for Ribera del Duero
Ribera del Duero is hot these days, by which we
mean popular – we’re not talking temperature. In fact,
this sunny region is located in the continental
highlands of north-central Spain, where high-altitude
vineyards experience refreshingly cool nights that
create perfect conditions for intensely complex
wines. Reds here are typically based on the Tinta
Fina (or Tinta del País) grape, a locally adapted
clone of Tempranillo that yields fuller body and
darker fruit character. This blockbuster red from
Finca El Encinal blends Tinta Fina with Cabernet
Sauvignon, lending a touch of international flair
to a local specialty.

“BIG 3” – RIOJA, RIBERA DEL DUERO,
AND PRIORAT – the regions that are making waves.
It can be easy to overlook the versatile landscapes and rich regional
identities of Spain, which is better known for its sandy beaches
and plentiful vineyards. To do so, though, means missing out on the
full story. Tasting wine from just one Spanish region is an experience
that merely hints at what the country has to offer – like dipping only
your toe into the water. Here, we take the plunge and explore three
leading regions from one of the world’s hottest wine-producing nations.

THE EVOLVING CLASSIC
Spain’s most renowned wine region has two
things in abundance: dinosaur fossils and vineyards. The prevalence
of both owe to a time 120 million years ago when ancient lakes
and deltas stretched across the region, preserving dino footprints from
the distant past while creating complex soils perfect for winegrowing
today. Despite the soil being full of fossils, the same can’t be said of
the wine scene – the region is home to an exciting blend of old-school
and cutting-edge wineries, as reflected not only in a mix of traditional
and modern architecture but also in the mix of traditional and modern
wines. A traditional approach favours American oak, while modernists

are exploring French oak or no oak
at all. The star red grape is Tempranillo,
and it’s here that the grape achieves
its most famed expressions. Most local
reds are Tempranillo-based blends
with medium body, savoury red fruit
and earthy character. Nuances are
achieved with other varieties such as
Garnacha, Graciano and Mazuelo
(Carignan). What really sets Rioja
apart is that, more so than any other
Spanish region, they age their
wines before release – effectively
cellaring the wine for you! Red wine
designated Crianza is aged at least
two years, Reserva at least three
years, and Gran Reserva at least five
years. (Crianza and Reserva spend
at least one of these years in oak;
Gran Reserva, two.)

THE CHIC MAGNET
If any Spanish wine region is ‘trending’ these
days, it’s the high-flying Ribera del Duero. Home to the fabulously
famous winery Vega Sicilia, this region has really burst onto the scene in
the past few decades as winemakers and wine lovers discovered that
it is capable of producing a wealth of incredible wine. Located in the
continental highlands of north-central Spain, Ribera del Duero is in
some ways the Spanish equivalent of Argentina’s Mendoza with its big,
intense red wines grown at soaring altitudes. The risk is one of damaging
frosts, but the rewards are wines with that magical combination of
balance and power. Like Rioja, Ribera del Duero is traversed by a major

river (and wine lovers will note that the
Duero becomes the Douro downstream
in Portugal). Another thing the region
shares with Rioja is Tempranillo, but
with a twist: the Tempranillo found
in Ribera is a locally adapted version
called Tinta del País (or Tinta Fina),
known for producing reds with full body
and intense dark fruit flavours. As
word about Ribera del Duero’s amazing
premium wines continues to spread,
more and more trendy restos and savvy
individuals are adding Ribera to their
wine lists and cellars.

THE REGION REBORN
The first thing
you’re likely to notice when exploring
Priorat is the sense of deep history. This is a region of ancient
architecture, rugged landscapes and unmistakably Catalan
culture. Another thing you’re likely to notice is ancient vineyards
side by side with almost brand-new vineyards, with not much
in between. The reason for this is that Priorat recently underwent
a phoenix-like rise from the ashes of vinous obscurity. This
resurgence is thanks to René Barbier, Álvaro Palacios and a group
of like-minded winemaking rebels who discovered long-forgotten
vines in the early 1980s. Once a flourishing wine region, Priorat

had fallen from fashion in the late
19th century and nearly all its vineyards were neglected or abandoned.
After Barbier lit the initial spark,
winegrowers and winemakers from near
and far have flocked to Priorat to
add their own fuel to the fire that has
caught hold of the region. Quite
unusually for Spain, Priorat is home
to remarkably steep vineyards with
slate soils (comparisons to Mosel have
been suggested), which adds an extra
layer to the challenge of planting and
tending vines. Some newcomers are
exploring varieties such as Cabernet
Sauvignon, Merlot and Syrah, but it’s
the ancient Garnacha (aka Grenache)
and Cariñena (aka Carignan) vines
that produce the most exceptional
wines of Priorat.

