NJEZINO VELIČANSTVO ALOE VERA
Cresko-lošinjski arhipelag dom je 1018 biljnih vrsta od kojih se 230 ubraja u ljekovito bilje, a među njima svoje mjesto je pronašla i
veličanstvena Aloe vera, čiji naziv potječe iz latinskog jezika (Aloe barbadensis miller).
Aloe vera već je i prije nekoliko tisućljeća bila u službi medicine i ljepote, a povijest njezine primjene seže od prije nekoliko tisućljeća godina. Lijepe egipatske kraljice koristile su je za redovite kozmetičke tretmane, a njihovi sunarodnjaci je smatrali lijekom za
besmrtnost zbog njezinog djelotvornog vlaženja kože i učinka protiv starenja. Kao melem na rane nanosili su je vojnici vojskovođe
Aleksandra Velikog i moreplovca Kristofora Kolumba.
Specifična biljka posebnog izgleda prva je na popisu primjene djelotvornih ljekovitih biljnih vrsta. Sa svojih 75 potencijalno aktivnih tvari te zbog svog povoljnog utjecaja na zdravlje te zbog svojih brojnih bioloških spojeva postala je i nezaobilazna namirnica u
nacionalnim indijskim kuhinjama.
Iako postoji oko 240 vrsta Aloe vera, malobrojne su jestive.

Aloe vera djeluje hidratantno, antioksidativno, protuupalno i antiseptički te usporava starenje kože i sprječava opekline od sunca, a
nakon prekomjernog izlaganju suncu umiruje kože. Čini neprocijenjiv dodatak u širokom spektru proizvoda za njegu kože, vlasišta
te njegu zubi i desni.

Znanstveno je dokazana djelotvornost Aloe vera na zacjeljivanje rana, smanjenje smetnji uzrokovanih aknama, kod psorijaze te
kod tegoba izazvanih genitalnim herpesom. Nakon oralne primjene Aloe vera regulira se nivo šećera u krvi te se smanjuje nivo
kolesterola što potencijalno ima povoljno djelovanje na sve zastupljeniju bolest modernog čovjeka - smetnje metaboličkog sindroma. Smatra se da aloa ima antitumorsko djelovanje za koje se pretpostavlja da je posljedica drenažnog efekta. Inače primjena
ove biljke povoljno djeluje na rad žuči i jetre, smanjuje smetnje iritabilnog kolona te djeluje općenito detoksikacijski.

derives from Latin (Aloe barbadensis Miller), found its place among them.
Aloe vera has been in the service of medicine and beauty for a few millennia, and the history of its use dates back to few millennium
when the first written traces emerged. The beautiful Egyptian queens used it for regular cosmetic treatments, and their countrymen
dubbed Aloe the ‘plant of immortality’ due to its effective moisturizing and anti-aging effect. Soldiers of the general Alexander the
Great and sailor Christopher Columbus applied it to the wounds as a balm.
This specific plant of special appearance is the first in the list of most effective medicinal plants. With its 75 potentially active substances and due to its favourable impact on health and its numerous biological compounds, it has become unavoidable ingredient in
the national Indian cuisine. Although there are about 240 species of Aloe vera, only a few are edible.

The effectiveness of Aloe vera for healing wounds, treating acne, psoriasis and symptoms of genital herpes has been scientifically
proven effectiveness. Oral administration of Aloe vera is effective in regulating blood sugar levels and lowering cholesterol which has
potential beneficial effects on disorders associated with metabolic syndrome which is becoming more and more prevalent in modern
times. Ale vera has been reported to have antitumor effect which is assumed to be a result of the drainage effect. This plant also has

