Heat the oil in a stockpot on medium-high, add the onion, carrots, and celery, and cook, stirring, about 5 minutes until the vegetables are soft, but not browned. Add garlic, herbs and cook, stirring, about 1-2 minutes more. Stir in the tomatoes and their juices, the dissolved Veggie-Stock Gold, and the beans. Bring the soup to a boil, then reduce the heat to medium low and add the salt and pepper. Simmer the soup for 1 hour or until beans are tender. Season with additional salt and pepper if needed. With the extra space, the company will have the ability to bring in more new products, and buy in on more trailer and container deals to provide even bigger promotions to our customers. In December, Chex will be adding a 48 foot tractor trailer to its fleet which will not only increase efficiency, but also enable the company to increase delivery capacity. The move to Mansfield also puts Chex closer to all major highways (95, 495, 195, and 90). While this move is a bittersweet one, leaving a warehouse that was home for over 20 years, Chex is excited for this opportunity and looks forward to showing off the new area to all of our customers and vendors.
