Welcome to OLLI at LSU
The Osher Lifelong Learning Institute at LSU is one of a network of 117 university-affiliated lifelong
learning programs supported by The Bernard Osher Foundation. The Osher Lifelong Learning Institute,
or OLLI, offers non-credit educational programs specifically developed for older adults who are age
50 and older; university connection and university support; robust volunteer leadership and sound
organizational structure; and a diverse repertoire of intellectually stimulating courses.
We invite anyone who is interested to become an OLLI at LSU member. Membership entitles you to
register in as many courses, field trips, or special events as you like. Come learn with us!
Our mission is to foster lifelong learning and individual growth for learners ages 50 and over by
creating intellectually stimulating learning opportunities that enrich lives.
MEMBERSHIP
OLLI at LSU is open to anyone who meets its two
requirements:
1. is 50 years old or older; and
2. enjoys learning!
The annual membership year is from July 1 to
June 30. The membership fee is $40. The fee
covers the entire membership year, so join
now to take advantage of this year’s offerings.
Membership entitles you to a wide range of
benefits, including registering in as many noncredit OLLI courses as you like by paying course
fees and any additional book or supply fees. An
OLLI member may attend activities offered by any
of the five chapters within OLLI at LSU: Ascension
Charter Chapter, Assumption Charter Chapter,
Cajun Prairie Charter Chapter, Felicianas Chapter,
or Lagniappe Chapter. See the inside back cover

Beginning Oils: Emphasis
on Landscapes
Produce or at least get a good
start on a painting that speaks to
the individual artist, with emphasis
on painting the landscape. Each
person is gifted with a unique view
of his/her world and with a natural
affinity for certain colors, objects
and composition. A painting that one
person loves dearly may be the one
that drives another person crazy.
You will leave this class with the
basic materials to continue painting;
the basic knowledge of how to start
a painting; and the desire to translate
your vision to canvas. The instructor
provides some generic landscape
photos. You can paint one of these,
or bring an 8 by 10 photo of your
own. Hint: sometimes a poor photo
makes the best painting reference.
You can put your own imprint on it

Butterfly Gardening
The Fascinating History
of the Development of
Medicine
Attracting butterflies to your garden
is a rewarding endeavor. Not only
does a habitat for butterflies help
to maintain their survival, but a
butterfly habitat attracts other
wildlife, like hummingbirds, and
provides you with an ecosystem
that transforms into a learning
experience. This course is a twohour presentation on how to set
up a butterfly habitat in your yard.
Learn about the basic life cycle of
a butterfly and how to establish an
ecosystem that allows the butterfly
to complete its life cycle. Understand
the butterfly species commonly
found in Louisiana, the types of
nectar plants the butterflies need to
feed on, and the specific host plants
needed for the female butterflies to

were responsible for the milestones
in the development of western
medicine. Follow the development of
Western medicine from Hippocrates
to the present by meeting the
remarkable people—men and
women—who made the important

15 different kinds of hummingbirds
found in North America,
emphasizing the eight species
typically found in Louisiana, summer
and winter. Find out what defines a
hummingbird, how to choose useful
field guides, and discuss how to
identify these birds using field-ID
features for the non-expert. Explore
what these birds need in their daily
lives and how we can attract them
to our yards, including gardening
for hummingbirds, recommended
flowering plants, the habitats the
birds need, and the feeders they
prefer. Discover courtship, nesting
behavior, and the amazing details
of their annual migrations, including
the Ruby-throated Hummingbird’s
non-stop 600-mile journey across
the Gulf of Mexico in the spring.

particular, and birds in general, are

Three Modern Irish Writers
In Victorian Britain there was an
explosion of literature coming from
Ireland. It included those from
Ireland who moved to England
(Oscar Wilde, George Bernard
Shaw), those who moved further
away, (James Joyce, Samuel
Beckett, Frank McCourt) and those
who mostly stayed in Ireland, as
did William Butler Yeats. By the
Twentieth Century, much of English
literature had an Irish connection
and this has continued to the present
day. Examine three Irish writers of
international renown for both poetry
and prose: William Butler Yeats,
Oscar Wilde, and Sommerville and
Ross, who wrote the witty book
series, The Irish R.M. “There will be

