Tiramisu PASTRY & BAKING PRODUCTS CAKE Part 1 Part 3 Ladyfinger Cake INGREDIENTS Sugar 250g/9oz Egg White 300g/10.5 oz Egg Yolk 200g/7oz 5g/0.17oz INGREDIENTS PREPARATION 1 Whip up a french meringue with the sugar and egg whites. Irca Lilly Tiramisu (118878) 200g/7oz 2 Once complete, fold in yolks and add in sifted dry ingredients. Milk 200g/7oz Heavy Cream 1000g/35oz All Purpose Flour 245g/8.5oz Baking Powder Irca Lilly Tiramisu 3 4 Part 2 Sugar 1000g/35oz Water 1000g/35oz Gustosia Mocca Compound (119462) To taste 1 In a mixer with a whip attachment, whip Irca Tiramisu, milk, and cream together until soft peaks form. Put in desired pan. Sprinkle icing sugar on top before baking. Bake at 325°F/162°C for 10-15 minutes. Part 4 Coffee Flavored Simple Syrup INGREDIENTS PREPARATION Building & Decoration PREPARATION 1 Bring sugar and water to a boil. 1 Place Ladyfinger cake in desired mold and soak with simple syrup mixture. 2 Allow to cool and stir in the Gustosia Mocca Compound. 2 Pipe Irca Lilly Tiramisu on top of ladyfinger. 3 Place another layer of ladyfinger on top of the mousse, soak and cover with another layer of Irca Lilly Tiramisu. 4 Place in refrigerator and let set. 5 Once set, dust with Chocoa Cocoa Powder (101192) and decorate with chocolate covered coffee beans (101750). w w w. q z i n a . c o m
