more than ever, menus are gaining
importance as more and more users

old excuse “my waiters sell the food
when the customers arrive,” no longer
applies because many patrons are
reviewing your menu long before they
get to their restaurant of choice.
Many restaurateurs utilize their
menu to tell the story, to begin the
conversation with their customers, to
tell them something unique, something
personal about their restaurant,
which makes the customer in turn,
want to come back, and want to
be a part of something special.
Many restaurants across the province
are catching on to this concept by
infusing their menus with local foods
to add personality. Keefer Mansion
Inn in Niagara does a great job telling
the story of where their foods come
from. Identifying menu items that
are from the region, hosting “Foodie
Fridays,” themed days to highlight the
many different farmers that grow and
produce their food are just some of
the things they do to tell their story.
Murray Street in Ottawa not only
highlights their local food, but also
talks about sustainable purchasing.

their respect for animals, plants
and the farmers who raise them.

Gone are the days that you sacrificed “price” and “performance” to use “green” products.
“Green” technology has come a long way just in the last decade. There are many products available today that overcome
the perception that “environmentally-friendly products cost more, don’t work, and you have to work that much harder to make
them work.”
There are eco-safe products that work just as well, or better, than some of the caustic and harsh chemicals that have negative effects
on the environment and the people using them. It’s time for change – window cleaner does not have to be blue or smell like ammonia

don’t have to “discount” your menu to show value. In
fact, by discounting your regularly priced items you are
de-valuing their worth and telling your customer, “see I
really can sell this for cheaper, but only when I feel like
it.” Utilize specials and promotions to highlight items
in a new way. Provide tasting menus; couple entrees
with wine and beer to offer unique experiences; provide
themed nights to showcase something different.
In a time where consumers have more access to
information, and are being more selective about where
they spend their money, add value to your restaurant
by injecting some local food personality. Starting
slow and being authentic will set you apart from your
competitors and will give your customers a reason
to continue coming back to your restaurant.

consumption translates into saving
dollars too. Hotel and motel operators
are no stranger to this idea as many
are choosing to do low hanging fruit
changes to save on their electricity bill,
but how many are taking advantage
of the incentives that are available?
ENWIN Utilities has already given out
$50,000 in conservation projects and is
giving even more cash incentives out
through its Green Suites program.
In June, in partnership with the
Ontario Restaurant, Hotel and
Motel Association (ORHMA), ENWIN
launched the Green Suites program
which is a conservation incentive
program specifically for the hotel
and motel industry in Windsor.

The tourism industry in Windsor
employs over 20,000 local people
and supports 41 hotel and motel
properties, according to Fatima
Finnegan, ORHMA Director of Corporate
Marketing & Development. Developing
policies that will mitigate job loss
and save on overhead expenditure
is essential for the hotel and motel
industry and those employed by it.
Adopting energy efficient policies
and practices is a manageable way to
resist the economic downturn while
investing in existing infrastructure.
Sponsored by the Ontario Power
Authority, Green Suites encourages
hotel and motel owners to retrofit their
properties by replacing old, inefficient
equipment with newer, more efficient
equipment. Examples of eligible
equipment for this program include:
lighting, motors, space heating and
cooling equipment, water heaters and
ENERGY STAR® gas kitchen equipment.
ENWIN’s Green Suites offers hotel and
motel owners an opportunity to cut
their energy costs by approximately
10-30 per cent by offering incentives
to see that this work is done.
While up to $250 per kilowatt
hour saved is available to hotel and
motel operators for simple changes
such as lighting and replacing old
air conditioners, ENWIN is hopeful
that some larger system retrofits
such as redesigning HVAC systems
and accommodating heat recovery
systems will be among the resulting
changes the participating hotels and
motels consider. ENWIN’s Director of
Energy Management and Conservation,
Lawrence Musyj says: “The goal behind
this program is to help educate hotel
management and staff on conservation
technologies available and encourage
them to make changes using the
green suites process, in order to
receive incentives and energy savings
that impact their bottom line.”
One exciting feature of this program
is the educational opportunities and
support offered by the Green Suites
team. Among other initiatives, the

in Windsor saw hospitality industry staff gathering to learn
about new energy efficient equipment, energy management
planning and strategic financing. They also had the
opportunity to speak with manufacturers and distributors
to help them make the right decisions for their business.

brunch to late night snacks along with a well-stocked bar.

