liability. The above are not responsible for any theft, damages, injury, or accidents
arising from participation in this function.

General Rules and Guidelines
This is to inform the cooks of the basic rules and guidelines for the Hempstead
Chamber of Commerce Barbecue Cook-off. The Chamber of Commerce, their
employees, volunteers, and Official persons are not responsible for theft, injuries,
or damage to person or property for any participant, guest or visitors to the cookoff.
1. Showmanship: An area of 30x30 will be assigned to each team.
2. No firearms of any kind will be allowed in the cook-off areas. No pyrotechnics,
explosives, or dunking tanks will be permitted. Violators will
face disqualification, and/or removal from the grounds.
3. Barbecue: All fires will be of natural woods or charcoal. No gas or electric
equipment will be allowed for the preparation of meat. Holes, dug
pits, or open fires not in containers located less than 1 foot from the ground
will not be permitted.
4. Entries will be turned in at the following times:
Jackpot Beans - 11:00 a.m.
Margaritas - 12:00 noon
Chicken - 1:00 p.m.
Chefs Choice - 2:00 p.m.
Pork Spare Ribs - 3:00 p.m.
Brisket - 4:00 p.m.
5. There will be a Head Cook's meeting on Saturday morning at 9:00 a.m. at the
Barbecue committee's office. Drop-off areas for the entries will be announced
at that time. Check-in time will be noon Q? Friday, July 16t\ 2010.
6. The Cook-off committee allows no precooking of meat prior to inspection.
Seasoning and marinating will not be allowed prior to inspection.
7. No red sauces or garnishes will be allowed in the judging container. Sauces may
be used for the cooking process but may not be applied for presentation
or judging.
8. This cook-off is intended for family participation. Nudity, lewdness, profanity, or
questionable practices are banned. The excessive use of alcohol shall be
grounds for disqualification. Beer is sold by the Festival on Festival Grounds.
9. Each team is responsible for the maintenance and cleanup of their assigned areas.
All cooking sights. must be cleaned before leaving the grounds.
Absolutely no beans, grease, or trash will be left in the cook sites.
10. The Head Cook will be responsible for the conduct and behavior of their
teammates and their guests. In the event that a member of your team is
expelled, it is the Head Cooks responsibility to see that the offending member
or guest is removed from the grounds. In the event the Head Cook is expelled,
then his designee will ensure the person is removed. If the banned person
remains in the area, the offending team may face disqualification.
11. Amplified sound systems are to be used with moderation and consideration of
others in the cook-off area .

-.12. Contestants will not be allowed to sell barbecue on the premises. Small samples
can be given to spectators.
13 Cook's Choice: This will consist of any meat other than the entry meats, and
must be cooked on the pits during competition. No soups or stews will be
accepted
14. Jackpot Bean: A minimum of2 pounds of pinto beans will be prepared on site.
Only beans and their juices may be presented for judging. One Winner 50% Pay
Back!
15. Margarita Contest: There will be a contest for those wishing to participate.
Margaritas will be turned in at the designed place at 12:00 noon on Saturday
July 17th, 2010. There will be a $10.00 entry fee. One Winner 50% Pay Back! The
winner will be announced at the trophy presentation.
Judging: All decisions of the judging committee are final.
17. Each entry fee is non-refundable and must be submitted by Saturday, July io", .
2010. All entries will be submitted in original form with liability release
completed.
18. Trophies and prize money will be awarded at approximately 5:00 p.m. for the

19. Absolutely No Golf Carts or ATVs will be permitted in the Festival Areas
(Vendor Booths areas) all areas will be barricaded off.
We wish this to be a family event.
Safety is the most important issue. Please be responsible .
