his home, then went to stores and gas stations to sell his product.
Joseph Oliver and his wife, Edna, sold the business in 1960 with the
stipulation they keep the same quality of chocolate and candies that
Oliver’s was known for. Currently owned by the Quincey family, their

packaging, MOD-PAC’s services include personalized print products,
including invitations, napkins, matches,
glassware, gift bags and more. At their current
location, MOD-PAC produces folding cartons for
large and small businesses alike. Attendees will

Stever’s Candies – Douglas and Hilda Stever opened their first shop
in 1946. Despite post-war sugar rationing and chocolate shortages,
their business began to grow; at one time they had three shops in the
Rochester area. Since 1970, full operations have been at the current
location. Their son, Kevin, grew up in the business
and entered it full-time in 1980 after graduating
from college. Kevin’s wife, Leslie, also worked at
the shop and has continued making candy using
Douglas’s recipes. In 2000 a new candy kitchen
and work space was provided by a two-story
addition to the business.
Tomric Systems, Inc. – Tomric Plastics was founded by Paul Elsinghorst
in 1962 with the goal of providing cost-effective, fun and interesting
plastic chocolate moulds for confectioners. Tomric has evolved as a
manufacturer of thousands of its own designs and also distributes
moulds from a variety of world-class manufacturers like Hans Brunner
and Chocolate World. Tomric also designs and manufactures stock and
custom plastic tray packaging solutions for the confectionery, bakery
and biscuit industries. Tomric is the North American distributor for Selmi
Chocolate Machinery, a manufacturer of chocolate tempering, enrobing

Lakes has over 100 wineries in the region,
producing award-winning wines in various
varietals and styles.
Wahl’s Candies - Wahl’s Candies was established as an in-home
business in 1938 by Margaret and Clarence Wahl, who eventually
moved their four sons into the attic so the bedrooms could be used for
candy making. When their son, Bud, came home from WWII, he and his
mother opened a storefront shop and soda fountain. In 1967, Bud and
his wife, Dorothy, closed the fountain and moved the candy business
to a renovated circa 1840 farmhouse, adding on to the building twice.
In 2004 Bud’s son, Mike, and his wife, Kathy, moved the business into
a newly built 10,500 square foot facility which
was expanded in 2011. Attendees will view
the facility in full production, including a rare
Peppy Dipper one person coater in operation.

Fowler’s Chocolate Co., Inc. – Fowler’s Chocolate’s story began in 1901
with Joseph A. Fowler; he attended the Pan American Exposition in
Buffalo where he created and sold a variety of chocolate confections
and sweets. With his brother, Claude, Joseph opened a small candy
store in Buffalo. In 1910, Claude started his own business, concentrating
on taffy and candied apples. Joseph passed away in 1944, yet
succeeding generations continued the chocolate business. Joseph’s
sons, Joseph C. and Ray, were responsible for the success and growth
of the company throughout the ‘50s and early ‘60s. In 1961, Joseph
C. Fowler’s son, Roy, joined the corporation, and in 1968, Fowler’s
Chocolate moved its operations to a 10,000
square foot building. In 1993, the company was
purchased by Buffalo residents. Roy aided in
the transition from the Fowler family to a new
ownership group headed by Ted Marks.

MOD-PAC Corp. - For over 130 years, MOD-PAC has been a pioneer
in printing and manufacturing folding cartons. Founded in 1881
as Cooper Paper Box, the company was acquired by the Astronics
Corporation in 1972, at which time the MOD-PAC Corp. name was

The Palace of Sweets – The Palace of Sweets was founded in
approximately 1895 by James Kustas, a Greek immigrant in Batavia,
New York who started a restaurant, ice cream and candy business. The
business flourished and remained in the family by his son, George,
taking over in 1960. The original building was demolished in 1972 by
urban renewal; the business continued but was downsized. Then, in
1978, George and his wife, Harriet, and sons, James and Paul, opened
a multi-store unit in the downtown mall of Batavia, operating a
restaurant, candy store, gift store and snack bar. In 2001 the business
expanded to two additional stores in Buffalo.
Some of the candy production remains at the
Batavia location, but the majority of candy
is produced and shipped from the McKinley
Mall location where attendees will be touring.
