HERE’S HOW... VELVEETA EGG & VEGGIE BAKE INGREDIENTS: 1 cup chopped broccoli 1 cup sliced fresh mushrooms 1 ready to use pie crust 5 eggs 1/3 cup Miracle Whip 1/3 cup milk 6 oz Velveeta, cut into cubes 4 green onions, sliced DIRECTIONS: 1. Heat oven to 375. 2. Cook broccoli and mushrooms in skillet sprayed with cooking spray on med heat 8 to 10 min, stirring occasionally. Remove from heat. 3. Crimp edge of pie crust to make a bowl shape. 4. 4. Whisk eggs, dressing and milk in medium bowl until blended. 5. Stir in cooked veggies, Velveeta and onions. Pour into crust. 6. Bake 40 min or until top is golden brown. 7. Let stand 10 min before serving. 3 CHEESE QUICHE INGREDIENTS: 1 cup EACH sliced mushrooms, onions, broccoli 5 eggs 2/3 cup milk 1/4 cup chopped roasted red peppers 1 cup shredded 3 cheese with Philadelphia 9 inch frozen pie crust DIRECTIONS: 1. Heat oven to 375. 2. Cook mushrooms, onions, & broccoli in greased skillet for 5 min. Remove from heat. 3. Whisk eggs & milk. Stir in veggies, red peppers & 1/2 cup cheese; pour into pie crust. Pleace on baking sheet. 4. Bake 35 minutes. 5. Top with remaining cheese; bake 5 to 10 more minutes. 6. Let stand 10 minutes. WEEKNIGHT QUICHE INGREDIENTS: 1 cup sliced mushrooms 1/3 cup milk 1 onion, chopped 1 10 oz pkg frozen spinach, thawed, drained 4 eggs 1/3 cup miracle whip 1 cup shredded mozzarella 9 inch frozen pie crust, thawed 1/4 cup bacon bits DIRECTIONS: 1. Heat oven to 375 F. 2. Cook mushrooms & onions in large nonstick skillet sprayed with cooking spray on med-high 5 min. 3. Remove from heat, stir in spinach. 4. Whisk eggs, milk & dressing in medium bowl until blended. 5. Add spinach mixture and cheese; mix well. Pour into crust, sprinkle with bacon. 6. Bake 50 min. Let stand 10 minutes. CRUSTLESS BACON & CHEESE INGREDIENTS: 5 green onions, chopped 12 eggs 1 tomato, chopped 12 slices bacon 1 cup sliced mushrooms 1/3 cup light sour cream 1 cup shredded cheddar cheese 1 cup shredded mozzarella cheese DIRECTIONS: 1. Heat oven to 350. 2. Reserve 2 tbsp each onions & tomatoes. 3. Cook bacon in large skillet until crisp. Remove bacon from skillet. 4. Add mushrooms to bacon grease, cook 2 min. Remove from heat. Crumble bacon and add to skillet with remaining tomatoes & onions, mix well. 5. Beat eggs and sour cream in bowl. Pour into 13 x 9 inch dish sprayed with cooking spray; top with bacon mixture & cheeses. 6. Bake 30 mins. Top with reserved onions & tomatoes. 7. Let stand 5 minutes. SEAFOOD RECIPES TO TRY QUICK CRAB CAKES INGREDEINTS: 1 cup boiling water 6 oz cornbread stuffing mix 2 6oz cans crabmeat, drained, flaked 3 eggs, beaten 1/4 cup butter 1 lemon, cut into 6 wedges DIRECTIONS: 1. Add boiling water to stuffing mix in large bowl; stir just until moistened. Let stand 5 mins. 2. Add crabmeat and eggs; mix lightly. Shape into 6 patties. 3. Melt butter in large skillet on medium heat. Add crab patties; cook 5 mins on each side and lightly browned on both sides. 4. Serve with lemon wedges. TUNA NOODLE CASSEROLE INGREDIENTS: 2 cups egg noodles, cooked 1 cup shredded cheddar 1 cup frozen peas 6.4 oz pouch albacore tuna in water 4 green onions, sliced 8 oz cream cheese 2 tbsp lemon juice 1/2 tsp garlic powder 1/4 tsp black pepper 8 ritz crackers, crushed 1 tbsp butter, melted DIRECTIONS: 1. Combine 1st 5 ingredients in large bowl. 2. Mix cream cheese, lemon, juice and seasonings until blended. 3. Add to noodle mixture; mix lightly. 4. Spoon into 1 1/2 qt casserole sprayed with cooking spray. Cover. 5. Bake 20 mins. 6. Stir, top with crackers. Bake uncovered 8 to 10 min. FISHERMAN’S CHOWDER INGREDIENTS: 6 slices bacon, cut into 1/2 inch pieces 1 large onion, chopped 2 stalks celery, chopped 1 large carrot, chopped 2 cups chicken broth 1 large white potato, chopped 1/2 cup cream cheese spread 2 cups milk 12 oz pkg frozen cod fillets, thawed, drained and cut into 2 pieces DIRECTIONS: 1. Cook and stir bacon until crisp. 2. Add next 3 ingredients, cook on med heat 12 to 14 min. Add broth and potatoes, stir. Bring to a boil, cover and simmer 10 minutes. 3. Add cream cheese spread, cook, uncovered 3 mins, stirring frequently. 