Creativeparis! The bilingual website Creativeparis.info, devoted to creative Parisian tourism, was launched in February this year. It was created because artistic activities have expanded rapidly in recent years and are an integral part of daily leisure activities. Today’s enthusiasts are willing to travel to devote themselves to their favourite pastimes and this has led to a veritable creative tourism niche. The ‘Association pour le Développement de la Création – Études & Projets’, which has the task of promoting the Parisian offer, also lists the activities proposed to Parisians and tourists. More than 400 workshops, lessons and other training sessions, either free or paying, are listed. They showcase the diversity and the multitude of subjects selected: visual arts, photography, cinema, floral art, culinary arts, and fashion/design are notably on the programme. As a tourism capital that is rich in culture and which boasts a much envied lifestyle worldwide, Paris now seeks to position itself as a leader in creative tourism. Whether visitors are amateurs or professionals, they will find a wide choice of workshops in all imaginable disciplines on the website. An online search may be made according to their dates of visit, the activity chosen, the place of stay, etc. This new motivation for a break in the city becomes the occasion to combine the apprenticeship of a skill with dialogue and exchange with Parisians. A fine encounter! > CREATIVEPARIS www.creativeparis.info Gastronomy // Under Le Ciel de Paris Fully renovated, the highest restaurant in Europe has taken on the look of a chic sparkling and suspended room. And certainly, from the 56th floor of the Montparnasse Tower, at a height of 200 metres, the panoramic view of Paris is quite exceptional, changing according to the time of day, the light and the climate. A live spectacle of which the City of Light is the star, enhanced by mirror lights and tables adapted to create a convivial atmosphere. Each element contributes to the coherence sought by the architect Noé Duchaufour-Lawrance: like a pebble, the bar is polished by the light with an amber, caramel-coloured basis and textured materials in shades of beige and grey. For the menu, chef Christophe Marchais takes his inspiration from refined recipes using choice products such as lobster, foie gras, caviar, truffles or turbot. The result is imaginative cooking, full of flavour like the delicious lobster consommé with its sea urchin, served in a soup tureen, and the real-false risotto with charlotte new potatoes, cut into the shape of grains of rice, a wonderful discovery. Finally, for its reopening, the Ciel de Paris has a little gourmet treat on the menu: the Bar à mille-feuille, which offers a light, graphic and crispy sweet or savoury millefeuille ... perfect to satisfy a little hunger pang, at any time of the day! Perfect places to picnic on the grass in the sun, or enjoy a sandwich on a bench shaded by trees. Designed in 1867 by Jean-Charles Alphand, it is characterized by steep landscaped cliffs and abundant vegetation. Its cave, waterfall, lake, rocky islet, majestic trees, hanging bridge, paths and lawned areas make it a pleasant place to stroll. It also has a bandstand in the event of a rain shower. The nearby Parc de Belleville extends over a hillside. From the belvedere terrace offering wonderful views of Paris, a flight of stairs runs down the slope. With its arbours, terraces, lawns and waterfall, it is a pleasant place to sit amongst families from the district. More to the east, the huge Parc de la Villette offers many recreational activities and places to relax and mixes architecture with nature. Built on the former site of the Paris abattoirs, it extends over 55 hectares (35 ha outdoors) and is crossed by the Canal de l’Ourcq. It features small red ‘follies’, by architect Bernard Tschumi, a reference to little holiday homes appreciated by the French bourgeoisie in the 19th century. It also has two galleries, themed gardens, and huge grassy areas for picnicking to the sound of free concerts on Sunday afternoon. There is also the Grande Halle, the only remaining vestige of the former animal market. In the Baltard style, it hosts trade fairs, shows and concerts, as well as a bookshop and a restaurant. Still in the east of Paris, by the Seine, the capital’s former wine storehouses have been transformed into a huge contemporary green area that retains all the charm of the past: the Parc de Bercy. It comprises three parts: the flowerbeds, the romantic garden and the huge shady ‘prairie’, a grassy area popular with picnickers. On the edge of Paris, close to the Château de Vincennes, the 30-hectare Parc floral is a delightful place to stroll. It is also an ideal setting for a picnic with its grassy areas, flowerbeds, themed gardens, and ornamental pond covered with water lilies. Note however that there is an entrance fee on Wednesday and at the weekends from June to September due to the many special events and concerts that take place there. Back in the centre of Paris is the Jardin du Palais-Royal, opposite the Louvre. One way of getting into the garden is through the Cour d’honneur (with its 260 Buren columns) of the palace, which once belonged to the Cardinal de Richelieu. Surrounded on three sides by a gallery of arcades, this historical place is a haven of peace with its flowerbeds, central lawns, ornamental pond and benches under the shade of lime trees. Between the two great wings of the Louvre Museum is the Jardin du Carrousel and its triumphal arch. Beyond them is the Jardin des Tuileries. Designed by Le Nôtre, the oldest (1664) and largest public garden in Paris extends as far as Concorde and is laid out around a