The catering department at KSC Dining Services is committed to making your event a success.
Our team of catering professionals is available to assist you with planning every aspect of your
event.
Included in this catering guide are just a sample of the many menu offerings we have available for
your event planning and we are capable of customizing your event menu to meet a wide range of
budgets and tastes.
All of our menu offerings are presented buffet-style using GREENWARE biodegradable and recycled
paper service ware whenever possible. For a more formal presentation, china Service can be made
available.
Buffet service includes the linen required for your menu presentation, the delivery and set up of your
order and pick up of your order within 4 hours after the start of your event. A $40 minimum total order
charge is requested for delivery of your order to any location on campus.

The assorted cold beverages served with all Brickyard Specialty Buffets include iced water, pre-sweetened lemonade
and iced tea.
Our Brickyard Specialty Buffets offer you the opportunity to create a custom menu which meets your specific needs and preferences.
Although our catering guide offers a wide range of menu options for you to choose from it is by no means all we have to offer.

All Elm City Buffets are presented as self-service buffets and made available to you and your guests for a total of 45 minutes
following the beginning of service to ensure proper food quality and safety.

All alcoholic beverages must remain within the reserved event location at all times. All beverages
including non-alcoholic beverages consumed at your event location must be provided by KSC Dining

A signed copy of the KSC Dining Alcohol Agreement Form should be received by the catering office
no later the 30 days prior to your event date.
All alcoholic beverages should remain within your reserved event location throughout the event
timeframe.
All beverages including non-alcoholic beverages consumed at your event location must be provided
by KSC Dining service staff. BYO (bring your own beverages) is not allowed. All alcoholic beverages
served by KSC Dining service staff must be purchased from a State of New Hampshire approved
vendor.
The maximum number of hours bar service can be made available for your event is 4 hours and
adequate food must be provided within the bar service timeframe to ensure the safe consumption of
alcohol for all guests attending the event.
Event bars will be scheduled to close ½ hour prior to the event ending time.
Each guest consuming alcohol beverages at your event should purchase their own drinks. Only one
drink per person can be sold at a time. Each drink must be paid for at the time of service. Bar tabs
are not available.
In accordance with NH State Law, only those guests able to provide appropriate proof of age upon
request can be served alcoholic beverages.
Full bottles of wine, shots of liquor or drinks consisting of more than 1½ oz. of liquor are not available
for purchase.
Guests must cooperate fully with all KSC Dining Staff decisions concerning the policies above.
BAR SERVICE PRICING (KSC campus department events)
All bar services are subject to a bartender charge which is calculated as follows:
One bartender for every 50 people at a charge of $18 per hour (4 hour minimum each bartender)
Cash Bar Service is available at the bar service charge above. The bar service charge is reducible

RESERVING THE ZORN DINING COMMONS
The Zorn Dining Commons is a 400 seat banquet facility offering catered event service to the KSC
campus and neighboring communities. The facility is available for catering service when KSC
classes are not in session and has served as a site for a variety of events that include holiday
parties, class reunions, wedding receptions and award dinners. A minimum guaranteed attendance
of 200 people is required to book the Zorn Dining Commons for your event.
Event labor charges are based upon the length of time needed to set up and decorate the room, the
actual event service timeframe and the breakdown of the room at the conclusion of your event.
Room decorating is the responsibility of the group reserving the room and some restrictions apply. All
decorations must be removed from the room immediately following the conclusion of your event.

EVENT PLANNING AND ORDERING
For questions regarding catering services provided by KSC Dining Services, assistance in planning
your event and to place a catering order please contact the KSC Catering Offices at the numbers
above.
Order Deadlines and Attendance Guarantees
Requests for catering services should be made at least 10 business days prior to your event date.
Every effort will be made to accommodate late requests but we cannot guarantee the availability of
all catering services after the order deadline has past. To help ensure that adequate resources are
available for your event, final menu changes and the guaranteed number of guests expected to
attend your event are requested 3 business days before your event date.
Requests for customized menus and menus featuring local menu ingredients require a minimum of
20 business days for planning and ordering.

PAYMENT FOR CATERING SERVICES
Charges for catering services will be based upon the final menu changes and the guaranteed guest
attendance number received 3 business days prior to your event or the actual guest attendance if
higher.
A department P.O. (purchase order number) is requested 3 business days prior to your event date.
CANCELLING YOUR EVENT CONTRACT
Should you need to cancel your catering contract, please contact the KSC Catering Department at
your earliest convenience. Any costs incurred prior to the cancellation of your catering contract may
be billed to your P.O. number
EVENT MENU PRESENTATION
Your food and beverage order will be presented as a self-service buffet using GREENWARE
compostable service ware and napkins made from recycled paper wherever applicable. The table
linen used to present your food and beverage order is included in your order pricing.
Food Safety and Food Quality
To maintain food quality and ensure the safe consumption of all menu items prepared by the KSC
Catering Department, buffet time frames will be scheduled as follows unless special arrangements
have been discussed in advance of your event date:


Buffet menu presentations which include the chafing dish presentation of hot menu items can
be made available for a maximum of 45 minutes
All other buffet menu presentations can be made available for a maximum of 2 hours
It is the policy of the KSC Catering Department to request that no menu items be removed from your
buffet presentation at the conclusion of your event. Charges may be incurred for missing service
ware and certain foods can become unsafe for consumption if not handled properly.

Attendant Labor Charges
Catering staff can be scheduled to attend your guests during your event timeframe.
Attendant Labor Charges are calculated as follows:
 Plated Menu Service
minimum charge-1 staff person scheduled (4 hour minimum) for every 16 guests
at a rate of $18 per hour
 China Buffet Meal Service (20 guests and up)
minimum charge-1 staff person scheduled (4 hour minimum) for every 25 guests
at a rate of $18 per hour
 Reception Service
minimum charge-1 staff person scheduled (2 hour minimum) for every 50 guests
at a rate of $18 per hour
 Culinary Presentation Staff
minimum charge-1 staff person scheduled (2 hour minimum) for every 50 guests
at a rate of $25 per hour
Rental Linen Charges
Table linens for the presentation of all food and beverage buffets are included in your catered event
pricing.
Linen required for non-food related purposes such as to cover tables used for registration and
materials display or tables used for seating are available in many colors as follows:

CATERING GUIDE SUPPLEMENTS
Twice each year the KSC Catering Department will publish a Catering Guide Supplement that will
feature seasonal menu offerings available for your event planning.