deren Name aus dem Lateinischen kommt (Aloe barbadensis miller).
Aloe vera stand schon vor einigen Jahrhunderten im Dienste der Medizin und der Schönheit. Die erste schriftliche Erwähnung von
ein paar Jahrtausende Jahre datieren. Schöne ägyptische Königinnen benutzten sie regelmäßig in kosmetischen Behandlungen.
Und das Volk war aufgrund ihrer feuchtigkeitsspendenden und altershemmenden Wirkung der Ansicht, sie schenke ewiges Leben. In Form von Balsam trugen Aloe vera auch verwundete Soldaten Alexander des Großen und die Matrosen des Christopher
Kolumbus auf ihre Wunden auf.
Aloe vera, die sowohl eine spezifische Wirkung, als auch ein spezifisches Aussehen hat, ist die erste auf der Liste der wirkungsvollsten Heilpflanzen. Mit ihren 75 potenziell aktiven Stoffen und ihren Aufgrund ihrer positiven Wirkstoffe und zahlreicher biologischer Verbindungen ist sie auch Bestandteil der nationalen indischen Küche. Es gibt wissenschaftliche Beweise für die Wirkung von Aloe vera bei der Heilung von Wunden, Linderung von Akne, Schuppenflechte und bei Genitalherpes. Nach der oralen Einnahme von Aloe vera wird der Blutzucker reguliert, der Cholesterinspiegel
gesenkt, was eine potenzielle positive Auswirkung auf alle Krankheiten des modernen Menschen hat: bei allen Beschwerden, die
auf das Stoffwechselsyndrom zurückzuführen sind. Es wird angenommen, dass Aloe vera aufgrund ihres Drainage-Effekts auch
die Bildung von Tumorzellen verhindert. Aber die Einnahme dieser Pflanze hat auch positive Auswirkungen auf die Magen- und

Arcipelago di Cherso e Lussino è l’habitat naturale di 1.018 specie vegetali, 230 delle quali sono annoverate tra le piante officinali.
Tra esse spicca la magnifica Aloe vera, il cui nome latino è Aloe barbadensis miller.
L’Aloe vera è da alcuni millenni al servizio della salute e della bellezza. La storia del suo impiego risale un paio di millenni. E mentre
le belle regine egizie la usavano per i quotidiani trattamenti di bellezza, i loro sudditi, a conoscenza delle sue proprietà idratanti e
antietà, consideravano l’Aloe vera la “pianta dell’immortalità”. Sotto forma di unguento, l’Aloe vera veniva usata anche dai soldati
di Alessandro Magno e dai marinai di Cristoforo Colombo per favorire la guarigione e la cicatrizzazione delle ferite.
L’Aloe vera dall’aspetto un po’ insolito è la prima della lista delle piante officinali. Con i suoi 75 principi potenzialmente attivi e per
i suoi effetti benefici sulla salute e per la gran quantità di composti biologici in essa contenuti, l’Aloe vera è anche un alimento
insostituibile nelle tante cucine regionali dell’India. Ma attenzione: sebbene in natura esistano ben 240 specie di Aloe vera, poche
sono quelle commestibili.

L’Aloe vera ha proprietà idratanti, antiossidanti, antinfiammatorie e antisettiche, rallenta l’invecchiamento della pelle e previene le
bruciature dovute all’eccessiva esposizione al sole, oltre a svolgere un’efficace azione calmante come doposole. E un preziosissimo ingrediente di una vasta gamma di prodotti per la cura della cute, del cuoio cappelluto, dei denti e delle gengive.

È scientificamente provato che l’Aloe vera favorisce la cicatrizzazione delle ferite, riduce i disturbi provocati dall’acne ed è efficace
nei casi di psoriasi e herpes genitale. Assunta per via orale, l’Aloe vera regola il livello di zuccheri nel sangue e riduce il livello di
colesterolo, il che produce effetti potenzialmente positivi anche sui disturbi di una delle malattie oggigiorno più diffuse: la sindrome metabolica. Si ritiene anche che l’Aloe vera abbia proprietà antitumorali come conseguenza supposta del suo effetto drenante.
L’impiego di questa pianta in medicina produce anche effetti positivi sul funzionamento della cistifellea e del fegato, oltre a ridurre
i disturbi del colon irritabile e ad agire, in generale, come disintossicante dell’intero organismo.