central path lined with chestnut trees and lawns. There are chairs to sit on around the ornamental ponds or in the shade at the Grand Couvert, the wildest and most wooded part of the garden and a veritable open-air museum with contemporary sculptures. Napoléon III entrusted the relaying out of the area to Jacques Hittorff in 1852, then to Baron Haussmann, who endowed it with lakes, ponds, bridle paths, a waterfall, racecourses, pavilions, etc. Despite the crowds in fine weather, you can always find a little part of the forest for a quiet picnic. The Bois de Boulogne is home to some of the best restaurants in Paris. Le Pré Catelan, with its three Michelin stars, is one of these. Right in the heart of the forest, this Napoléon III former hunting pavilion regales guests with succulent cooking served on a magnificent shady terrace. Another Napoléon III pavilion, the restaurant La Grande Cascade was inaugurated on the occasion of the Exposition universelle of 1900. The sumptuous rotunda room leads to a lovely terrace where you can savour classic cooking with a modern twist by a talented chef. On an extraordinary 8-hectare estate, the terrace of the restaurant Les deux étangs (known also by the name Le Tir aux pigeons) offers guests a complete change of scene with gastronomic cooking close to two lakes. Renowned for its superb rose garden, the Parc de Bagatelle houses Les Jardins de Bagatelle, a refined restaurant with a brick facade and elegant terrace, housed in the stables of the former chateau of the Count of Artois. In the Jardin des Plantes, the sunny terrace of La Baleine, opposite the zoo is a great place to enjoy simple and classic dishes. Those who prefer to be in the shade will like the second terrace, shaded by the 100-year-old paulownia. Built in 1889 and restored in 2002, the Pavillon Montsouris, the restaurant of the park of the same name, has a colonial atmosphere, a traditional gastronomic menu, and boasts a fine glass roof and terrace. At Buttes-Chaumont, on the other side of Paris, the park offers a choice of three restaurants: Rosa Bonheur, Le Pavillon du lac and the Pavillon Puebla. Opened at the same time as the park in 1867, and now a listed monument, the Rosa Bonheur serves simple gourmet dishes to enjoy on a very popular panoramic terrace. Offering more tranquillity is the Pavillon du Lac, a superb period building that has been fully renovated and modernized. Situated by the water, it has four fine terraces, where Mediterranean cooking is served. The Pavillon du Lac, a former guinguette of the 1900s, has taken on a new life with Italian chef Vincenzo Cozzoli, who prepares cooking from the south served under the relaxing shade of the park’s plane trees. Still in the north-east of Paris, the Café de la musique serves food on its huge sunny terrace in the Parc de la Villette. The menu features classic dishes, including some Asian flavours. Le Saut du Loup, the restaurant of the Musée des Arts décoratifs, benefits from a grand setting with a huge terrace in the Jardin du Carrousel. A conversation about his passion and city, over a bottle of Clos Beatus Ille 2011 from the Domaine Saint Préfert, a Côtes du Rhône with remarkable fruit flavours. The first question that we usually ask: are you Parisian? L. M.: Let’s say that I have been a Parisian for 45 years! I come from a ‘blend’ of 50% Martinique 50% Ardennes. I grew up in Alsace and in Africa too. I came here to study law, in 1968, and I never left. You studied law: is wine therefore not a vocation? L. M.: That’s true; for a long time, I was director of exports in a telecommunications company, a profession farremoved from the world of wine! My passion for wine has only increased with time. First, during my studies, at the beginning of the seventies, I had a little job as a driver in a famous fine food store on avenue de l’Opéra, Corcellet, which every morning sent me to Bercy to find wines for the shop. I therefore knew the atmosphere of a wine market with paved streets, wine barrels and wholesalers, which today no longer exists. Then, at the same time, I accompanied a friend who was a clerk in the office of an auctioneer, to a wine auction at Drouot. I bought a batch of bottles there and we opened them all and tasted them. As he knew a lot about wine, he began to talk to us about it. I was 23 at the time and I knew nothing at all; after that I joined a club of fine wine enthusiasts, and that was the beginning of a passion which I still have today. You therefore began to discover great wines very early? L. M.: Yes, because with the club, we tasted the best wines in France. Imagine it was a bit like learning to drive a Ferrari! I therefore straight away drank some great things, while at the same time learning to distinguish different wine varieties, regions, chateaux, etc. I can assure you that once you have tasted a Mouton 1947, your perception of wine changes. And Mouton is Bordeaux, but that’s not the only thing in life: Burgundy, Rhône, Loire, French wines, foreign wines, young wines and those in the making … Once I had become initiated into this milieu of great old wines, tasting them and seeing what made the difference between a great year and an average year, between a great wine house and a less prestigious one, between wine merchants and owners … I began to buy wine and to visit vineyards while at the same time continuing to work in telecommunications; wine had definitely become a passion, an all-consuming passion, which took up all my free time. However these great wines must have represented quite an outlay in expense! L. M.: But at the time, in the seventies, those great wines cost nothing! They weren’t in fashion, and few people knew them; a grand cru from