BOOK OF DRINKS Our small collection of booze is geared towards the Iberian Peninsula with a strong focus on Spain, without neglecting close neighbours Portugal or failing to represent the local scene that produces some of the best plonk in Oz. We hope you like a drink as much as we do. Salud. Australia’s Winelist Of The Year Awards 2014 2 Glass rating (highly recommended) JEREZ-XÉRÈS-SHERRY If there were justice in the world of wine, which there is not, this national tipple of Spain may indeed garner the same prestige as the finest Champagne Houses. Whilst there are often parallels drawn between Sherry and Champagne, (perhaps the two wines considered one subject viewed through different ends of the binoculars)* Andalusia’s proudest wine remains misunderstood, underappreciated and long forgotten, considered only as the preferred libation of our beloved elders. Well not here at Duendé, we’re bringin’ this baby back, showcasing its diversity, complexity and downright sexiness. You may need a few cracks to completely fall in love but we’re happy to convince you. MANZANILLA granted its own classification due to its distinct sea spray aroma as influenced in the bodegas of DO Sanlúcar de Barrameda on the West Coast. Manzanilla Pasada (aspoured here) spends more time in barrel, whilst Manzanilla Fina is younger, fresher & lower in alcohol. La Goya ‘XL’ 500ml 11/90 FINO elegant and sophisticated with a dry tang & blanched almond complexity that showcases Sherry at its peak of refinement. Flor, the veil of yeast that forms atop the Sherry, allows a slow & desirable oxidative stay in barrel. A rare import coming from Puerti de Santa Maria. Gutierrez Colosia 375ml 9/42 AMONTILLADO traditionally a dry style of fino that has been aged without the protection of flor , providing a gentle richness and darker hue. Some are produced with the addition of a sweeter Sherry, as is the case here with this example actually from DO Montilla Moriles, where the style takes its name. Tora Albalá Solera 1922 11 OLOROSO literally translating to ‘fragrant’ your nose is filled with punchy aromatics. A wine where the flor has been suppressed from the get-go. Brassy, complex, nutty density is what you’ll find here. Gonzalez Byass ‘Matusalem - Dulce Viejo’ VOS 18 ALMACENISTA a dwindling breed of individuals with small, usually inherited, family soleras. Almacenistas do not actually produce finished Sherries, but rather mature them in their soleras before selling them back to the bodegas for bottling where both names appear on the label, showcasing their individuality. Cayataño del Pino Palo Cortado ‘Solera 15yr’ 11 EAST INDIA originally used on long sea voyages to stabilize the ships. Upon return the wine was discovered to develop a desirable richness and smoothness. It is now a name owned by Lustau. after reviving the style blending soleras of up to 50 years of age. Emilio Lustau ‘East India’ Solera 8 CREAM originally created for the British export market (think Bristol’s). Blended to medium sweet with finished Pedro Ximénez and Oloroso sherries. Bodegas Fernandez de Castilla 8 MOSCATEL made from the Moscatel grape, a translation of Muscat, confusingly a name given to more than 200 distinct varieties. This Sherry produces a rich style with noticeable levels of acid and a medium sweet finish, a good stepping stone to the unctuous flavours of PX. Sanchez Romate ‘Ambrosia’ 12 PEDRO XIMÉNEZ sweet wine made from the grape of the same name left to raisin in the sun and intensify its sugars. Strangely enough not grown in Jerez but instead further inland in Montilla Morilles where the grapes are then shipped to Jerez for pressing and ageing. Gran Barquero 750ml 10/95 Each time Sherry is drawn off from the bottom row (also known as the solera row from ‘suelo’, Spanish for floor), each barrel is replenished from the one above, and so on. This ‘fractional blending’ of younger wine into older wines means we never really know just how old a Sherry is. A Solera System is only ever stacked 4 butts high (butts are 600litre old American Oak (heavy!). Any higher crushes the bottom row (learnt that the hard way ! Sherry will be drawn off from the solera row and bottled for sale. Only 30% is permitted to be drawn off each year . This is classified ‘Extra Dry’, yet has a been given the slightest dose of sugar for weight and texture, balanced with green apple freshness. Darn tasty fizz. MAS MACIA BRUT NV CAVA, PENEDÈS - SPAIN 10/60 th The family of Casanovas-Bohigas has had vineyards since the 13 century, and for 800 years the family has maintained these vineyards in the heart of Cava country. This Cava comes from classic low-yielding, concentrated bush vines that translates to the same power in glass…best friends with a little plate of jamón . STELLA BELLA BLANC DE BLANCS NV MARGARET RIVER - WA 12½/72 100% Chardonnay, forging a reputation for some of the best bubbles n Oz after its first release in 2011. Complex, whilst maintaining delicacy of its cool climate fruit from southern Margaret River sites. LAURENT-PERRIIER BRUT NV TOURS-SUR-MARNE, CHAMPAGNE - FRANCE 22/130 Produced from Premier Cru vineyards in the Vallée de Marne, with the same vineyards actually rated Grand Cru for red grapes. Over 50% of this blend is comprised of Chardonnay with none of the LP wines using oak during vinification, maintaining finesse. Elegant, pure and made by a firm who have been doin it since 1812. BLANCO by the glass EXPRESS WINEMAKERS ‘14 Viognier PORONGURUP - WA 9/32/45 Ryan O’Meara may well be redefining Viognier in Oz with this wine. It’s picked early, retaining freshness & keeping alcohol down (12%). Varietal characters of nectarine, apricot & orange blossom are still noticeable, but oh so elegant MOUNT TRIO ‘13 Chardonnay MARGARET RIVER - WA 9/32/45 If this isn’t an example that Chardie has come full circle in the New World, then blow me down. Citrus-driven, full of lemon pith & white grapefruit. A gentle texture on entry from small portions of oak treatment, and a clean finish to boot. BELLA RIDGE ‘12 ‘Demi-Sec’ Chenin Blanc SWAN VALLEY - WA 12½/44/63 Alon only sells his wines to the top end of the restaurant game. He’s experimental, funky and aims outside any box that we’re used to. This has sweetness, crunch, dusty edges and is a wine that needs an open mind. FOSTER e ROCCO ‘12 Fiano HEATHCOTE - VIC 10/36/50 Native to Campania in Italy’s south, Fiano enjoys the warm climates of McLaren and Heathcote. Aussie winemaker Adam Foster captures typicity with waxy generosity, lifted with pretty white florals and maintaining modest alcohol. Clever. SEPP MOSER ‘11 Grüner Veltliner KRESMTAL - AUSTRIA 11/38/55 This is Austria’s grape. Precise green-laced fruit, typical celery-stick freshness & mid-palate white pepper with a blanket of lanolin-type warmth from neutral cask ageing. A go-to wine for us. VON BUHL ‘13 Riesling TROCKEN PFALZ - GERMANY 11½/39/58 No matter how hard it tries Riesling (pronounced reece-ling) just can’t crack the big time outside of Germany, so it’s here that we look for outstanding examples. Mineral-laden, dry, organic and downright delicious. BLANCO by the glass FEUILLAT-JOILLOT ‘12 ‘Les Crêts’ Chardonnay MONTAGNY - FRANCE 16/56/80 Cote Chalonnaise in Southern Burgundy : Chardonnay country. Francoise Feuillat-Joillot produces wine with a female sensitivity - delicate, complex, rich and structured. This is a standout wine from her 14ha estate. HORGELUS ‘13 Sauvignon Blanc/Gros Manseng CÔTES-de-GASCOIGNE- FRANCE 11/38/55 th Yoan Menn is a 5 generation winemaker renowned for his notorious 3am harvest calls to maintain freshness in his grapes. An often overlooked appellation - there’s real value to be found in here. MAETIERRA ‘Guerilla’ ‘13 Verdejo RUEDA - SPAIN 9/32/45 Granny Smith apples, zesty lime citrus, underlying alpine herbs, a touch of grass…..sounds like it could be Sauvignon Blanc. This Verdejo (no relation to Verdelho) provides texture and aromatic lift. MAS MACIÁ ‘12 Xarel.lo CATALUNYA - SPAIN 12/40/60 Xarel-lo (Charello) is usually turned into Cava. This is a great example of what it can do without bubbles from the east coast (near Barcelona) Soft, peachy and pleasing with loads of melony (a word) goodness. ABELLIO ‘13 Albariño RIAS BAIXAS - SPAIN 9/32/45 Rias Baixas (ree-ass by-shuss) in Galicia’s northwest is home to Spain’s most notable white grape. This is aromatic with trademark Albariño acid and generosity beyond that normally seen from wines at this level. GORKA IZAGIRRE ‘12 Hondurrabi Zuri/Zeratia BIZKAIKO TXAKOLINO - SPAIN 15/53/75 José & his son, Izagirre, hand harvest this wine from their 21 hectares in Basque Country with the aim of preserving the ideology behind Txacoli wines. Mouthwatering, zesty, beautifully taut, super fresh & very long TINTO by the glass AZUL y GARANZA ‘13 Garnacha/Tempranillo NAVARRA - SPAIN 9/32/45 Brilliant rose hue, subtle strawberry fruit, gentle savoury edges. Organic, structured, carefully made rosé. HAYSHED HILL ‘13 Pinot Noir MARGARET RIVER - WA 9/32/45 Made from pretty, soft Pinot Noir fruit it’s dry, clean and a bloomin good quaffer I tells ya’ ‘DUENDÉ’ by Gavin Berry ‘13 Tempranillo - WA 9/32/45 Tempranillo is starting to show true varietal typicity in WA. This is a combination of fruit from Perth Hills & Frankland River. Juicy, plump fruit & silky tannins. Made for us by Gavin Berry who has over 25 yrs of serious winemaking credentials. ZAREPHATH ‘11 Shiraz/Cabernet Sauvignon GREAT SOUTHERN - WA 11/38/55 It gets cold down in the Porongorup ranges and this cool climate blend represents. It’s perfumed and jubey on the nose with a plump, dark fruit profile that combines well with lashings of meaty goodness. NUITON-BEAUNOY ‘12Pinot Noir BURGUNDY - FRANCE 14/50/70 Regional Burgundy can disappoint all too often. Not this little beauty from a collaboration of Burgundian winemakers pooling generations of expertise. Precise red cherry and old world charm with savoury, earthy support. TINTO by the glass PHAROS ‘13 Tempranillo RIOJA - SPAIN 10/36/50 Joven in Rioja means ‘young’, which really means there’s no oak in Bodega Classica’s Pharos. It’s lively, vibrant, and screams of excellent young Tempranillo. More please Oliver. FUENTENARRO ‘12Tempranillo RIBERA del DUERO - SPAIN 15/53/75 In 2012 Ribera del Duero was upgraded to join Rioja and Priorat as Spain’s superior wine producing regions. Tinto del Païs (tempranillo) here showsdark plum fruit, a meaty underbelly and a tickle of oak- robust ‘n’ powerfiul MENGOBA ‘Brezo’ ‘13 Mencía BIERZO - SPAIN 12/40/60 Grégory Pérez is one helluva winemaker. Mencía is a vulnerable grape that needs an artist’s hand. This is sophisticated & downright delicious - mulberry fruit, soft, dusty tannins, and a silken mouthfeel. BODEGAS BORSAO ‘Rame Selección’ ‘13 Garnacha CAMPO DE BORJA - SPAIN 9/32/45 If Jancis says it’s so, then it must be so. “The best Spanish red for its value for money”. Raspberries and red currants, juicy and fresh, just what Grenache is meant to look like in its youth. QUINTA do VALE MEÃO 'Meandro' ‘09 Touriga Nacional Blend DOURO - PORTUGAL 14/50/70 There’s an inky presence in the glass, even before we get to the flavours. A complex and luscious fruit spectrum from red to blue to black that sits deep in an intensely earthy palate of rich Douro Valley minerality. A blockbuster! BRANCAIA ‘Tre’ ‘11 Sangiovese/Merlot/Cab Sauv TUSCANY - ITALY 15/53/75 ‘Supertuscan’: struggling winemakers blend French varieties with native Sangiovese to boost yields. The resulting wines became some of Italy’s finest & most famous, albeit outside of lawful classification. Brooding, savoury, sublime. Cava is unique in its classification in that it is more concerned about how it is produced rather than limiting itself to just one geographical zone. Penedès, just south of Barcelona, is the most important region for Cava production, however there are also Cava DOs in other regions including Rioja, Navarra, Basque Country and Valencia. All Cava is produced using the ‘traditional method’ as it is called in Spain, with secondary fermentation in bottle. Macabeo, Xarel.lo and Parellada being the favoured grapes whilst a handful of others are also authorized.
