Antonio Busquets
CALDERETA DE BOGAVANTE CON SU CANELON
ANTONIO BUSQUETS
La curiosidad por la mezcla de sabores, texturas y
olores, llevó a un joven Antonio Busquets, nacido
en Palma de Mallorca en 1976, a interesarse por el
fascinante mundo gastronómico.
Tras sus estudios de Cocina y Pastelería, empezó en el restaurante LA GRAN TORTUGA donde
aprendió las bases de la excelencia de la cocina
tradicional bajo el mando de Antonio Soriano, con
el toque moderno de su hijo Javier. Después estuvo en el restaurante KOLDO ROYO donde descubrió un nuevo concepto de cocina que le motivó
a indagar más en este mundo y a perfeccionar su
estilo. Mas tarde pasaría por el HOTEL ARABELLA, en el restaurante Plat d´Or con una estrella
Michelin, bajo los mandos de Cristóbal Angulo y
Otilio Muñiz ascendiendo a diferentes partidas a
lo largo de un periodo de dos años. En 1998, junto a Paco Sánchez, participan en el campeonato
nacional de comida manchega, asiste a diferentes cursos y participa en diversas ponencias de
gran relevancia para perfeccionar su cocina y
potenciar su creatividad con chefs de la talla de
Tomeu Caldenteny (Es moli den bou)una estrella michelin, Sergi Arola (la Broche)2 estrellas
michelin,Angel León (Aponiente),Tetsuya Wakuda
del restaurante (Tetsuya´s ) entre otros.
Finalmente se incorpora al HOTEL SANTOS NIXE
PALACE donde lleva más de 10 años elaborando
magníficos platos llenos de creatividad e imaginación y con los que no deja de sorprender al más
exigente de los paladares.
INGREDIENTES
PARA 4 PERSONAS
·Bogavante nacional
·Cebolla
·Pimiento rojo
·Pimiento verde
·Tomate pera
·Ajo
·Caldo de pescado de roca
2 unid.

ELABORACIÓN
LA CALDERETA: 1º. Hacer un caldo de pescado de roca. 2º. Se corta el bogavante,la cabeza en 2 trozos
y apartando y reservando el coral, el cuerpo le quitaremos la cascara y cortaremos en 3 medallones.
3º. En una cazuela de barro se rehoga en aceite de oliva las cabezas de bogavante y se aparta,luego le
añadiremos el ajo picado y la cebolla,cuando este rehogado se le añade el pimiento rojo y verde cortados
finos y se termina de rehogar, añadiremos el tomate pera cortado a daditos y dejaremos rehogandolo
hasta conseguir un sofrito espeso. 4º. Al sofrito le añadiremos un poco de brandy y lo flambearemos,
añadiremos el caldo de pescado colado y lo dejaremos hervir. 5º. Haremos un majado con: el coral del
bogavante, la almendra,un poco de brandy,perejil,una yema de huevo, pan frito,aceite de oliva y un poco
de sal gruesa. 6º. Le añadiremos el majado(bien triturado) al caldo y dejaremos reducir unos minutos.
7ºCuando este el caldo, le metemos las cabezas y lo ponemos a punto de sal. Y se deja reposar.
EL CANELON: 1º. En una sarten se rehoga en aceite de oliva el puerro picado. 2º. Cuando este rehogado le
añadiremos tomate pera a daditos y dejaremos rehogar, pondremos a punto de sal y de azucar. 3º. Le añadiremos los medallones del bogavante con sus pinzas, y lo terminaremos de cocer. 4º. Coceremos en agua,sal
y aceite la pasta wonton unos segundos y la enfriaremos. 5º. Montaremos los canelones con el relleno.
EMPLATADO: En un plato hondo pondremos un canelon caliente de bogavante y le añadiremos la caldereta hasta cubrir por la mitad el canelon y decoraremos con un poco de cebollino fresco picado y una
laminas finas de pan tostado crujiente.

enemos la oportunidad de entrevistar a Walter Heinze, director de
Exclusive Rent 4 Events, una de
las empresas del sector de eventos que
más ha crecido en los últimos años. Están especializados en proveer de todo tipo
de material a las principales empresas
de eventos de la isla. Mantelería, cristalería, vajilla, carpas, sillas, candelabros,
lámparas, chill outs y un largo etcétera.
Tu Boda en Mallorca: Walter, nos gustaría que nos dijeras si estás de acuerdo con los comentarios en el sector que
apuntan a un crecimiento espectacular
de tu empresa.
Walter Heinze: Si, es cierto que hemos
tenido un crecimiento importante y sostenido, aunque dentro del plan de empresa
aún no hemos llegado donde nos hemos
propuesto. Lo que quiero decir es que
aún tenemos previsto crecer algo más a
la vez que consolidamos nuestra cartera
de clientes.
TBM: ¿A qué atribuyes este crecimiento
sobre todo en un momento económico
tan complicado como el actual?
WH: Personalmente no creo que se deba
a nada en especial. Para mi son una serie de factores combinados, como el
trato personalizado que ofrecemos a
nuestros clientes, nuestro servicio, las
ganas de superarnos constantemente y
dar siempre lo mejor de nosotros involucrándonos al máximo en nuestro trabajo.
También tiene que ver la amplia gama de
productos que ofrecemos, la innovación
constante, la relación calidad-precio, o
quizás es sólo por el hecho de que so-

