batteries, candles and matches or a lighter, a
first-aid kit, a fire extinguisher, bottled water and

Giving that knows no season
T
he Christmas season is upon us once again. It is an occasion to gather with
loved ones and give thanks for life’s many blessings. It is a time to celebrate
the things in life that are most important to us.
It is the season for giving.
Of course, not all needs can be met during the holidays. Not all of life’s necessities
can be addressed one month out of the year. Some things just can’t be confined to a
calendar.
Operation Round-Up certainly does not limit itself to a particular season. The unique
benevolent program funded by the charitable contributions of Northeast Oklahoma
Electric Cooperative members has generated more than $2 million in financial assistance
since its inception in 1998. Countless needs have been met throughout the cooperative
service territory of Craig, Mayes, Delaware, Ottawa and Rogers counties.
NEOEC is truly humbled by all that has been accomplished in the 14 years since
Operation Round-Up was adopted.
A $5,000 grant presented this year to the Senior
Companion Volunteer Program is one noteworthy
example of the care and concern cooperative
members have demonstrated to their neighbors in
this time.
The Senior Companion Volunteer Program
serves over 300 clients in Craig, Ottawa and
Rogers counties with nearly 70 volunteers.
“The purpose of the program is to engage lowincome senior volunteers in service while assisting
frail, isolated and elderly clients,” explained program
director Janea Hogan. “Volunteers help the clients remain
safe and independent in their homes while providing free respite
care to caregivers and families.”
Funds provided by Operation Round-Up were used to help meet the community
match required by a federal grant. Monies are used to defray volunteer expenses,
including a stipend and mileage reimbursement.
Volunteer Wayne Finfrock visits 75-year-old Dan Lindsey twice a week. Dan is
confined to a wheelchair. He was paralyzed at age 16 after being thrown from a horse.
Wayne helps Dan navigate the computer. They’ll watch a movie or visit. Wayne also
cooks meals that Dan enjoys like salmon patties or cabbage and sausage. He says he has
benefitted greatly from the friendship he and Dan have forged during their time together.
“He has such a good spirit,” Wayne said. “He’s always happy. I’ve never caught him
on a down day. He’s taught me so many things.”
Debra Sutton has been visiting 94-year-old Eunice Hightower twice a week for more
than a year now. The two do crossword puzzles, look at pictures, read the paper and visit.
Debra says Eunice, who loves children and spent 23 years as a school cook, is
someone she admires greatly.
“Staying busy has kept her going,” Debra said. “I know she never gives up and she
prays a lot. I think her relationship with the Lord has been very important to her.”

Local man inspires by overcoming challenges
W
e’ve all done it. It may have been after a tough
day. Or maybe life stubbed our toe in some
unexpected way. Perhaps it was after a run of bad
luck that felt like it would never loosen its grip.
Then it happened.
We began to feel sorry for ourselves.
Why me? Haven’t I been through enough?
Those blessed enough to know Dan Lindsey don’t ask such
questions of themselves. Self-pity simply has no place in
Dan’s world. He inspires the same attitude in those who share
that world.
We could all learn something from Dan.
-o0o He lay face down on the ground, unable to move, unable
to speak. His lungs couldn’t push any sound more audible
than a whisper.
Dan Lindsey was helpless, fear gripping him in its vicelike jaws.
For what seemed like an eternity, he lay motionless on a
dirt path hardened by hoof and wheel, crying out to God for
help.
“God, please let me live,” repeated the country-tough
farm boy, blinking away the rare tears streaming down his
face and into the dirt.

As they neared the gate, the mare grew more skittish
and began to buck in a narrow lane bounded by barbed wire
fence on one side and hog wire on the other. Seeing the fence
on either side brought back stories Dan had heard about a
neighbor two miles north who’d fallen off his horse into a
barbed wire fence. The wire had laid open the man’s jugular
vein. He had bled to death on the spot.
Dan tugged the reins to curb the bucking. Suddenly, the
mare jerked her head down. He countered by pulling back
hard but was caught off balance and went right over the
top, landing hard on his right shoulder and the back of his
head. When he stopped rolling, he was laying face down. He
remembers both the mare and colt vaulting his body as they
sprinted up the path to the barn.
Ann became worried when she hadn’t heard from Dan
for some time. She went to the barn and saddled up one
of the horses. She came riding down the lane and saw him
laying there. Something wasn’t quite right. She could tell Dan
was alive but couldn’t understand why he wasn’t moving.
Recalls Dan with a smile: “She hollered ‘Dan, you stupid
fool, get up from there. Quit acting like a nut.’ Then she
realized I couldn’t move and she hit the ground running. I
asked her to roll me over. I was tired of laying on my face.”
-o0o Ann left Dan to go get help. She returned with a
neighbor and the two of them helped lift Dan into the back
of the neighbor’s automobile. They transported him to the
hospital in Vinita, where he was stabilized and outfitted with

Preheat oven to 200 degrees. Coat a 9-inch cake pan with non-stick spray, then line the pan with parchment paper. Sprinkle bottom
of prepared pan with 2 tablespoons of Parmesan cheese. Reserve the rest for later use.
Sauté onion in drippings until translucent. Add apples and garlic, continuing to sauté an additional 2-3 minutes until apples begin to
soften. Remove from heat and season with salt and pepper. Set aside and allow to cool.
In a large bowl, beat cream cheese until smooth. Add eggs, vinegar and whiskey (optional). Continue beating until smooth. Stir in
apple mixture, bacon, blue cheese, remaining Parmesan cheese and chives by hand.
Pour batter into prepared pan and place in preheated oven. Bake 8-9 hours, or overnight. When done, the cheesecake will be somewhat firm and slightly browned. Remove from the oven and allow to cool one hour. Cover pan with plastic wrap, then an inverted
plate. Turn pan over to release the cheesecake. Allow to rest one hour in the refrigerator, then remove parchment paper and re-invert
