It is a recipe I have been perfecting for years and it is so good (if I may humbly say) that my kids are disappointed when they eat spaghetti anywhere else but home! In fact they tell me I should open a restaurant and serve only this spaghetti and garlic bread. In response to requests, I have posted the recipe for Recipe #28559 that uses approximately 1/2 of the sauce from this recipe. Have spaghetti one night and lasagna later! Chef Note: After I posted this recipe I remembered a funny incident-my dear husband usually has a nice bottle of wine handy so when I make a batch of spaghetti I just help myself to a splash of it. On one occasion, there wasn't a bottle opened, but there was a bottle sitting on the counter so I got out the corkscrew and helped myself. For some reason, the spaghetti that night was the best ever. My husband asked what wine I put in it and I showed him the bottle. He nearly fell off the chair. I had opened a rather expensive bottle he had bought to give his boss. Goes to show you--don't use a wine for cooking you wouldn't drink. You get the best results from a good wine! I used 1 pound of sweet Italian sausage, and 1 pound of hot Italian sausage. I doubled the garlic to 8 cloves. I made no other changes. My husband really liked this. I do not care for sausage at all, but this sauce made it taste so good! I kept trying to scoop extra meat in to my bowl! I thought it was very easy to make, and it makes a ton! For nearly 1,000 reviews I was expecting something phenomenal, but I didn't find that here. I followed the directions exactly, with the exception of eliminating all the water and simmering all day in my crockpot to allow flavors to meld. I made a few slight changes: used lean ground beef, added some oregano, chili powder and some bay leaves, and upped the spice since we love our spicy food. Something the DH really liked!!! His mom was 100% sicilian and an excellent cook. He is very kind, and usually eats whatever I make, but I'm a terrible cook. I could tell this was a very pleasant surprise for him. My 4 yr old DS said, "yummy! Where did you buy this mamma?" My 18 month old DD that wont eat anything scarfed down 2 servings!!! Yeah! I used the only mild Italian sausage my local store carries - and it wasn't great. (shout out to my home town Wegmans, I miss you!) Yes | No By Xradeu on January 30, 2011 I have made this twice now and its awesome! The first time I had to make a couple substitutions but the 2nd time I followed it more closely except I used only 1 pound of sausage. I like it much better with less meat. The other substitution I had to make the first time was b/c I didn't have any wine I had to use grape juice with a spash of balsamic vinegar. This time I used a cabernet and must say I liked it much better with the grape juice balsamic vinegar mix. I'd like to experiment with a couple more Red wines next time. I'm extremely picky when it comes to spaghetti sauce. I don't usually like the bottled ones b/c of too much garlic but b/c I can control the amount of garlic and Onions I LOVE this.