Ahora en serio, la realidad es que estamos aquí gracias a la fidelidad y confianza

estamos sumamente agradecidos. En ese
sentido esperamos poder seguir estando
a la altura de las circunstancias, ya que
tenemos como clientes a algunas de las
empresas más grandes y destacadas de
este sector y como podrás imaginarte el
grado de exigencia es altísimo.
TBM: Otra cosa que nos interesa preguntar, ¿vosotros estáis durante el evento?
WH: En mi opinión un evento requiere una
entrega del 100% de la persona que
lo realiza, de quien lo organiza y de las
distintas partes que colaboran en éste, ya
que todo debe estar en su sitio y a punto
"a la hora señalada". Es como el rodaje de
una película, por eso nosotros tratamos
de estar siempre en los eventos, con el
fin de solucionar cualquier inconveniente
que se pudiera presentar.
TBM: Para terminar, ¿que destacarías
como lo más importante en una empresa
como la tuya?
WH: Sin duda lo más importante es
el equipo humano con que cuentas,
dar un servicio de 24 horas al día, 365
días al año. Predisposición y disponibilidad para resolver cualquier problema. Y como no, disponer de material distinguido y de la mejor calidad.

a Finca UR Son Espases es una típica posesión mallorquina del siglo XVIII, que ofrece un
marco perfecto, para la celebración de bodas

¿Qué regalo?
Todos sabemos que desde hace años las listas de boda
de toda la vida prácticamente han desaparecido y se ha
puesto de moda regalar dinero en metálico.
La desaparición de las listas tiene su lógica porque la

¿Qué regalo?
Un consejo que puede ser útil para los novios y para no incomodar a esos invitados, es crear una mini lista de boda. Siempre
hay artículos que necesitamos y que por alguna razón no hemos
podido comprar aunque llevemos años conviviendo con nuestra
pareja. Una buena vajilla, un buen sofá, un gran espejo, un buen
cuadro, esas cosas que vamos dejando y que de esta manera
podrían ser “para toda la vida”. Son regalos tangibles y te acordarás de ellos toda la vida.
Algunos invitados que se niegan a lo del dinero buscan también
otras alternativas: regalar parte del viaje de luna de miel, el hotel de la noche de bodas, una donación a una ONG elegida por
los novios…
Pero si os tengo que decir la verdad, hablando con los novios y
conociendo un poco su situación, evitaremos meter la pata. Por

vuestra boda y lo que os vais a gastar en

por parte de los invitados. Os sorprenderá la cantidad de olvidadizos que hay por el
mundo.

la suerte de ir, los novios casualmente nos

Tu boda en Mallorca: Walter, we would
like to know if you agree with the comments that have been made in the sector, indicating a spectacular growth in
your company.
Walter Heinze: Yes, it is true that we
have undergone an important and
sustained growth, although we have
not yet reached our final goal within
our company plan. By this, Imean that
we still intend to carry on expanding,
while at the same time, cons olidating
our portfolio of clients.
TBM: To what do you contribute this
growth, especially bearing in mind
that the economic situation is rather
complicated at the moment?
WH: Personally, I don’t think that it is
due to anything in particular. I think it
is rather a series of factors, such as
the personalised treatment that we
offer our clients, our aim to continually improve our services and to always
give our best, dedicating ourselves as
much as possible to our work. Also,
there is the wide range of products
that we offer, our constant innovations, excellent value for money, or
maybe just that we are nice and goodlooking! (laughing) Seriously, the rea-

son that we have come so far is thanks
to the loyalty and trust of our clients
and we are truly grateful to them for
that. In this respect, we hope to continue to justify their faith in us, as we
have clients from some of the largest
and most important companies in
this sector so, as you can imagine,the
standards have to be very high tomeet
their demands.
TBM: Another question we would like
to ask is whether you are present during the event?
¡ In my opinion, an event requires 100%
dedication from the person who is organising it and also from the various
parties involved, as everything has
to be in place and ready at the “allotted time”. It’s like making a film, and
that’s why we try always to be present
at the
events, in order to be able to resolve
any problems
that may arise.
TBM: Finally, what do you think is the
most important aspect of a company
such as yours?
WH: Without a doubt, the most impor-
tant part of the company is its staff and
the ability to give a 24 hour service,
365 days a year. Also, willingness and
availability to resolve any problems
and, of course, to be able to provide excellent, high-quality products.