Aloe vera u gastronomiji
Znanstvenicima Aloe vera više nije zanimljiva
samo zbog istraživanja ljekovitih svojstava,
nego i prehrambenih. Nagovještavaju to i potiču
dosadašnji rezultati, pa će se u budućnosti njezini
sluzavi, mukozni i gelu slični sastojci iz listova
koristiti kao prebiotici u razvoju nove funkcionalne hrane. No, bolje upućeni gastro-znalci znaju
da je ta čudesna biljka bogata brojnim biološkim
spojevima nezaobilazna namirnica nacionalnim
indijskim kuhinjama posebno s juga te zemlje.
Katkad i neki odvažni kulinari suvremenog svijeta
oguljene mesnate dijelove listova Aloe vera
dodaju varivima, gulašima i jušnim jelima pola
sata prije skidanja sa štednjaka. Tim dodatkom
obogaćuju obrok, ali mu ne mijenjaju osnovni
okus. Ipak ne bi bilo dobro da se u taj kulinarski
zahvat upuštate bez da se prethodno savjetujete
sa stručnjakom ili iskusnim šefom kuhinje, kao
sto je Adrijano Nikolić iz Malog Lošinja.
Aloe vera se može koristiti i za pripremu ukusnih
frapea ili smoothie-ja od voća, povrća, mlijeka
ili vode s nekoliko kockica leda. Tim napicima se
primiješa nekoliko kockica svježe, osušene ili smrznute želatinozne pulpe, odnosno gela iz listova,
za osvježenje i pojačanje organizma. Zanimljivo
je i da se danas od Aloe vera pripravlja istočnjačka
slastica halva ili alva, dok su duž naše morske
obale tradicionalno spravlja sirup s dodatkom
mljevenih badema. Ako je osušena i narezana na
trakice, postaje inačicom različitih jela. Tako čak
i postaje slasticom, grickalicom, za one koji žele
uživati u zdravim desertima.
Iako postoji oko 240 vrsta Aloe vera, malobrojne su jestive. Riječ je o vrstama koje se koriste
u farmakoterapiji. Stoga je to razlog više da se
prije korištenja dijelova te biljke za jelo ili piće
posavjetujete sa stručnjacima.

Scientists no longer consider Aloe vera interesting only for its therapeutic effects, but for its use
in the kitchen as well. This has been implied by
results obtained until now; in future the mucous
and gelatinous material found in the plant’s
leaves will be used as prebiotics to develop new
functional food. However, well-versed culinary
experts know that this miraculous plant rich
in biologically active compounds is frequently
used in traditional Indian cuisine, especially in
the south of that country. Some daring modern
cuisine chefs at times also add the peeled fleshy
parts of the plant’s leaves to stews and soups,
about half an hour before removing it from
the fire. These additions improve the dish, but
don’t change its taste. We don’t recommend any
culinary experiments before previously consulting an expert or an experienced chef such as
Adrijano Nikolić from Mali Lošinj.
Aloe vera can be used to prepare delicious shakes
or smoothies out of fruit, vegetables, milk or water with ice cubes. Several cubes of fresh, dried
or frozen gelatinous pulp, i.e. the gel from the
plant’s leaf, are added to drinks to refresh and
strengthen the organism. Moreover, oriental delicacies such as halva are being made today from
Aloe vera, as is a syrup with crushed almonds,
traditionally made all along our sea coast. If the
plant is dried and cut into stripes it can be used
for other dishes, even as a dessert or a snack for
those who wish to enjoy healthy sweets.
Even though there are over 240 different species
of Aloe, only a small number of those are edible.
These species are used in pharmacotherapy. For
that reason, make sure to consult an expert before using parts of the plant for food or drinks.

Aloe vera in der
Gastronomie
Aloe vera ist Wissenschaftlern nicht mehr nur aufgrund
ihrer Heilwirkungen interessant, sondern auch aufgrund
ihrer Anwendung in der Küche. Darauf weisen aktuelle
Resultate hin. Deshalb ist damit zu rechnen, dass das
schleimige und gelatineähnliche Gel aus den Blättern der
Aloe vera in der Entwicklung funktioneller Lebensmittel
als Probiotikum eingesetzt wird. Erfahrene Kochexperten
wissen, dass diese wundersame Pflanze, die reich an
biologischen Verbindungen ist, in der nationalen indischen Küche, und vor allem im Süden Indiens, ein gern
gesehener Bestandteil von Lebensmitteln ist.
Einige mutige moderne Köche fügen die geschälten, fleischigen Blattteile der Aloe vera in Gemüse, Gulasch oder
Suppen hinzu, und zwar eine halbe Stunde, bevor das
Gericht vom Herd genommen wird. So wird das Gericht
angereichert, ohne dass sich das Aroma verändert. Bevor
sie sich auf so ein kulinarisches Abenteuer einlassen, sollten sie sich jedoch mit einem Experten oder erfahrenen
Chefkoch wie Adrijano Nikolić aus Mali Lošinj beraten.
Aloe vera kann auch in der Zubereitung leckerer Frappés
oder Smoothies aus Obst, Gemüse, Milch oder Wasser mit einigen Würfeln Eis benutzt werden. Diesen
Getränken werden einfach einige Würfel frisches,
getrocknetes oder eingefrorenes Gel hinzugefügt, was
für ein zusätzliches Erfrischungsgefühl sorgt und den
Organismus stärkt. Es ist interessant, dass in orientalischen Ländern die berühmte Süßspeise Halva oder Alva
mit Aloe vera zubereitet wird. An unserer Küste wird
traditionell aus Aloe vera ein Sirup mit gemahlenen Mandeln hergestellt. Wenn die Pflanze in Streifen geschnitten
und getrocknet wird, können diese getrockneten Streifen
verschiedenen Gerichten beigefügt werden. Manchmal
werden diese Streifen sogar als Nachtisch oder Snack
serviert, was vor allem Menschen bevorzugen, die auch
einen gesunden Nachtisch essen möchten.
Obwohl es ca. 240 Arten von Aloe vera gibt, sind nur
wenige zum Verzehr geeignet. Es handelt sich überwiegend um Arten, die in Arzneimitteltherapien eingesetzt
werden. Deshalb sollten Sie sich von einem Experten
beraten lassen, bevor Sie in der Küche mit Teilen dieser
Pflanze experimentieren.