Flicks & Food: Music in the
Movies
Music is an integral part of all movies
and the defining element of the
musical genre. Watch and discuss
three films that focus on music. The
series begins with Top Hat (1935),
probably the best of Fred Astaire &
Ginger Rogers musicals, which set
a standard for the genre. Second is
Radio Days (1987), a funny, nostalgic
reminiscence of radio’s golden
age that integrates the popular
music of the time into the life of
one ordinary family. The final film,
Chicago (2002), offers a new take on
adapting a stage musical to the big

Louisiana in the Supreme
Court
Louisiana’s laws and judicial opinions
have been the focus of more than
150 decisions by the United States
Supreme Court. We’ll look at some
of the more interesting cases, the
events that led up to them, and what
happened as a result. This course is
as much about Louisiana’s past and
its politics as it is about decisions of
the nation’s highest court. Among

Creation Spirituality: A
Theology for Living Fully
Everyone has a theological
orientation, even the atheists among
us. Theology is the way we speak
about God, so it behooves us to have
a “good” theology. Much of what the
traditional church teaches about the
nature of God and the condition of
the human and the physical world is
contrary to an older tradition, largely
buried and forgotten, known as
Creation Spirituality. Contemporary
theologian Matthew Fox is credited
with bringing this theological genre
back into mainstream thinking. This
course explains the basic insights
of Creation Spirituality and offers
comparisons and criticisms of the
more familiar, orthodox, perspectives