Walter Heinze : Ja, es ist wahr, dass wir
einen großen, andauernden Zuwachs
verzeichnen konnten, aber noch nicht
da angelangt sind, wo wir es uns vorgenommen haben. Damit möchte ich
sagen, dass wir vorhaben, noch etwas weiter zu wachsen und zugleich
unseren Kundenstamm zu festigen.
TBM: Was schreibst Du diesem
Zuwachs zu, gerade zu einem Zeitpunkt, indem die wirtschaftliche Lage
so kompliziert ist?
WH: Ich persönlich denke, dass es von
nichts Speziellem abhängig ist. Ich
bin der Meinung, dass es eine Kombination verschiedener Faktoren ist.
Einerseits der persönliche Umgang,
den wir unseren Kunden bieten, andererseits unser Service, unsere Lust
uns selber zu übertreffen, immer
das Beste von uns zu geben, und in
dem wir in unserer Arbeit aufgehen.
Außerdem hat die große Vielfalt an
Produkten, die wir bieten, eine konstante Innovation und ein gutes PreisLeitungsverhältnis oder einfach, weil
wir hübscher und sympathischer
sind, damit zu tun (Lachen) Im Ernst,
wir sind hier angelangt, dank der
Treue und dem Vertrauen aller unserer Kunden, dafür sind wir äußert
dankbar. In diesem Sinne, hoffen wir,
dass wir auch weiterhin auf der Höhe
der Ansprüche bleiben, denn zu unseren Kunden zählen einige der größten
und hervorragendsten Firmen dieser
Branche, und wie Du Dir vorstellen
kannst, werden sehr hohe Anforderungen gestellt.
TBM: Etwas anderes ... Wir würden
gerne wissen, ob Ihr auch beim Event
dabei seid?
WH: Meiner Meinung nach ist es notwendig, dass sich die Person, die
das Event bearbeitet und organisiert,
sowie auch alle Mitbeteiligten sich zu
100 % widmen, damit alles zur “angegebenen Uhrzeit“ am richtigen Platz
ist, wie bei einem Film, der gedreht
wird. Deshalb versuchen wir immer
auch
beim Event dabei zu sein, um eventuelle Hindernisse die auftreten könnten zu beseitigen.
TBM: Zum Schluss. Was würdest Du
als das Wichtigste bei einer Firme wie
Deiner, bezeichnen?
WH: Zweifellos ist das Wichtigste dein
Mitarbeiter-Team und einen 24 Stunden Service an 365 Tagen im Jahr zu
bieten. Vorbereitung und Verfügbarkeit um jedes Problem zu lösen. Nicht
zuletzt auch über distinguiertes Material von bester Qualität zu verfügen.

Finca Ur Son Espases (p.43)
Die Finca UR Son Espases ist ein typisches mallorquinisches Anwesen
aus dem 18. Jahrhundert und bietet
den perfekten Rahmen für romantische Hochzeitsfeiern im ländlichen Stil
vor einer epochentypischen Herrenhaus-Kulisse.
Nur fünf Minuten von Stadtzentrum
von Palma entfernt liegt dieses Herrenhaus mit seinem einzigartigen Charakter inmitten einer wunderschönen,
ländlichen Umgebung, umringt von
Gärten und verschiedenen Nebengebäuden. Die historische Struktur des
Anwesens wurde sorgfältig restauriert, so geht die Finca mit der Zeit,
jedoch im Gewand ihrer natürlichen
Schönheit.
Die ganz auf Veranstaltungen ausgerichtete Anlage verfügt über verschiedene Veranstaltungsräume im ersten
Stock des Haupthauses mit einer
Kapazität von 10 - 300 Tischgästen.
Im Garten befindet sich die Kuppel,
hier kann die Zeremonie unter freiem
Himmel oder, dank eines modernen
Schließsystems, zu jeder Jahreszeit
im Innern der Kuppel abgehalten
werden. Die Kuppel kann bis zu 400
Personen an Bankett-Tischen beherbergen, eine Anpassung auf die Zahl
der geladenen Gäste und auf die Ausrichtungsart der Feier ist dabei problemlos möglich.
Im unteren Stockwerk befindet sich
die Lounge-Bar mit einer wunderschönen, komplett ausgestatteten Bar.
Der Patio oder der romantische Garten bilden den perfekten Rahmen für
den Empfang und bieten Ihren Gästen ein Freilufterlebnis der ganz besonderen Art. Das Abendessen kann
in der Kuppel oder in den Veranstaltungsräumen in der zweiten Etage
des Haupthauses stattfinden.
Die Finca verfügt außerdem über eine
kuppelförmige Kapelle, unter der die
Zeremonie abgehalten werden kann.
Vor der Hauptfassade befindet sich
DEUTSCH
ein großer Vorplatz, auf dem Ihre Gäste bequem parken können.