Burgundy from a good year like 1959 cost 30 francs [€4.50 Editor’s note] … Of course, we only bought what was good quality and in good condition. We knew which years to choose, and from which estates and we didn’t deprive ourselves. So, I bought some great wines but also wine for every day; in the eighties I went to Burgundy often and I bought a lot of wine from individual owners. During all these years, while still working, I used to organize wine tastings at my home, to which I invited some wine growers. In 1982, when my son was born I filled my cellar with Burgundy — but it was a bad choice as 1982 was an average year for Burgundy wine: I should have gone to Bordeaux! It is a bit like the stock exchange, it is easy to know … with hindsight! PARISNEWS // PARIS CONVENTION AND VISITORS BUREAU N°71 // PARIS SEEN BY … // JUNE 2012 1 1994 was the year that De Vinis Illustribus was created, was it not? L. M.: That’s right; after 18 years in telecommunications and after deep reflection, I decided to do something in wine. I tried to buy some vines, but they were terribly expensive, and that’s not something you can do overnight. So, instead, I turned to bottles of vintage wine, and created De Vinis Illustribus. I put my collection of 5,000 bottles into the company and began to sell my wines. You started out with a good investment! L. M.: It was not a question of speculation. When these old wines are chosen they are at their peak and so are to be drunk. On the other hand, recent wines are bought to mature. What’s more, from the beginning, I bartered with friends and exchanged wine with wine enthusiasts. Wine was only resold occasionally. Today, some 20 years later, what does De Vinis Illustribus do? And first of all, why this name? L. M.: De Vinis Illustribus is a reference to the famous Latin textbook written by the Abbé Lhomond in the 18th century: De viris illustribus, meaning ‘about famous men’. And then we are located in the Latin Quarter. What’s more, the shop we are in was already a renowned cellar as far back as the 1930s; it belonged to Jean-Baptiste Besse, whose clients included Ernest Hemingway, as well as the future president of the French Republic, Valéry Giscard d’Estaing, then a student at Polytechnique, at the time when the school was opposite the shop. We have two commercial activities: primarily selling. The sale of great vintage wines, especially French — currently, the oldest bottles we have are a cognac from 1811 and our oldest wines date back to 1920. Next, the sale of great recent wines — Burgundy, Rhône, Bordeaux, etc. Finally, the sale of favourites, 50 or so wine, spirits and champagne references — these are bottles to drink immediately, good well-balanced wines that I select, in a price range of €12 to €50. The second activity is tastings. We have a venue, this fine 17th century wine cellar that may be privately hired, expertise, and of course a good stock, which turns around 7,000 bottles on average. I give the tasting sessions, which are aimed at groups of 2 to 20 people whether for an hour over three uncorked bottles of wine, a lunch or a dinner, at the shop or in the wine cellar, with four to five wines and accompanying dishes. All in French, English or Spanish. We offer for example a tour of France in wine for wine enthusiasts and complete beginners; foreigners, in particular, appreciate these sessions which enable them to discover the geography of wine and the different terroirs of France, with a map. Clients also have the possibility of incorporating an anniversary wine in order to celebrate a special event like a 20th wedding anniversary. Who precisely are these individuals? Neighbours, tourists, connoisseurs … ? L. M.: Half of our clients are foreigners, many come from the United States, Canada and Brazil, but we also have Russians, Chinese and even Australians. Americans, for example, are great connoisseurs of wine; they know their classics. Some clients look for big names: Petrus, Yquem, Romanée-Conti, Lafite … Others are looking more for quality and an exceptional year. French clients are neighbours, enlightened amateurs … But our clients also include professionals, sommeliers from great restaurants who are looking for a specific wine that they do not have on their wine list. The Ducasse Group, for example, often calls me to play a part when a particular vintage is being sought. So, more than just for bottles of wine, people come to you for advice or an opinion? L. M.: Exactly. My added value is that I have tasted and drunk all the great classic French wines; I can therefore give an informed opinion about them. I am an epicure; my choice is guided by pleasure rather than snobbishness about a prestigious label. To sum up my philosophy, and the philosophy of De Vinis Illustribus, in a single sentence: I care about old wines not because they are old, but because they are good. The hand of time on a bottle is irreplaceable; French wines improve with aging, which is their particularity. Like the famous ‘terroir’, a notion so difficult to understand for foreigners, it is what makes French wines so unique. During tasting sessions, you serve food with the wine; who are your favourite suppliers? L. M.: The first product that comes to mind is bread: I source it exclusively from Kayser, in rue Monge, a few steps from the shop. Next, cheese: Laurent Dubois, Meilleur Ouvrier de France, a remarkable selection — his Fourme d’Ambert is exceptional, but also his 36-month-old and 48-month-old Comté. And to finish, what Parisian restaurants can you share with us? L. M.: I’m very fond of the Relais d’Auteuil, a gastronomic restaurant that serves good simple cooking. They have game in season, which today is more and more rare.
