All bottles are 750cl and glasses are served in measures of 125ml unless stated otherwise and all wines have an ABV of between 7.5% and 15%.
Due to supplier deliveries we cannot guarantee that vintages will always be as printed.
Iconic and Rare Wines by the Glass
ThankstothelatesttechnologybyCoravin,weareproudlyofferingrareanduniquewines
from our cellar by the glass. The Coravin System allows wine to be poured by the glass
without uncorking the bottle by inserting a hollow needle through the foil and cork,
pressurizing the bottle with inert argon gas (to prevent oxidization), and serving the
desiredamount.Whentheneedleisremoved,thecorkresealsitself.Theremainingwine
nevercomesincontactwithoxygen,andcontinuestoevolvenaturally,asifitwerenever
opened.

There is archaeological evidence of viticulture in
BurgundybeingestablishedintheSecondcentury
AD, although it has been speculated that Celts
may have been growing vines in the region
already when the Romans conquered Gaul (in 51
BC). Greek traders, by who vineǦgrowing and
winemaking was very well known, had founded

up the Rhone valley, where the Romans first
arrived in the 2nd century BC. The earliest

Theabundanceofnativegrapevarietiesfosteredanearlystart
to viticulture with evidence of grape pips dating back to the
Tertiaryperiod.Archaeologistsbelievethatthesegrapeswere
first cultivated sometime between 4000 and 3000 BC, long
before the wineǦgrowing culture of the Phoenicians founded
the trading post of Cádiz around 1100 BC Following the
Phoenicians, the Carthaginians introduced new advances to
the regionǦincluding the teachings of the early viticulturist
Mago. Carthage would wage a series of wars with the
emerging Roman Republic that would lead to the Roman
conquestoftheSpanishmainland,knownasHispania.
AlthoughvineshadbeencultivatedfromthewildVitisviniferagrapefor
millennia, it wasn't until the Greek colonization that wineǦmaking
flourished.ViticulturewasintroducedintoSicilyandsouthernItalybythe
MycenaeanGreeks, and was well established when the extensiveGreek
colonization transpired around 800 BC. It wasduring the Romandefeat
oftheCarthaginians(acknowledgedmastersofwineǦmaking)inthe2nd
centuryBCthatItalianwineproductionbegantofurtherflourish.LargeǦ
scale, slaveǦrun plantations sprang up in many coastal areas and spread
tosuchanextentthat,inAD92,EmperorDomitianwasforcedtodestroy
a great number of vineyards in order to free up fertile land for food
production.

cuttings from the Cape of Good Hope were brought to the
penalcolonyofNewSouthWalesbyAustralianGovernorPhillipon
theFirstFleet(1788).
Wine making and vine growing go back to colonial times in New Zealand.
British Resident and keen oenologist James Busby was, as early as 1836,
attemptingtoproducewineathislandinWaitangi.
Viticulture was introduced to Argentina during the Spanish colonization of the
Americas and later again by Christian missionaries. In 1556 father Juan Cedrón
establishedthefirstvineyardinArgentinawithcuttingsfromtheChileanCentral
Valley
were brought to what is now the San Juan and Mendoza wine region
whichfirmlyestablishedviticultureinArgentina
European Vitis vinifera vines were
brought to Chile by Spanish
conquistadors and missionaries in the
16th century around 1554. Local legend
states that the conquistador Francisco
de Aguirre himself planted the first
vines
The state of California was first
introduced to Vitis vinifera vines in the
18thcenturybytheSpanish,whoplanted
vineyards with each mission they
established. The wine was used for
religious sacraments as well as for daily
life. The vine cuttings used came from
Mexico and were the descendant of the
"commonblackgrape"(asitwasknown)
brought to the New World by Hernán

left in contact throughout fermentation (as with red wine making). The skins contain much of the

Saignée

experiencedaninfluxofFrenchHuguenots,driven

theCapeGovernor,SimonvanderStel,eventually

The descendants of these settlers still play a vital

1 Gathersupplies
Inadditiontothewineingredients,you'llneedafewbasicsuppliestoensurethatyourwinecanagewithoutbeing
affectedbybugsorbacteria.Homewinemakingshouldn'tbeexpensive,soit'snotnecessarytosplurgeonspecial
equipment.Youwillneedthefollowing:

