Fine Dining

Scenic Restaurants
Since the beginning of humanity, the evolution of our eating
habit has progressed tremendously over the course of time.
Before, we ate to stay alive as it is one of the basic necessities
of life. While that still remains true, it is undeniable that
dining has also become a social event, an occasion for
romance, a quality time for families to spend together, or
even an opportunity for consummating business transactions.
Perhaps the reason for this is that there really aren’t many
occasions that allow people to come together and enjoy a
mutual activity they could participate in.
In the world of business, the restaurant a company chooses
to take its customers for entertaining speaks many unspoken
words. In a way, it symbolizes the company’s status and how
much the clients are valued. Often, deals are made based on the
success of an impressive dinner which might also be followed
by a few drinks and entertainment. With nice scenery, good
food, fine services, pleasant music, and interesting company,
not much else could go wrong. It is the perfect opportunity to
strengthen a business relationship between a company and
its client.
Even before the trend of corporate dinners began, one of the
most popular methods a man chooses to impress his date
is by taking her out to a fine restaurant. During the first few
dates, the atmosphere plays an even more important role
than the food as both parties are most likely to be too busy
focusing on the right words to say than relishing the taste of
what’s in front of them. Thus, being surrounded by a romantic
setting can really make a difference. As for quality family
time, having home-cooked meals day after day can become
routinely boring. Going out to eat once in a while not only
allows the housewife a break from her daily chores, but also
provides the whole family time to explore new menus in a
fresh surrounding.
10
When going on vacation, most people would incorporate
fine dining as part of the perfect holiday. Naturally
after months of hard work, it feels right to splurge on
life’s little luxuries like fine French cuisine sixty storeys
above the streets or a dazzling dinner cruise along the
river. Holidays at a seaside town definitely call for beach
barbecues and cocktails with live music in the midst of
soft white sands and a refreshing sea breeze.
With such emphasis placed on the whole dining trend,
presenting diners with an unforgettable experience
has become a challenge for any competing restaurant
establishment. Customer’s expectations have raised
the bar so high that every restaurant is faced with
bigger challenges as they grow. No longer able to
rely on the taste of the food alone, creating a nice
atmosphere is one of the most vital parts for any
successful restaurant. Maintaining a place in the
spotlight means serving the finest, most delicious food
combined with unique decoration, convenient location,
scenic view, and attentive service as modern diners go
out to restaurants for ‘an experience’ rather than just
to fill their stomach.