Stephanie Alexander is currently completing her
dissertation in English and women’s and gender
studies at LSU, and holds a BS and MA in English
from Indiana State University.
Chris Andrews is a graduate of Louisiana Tech and
St. Paul School of Theology and did post-graduate
work at Emory University and Goldsmith College in
England. He was a Methodist minister for more than
40 years and was affiliated with the First United
Methodist Church in Baton Rouge for the last 22
years. He is an ordained minister with the Jubilee
Community in Asheville, North Carolina, and leads
Jubilee Pioneers on Monday evenings each week in
Baton Rouge.
Donald Beale, MALA from LSU in general humanities
with emphasis in film studies. He recently completed
his course work for the PhD in English at LSU with
a concentration in American literature and film.
Beale has taught writing courses for the LSU English
department and a course on Russian cinema for the
Department of Foreign Languages & Literatures. He
is a program manager of LSU Continuing Education
distance learning programs.
Brian Blache is currently employed as a sergeant at
the East Baton Rouge Sheriff’s office, where he is
assigned to the financial crimes division.
Peter Callery is a Jesuit priest who taught in high
schools for 36 years. He is currently a retreat director
at Manresa House of Retreats in Convent, LA.
John Camp is an award-winning investigative
reporter, a former senior investigative correspondent
for CNN, and has produced several prize-winning
documentaries for WBRZ (Channel 2) in Baton
Rouge.
Alex V. Cook is an author, teacher, journalist, and
music critic living Baton Rouge, LA. His work has
appeared in The Believer, The Oxford American,
DownBeat, Front Porch, Paste Magazine, Hails and
Horns, and The Wire. He is currently writing a book
about Louisiana restaurants. He blogs furiously
at alexvcook.com. Alex is the author of Louisiana
Saturday Night: Looking for a Good Time in South
Louisiana’s Juke Joints, Honky Tonks, and Dance
Halls, published by LSU Press in March 2012.
Erica Daigle, PhD, University of Iowa, is a native of
Louisiana and received her BS and MA from LSU. Her
primary research interest is the literature and science
of the English Renaissance, and she has secondary
special interests in cultural history and Louisiana
literature.
Anne-Marie Davis has a degree in commercial
art. She has traveled extensively in Europe, Africa,
the South Pacific, and the United States. She is a
returning instructor to OLLI at LSU, having taught in
2008 and 2009.
Dennis Demcheck received a BS in zoology from
LSU in 1975 and began working for the US Geological
Survey in 1978. He has spent his entire 35-year
career with the USGS in Baton Rouge, specializing
in water-quality studies of Lake Pontchartrain and
costal Louisiana. Currently, he is the chief of the
investigations section and a water-quality specialist.
A member of the Baton Rouge Audubon Society, he
was responsible for the hummingbird portion of the
1999-2010 Christmas bird counts. He specializes in
hummingbirds, songbirds, birds of prey, and wildlife
photography.
Jennifer Duhon is a nutritionist for the LSU Ag
Center, Acadia Parish office.
Tracey M. Elliott is a published poet and fiber artist
from Eunice, Louisiana. She teaches seventh grade
English at Vidrine Elementary and also teaches
writing workshops for children and adults. Tracey has
a degree in history and English from Texas Woman’s
University, is certified to teach both social studies
and English, and is also a National Writing Project
teacher consultant.
Jim Engster is a graduate in journalism from
LSU and an inductee into the Manship School of
Mass Communication Hall of Fame. Engster is the
president of the Louisiana Radio Network and
president of Tiger Rag Magazine. He is a former
general manager of WRKF-FM, and currently hosts
The Jim Engster Show on WRKF, covering politics,
business, sports, and the arts. His work has been
recognized nationally, especially the coverage of
Hurricane Andrew in 1992 and the gubernatorial
election featuring Edwin Edwards, David Duke and
Buddy Roemer in 1991. He is a three-time president
of the Baton Rouge Press Club, and received the
YWCA Racial Justice Award in Baton Rouge in 2011.
He also appears regularly as a political analyst for
WAFB-Channel 9 in Baton Rouge.
Jerisse Bolton Grantham owns the Jeffie Jean
Dance Studio, which her mother started 72 years
ago. Jerisse teaches all forms of dance at the studio,
and at public and private schools in the Baton Rouge
area. She is a ten-year adjunct faculty member
of Tulane University in the theater and dance
department. She is also certified to teach by Dance
Masters of America. Jerisse earned her BS from LSU.
She has enjoyed the art of teaching and sharing the
passion of dance for more than 30 years.
James Hardy, PhD, is a professor of European
history, LSU Honors College. He received his

