Filling Procedure

Sugar and cinnamon are first mixed together the with apples
NB: mix the filling only just before using
Procedure

Scale butter, sugar, colour and emulsifier and mix with spatula for 1
minutes at speed 1, Scrape the bowl

Mix for 2 minutes at speed 2, Scrape the bowl

Mix for 2 minutes at speed 3, Scrape the bowl

Add water during mixing for 1 minutes at speed 1, Scrape the bowl

Mix for 1 minute at speed 2

Add dry ingredients

Mix for 1 minute at speed 1, Scrape the bowl

Mix for 10 seconds at speed 2

Add batter to baking tin Ø23x5cm covered with paper.

Divide filling evenly on top of the cake and give a gentile press, so the
filling is pressed down into the cake.

Sprinkle pearl sugar on top.

Bake in deck oven for approx 70 min. at 175°C (347°F)
Alternative version: “Vanilla marinated apple pie”

Use 17g of vanilla sugar instead of Cinnamon and sugar
Alternative baking tin:

For baking tin 30x45cm (half sheet pan), multiply the recipe by 2,5 and
bake it for 105 min.

For Muffin forms use 75g batter and 20 g apples