Globalization of World Cuisine
As the world becomes more universal, demand for international cuisine also grows. The
more people travel, the more they are familiarized with food of various cultures and savor
tastes they had never experienced before. New experiences bring new knowledge which
inevitably opens doors to the use of new and exotic spices, better and rarer ingredients,
at the same time challenging chefs to raise their standard of cooking even higher. Secret
recipes passed on for generations are diversified to make way for more varieties, and food
from different cultures are combined to create a new breed of fusion cuisine.
13
Scenic Restaurants
Every culture’s food has its own main stars which pretty much dominate the
flavor and set the tone. In Italian cooking, we often see the use of tomatoes
in combination with cheese. Indian food, however, is dictated by strong-scented
spices like cumin, turmeric, saffron, etc. Thai food, on the other hand, usually
consists of many different herbs to create a burst of different flavors.
Let’s take a look at some of the herbs and spices most often found in Thai cooking.
Starting with ‘Phrik Khi Nu’ or small fresh chilies, these tiny but powerful pods
are found in over half of all Thai menus as Thai people enjoy their food spicy.
They also contain capsaisin, an active ingredient beneficial to the blood pressure
and heart. The next most popular item must be ‘Manao’ or lime as its citric sour
juice is used in the various ‘Yams’ and ‘Tom Yams’. Lime is high in vitamin C, an
excellent source for anti-oxidant. Also a favorite ingredient is ‘Bai Kaphrao’ or
holy basil leaves that go well with stir-fried meats. The green and purple leaves
contain 0.5% volatile oil which exhibits antimicrobial activity. ‘Saranae’ (mint),
‘Hom Daeng’ (shallots), ‘Ton Hom’ (spring onions) are often used as a set for ‘Nam
Tok’ dishes. They also have volatile oils which contain anti-flu agents. Also found
in all Thai kitchens is ‘Phak Chi’ or cilantro which provides decoration as well as
refreshing scent to food. It offers many benefits such as aiding digestion. Not to
be forgotten is another star of Thai cooking, ‘Krathiam’ or garlic. Health benefits
of garlic are so numerous they range from preventing colds and flu to managing
cholesterol levels. These pungent cloves give meat a full flavor and make any
dish tastier. ‘Kha’ (galangal), ‘Takhrai’ (lemongrass) and ‘Bai Makrut’ (kaffir lime
leaves) are the basic herbs that give Tom Yam its distinct flavor and aroma.
Apart from providing a zesty tang to food, studies have shown that they actually
contain anti-cancer properties. Recently started by health spas, fresh stalks of
lemongrass or ‘Takhrai’ and ‘Bai Toei’ (pandan leaves) are used for making herbal
tea. Moreover, lemon grass is great as a natural mosquito repellent while pandan
leaves are used as a diuretic. Apart from giving Thai food its distinctive flavors,
these herbs and spices are absolutely beneficial to health.
As a completion to any fine dining experience, drinking wine has become such a
phenomenon around the world that any restaurant catering to the more refined
groups of clientele is automatically expected to carry an extensive selection
of wine. With new world wine from Australia, Chile, the United States or even
Thailand out in the market, old world wine from France and Italy must make room
for their young competition. This gives an opportunity for connoisseurs to enjoy
a wider range of wine at more reasonable prices and a better chance of matching
the right wine to specific food.

Scenic Restaurants
Thailand is a country blessed with picture-perfect natural scenery from the North to
the South. In the North and Northeast, the misty mountains are covered with fertile
green forests and natural flowers growing wild. There is nothing like enjoying a meal
in the midst of the valleys that wind along the descending foothills and the sounds
of waterfalls trickling in the background. The mountain range that runs in a maze
provides a majestic backdrop for some of the most picturesque sunsets ever seen.
Cool air envelopes the surrounding for an enhanced atmosphere of alfresco dining.
A timeless romantic setting, dining by the river has always been a popular choice for
decades. There is something alluring about the river and its history that many find
magical. Watching life along the river and boats passing by is much like watching
a play on stage. It makes one reminisce about the good old days in the past when
things were simple. As night falls, the glittering water sparkles with lights reflected
from houses and buildings along the banks. Passing boats that make little ripples in
the water even helps to create magic.
The most inspiring scenery known to draw travelers from around the world to Thailand
are the heavenly beaches. The vast open sky that blends with the clear blue ocean
makes the kind of picture that lasts forever in the memory. The rhythmic sound of
the waves crashing into the sand and the cries of seagulls making their way back to
the nest is music to the ears. The soft powdery sand under the feet caresses the tired
muscles as lovers stroll along its length.

Perhaps it is this very unassuming charm of the seaside setting that restaurant operators try to
capture. During the design stage, any property fronted by a beach never fails to place a restaurant
here as they realize the importance of atmosphere while enjoying a good meal. For the most part,
diners can expect to find excellent seafood BBQs as this type of food best matches the tropical
ambience. Also, being in a seaside atmosphere brings the anticipation of succulent seafood caught
fresh from the ocean, grilled to perfection on the open flame. As you try to decide what to have for
dinner, the aroma of the tantalizing meat and seafood is most likely to make a decision for you.