4. Add milk, fish and bacon, stir. Bring to a boil, stir frequently. 5. Cook 3 to 4 more minutes or until fish flakes easily with fork. COCONUT SHRIMP WITH SAUCE INGREDIENTS: 1 egg 1 cup coconut 1 pkt shake and bake extra crispy coating mix 24 uncooked large shrimp, peeled, deveined 1/2 cup apricot preserves 1 tbsp Dijon mustard 1/2 tsp hot pepper sauce DIRECTIONS: 1. Heat oven to 400. 2. Beat egg in bowl. Combine coconut and coating mix in separate bowl. 3. Dip shrimp 1 at a time in egg and then coconut mix, coating shrimp. 4. Place on baking dish sprayed with cooking spray. 5. Bake 10 minutes. 6. Mix remaining ingredients in bowl and microwave for 30 seconds. 7. Dip shrimp and enjoy! APRIL 2016 ACTIVITIES: EVERY FRIDAY NIGHT IN APRIL MOVIE NIGHT TIME: 8-10 PM COST: $5.00 Join us for a fun new release and weather permitting we may be outside– one of our favorite warm weather activities. We will have popcorn, a small candybar and a drink. Make sure that you bring a chair or blanket to sit on. SATURDAY, APRIL 2ND BINGO & BURGERS TIME: 12-3 PM COST: $8.00 Get ready for some fun! Hopefully the weather will be good and we can go outside and have some bingo fun! Be prepared for some new Bingo and some fabulous prizes–including the all time favorite– CASH!! We will be grilling out burgers & hot dogs with baked beans, mac & cheese & coleslaw! Get ready for an awesome time! EVERY MONDAY IN APRIL SPORTS PRACTICE TIME: 6:30-8:30 PM COST: $25/MONTH If you are not paying or are not sure if you are paying your sports fee, please email Alisha at [email protected] or call the office. The additional cost for the weekend games is not included in the $25/monthly fees. Fees are imperative for gym rental, Special Olympic fees and uniforms. Practices will be held every week for all of the sports in the Summer Games. Please try to attend practices unless you have to work or have a really good excuse! Remember– your TEAM needs you!! If you have more than 3 unexcused absences, you will be removed from the team. WEDNESDAY, APRIL 6TH BOWLING & DINNER TIME: 6-9 PM COST: $18.00 Get your bowling shoes ready! We will be heading over to Dave & Busters for a fun night of Dinner and Bowling! The certificates will go to the bowlers with the most frames with 4– which is actually really hard to do!! SATURDAY, APRIL 9TH INDOOR POOL PARTY & PIZZA TIME: 6-9 PM COST: $12.00 We have rented out the Bogan Park Indoor Pools– they have diving boards, a lazy river, waterslides and other fun water features. Plus– there are multiple lifeguards on duty. We will have pizza first and just enjoy the time! Please make sure that you are bathing suit ready, that you wear your bathing suit and bring a towel. Its time to get ready for all of the pool parties this summer– we are getting closer and closer to warm weather!! TUESDAY, APRIL 12TH WELCOME BACK KEVIN & BECKY!! We missed you! APRIL ACTIVITIES CONTINUED: FRI, APRIL 15TH-SUN, APRIL 17TH CAMP WILLAWAY TIME: 1:30PM LEAVE TIME FOR PROPERTY & 1:30 PM AT THE OFFICE SUNDAY RETURN TIME APPROX. 3PM COST: $150.00 You must prepay for this activity and RSVP no later than March 23rd in order to get a shirt. Please call Alisha if you are interested and have not RSVP’d. We will be going to Camp Willaway in Winder for a weekend of archery, camp songs, ziplines, sporting, hiking and fun. All meals are included– even Golden Corral & mini golf on Sunday. This is a really good teambuilding weekend and everyone is encouraged to come! We sleep in shared cabins and eat in the mess hall! Cool Experience– one of the staff favorites! WEDNESDAY, APRIL 20TH ILP MEETING TIME: 6-9 PM COST: $10.00 Time for a new meal– how about grilled chicken sandwiches, corn on the cob & homemade potato or sweet potato chips!! We will make an- nouncements, celebrate birthdays, welcome new members and have some fun! Weather permitting we will meet outside! WEAR NEON COLORS!!! SATURDAY, APRIL 23RD STAR WARS PROM TIME: 6-8:30 PM COST: $5.00 CASH ONLY Get dressed up and get ready for a fun PROM!!! You can either wear Prom attire or Star Wars attire and you can go with or without a date. Eat before you come as there will only be light appetizers. We