2 Pickoutyourfruit
Winecanbemadewithanytypeoffruit,thoughgrapesandberriesarethemostpopularchoices.Choosefruit
at the peak of its flavor. It's best to choose organic fruit that hasn't been treated with chemicals, since you
don't want these to end up in your wine. If possible, use fruit you've picked yourself or buy some from a
farmer'smarket.
3 Cleanthefruit
Take off the stems and leaves, and make sure the fruit doesn't have particles of dirt or grit. Rinse the fruit
thoroughlyandplaceitinyourcrock.Youcanpeelthefruitbeforecrushing,butmuchoftheflavourofthe
winewillcomefromitsskin.Peelingitwillresultinamuchmilderwine.Somewinemakerschoosenottowash
the fruit before crushing. Since fruit has natural yeasts on its skin, it's possible to make wine using only the
yeastfromthefruit'sskinandtheair.However,washingthefruitandcontrollingtheyeastyouaddallowsyou
to ensure that the flavour of the wine will be to your liking; allowing wild yeast to grow can produce foul
flavours.Ifyou'reupforanexperiment,youcouldmaketwobatchesofwine,onewithcontrolledyeastand
onewithwild,tofindoutwhichyoulikebest.
4 Crushthefruit
Usingacleanpotatomasheroryourhands,crushandsqueezethefruittoreleaseitsjuices.Keepdoingsountil
thelevelofthefruitjuiceiswithin11/2inchesofthetopofthecrock.Ifyoudon'thaveenoughfruitandjuice
tofillthecrockalmosttothetop,topitoffwithfilteredwater.AddaCampdentablet,whichreleasessulphur
dioxideintothemixture,killingwildyeastandbacteriabutifyou'remakingwildyeastwine,don'tdothis.As
analternativetousingatablet,youcanpour2cupsofboilingwateroverthefruit.Usingtapwatercanaffect
thetasteofyourwine,sinceitcontainsadditives.Besuretousefilteredorspringwater.
5 Stirinthehoney
Honeyprovidesfoodfortheyeastandsweetensyourwine.Theamountofhoneyyouusewilldirectlyaffect
thesweetnessofyourwine.Ifyouprefersweeterwine,addmorehoney.Ifyoudon'tlikeitassweet,limityour
honey to 2 cups. Take the type of fruit you're using into account as well. Since grapes have a high sugar
content,youdon'tneedtoaddalotofhoneytograpewine.Berriesandotherfruitswithlowersugarcontent
willneedalittlemorehoney.Youcanaddsugarorbrownsugarinsteadofhoneyifyou'dlike.Youcanalways
addmorehoneylaterifyourwinedoesn'tcomeoutassweetasyoulike.
6 Addtheyeast
Ifyou'reusingyourownyeast,nowisthetimetoaddit.Pouritintothecrockandstiritintothemixturewitha
longǦhandledspoon.Thismixtureiscalledamust.Ifyou'remakingwildyeastwine,youcanskipthisstep.

Coverthecrockandstoreovernight
It'simportanttouseacoverthatwillkeepbugsoutbutallowairtoflowinandescapethecrock.Youcanusea
crock lid designed for this purpose or stretch a cloth or tǦshirt over the opening and secure it in place with a
large rubber band. Place the covered crock in a warm area with a temperature around 70 degrees overnight.
Puttingthecrockinacoolplacewon'tfacilitatethegrowthoftheyeast.Storingitinaplacethat'stoowarmwill
killtheyeast.
Stirthemustfewtimesperday
Thedayafteryoumakethemixture,uncoveritandstiritthoroughly,andreǦcover.Dothisevery4hoursorso
thefirstday,thenkeepstirringafewtimesperdayforthenext3days.Themixtureshouldstartbubblingasthe
yeastmovesintoaction.Thisisthefermentationprocessthatwillleadtodeliciouswine.
Strainandsiphontheliquid
When the bubbling slows down, about 3 days after it begins, it's time to strain out the solids and siphon the
liquidintoyourcarboyforlongerǦtermstorage.Onceyou'vesiphoneditintothecarboy,affixtheairlocktothe
openingtoallowforthereleaseofgaswhilepreventingoxygenfromcominginandspoilingyourwine.Ifyou
don'thaveanairlock,youcanuseasmallballoonplacedovertheopening.Everyfewdays,pullofftheballoon
toletoutthecollectedgasandreplaceitrightaway.

Letthewineageforatleastonemonth
It'sbetterifyoucanletitageforuptonine,duringwhichtimethewinewillageandmellow,resultinginamuch
improvedtaste.Ifyouusedextrahoneyinyourwine,it'sbettertoageitonthelongerside,orelseitwilltaste
toosweetwhenyoudrinkit.
Bottlethewine.
Topreventthewinefromcatchingabacteriathatcouldcauseittoturntovinegar,addaCampdentablettothe
mixtureassoonasyouremovetheairlock.Siphonthewineintoyourcleanbottles,fillingthemalmosttothe
top,andcorkthemimmediately.Allowthewinetofurtherageinthebottlesorenjoyitimmediately.Usedark
bottlestopreservethecolourofredwines.
