Pass rounds
30 Van Dyck Blinis
50g Barker’s Sundried Tomato & Olive Chutney
10 salami slices
Coriander to ganish
50g Barker’s Red Pepper & Chilli Jelly
10 Lebanese cucumber slices
20g Barker’s Lemon Curd
40g mayonnaise
10 mussels
Lemon rind
1. Lay frozen Blinis out on serving plate.
2. First 10 Blinis: Mix Barker’s Lemon Curd with mayonnaise, top each Blini with a mussel and
garnish with lemon rind.
3. Next 10 Blinis: On each Blini place a dollop of Red Pepper & Chilli Jelly, and top with a
cucumber slice.
4. Last 10 Blinis: Place a salami slice on each Blini, add some Sundried Tomato & Olive
Chutney, garnish with Coriander.
Tuna Tomato Blini
150 gr Sweet Thai Chili Tuna
4 tspn Dijon mustard
Cream cheese
Green and red capsicum
1. Take the Blinis out of the freezer and arrange on plate.
2. Combine tuna, cream cheese , mustard and chopped green and red capsicum. Mix.
3. Scoop out and shape into a ball.
4. Serve on top of blinis garnished with a slice of capsicum and coriander.

Bacon & mushroom Blinis
Van Dyck Blinis
2 strips of bacon finely diced
1 tbsp butter
250g mushrooms, finely diced
1 clove of garlic, finely diced
2 tsp fresh thyme, finely chopped
1 tbsp chives, finely chopped
Salt & pepper
Method:
Heat a non-stick pan on medium heat and sauté the bacon until crisp. Place on a plate
and set aside.
Leave 2 tsp of bacon fat in a pan and add butter. Sauté onions and mushrooms (with a
little salt and pepper) over medium heat until almost dry. Add the garlic, bacon and
thyme and sauté for 1 minute. The mixture should be moist.
Top blinis with a teaspoon of the mixture, and sprinkle with chives.
Pesto & Feta Blinis

1. Take the Blinis out of the freezer and lay them on the serving plate (they can be
dressed from frozen as they thaw within 10-15 minutes).
2. Spread tomato pesto on blini. Place feta on top and garnish with a slice of green
capsicum and parsley.