bachelor’s degree from Cornell University and his
PhD from the University of Pennsylvania.
Nancy L. Harris is a painter and instructor,
maintaining a studio in Baton Rouge. She has an MFA
in painting, and an MA in art history.
Cinderella Hayes is a retired LSU-Eunice librarian
with 20 years of experience working with novice
computer users. Her advanced degree is in library
science.
Jeremy Hebert is an LSU Ag Center Extension agent
with special expertise in horticulture and gardening.
He has presented previous lectures on gardening for
the Cajun Prairie Chapter.
John Howe is retired from the LSU School of
Medicine where he was director of the LSU Family
Practice Residency Program and Family Medicine
department head for 23 years. He graduated from
Tulane Medical School. He has studied tai chi for five
years under John Langlois. He enjoys introducing
others to this ancient Chinese practice of movement
meditation.
Trish Kaplan has a master’s degree in education
from George Washington University. She is retired
from working as a trainer and administrator in the
Governor’s Office of Women’s Services and the
Department of Health and Hospitals. She has been
active with Lagniappe/OLLI for several years. She is
an avid cat advocate and volunteers her time at Cat
Haven, a local rescue organization. She has 30 years
of experience with cats and is currently owned by
four of them.
Owen Kemp, a yoga instructor for several years,
received her yoga training through the Living Yoga
program at the Barsana Dham Ashram in Austin,
Texas. She has attended training sessions at the
Omega Institute in Rhinebeck, New York and various
venues around the country. Owen’s yoga style is best
described as flow.
Donna Kilbourne worked as an abstractor of land
titles in the Felicianas. She has participated in
numerous workshops with art instructors from across
the United States and is a member of the Louisiana
Art and Artist Guild and Associated Women in Arts.
Donna’s paintings have been exhibited in juried
shows in Baton Rouge and hang in many homes and
businesses from Texas to Massachusetts. She is a
former member of the Mississippi Art Colony.
Susan Kocke received both her basic and advanced
Hatha Yoga teacher training at White Lotus
Foundation in Santa Barbara, California in 2009.
She received her Yogo Steps teacher training in
Lexington, South Carolina in 2010.
Noelle LeBlanc is an avid fan of bridge and has been
playing for over 50 years. She competed in ACBLsponsored games and tournaments for over 20 years
at the New Orleans Bridge Center and accumulated
numerous master points. She currently resides in St.
Francisville where she plays both rubber bridge and
duplicate bridge weekly.
Louis Leggio was educated in Baton Rouge public
schools, received his BS degree from LSU Baton
Rouge, and his MD from LSU Medical School in New
Orleans. He did his pediatrics residency at Charity
Hospital, New Orleans, and the Wilmington Medical
Center, Delaware. Military service, USAF. He is retired
from his private pediatrics practice at the Baton
Rouge Clinic.
Linda Lightfoot, retired executive editor of The
Advocate, worked for the paper for 42 years. She has
a lifelong interest in Louisiana politics and history,
and as a reporter covered several of the cases
included in the course Louisiana in the Supreme
Court. She has a BA in journalism and political
science from the University of Mississippi.
Roberta Van Zandt Loflin is a native of Demarest,
New Jersey. After obtaining a BA in art history and
theory from George Washington University, she
studied communication design at Northern Virginia
Community College and color theory, watercolor,
and drawing at the Art League School in Alexandria,
Virginia. Since moving to Baton Rouge, she has
had the opportunity to teach watercolor through
Louisiana Art and Artist Guild, Osher Lifelong
Learning Institute at LSU, LSU Union Leisure classes,
and other programs. She currently has work on
exhibit at the Louisiana Art & Artists’ Guild Gallery
and several other Baton Rouge locations.
Denise Magnat, BA in education from the University
of Algiers, North Africa. She has taught French as
a foreign language to all age groups for 37 years in
several countries in Africa, Europe, and the South
Pacific, and in a few states in the US. She has taught
for seven years with the OLLI at LSU program.
Ann Martin, PhD, is an instructor of English and
teaches classics of Western civilization, British
literature, and literary theory at LSU. She agrees with
Sir Philip Sidney that literature should instruct and
delight, and she aims to let it do both in her courses.
Her PhD is from LSU.
Dr. Jay Miller is a Eunice optometrist and
genealogist.
Valerie Perioux is an instructor at Jeffie Jean Studio
in Baton Rouge. She has studied dance with many
great teachers in the industry, has been a dance
instructor for more than 40 years, and enjoys
educating students both young and old. She is
an active member of the Dixie Chapter of Dance
Masters of America, a national dance organization
in which all members are certified by test to teach
dance. She is passionate about what she does and
her love of the arts is extended to all of her students.
Ronald Perritt, PhD, has theological training from