were invited by Connectability in Cumming, GA. TUESDAY, APRIL 26TH MH GROUP TIME: 8-10 PM COST: $5.00 Let’s order pizza and sit poolside while we talk about life and how we are doing with it! This is only for those with an MH diagnosis. SUNDAY, MAY 1ST ANNUAL FAMILY PICNIC COST: $10 PER PERSON $6 ages 4-12 KIDS 3 & UNDER ARE FREE We will be having our Annual Family Picnic at the JP Office located at: 1412 Oakbrook Drive Norcross, GA 30093. Please bring a covered dish to share– we will be providing chicken, cole slaw, drinks and rolls! We moved the date so that hopefully it isn't too hot! We will be outside– there are tents but dress for the weather! We would love to have the biggest turn-out ever! All friends, family, coworkers, etc are welcome to attend! We will have tons of Carnival Games– and some new really cool stuff for all to enjoy! EARTH DAY, FRIDAY, APRIL 22ND Adult coloring is the new thing– even prescribed by doctors! Studies are showing that it helps to cope with stress and encourages the mind to focus and to rest. Try it out, turn it in and save $3.00 on any activity of your choice! NEW JOBS!!! I personally love Spring and Summer because we get to have so many neat outside activities and upcoming events. SAVE THE DATE: Sunday, May 1st Just People’s Annual Family Picnic will be at the Norcross office again this year. We will supply the chicken, cole slaw and drinks, we just ask that everyone bring an appetizer, chips or dessert to share! This is a great opportunity to see all of the staff, mingle with other families and for your family member to introduce you to their JP friends! FAMILIES: None of us are getting any younger...please make sure that we have your plans or attorney contact information if something happens to you. Many families have sent their information in a sealed envelope marked confidential to be placed in a file just in case. It is important for us to have written plans in place so we know how to advocate for your child/family member when you are gone. Sometimes the best laid plans go awry, please help us empower your family member by providing us the information to assist them as we all want to make sure there are no or little surprises for them. HALL COUNTY: Burns has officially been sold in order for us to get the construction financing for the new property. This does not change much of anything moving forward for the individuals living at Burns. Our contract is pretty tight and the new owners are very aware of our needs, etc. Contracts are being signed, trees have ribbons and topographical studies are being completed– we are hopeful that we will open our Hall County doors by November 2017. Kevin & Becky are on their annual trip– they started in Australia and will end in Singapore. If you need anything while they are gone that is not able to be handled by the case managers, please call the office or Call/text Kelli 770-480-7511 for JP and Kyle 678-598-2080 for Beckel. Please be on your best behavior as Becky calls regularly to check in and we only want to give a great report! HOPE TO SEE YOU GUYS AT THE ACTIVITIES!! July 24, 1930-Feb. 26, 2016 JIM RUWOLDT Our friend, volunteer and confidant YOU WILL BE MISSED. You may have seen him sitting on the porch, driving a van, handing out meds, serving food or cleaning up. You may have assumed that he was an employee with as much as you saw him, but he was actually the guy who we knew we could count on for anything! And you never saw him without his wife of 60 years, Bonnie! Mr. Ruwoldt was Cindy’s father. At 85, he was always the first one to respond to watch the group, serve a holiday meal, etc and never left without asking if there was anything he could do. He spent hours talking with families, attending Just Families meetings, advocating for others and just being available to the clients. Most importantly, he was a friend to all of us. Our thoughts and prayers to Cindy, Bonnie and Kathy as the days pass. Thank you for sharing Jim with us. We will never forget the impact he made in all of our lives. Per the families request, donations can be made in Mr. Ruwoldt’s memory to Just People. SPECIAL THANK YOU!