L’Aloe vera in gastronomia
La scienza non è interessata all’Aloe vera soltanto
per le sue proprietà medicinali, ma anche per le sue
proprietà alimentari. Ciò è preannunciato e confermato dai risultati ottenuti dalle ricerche sinora effettuate; d’ora in poi il suo contenuto viscido, simile alla
mucosa e al gel, estratto dalle sue foglie sarà utilizzato
come prebiotico per lo sviluppo di nuovi cibi funzionali. Gli esperti gastronomi più informati sanno che
questa portentosa pianta è ricca di numerosi composti biologici già parte insostituibile dell’alimentazione
indiana, in particolare nel Sud del paese.
Talvolta alcuni cuochi contemporanei osano aggiungere la polpa delle foglie carnose dell’Aloe vera a
verdure in umido, gulasch e zuppe mezz’ora prima di
toglierle dal fuoco. Con quest’aggiunta s’arricchisce
la pietanza, pur senza modificarne il gusto. Ma non
sarebbe bene lanciarsi in quest’avventura culinaria
senza prima aver consultato un esperto di cucina
come lo chef di Lussinpiccolo Adrijano Nikolić.
L’Aloe vera può essere impiegata anche nella preparazione di gustosi frappé o smoothie di frutta, verdura,
latte o acqua, rinfrescati con l’aggiunta di qualche
cubetto di ghiaccio. Per ristorare e rinvigorire l’organismo, a queste bevande vengono aggiunti alcuni
dadini di polpa o gel delle foglie fresche, essiccate o
congelate di Aloe vera. Interessante è notare come
ancora oggi l’halva o alva, dolce delizia orientale, venga preparata proprio con l’Aloe vera, mentre lungo la
costa del nostro mare si beve tradizionalmente uno
sciroppo d’Aloe vera con l’aggiunta di mandorle tritate. Essiccata e tagliata a striscioline, può diventare
anche ingrediente di tanti piatti e persino dolce da
sgranocchiare, per chi ama i dessert salutari.
Anche se in natura esistono circa 240 specie di Aloe
vera, quelle commestibili sono poche. Si tratta in genere delle varietà che si usano nella farmacoterapia:
altra ragione in più per consultarsi con un esperto
prima di usare parti di questa pianta in cucina come
cibo o bevanda.

