Salmon Croquettes (Patties) Mediterranean
with Cucumber Sauce
(For the plain old vanilla version, see Salmon
Croquettes)
Ingredients
Sauce:
1. 2/3 cup, Diced Cucumber
2. 1/3 cup Sour Cream
3. 1/3 cup Yogurt
4. 1 clove of Garlic puréed
5. 1 gob, chopped Dill
Croquettes:
1. 1 can, Salmon
2. 1 can Garbanzo Beans (Chick Peas), drained
3. 1 cup crushed, Tortilla Chips or Crackers or
Bread or Mashed Potatoes.
4. 1/3 cup chopped Olives
5. 1 cup, chopped Green Onions
6. 1 teaspoon Cumin
7. 1 teaspoon Black Pepper
8. 3 Eggs, well beaten
9. 1 tablespoon, Olive Oil
A useful way get rid of old or leftover Potato or
Corn chips, Crackers, Bread, Mashed Potatoes, or
Cornbread etc. is to use them for filling or stuffing.
Use about a cup of any one or mix of these.
In the Mediterranean version, Chick Peas are also
used as filler.
Drain the Garbanzos
And mash them to a lumpy consistency
Add and smash in, a can of salmon
These days, in supermarkets, you often find salad and
specialty bars for items like Mixed Olives.
Chop up some of whatever looks good to you and
dump them in the mess.
Thoroughly smash a clove or two of Garlic and add
that.
Add a nice pile of chopped Green Onions and 3 well
beaten Eggs
I like to use the fat & cholesterol free eggs that come
in a carton.
Add some Olive Oil, Cumin and Black Pepper
Make some patties in whatever you use (e.g., skillet).
I like to use an electric thing that you can find in
Asian stores. No need to make them real flat now.
You can do that with the spatula after you turn them.
Now is a good time to make the Cucumber Sauce
Bring in and chop a nice bunch of Dill from your
Garden. No Garden? Find a heavy Rolling Pin and
whack yourself across the butt several times for being
so lazy………and then use the dried up old Dill in
the jar from your spice cabinet. You do have a spice
cabinet right?
Dump in some Yogurt and Sour Cream.
Peal, dice and dump in some Cucumber
Dump in your stale old Dill if you didn’t have the
good stuff.
Purée and add some Garlic.
Meanwhile, your patties are probably ready to turn
Flatten them with your spatula and you might need to
add a little Olive Oil
Ladle on some Cucumber Sauce and Garnish with an
Olive and Dill or whatever you think looks
nice………here there is a pepper that came with the
Olive Mix
Here I have served a croquette with a baked Acorn
Squash and a mix of herbs, supplements and vitamins
for old poots………in a separate little plastic cup by