serve local foods

they’re good. Aside from that, the whole concept
of our establishment is that we’re here to celebrate
all the goodness our local environs have to offer.
Even within a few hundred clicks on either side of
the 416, we have drastically differing terroir and wine
styles that vary just as dramatically. Many Ontario
winemakers are very quickly forging an interesting
and unique identity within the greater world of wine
– which they will one day be famous for. It’s exciting
to be here on the ground floor with them.

I have gotten to know some of Ontario’s owners
and vintners, and I want to help celebrate what they
do. The template for our restaurant is local and we
focus on the bounty of this province. We’re focused

What dishes
would you pair
with these wines?
ADRIAN: I’d pair the Aure Gamay with 416
Snack Bar’s ‘The Board.’ Here’s one of these
really amazing Gamays we’ve been getting out of
Niagara: real red fruit, acidity and depth with
some savoury pepper notes. It’s really great with an
assortment of flavours and textures, which is what
we have on The Board – a platter that changes
regularly. Last week it was carpaccio nachos (caraway
crackers with aioli, shaved tenderloin, crispy
capers and arugula), roasted heirloom baby carrots,
roasted potato and octopus skewers with red
pepper, eggplant and fennel agrodolce, pork terrine,
and Tomme cheese from Monforte Dairy in Stratford.
The Loved by Lu Riesling would go well with
our Korean fried chicken. This Riesling is on
the tropical side with a satisfying zip of acidity. The
chicken is double deep-fried thighs with a rich and
slightly spicy BBQ sauce made primarily of fermented
chili paste, ginger, sesame oil and garlic. The richer
side of Riesling always matches up well with a bit
of heat and the acidity will balance the richness of
the chicken.
DARCY: The Aure Gamay would pair well with
Farmhouse’s Ploughman’s Platter – it’s a selection
of pickled veg, duck egg, smoked trout, cheeses,
Kozlik’s mustards, confit duck or pork belly or beef
heart, and sometimes rabbit. Niagara Gamay is
great with the wide variety of foods on such a platter.

AUGUST RESTAURANT, BEAMSVILLE: Beth (my
wife and partner in the restaurant) and I are very
excited by all things local – from the wines, beers
and spirits to the local farmed food to the wild
foods that grow all around us. Southern Ontario is
crazy rich with all things tasty! Food that’s grown
so close to home always tastes better. Fruit is
sweeter, lettuces are crisper, tomatoes are juicier,
and peaches are just way more awesome. Same
holds true for the wine. We’re very lucky to have a
restaurant that’s located near some truly awesome
wineries. All of them showcase the best that
Niagara wine has to offer – and the offerings are
great. It’s also nice to know that we are supporting
the people in our community.

CLAYTON: I’d serve the Calamus Unoaked
Chardonnay with our smoked ham and
roasted apple crêpe with Gruyère cheese; and the
Rosewood Merlot with our grilled Ontario veal
chop with a wild mushroom jus and double-cream
Brie. This was an easy one in that we have this
great wine on our wine list! The sauce we use for
our veal chop uses a variety of mushrooms, garlic,
red wine, fresh rosemary and veal stock. Cut a slice
of Brie, place it on the grilled veal and pour
the sauce over the top. Pour yourself a glass of the
Merlot. How’s that for a tasty dinner?