Raznovrsni pripravci i lijekovi načinjeni od gela ili soka jedinstvene nam biljke Aloe vera naveliko se posljednjih
godina nude u ljekarnama, drogerijama, specijaliziranim prodavaonicama zdrave hrane, parfumerijama... Milijuni
kupaca širom svijeta kupuju ih i koriste kako bi uz pomoć njih vanjskom ili unutarnjom upotrebom ublažili ili riješili
se različitih zdravstvenih tegoba. Tako melemima, kremama i gelovima redovito ili povremeno njeguju i liječe
kožu, piju sirupe i druge napitke zbog djelotvornosti na ublažavanje simptoma i liječenje bolesti u organizmu, ili
pak sušenim kockicama listova te biljke i uz stručnu pomoć eksperimentiraju u kulinarstvu.
No, samo bolje upućeni korisnici znaju, da za tu višestruku primjenu Aloe vera nije zaslužan suvremeni čovjek, jer
je već i prije nekoliko tisućljeća bila u “službi” medicine i ljepote. Bilo kao tražena sirovina ljekarnika i ranara, ali
i običnog puka starog Egipta, Grčke, Meksika, Indije, Kine, Japana... Stoga su je za redovite kozmetičke tretmane
koristile lijepe egipatske kraljice Nefertiti i Kleopatra, a njihovi sunarodnjaci je smatrali “lijekom za besmrtnost”.
Aloe vera su kao melem na rane uvriježeno nanosili ranjeni vojnici vojskovođe Aleksandra Velikog i moreplovca
Kristofora Kolumba.
Zbog višestruke primjene je već tada Aloe vera prozvana čudesnom, ali taj je naziv, sigurno, dobila i zbog posebna
izgleda. Botaničari je opisuju rozetastom biljkom bez debla i s dvadesetak debelih, mesnatih listova, dugih do pola
metra. Duž njihovih rubova i s donjih strana su bodlje, a biljku krase žuti, visoki, cjevasti cvjetovi i plodovi bogati
sjemenkama. Otkriveno je da se najprije kultivirala na području sjeverne Afrike, a otud joj i ime Aloe koje potječe
iz arapske riječi Alloeh što znači “sjajna, gorka tvar”. Dio danas punog imena vera potječe iz latinskog jezika, jer
su je još prije 2000 godina grčki znanstvenici smatrali univerzalnim lijekom. Zna se i da od pamtivijeka dobro
uspijeva na suhom tlu i na sunčanim područjima afričkog (krajnji sjever i jug), azijskog, američkog, europskog i
australskog kontinenta.
Danas, pak, stručnjaci za Aloe vera koriste latinski naziv Aloe barbadensis miller, dok joj je hrvatsko ime samo Aloja.
Ubrajaju je u porodicu Liliaceae (Ljiljana) i skupinu lisnatih sukulenta (kaktusa), te naglašavaju da stabljika, listovi
i korijen te biljke imaju moć prikupljanja i zadržavanja vode. Tako se skupljena voda uskladištuje u tri sloja duž
debelih listova. Prvi je unutarnji sa sadržanim gelom od 99 posto vode i ostatkom od aminokiseline, glukomana,
lipida, vitamina i sterola. Srednji je žućkasti od lateksa sa sadržanim glikozidima i antrakinoni. Vanjski gusti sloj s
15 do 20 stanica naziva se kora i ima zaštitnu funkciju, te sintetizira ugljikohidrate i proteine. Unutarnji dio kore
čini sustav žila “odgovornih” za očuvanje i prijenos tvari poput vode i škroba.
Briga za ljudsko zdravlje, prevenciju i liječenje bolesti bila je razvijena u mnogim kulturama i prije više tisuća
godina. Na tom popisu se posebno ističe Ajurvedska medicina, koja ujedno predstavlja najstariji ljekarnički pristup
koji se i dan-danas primjenjuje. Biljka koja je bila i ostala prva na njezinu popisu djelotvornih “ljekovitih biljnih
vrsta” je Aloe vera, pa nije čudno sto je podrobno opisuje i općenito znatno koristi tradicionalna indijska medicina.
Mi tek spoznajemo mogućnosti primjene Aloe vera nadamo se da će uskoro brojne kontradikcije i nepoznanice kad
je primjena Aloe vera u gastronomiji biti razriješene i nove spoznaje usvojene.
Gel i želatinozni sastojak listova biljke Aloe vera bogat je spojem acemananom, koji pripada skupini polisaharida
topivih u vodi. Sastoji se uglavnom od jedinica jednostavnih šećera manoze, međusobno povezanih glikozidnim
vezama, te od pojedinih pobočnih lanaca sastavljenih od monosaharida arabinoze i galaktoze. To je važno
napomenuti, jer baš acemanan predstavlja idealan prebiotik. A prebiotici su nužan energetski izvor dobrim
bakterijama u našim crijevima.