the Oxford Summer School of Religious Studies at
Wadham College, Oxford, England, and the New
Orleans Baptist Theological Seminary. He holds a
Master of Theological Studies Degree from Candler
School of Theology, Emory University. He is a retired
electrical engineer who worked for Dow Chemical
and taught in the electrical engineering departments
at Georgia Tech and LSU.
Sarah Rayner has been a biology instructor since
1994, teaching courses in life science at the middle
school level in the gifted program, high school
biology I and II, and anatomy & physiology at Our
Lady of the Lake College. She holds a master’s
degree in secondary science education and a BS in
microbiology. She has raised butterflies since March
2009, and is an active Louisiana Master Gardener
since June of 2011.
Carl Redman, senior editor of the Advocate, began
his journalism career in 1974, coming to the Advocate
in 1980. He is very involved in efforts to improve
Louisiana’s public records and meetings laws. Prior
to the sale of the Advocate earlier this year, he was
executive editor for seven years. He was previously
the managing editor and spent 10 years as chief of
the paper’s Capitoal News Bureau covering state
government and politics..
Patt Roberson, PhD in mass communication,
University of Southern Mississippi, is a retired
journalism professor, former business manager of
The Southern Review, active newspaper reporter
and photographer, ad rep for the Baton Rouge
Ballet Theatre, and avid recycler. She grew up in the
Panama Canal Zone and lives in the geodesic dome
in Baker.
Barbara Barnes Sims retired after 36 years with
the LSU English department, where she received
two major campus-wide teaching awards. She was
formerly a sales and promotion employee of Sun
Records in Memphis. She has lectured frequently at
Chautauqua Institution, for major cruise lines, and for
the American Queen steamboat on the Mississippi.
Robert W. Smith, DC, DABCI, completed his BC in
Human Anatomy and Biology at Logan University
in St. Louis and his Doctor of Chiropractic at
Logan College of Chiropractic. He completed the
chiropractic internist program at Texas Chiropractic
College in Pasadena, Texas, and obtained his board
certification in 1991. He practices in Baton Rouge.
Jean Templet is a retired employee of Exxon
Chemical. He is an instructor and member of the
Cajun Clickers Computer Club, and has conducted
Picasa and other computer workshops for Cajun
Clickers for the past 5 years.
Anne Ulentin is a recent graduate of LSU, who
received her PhD in US history. Her PhD thesis
focused on slave-owning free women of color in
nineteenth-century New Orleans. She is currently
an adjunct instructor in history at LSU and River
Parishes Community College. Anne is a native of La
Rochelle, France, and she has taught conversational
French for the Friends of French Studies at LSU for
the past five years.
Dr. Francis W. Vanderwall is Professor of Theology
at Our Lady of the Lake College, and teaches
occasionally for the Catholic Diocese of Baton
Rouge. He is a spiritual director and pastoral
counselor who conducts retreats at the Jesuit
Retreat House in Grand Coteau and elsewhere.
The author of five books on prayer, spirituality and
psychology, he belonged to the Jesuit order for
almost 35 years.
Karen Williams teaches courses in Louisiana
literature and American literature, fiction, and
rhetoric and composition at LSU. Her PhD is in
American cultural history and contemporary literary
theory from Emory University. She is currently
writing a chapter on Louisiana literature as a project
for LSU Press; it looks at the dream state and the
importance of literary carnival.

CANCELLATION POLICY
All courses with fewer than eight participants will
be canceled before the course begins. If you are
interested in a course, it is very important that
you register as early as possible. LSU reserves
the right to cancel or make changes in courses
under these conditions.
REFUND POLICY
If your plans change, please let us know five
business days prior to the course start date and
we will begin the refund process. If you attend
the first meeting of the course and decide you
would like to discontinue the course, an OLLI
credit for the full amount will be given if you
send a written request that is received in the
OLLI at LSU office before the second course
meeting. If you wish to transfer into another
course, please call the OLLI at LSU office at
225-578-6763. If a course is canceled by LSU, a
credit for the full amount will be made to your
OLLI at LSU account.
If you paid for a course that is canceled using
a credit card, a full refund can be credited to
your credit card account within five working
days if you request us to do so. If you paid using
a check, a full refund can take up to 8 weeks
before you receive your full refund after you
request us to do so. (LSU’s policy on a check
refund requires a 30-day delay to ensure the
check has been deposited by the bank. At
that point your name will be submitted as an
applicant for a University ID number as the
University no longer uses social security numbers
for auditing purposes. Once your ID number is
received by the Continuing Education office, the