Located in Phuket’s popular Patong area, Acqua is a
trendy restaurant overflowing with a young, hip and classy
atmosphere. The use of black and white tones in the
restaurant creates a dramatic contrast which immediately
draws attention to the eyes. The fresh and clean minimalist
style is highlighted by the surrounding glass panels to show
off the stunning sea view beckoning just a few steps beyond.
Out on the terrace, the alfresco area comes with a display
of wood-fired oven for that extra gastronomic ambience.
As though to add fuel to guests’ appetite, the indoor area
features a very modern open kitchen, where all the cooking
activities can be viewed.
Alessandro, who happens to be the restaurant owner and
expert chef in traditional Italian cooking, holds the key to the
secret of every dish. He personally oversees the preparations
to make sure that every course is absolutely ‘Delizioso’. Much
of the authentic Italian cuisine with specialties from Sardinia
are made from special ingredients that cannot be found in
other restaurants. Some of the highly recommended menus
here include ‘Burrata Cheese with Culatello Ham and Figs’,
‘Fresh Artichokes and Bottarga’, ‘Lobster from Maine’,
‘Spaghetti with Sea Urchin’, and many more. To enjoy your
meal without limits, we offer over 100 wines from all over the
world with an emphasis on, of course, Italian labels.

With an uninterrupted 270-degree vista of the
surrounding islands and waters, the award-winning
restaurant of Six Senses Hideaway Samui, Dining on
the Rocks, brings its guests a trendy modern-meetsnature vibe that is absolutely refreshing to the eyes.
The restaurant’s architecture is unique in that it consists
of nine terraced decks of weathered teak and bamboo
perched over the rocks high above the Gulf of Thailand.
The first deck of the structure can be arranged as a
private venue for special functions. As the final touch,
live jazz is played from 6.00 p.m. onwards.
Being unique in every way, the restaurant has invented a
modern interpretive cuisine, which breaks free from the
routine of ordinary cooking. Tried and trusted popular
dishes have been given an edgy new interpretation in
very imaginative ways; so, what you think you are getting
may not be that at all. Dishes are reconstructed to be
both visually and texturally appealing. Top suggestions
to try include ‘Tomorrow’s Chicken Burrito’, ‘24 hr. Lamb
Shoulder Complimented with Greek Salad’, ‘Scallop in
Apple-Coriander Water, Almond Powder, Pumpkin and
Bacon’, ‘Sashimi-Grade Slow Cooked Tuna Sandwich’,
‘Scallop and Oyster Carpaccio’, ‘Paella with Scampi,
Squid, Chorizo and Saffron’, and ‘Soft Gnocchi of
Zucchini and Rocket Pesto, Mushroom Water, Rosemary
and Contrasting Croutons’. Our cellar houses over 400
labels of wines from both hemispheres including New
Zealand’s 2007 Spy Valley Sauvignon Blanc, 2006 Chablis
Les Almanys Burgundy, 2005 D’Arenberg, 2006 Enate

The exotic flavors of Southeast Asia, particularly around Indonesia,
Singapore, Malaysia and Southern Thailand, are widely influenced by
the sambal chili paste. When used to flavor the freshest fish or seafood,
magic happens. The fun part comes when each guest chooses the
ingredients, then watch them sizzle away on a custom made, openfired charcoal grill. They get to select their own accompaniments of
sambal, chutney, wasabi cream, and many more. The menu is designed
for grazing across courses with a wide variety of a la carte appetizers,
salads and sides like ‘Miang Kuai Tiao’, ‘Baby Spinach Salad and
Minced Duck’, ‘Teppanyaki Ice-Cream’, ‘Deep-fried Mango Spring Rolls’,
etc. And, with a nod to a distant tropical Latin cousin, perfectly grilled
and roasted meats are presented on spits and carved tableside.

Panoramic
Restaurants
The amazing views of Bangkok are best captured high up in one of the city’s panoramic
restaurants. Often overshadowing the food itself, the shimmering metropolitan view spreads
out to boast the winding Chao Phraya River, myriads of golden temples and beautiful
architecture that stand among busy streets filled with people going about their day. Being
so far above the ground, the atmosphere becomes surreal, like being a bird looking down on
humans.
During sunset, the advantage of height provides a different perspective to marvel at the sun
descending into the horizon. Restaurants with panoramic views always feature large glass
floor to ceiling walls to best capture the view below. Sometimes, for additional excitement,
diners are invited to enjoy the scenery in an alfresco setting where the excitement of being so
high up without the safety of an enclosed wall awaits. The altitude plus the rush of wind in the
hair can be as thrilling as a roller coaster ride.