Various products and medications which contain the gel and juice of the unique Aloe vera plant have in recent
years been widely available in pharmacies, drugstores, natural and health food stores, perfumeries... Millions
of buyers from all over the world buy these products and use them topically or internally to solve or soothe
different health issues. With the help of balms, creams and gels they can regularly or periodically care for or
heal their skin, drink syrups and other beverages for their efficacy in alleviating symptoms and treating diseases,
or experiment with professional help when it comes to cooking with the dried cubes of the plant’s leaves.
However, only well-versed users know that the modern man is not the one responsible for this varied and
common use of Aloe vera, but that the plant has been used in medicine and for beauty treatments for millennia.
It was very valued by healers and pharmacists, but also the common folk in ancient Egypt, Greece, Mexico,
India, China, Japan... Aloe vera was part of the regular beauty regimes of the beautiful queens of Egypt –
Nefertiti and Cleopatra, and the people of Egypt considered it “the plant of immortality”. Aloe vera was also
used to treat wounds by the soldiers of Alexander the Great and the sailors of Christopher Columbus.
Aloe vera has for its benefits been proclaimed miraculous since ancient times, but its name was given to it for
its specific appearance. Botanists describe it as a short-stemmed or stemless succulent plant with about twenty
thick and fleshy leaves, up to half a meter long and with serrated edges, while the flowers are yellow, tall and
tubular. Its fruits contain numerous seeds. Studies have shown that it was cultivated first in northern Africa
and that its name is derived from the Arabic word Alloeh which means “shiny, bitter substance”. Vera, a part
of its current full name, means “true” in Latin, since even more than 2000 years ago it was considered to be a
universal cure by Greek scientists. It’s long been known that the plant thrives in dry and sunny regions of Africa
(in the extreme north and south), Asia, Americas, Europe and Australia.
In current times, however, experts in Aloe vera use the Latin name Aloe barbadensis miller. Its name in Croatian
is Aloja. The plant is assigned to the family Liliaceae (the lily family) and the group of leafy succulents (cacti).
The plant’s stem, leaves and root have the ability to gather and retain water which is then stored in its thick
leaves in three layers. The first one is the inner layer with a gel that contains 99% water and the rest are
amino acids, glucomannans, lipids, vitamins and sterols. The middle layer is yellowish and made of latex with
anthraquinones and glycosides. The outer thick layer of 15 to 20 cells is called the rind, has a protective function
and synthesizes carbohydrates and proteins. The inside of the rind is made of vascular bundles responsible for
the transportation and conservation of substances such as water and starch.
Many cultures have for thousands of years strived to improve the care for human health and the prevention
and treatment of diseases. Ayurvedic medicine holds a special place amongst all the approaches to medicine
since its one of the oldest medicine systems still in use. The plant that was and remains on the list of effective
“medicinal plants” is Aloe vera, therefore it’s not strange that the traditional Indian medicine describes it and its
many uses in detail.
We are only getting acquainted with the various possibilities of Aloe vera medicinal use. Hopefully, the
numerous contradictions about the use of Aloe vera for cooking will soon be resolved and new knowledge about
its benefits gained.
The gel and gelatinous material in Aloe vera’s leaves are rich with the compound acemannan, a water soluble
polysaccharide consisting mostly of simple sugar mannose units linked by glycosidic bonds and of individual
side-chains of arabinose and galactose monosaccharides. The above is important, since acemannan is an ideal
prebiotic, i.e. an essential energy source for the beneficial bacteria in our intestines – our microbiota.

In Apotheken, Drogeriemärkten, spezialisierten Lebensmittelläden und Parfümeries werden seit einigen Jahren zahlreiche
unterschiedliche Erzeugnisse und Arzneimittel, die Gel der einzigartigen Aloe vera oder Aloeblattsaft enthalten,
angeboten. Millionen von Käufern auf der ganzen Welt kaufen diese Produkte, die entweder auf die Haut aufgetragen
oder oral eingenommen werden, um Gesundheitsprobleme zu lindern oder zu bekämpfen. Viele verwenden regelmäßig
oder ab und zu einen Balsam, eine Creme oder ein Gel, das die Haut pflegt oder Wunden heilt. Viele trinken auch Säfte
und andere Getränke mit Aloe vera, weil solche Getränke wirkungsvoll Krankheitssymptome bekämpfen und zur Heilung
von Krankheiten beitragen. Einige befolgen professionelle Tipps und experimentieren beim Kochen mit Brühwürfeln aus