TASTING NOTE: A sumptuous amalgam of lightly
salted roasted hazelnut shimmering within its own
oil. Oloroso bulging with toasted, slightly singed
currants, a sliver of kumquat and topped by thick
vanilla. Irresistible… almost impossible to fault: the
oloroso grandly, almost pompously, leads the way
exuding thick Christmas pudding depth; a light
muscovado sugar top dressing counters the deeper,
lightly salted vanillas which begin to emerge; a very
slight sulphury note sullies the tone somewhat, but
there is still enough rich vanilla and spotted dick
for some enjoyable afters; only an odd cask has
dropped this from being a potential award winner to

Grilled Ontario Veal Chop
with a Wild Mushroom Jus
and Double-Cream Brie
For the sauce:
3 cups chopped mushrooms (the more
variety, the better; shiitakes and oysters
have great flavour, and we love adding
button mushrooms in the mix)
1 clove garlic (try to find Ontario
garlic – it’s sweeter)
1 tbsp butter
1 cup red wine
1 sprig fresh rosemary, chopped
1 cup veal stock (we make our own, but
you can always substitute with a good
quality, commercially produced beef
stock, and some butcher shops sell
their own stock)
Cracked black pepper
Double-cream brie
4 veal chops
1. In a saucepan, heat the butter until
brown and foamy. Cook the mushrooms
until nice and brown. The caramel-y
bits are all flavour.
2. Add the chopped garlic and deglaze
the pan with the red wine. (You might
want to take a sip of the wine first; I
know I would.)
3. Add the rosemary and cracked black
pepper and reduce the wine until it’s
almost dry. Add the veal stock and
cook until slightly thickened. Season
with a little salt.
4. Grill the veal chops. (We like medium
rare.)
5. Cut a slice of brie, place it on your
grilled veal and pour some of the
sauce over the top.
Smoked Ham and
Roasted Apple Crêpe with
Gruyère Cheese
The sauce is gluten free. Not everything
that we make is gluten free, but if we
can, we do. If you have a creamy sauce
recipe that you like and it has flour in
it, do it. The amount of apples and ham
you use depends on how you would
like to stuff your crêpes. Use more if
entertaining.
For the crêpes:
1 cup buckwheat flour
1 cup all-purpose flour
4 eggs
2 tbsp melted butter
6-7 cups milk
Salt and pepper
1. Mix all the ingredients in a mixing
bowl, adding most of the milk (you
may not need all of it). Once it’s mixed
and lump-free with the consistency of
thin pancake batter, cover it and throw
it in the fridge. If you want your crêpes
to be tender, let them rest for a couple
of hours in the fridge. (Imagine how
tense you would be if someone
whisked you.)
2. After at least an hour (but preferably
two), you’re ready to make your
crêpes. In a good non-stick pan, melt
some butter over medium heat. Pour
in some of the crêpe batter, making
sure not to use too much – just
enough to cover the bottom of the
pan. (Using too much batter will make
the crêpes too thick.) Cook on one
side until set. Don’t over-brown them
or they will be crunchy and hard to
work with. Using a fork or small
spatula, flip the crêpe over and cook
the other side. These crêpes can be
refrigerated for one day, or frozen for
future meals.
For the filling:
Smoked ham, sliced thick
Apples, peeled, cored and sliced
Olive oil
Salt and pepper
Toss the apples with some olive oil, salt and
pepper, then bake at 350°F until soft. (Now
is a good time to have a glass of wine.)
For the sauce:
4 cups milk
Pinch of nutmeg
1/2 cup 35% cream (mmmmmm, rich)
1/4 cup cornstarch
Salt and pepper
1. Mix the cornstarch with very cold
water (just enough for it to dissolve).
Set it aside until you are ready to
thicken your sauce.
2. Slowly bring the milk and cream up to
a boil. Add the nutmeg. Turn the heat
down to a simmer and slowly add in
your cornstarch. (You may not need it
all.) Once it has reached the desired
thickness, stop adding. Turn the heat
down to low and give it a stir.
3. Add salt and pepper to taste. Voilà!
Done. You can use it hot or prepare it
for use the next day. But there isn’t
much to it.
Now to put it all together:
Roll the crêpes with the ham and apples.
Place them in a heatproof dish. Pour
sauce over crêpes. Top with some grated
gruyère cheese and bread crumbs. You
can use other cheeses too if you like –
cheddar would work. Asiago as well. Bake
the dish at 350°F until bubbling and golden
on the top. You’re ready to eat.