The life line of Thailand, the Chao Phraya River, is the merging
of four major rivers; namely, the Ping, Wang, Yom, and Nan.
It is around the banks of The Chao Phraya that some of the
country’s most prominent structures are located. While you
are enjoying the river breeze and delightful feast on a luxury
yacht, you will be taken down memory lane passing historical
architecture standing on either side of the river.
One of the most prominent structures not to be missed is
‘Wat Arun’ or the Temple of Dawn which was built during the
ancient capital of Ayutthaya in the 18th century. Considered
the most revered temple throughout the history of Bangkok is
‘Wat Phra Kaeo’ or Temple of the Emerald Buddha which was
constructed during the reign of King Rama 1 when Bangkok
became the capital of Thailand. Also on the agenda are many
more historical buildings; such as, the French and Portuguese
Embassies, the Memorial Bridge, Santa Cruz Church and of
course, the Grand Palace which served as a rediednce for
many of Thailand’s past kings.
Throughout world history, you might notice that the earliest
settlers always started building a community beside the river.
First of all, it provides the best mode of transportation while its
water is used in daily lives. Riverbanks of the Chao Phraya are
always filled with fascinating history since the Rattanakosin
era when Thon Buri on one side was the capital and Bangkok
on the other side later became one. Naturally, it is not at all
surprising to see historical architecture built along both sides
of the majestic river.
In summary, the luxury dinner cruises provide one of the best
ways to admire life along the river banks. Apart from the highlight which is of course the view, guests can enjoy the crisp
night air out on the open deck or mellow out to the tunes of
live music in air-conditioned comfort.

Theme
Restaurants
Creating a fun and distinctive atmosphere without
depending on the natural landscape for a backdrop
can be more exciting than anticipated. The idea
of eating out is to have a good time which doesn’t
necessarily require an extraordinary view of nature
at all. With a wild imagination, one can transform a
space into anything out of the ordinary. One minute,
you may be walking down the streets of Bangkok
when suddenly, you find yourself gulping down
tequila and burritos in a Mexican bar. For dinner, all
you have to do is travel two blocks to enjoy couscous
and lamb stew in a Moroccan setting.
Creating a theme to enhance the dining experience
in a restaurant sets the tone and makes the entire
meal more enjoyable. For a touch of theatrics, you
might wish to try a tapas dinner with an inspiring
live epic performance being acted out before your
eyes. Alternatively, a cultural dinner in an ancient
Thai setting with a traditional dance performance
could also conjure up an image of the past. Without
creativity, we would not be able to dine in a rice barn
surrounded by a rural Thai setting or enjoy a Chinese
meal in a Ming Dynasty atmosphere.
The beauty of theme restaurants is that it is not
restricted by any guidelines. Diners searching for
something new can always benefit from fresh ideas
presented by restaurant owners who want to make a
difference. Sometimes, we find homes converted into
restaurants while other times, the homey atmosphere
is actually the main attraction. We may choose to
sprawl on the lawn, by the pond, in the kitchen, or
in the living room. The things that humans try to
recreate are not mere illusions but nostalgia of what
has become so rare in the modern world, or simply
how we’d like them to be.

One of the newest additions to Bangkok’s extraordinary dining
scene, Maya is a restaurant that redefines the art of dining. In
Thai, the word ‘Maya’ evokes an aura of mystery that hints at
illusionary magic, which is why one can expect more than just
fine fare. As the evening begins, the entire venue will transform
into a theatrical stage wherein fine food and cocktails meld with
Thai dance performances of unrivalled originality. The stunning
shows are the work of Thailand’s leading theatrical teacher,
Khun Patravadi Mejudon, who is known for blending tradition
with the thrill of contemporary. Off the stage, servers costumed
by New York based designer, Ruth Pongstapone, continue the
show with flowing movements and grace as they serve food on