Namen hat die Pflanze mit Sicherheit auch wegen ihrer besonderen Form erhalten. Botaniker beschreiben die Pflanze als
eine stammlose Pflanze mit ca. 20 dicken rosettenförmigen, saftigen Blättern, die bis 50 cm lang werden kann. An den
Rändern befinden sich Zähne. Sie hat gelbe, hohe röhrenförmige Blüten und Früchte, in denen sich viele Samen befinden.
Sie wurde ursprünglich in Nordafrika angebaut. Der Begriff Aloe kommt aus der arabischen Sprache, in der Alloeh so viel
heißt wie “glänzende, bittere Substanz”. Das zweite Wort des Namens, Vera, stammt aus dem Lateinischen. Denn schon
vor 2000 Jahren galt diese Pflanze unter Wissenschaftlern als universales Heilmittel. Man weiß schon seit eh und je, dass
sie den trockenen Boden und die sonnigen Gebiete in Afrika (im Norden und im Süden), Asien, Amerika, Europa und
Australien bevorzugt.
Heute verwenden Wissenschaftler den lateinischen Namen Aloe barbadensis miller. In Kroatien wird Sie nur Aloe genannt. Sie
gehört zur Pflanzenfamilie der Liliengewächse (Liliaceae) und zu den blattsukkulenten Gewächsen (Kakteen). Der Stamm, die
Blätter und die Wurzel dieser Pflanze können große Mengen Wasser aufnehmen und speichern. Das angesammelte Wasser
wird in drei Schichten der dicken Blätter gespeichert. In der ersten, inneren Schicht der Blätter befindet sich ein Gel, das zu
99% aus Wasser und 1% aus Aminosäuren, Glucomannanen, Lipiden, Vitaminen und Sterol besteht. Die mittlere, gelbliche
Blattschicht ist aus Latex und enthält Glykosid und Anthrachinon. Die äußere, dicke Schicht, die aus 15 bis 20 Zellen besteht,
wird Blattrinde genannt und hat eine Schutzfunktion. Außerdem synthetisiert sie Kohlenhydrate und Proteine. Der innere
Teil der Blattrinde besteht aus einem Leitbündel, das für das Speichern und den Transport von Substanzen wie Wasser und
Stärke “verantwortlich” ist.
Schon vor einigen Jahrtausenden waren Menschen darum bemüht, sich um ihre Gesundheit zu kümmern, Krankheiten
vorzubeugen und zu heilen. Die ayurvedische Medizin, die zur ältesten Medizin gehört, nimmt hier einen ganz besonderen
Platz ein und wird heute noch angewandt. Die Pflanze, die sich auf der Liste der wirkungsvollsten “Heilpflanzen” befand
und befindet, ist Aloe vera. Deshalb ist es nicht verwunderlich, dass sie in der traditionellen indischen Medizin detailliert
beschrieben und in bedeutendem Maße angewandt wird.
Wir sind erst dabei, uns an die Möglichkeiten und die Anwendung Aloe vera heranzutasten. Wir hoffen, dass in baldiger
Zukunft zahlreiche Widersprüche bezüglich der Anwendung von Aloe vera in der Gastronomie geklärt und neue Erkenntnisse
angenommen werden.
Das Gel, die gelatineartige Substanz der Aloe vera Blätter ist reich an Acemannan, das zu den wasserlöslichen Polysacchariden
gehört. Es besteht hauptsächlich aus einfachen Zuckerverbindungen der Mannose, die durch eine glykosidische Bindung
miteinander verbunden sind, sowie aus Seitenketten, die aus Monosacchariden wie Arabinosen und Galaktosen
zusammengesetzt sind. Das ist eine wichtige Information, denn Acemannan ist ein ideales Probiotikum. Und Porbitoika sind
eine gute Energiequelle der positiven Bakterien in unserem Darm - in unserem Mikrobiom.