puzzle, in order to understand where you are at today
and how you can accomplish results,” says Musyj.
“Green Suites has provided the perfect opportunity for
the local hotels to step up energy conservation efforts
and save some money. In an industry and market where
margins are shrinking, any incentive to save money is
welcomed. The building audit we have been awarded at
the Holiday Inn Select comes at the perfect time when we
are embarking on a $4 million renovation and plans can
include investments into system retro-fits and upgrades to
improve energy efficiency. Not only will the hotel’s monthly
budget see savings, but the incentives provided through
ENWIN will inject additional dollars to offset the initial
investment. We are now able to consider such projects as
solar energy and new HVAC units, which were unattainable
in the past without these incentives,” says Lynnette Bain,
General Manager of the Holiday Inn Select in Windsor.
Green Suites is hoping to show that there is a lot
more to energy efficiency than the changing light
bulb, although that’s an important first step.
To complement the food and drink, FAB Concepts works hard
to deliver the right ambiance to make the pub inviting. Any
changes to the lighting would have to align with the overall
vision for The Foggy Dew.
Looking for a way to reduce energy consumption, FAB
Concepts worked with energy consultant Scott O’Connor
of O’Connor’s Go Green – Save Green. After an analysis of the current lighting, O’Connor recommended FAB
Concepts work with Toronto Hydro-Electric System Account
Executive Bill Scott to complete the Business Incentive
Program application.
On a day-to-day basis, Foggy Dew’s General Manager Ryan
Cooper is responsible for the establishment. His reaction to
the new lighting – he’s thrilled. “Many people don’t know about
the dimmable yellow spectrum compact fluorescents,” says
Ryan. “When they think CFL, they think cold blue light. These
lights make the Foggy Dew even more inviting than before.
And you can’t beat $400 in savings month after month.”
Today all businesses watch their costs more than ever. Anytime
a project delivers pure cost savings after just five months, it’s
quite easy to say yes. “We’re looking to green all aspects of
our operations. BIP fits in perfectly.” says Director of Operations at FAB Concepts, Helen Griffiths. FAB Concepts is
looking at BIP and similar energy-saving programs for all of
their establishments.

POS Evolves
Avrio brings next-generation
tech sol utions to the front of house
N
umerous food service establishments across
Ontario are already familiar with hospitality
software developer Silverware POS Inc. The
company has been creating and refining software exclusively
for the restaurant industry for almost 20 years and is widely
recognized as the largest supplier in Ontario. Silverware
POS is used by such diverse and well known brands as The
Pickle Barrel, St. Louis Bar and Grill and Oliver Bonacini
restaurants. But even those who are now using the
company’s products may not be aware of their latest news.
“We’ve moved along as an organization,” says Silverware
POS Executive Vice President Lucky Thalas. “Over two
years ago we started developing out next-generation
system, Avrio, by leveraging the most advanced
programming language and database engine available.”
Avrio is constructed with the powerful Microsoft Windows
Presentation Foundation running on a SQL Server 2008
database, .Net Framework and Visual Studio v2008. Avrio
is a highly scalable, resilient and fault tolerant solution.
According to Thalas, “Avrio was developed to strengthen
our position in the market by appealing to multinational
chains and quick service operations.” Avrio’s unique
feature set includes the ‘remote manager handheld’ which
allows manager authorizations to be performed remotely
on a wireless hand-held device. This means that in a large
operation, the employee no longer needs to find a manager to
authorize a void, discounts, transfers, staff sign-in/sign-out,
etc. They simply perform the void on the touch screen; the
POS system sends all the details to the manager’s wireless

Starwood Canada & ORHMA Take Leadership
Roles in Hiring People with Disability
During these tough and turbulent economic times organizations are often so focused
on our bottom line and cost saving measures that we have a tendency to put sourcing
initiatives on the back burner, particularly programs involving diversity and disability.
This however, was not the case last week at the Sheraton Centre Toronto where over
a hundred business leaders from all sectors attended the JOIN Toronto Business
Leadership Network Breakfast; “Hospitality - Welcoming Partnerships for an Inclusive
Workforce.” Hosted by the Sheraton Centre Toronto, the Ontario Restaurant Hotel &
Motel Association (ORHMA) and the Greater Toronto Hotel Association (GTHA) business
leaders gathered to listen and strategize about how to improve employment opportunities
within the hospitality industry for the over 15.5 per cent of Ontarians with a disability.
Stephen Foster, Senior Vice President, Operations, Canada Region Starwood Hotels
and Resorts Worldwide lead the discussion stating, “Our industry has faced tough
economic times before and most certainly will again, however our ability to improve
our service to our guests and associates with a disability is an ongoing initiative.” He
adds, “Both the industry and Starwood can do better to improve the number of people
with a disability working in our establishments.” Mr. Foster didn’t stop there, stating
that he would be piloting a project with Starwood’s Sheraton and Westin brands
to improve accessibility and opportunities for employment within the hotels.
David Holman, Diversity Recruitment Specialist for the ORHMA, thanked Starwood
and the Sheraton Centre Toronto for taking a leadership role especially during this
economic climate when the shift often focuses away from diversity sourcing,
“Having worked with people with disabilities for many years, I am certain that with proper
accommodation, people with disabilities are no more or no less capable of working than anyone
in this room. The only difference is that we were all given an opportunity and I encourage
everyone in the room to think about presenting a similar opportunity to people with a disability.”
Starwood has recently begun working with the ORHMA/GTHA partnership program with
the Job Opportunity Information Network (JOIN), an innovative network of 23 community
organizations that assist people with disabilities to find employment and employers to recruit
qualified candidates. This unique partnership between ORHMA, GTHA and JOIN is specifically
designed to enable more people living with disabilities to be hired in the hospitality sector.
Joanne Paquette, Director of Human Resources for the Sheraton Centre Toronto stated,
“To-date we have hired four people from the JOIN program and we will continue to
use the program as a viable resource for well qualified and well skilled labour.”
