Biryani
The term Biryani in itself has the essence, the versatile aroma, taste and looks that can trigger
any taste buds. India is a land where the authentic Biryani has been so vastly experimented
with, that is has booked itself into one of the best recipes of the authentic cuisines of the country.
It is indeed a dish that has gone world over and today is found to be prepared in various
methods, with different spices, ingredients, all culturally, geographically and even
religiously specific.
Each type of Biryani has a story of its own. Here’s a list of all the different types of Biryani
variations we have brought to your table.
LUCKNOWI (AWADHI) BIRYANI ( C / M )
The City of the Nawabs is also famous for its lip-smacking Biryani known as
Lucknowi Biryani. Made with less spices, this Biryani variant has a signature taste
that settles on your palate.
HYDERABADI BIRYANI ( V / C / M )
This was the result of an amalgamation of the Mughal and Andhra kitchens. A
spicy mix of rice and mutton makes up this dish. Vegetable Version is also higly
recommanded.
SINDHI BIRYANI ( C / M )
Named after a region in modern day Pakistan – the Sindh province, this Biryani
uses handful of yoghurt to get a rich texture.
KOLKATA BIRYANI ( C / M )
After the 1857 Sepoy Mutiny, the meat was scarce, so the Nawabs in West Bengal
started adding potatoes to the Biryani, which became an instant hit in Kolkata.
KACCHI BIRYANI ( C / M )
Another Hydrabadi Specialty. Raw meat is stir fried with spices and then covered
with Rice and Dum Cooked.
EGG BIRYANI
Egg Biryani is similar to Bombay Biryani, with the only difference being the
addition of boiled eggs on top to enrich the taste. Boiled eggs double the nutrition
and the taste too !