Negli ultimi anni sugli scaffali di farmacie, drogherie, negozi di prodotti biologici e profumerie è possibile trovare vari
preparati e farmaci contenenti il gel o il succo di questa straordinaria pianta che risponde al nome di Aloe vera. Milioni
di persone in tutto il mondo li acquistano e usano per alleviare o risolvere tutta una serie di disturbi mediante la loro
ingestione o il loro uso esterno. Sotto forma di unguenti, creme o gel, l’Aloe vera viene regolarmente o saltuariamente
usata nella cura della pelle. Presente in sciroppi o in altri preparati da bere, l’Aloe vera lenisce i sintomi e aiuta a curare
diverse patologie del nostro organismo. Sotto forma di zollette di foglie essiccate, e con i consigli di un esperto, l’Aloe vera
viene anche utilizzata in cucina.
Ma forse non tutti sanno che la scoperta della sua versatilità non va attribuita all’uomo moderno. L’Aloe vera, infatti, è
al servizio della salute e della bellezza da alcuni millenni, sia come materia prima degli speziali e dei cerusici, sia come
rimedio naturale noto ai popoli dell’antico Egitto, della Grecia, del Messico, dell’India, della Cina, del Giappone… L’Aloe
vera, considerata dagli Egizi “pianta dell’immortalità”, era utilizzata nei trattamenti cosmetici quotidiani dalle belle regine
egizie Nefertiti e Cleopatra. Sappiamo anche che, sotto forma d’unguento, veniva spalmata sulle ferite dei soldati di
Alessandro Magno e dei marinai di Cristoforo Colombo.
Per i suoi molteplici impieghi, ma anche per il suo insolito aspetto, l’Aloe vera è da sempre considerata una pianta
prodigiosa. In botanica è descritta come una pianta priva di fusto e con una ventina di foglie carnose lunghe sino a mezzo
metro e disposte a rosetta. Le foglie presentano spine lungo i bordi e nella parte inferiore. I fiori dell’Aloe vera sono gialli,
alti e a forma tubolare, mentre i suoi frutti sono ricchi di semi. La pianta è originaria dell’Africa settentrionale, da cui il suo
nome, che pare derivi dall’arabo Alloeh che significa “sostanza splendente e amara”. L’aggettivo vera è di chiara derivazione
latina, visto che anche il mondo classico, ben duemila anni fa, la considerava una sorta di panacea per tutti i mali.
L’Aloe vera predilige i terreni aridi e soleggiati dei continenti africano (estremità settentrionale e meridionale), asiatico,
americano, europeo e australiano.
Oggi in botanica l’Aloe vera è classificata con il nome latino di Aloe barbadensis miller, mentre il suo nome Croato è Aloja.
Annoverata nella famiglia delle Liliaceae e nella classe delle piante succulente (cactus), l’Aloe vera è una pianta capace di
raccogliere e immagazzinare l’acqua nelle sue radici e nelle sue foglie carnose, aventi una struttura a tre strati. Lo strato
interno contiene un gel composto per il 99% da acqua, mentre il resto è rappresentato da aminoacidi, glucomannani, lipidi,
vitamine e steroli. Lo strato intermedio è giallastro e contiene lattice, glicosidi e antrachinoni. Lo strato esterno, molto
spesso, è chiamato cuticola e ha una funzione protettiva, oltre a sintetizzare i carboidrati e le proteine. La parte interna
della cuticola è deputata all’immagazzinaggio e alla trasmissione di sostanze come l’acqua e gli amidi.
L’attenzione verso la salute umana, la prevenzione e la cura delle malattie era già presente in tante antichissime culture.
Tra esse spicca, in modo particolare, la medicina ayurvedica. Quest’antichissimo approccio medico trova tutt’oggi
applicazione, e l’Aloe vera è la prima tra le “specie vegetali medicinali” utilizzate dai suoi specialisti. Non è, quindi, un caso
che essa sia stata dettagliatamente descritta e abbia trovato ampia applicazione nella medicina tradizionale indiana.
Benché si sia soltanto all’inizio del cammino verso la piena conoscenza delle possibilità applicative di Aloe vera, ci si augura
che ben presto sia fatta chiarezza sulle tante contraddizioni e sui tanti punti oscuri circa l’uso dell’Aloe vera in cucina, e che
le nuove conoscenze scientifiche ricevano il giusto riconoscimento.
Il gel e gli elementi gelatinosi delle foglie di Aloe vera sono ricchi di una sostanza, l’acemannano, che appartiene alla
classe dei polisaccaridi idrosolubili. L’acemannano è composto, di norma, da molecole di monosaccaride mannosio
tra loro collegate mediante legami glicosidici, e da singole catene laterali composte dai monosaccaridi arabinosio e
galattosio. A quest’importantissimo aspetto, l’acemannano deve la propria fama di “prebiotico ideale”. E i prebiotici sono
indispensabili fonti energetiche per la “buona” flora batterica presente nel nostro intestino – il nostro microbiota.
