Kate`s Tzatziki Recipe
1 1/2 cups plain full-fat yogurt (I use Sheep's Milk Yogurt!)
1 cucumber, peeled, seeded and diced
3 cloves fresh garlic
2 tsp dill
1/4 cup fresh mint leaves
juice from 1/2 a lemon
sea salt & ground black pepper to taste
Place all ingredients in a blender or food processor.
Blend until smooth and combined.
Eat! Or store leftovers in the refrigerator for up to 4 days.
Serving suggestions: sauce for grilled chicken, burgers, sandwiches, as a salad dressing, dip for veggies,
baked potato topping or with tacos!
