TIPS FROM THE EDWARD’S KITCHEN:
CREATING THE PERFECT CHEESEBOARD
A cheeseboard is like a piece of art. It needs texture, color, and a
story. A good cheeseboard should be a feast for the eyes as well
as the palate.
Choose cheeses with a variety of flavors, textures, ages, and
colors. From mild to sharp, soft to hard, fresh to aged, the
combinations are limitless.
Select two to five cheeses and plan on about 3–5 ounces of
cheese per person. This amount can vary depending on the
course.
It can be fun to let your selection be dictated by a theme. For
example, a selection of cheeses only from Vermont, strictly goat
cheeses, or maybe an offering of just Italian cheeses.
Cheese is best displayed on a natural surface. Use wood, slate or
marble.
Offer one knife for each cheese and leave space between each
cheese so that flavors don’t mingle
Cheese is best enjoyed at room temperature. Be sure to take
your cheeses out of the refrigerator 1–2 hours before serving.
Labeling each cheese is a good idea so that your guests know
what they are eating.
Accompaniments are key. Choose rustic bread and crackers
that won’t overshadow the cheese. Fresh pears, apples, figs, and
grapes or dried apricots, cranberries and cherries are all good
choices. If you want to include berries, they are best served in the
form of compotes, jams, and chutneys. Pickled veggies, nuts and
charcuterie are also great additions.

This class offers a slower approach to Hatha yoga. Modifications

The room is still heated, but to a lower temperature. This class is
for people who might be healing an injury or need help with the
proper alignment.
All three of these classes (hot and warm) guide students toward
healthier joints and spines using the proven benefits of the 26
postures + 2 breathing exercises. It is recommended that new
students start their practice with the “Classic” or “Warm75” class
for two reasons: It gives the teacher more time for instruction,
and the postures are repeated twice giving the new student
more opportunity to become familiar with the practice.

the younger yogi age 8-12. These students are encouraged in a
very fun and gentle way, with no heat, to make the practice of

Not every body is capable of performing the final expression of
each posture. So you are taught to begin by standing straight
while learning to become aware of your breath. Which sounds
simple but it’s not! You are then slowly moved into postures
meant to steer the entire body in the direction of better health.
YIN yoga is conducted at average room temperature. It is the
practice of learning how to breathe well and relax muscles so
the ligaments have the capability to stretch. Hips and shoulders
house an incredible amount of stress. YIN is the perfect yoga for
learning how the release it, and yet it takes time. Make Yin part
of your weekly practice.
SlowFlow is a vigorous class combining upper body strength,
flexibility and cardio. This is a blended class of several traditional
styles of hatha yoga therefore it is not a set sequence and the
postures will vary with each class. The class is designed for all
students seeking a challenge. Beginners are welcome.
Core Club meets in a cool room 3 times a week. This class is
where your strength and ability is challenged so as to fine tune
your balance. The stronger your core, the sturdier your structure.

Meet Leeanna Woods, owner of two Northville-based businesses,
Healing Feather Massage Therapy and Pix by Lee Photography.
Leeanna is a perfect example of what happens when you follow
your passion. After years of experience in Neuro Trauma ICU and
the emergency room as a Certified Evaluated Nurse’s Assistant
plus in-home peritoneal dialysis and home healthcare, Leeanna
realized she could make people feel better through massage
therapy. Her research helped her find ways of relieving pain and
in many cases, prevent damage to the body, bones, and muscles.
Leeanna’s clients benefitted from the massage therapy quickly,
improving their quality of life.
Leeanna draws from her Native American heritage to apply

a child with her father and continued while in high school,
working in the dark room with film. She began photographing
bands and family portraits, and in recent years, has added
event photography, commercial and product photography for
catalogs, and headshots to her lists of services. The film has
been replaced with digital photography and the darkroom
has become Lightroom on her laptop, but she still feels the
excitement of seeing the photos come to life.
