Troglodyte caves
Calvados Morin’s troglodyte caves are over
200 years old; a unique and enchanting setting
where the calvados gently matures giving rise to
an exceptional alcohol.
The clay walls dug into the cliff naturally
maintain the cave temperature at about 13
degrees with humidity fluctuating between 80
and 100 %, winter and summer alike. In this
extraordinary environment, the Limousin* oak
casks, which protect the precious nectar, foster
quality ageing.
*Noble tree, originating from forests in the center of France,
whose wood is famous for its great maturing qualities for
Eau-de-vie.

The history of Calvados Morin began in 1889. Handed down from father to son, it is one of the oldest
Normandy companies, specialized in making and blending “Top Quality” Calvados. Each year the Morin
Calvados can be identified for its elegance and exceptional character. Located in Ivry-la-Bataille, a charming
small Normandy town of the Eure Valley, Calvados Morin possesses ageing installations which are unique in
Normandy; with in particular, underground Troglodyte caves.
Normandy, land of history
Situated in the north west of France, Normandy had marked history, from the 10th century Viking houses, to
the Second World War. Its prairies and coast have inspired many authors along with artists such as Claude
Monet. Apple trees flourish in this green countryside giving rise to the best of Eau-de-vie. The whole art
of Calvados Morin and its Cellar Master is to enhance calvados derived from ciders obtained by the natural
fermentation of apple juice.
Ancestral Know-How
Calvados is to apples what Cognac is to grapes. Calvados Morin has built its reputation on its authentic knowhow and its extra touch. The skillful blend of bitter, bitter-sweet, tangy and sweet apples give a rich palette of
flavors to Morin Calvados.
Traditionally made using modern techniques
If the Morin Calvados alcohol is rewarded for its quality, this is because it is made using traditional custom-built
methods. A luxury beverage, which is regularly, awarded prizes by the greatest specialists.
Whatever the Calvados from the Morin range, the magic is present
all through the various blending and maturing phases, the secret of
which is held by the Cellar Master.
Each quality is the expression of one or several terroirs.
Each Morin Calvados, in dry or humid cellars, inexorably follows
natural evolution leading to excellence.
The reserve Calvados which enters into the composition of the higher
grades (10 to 40 years age) is carefully selected and stored in new
small oak casks and then in older ones, in cellars submitted to climatic
changes which stimulate exchanges between the ambient air, the
wood and the Eau-de-vie.
It is then transferred to the constant temperature of the very humid
underground Troglodyte caves for the maturing phase. The final
phase is indispensable to the inimitable character: the Morin touch.
The best will go into 100-year-old oak barrels to wait, sometimes for
several decades, before disclosing its full aroma and taste.

Normandy, Apple Tree Country
Normandy’s humid oceanic climate is
particularly favorable for apple tree
culture.
The multitude of different
varieties of tannin-riche apples which go
into the cider (fermented apple juice) to be
distilled, give the calvados its unique and
inimitable character. In this countryside
of traditional red brick half-timbered
buildings this golden colored Eau-de-vie
was created and has been developed.

Limousin oak casks
Calvados Morin uses casks made from oak
wood from the Limousin forests in the center
of France to age its calvados.
The Calvados stored in this strong noble oak
wood of Limousin, develops, little by little in
a mysterious alchemy, subtle aromas and its
beautiful amber color. The Calvados breathes
through the wood for years, slowly losing
its fire and gradually integrating the wood
tannins, gaining bouquet and aroma over time.

their honor. The Diamond Decanter reserved
for the 1973, Napoléon and XO cuvees, is an

reveals its nobility. Producing a great
Calvados is not a linear process. Its life
cycle requires several stages which bring out
its strength and quality. The different facets
that transform a Calvados into a prestigious

ANCESTRAL RESERVE,
A RARE AND UNIQUE VINTAGE
Very rare in the Eau-de-vie market, the Ancestral
Reserve Cuvee is matured in oak casks for 25 to 30
years and then bottled in an elegant flask. It is then
stored for 10 years, in the dark and quiet containment
of the underground caves (paradise cellar), so that
it becomes covered in noble and natural molds. The
ancestral cuvee “summarizes” finesse and elegance,
offering sweet aromas of candied apple, a perfect
balance and a subtle background of tannins. Limited

The art of tasting Morin Calvados
The Morin Calvados can be appreciated as much as an appetizer, as
during a meal or as an after dinner digestive.
Used in many cocktails, calvados adds a surprisingly festive touch. It
can also accompany sole fillets, and is delicious with roast fowl and in
patisseries.
Amateurs like to drink it after the meal as a digestive. Served in a brandy
or tulip glass, it will gently warm up to reveal its complete bouquet. It
should be tasted in small mouthfuls giving it time to delight the taste
buds. Once the glass is empty, it will still give off lingering notes of
