Myingredientsforaservingof3to4:
1X400grmcanofchickpeas
1Xcoffeemugoftahina,I’mgeneroushere
2to3lemons,dependingonhowjuicytheyare
2to3clovesofgarlic
Salt
1teaspoonoffreshlygroundblackpepper,groundinmortarandpestleandleftchunky
1teaspoonofcumin
Oliveoilforthegarnish,needstobegoodquality
Sweetpaprika

Mymethod:
Boilthechickpeasforaminimumhalfhour.Theyneedtosquisheasilybetweenyourfingerswhen
cooked.Likethetestforspaghetti,youshouldbeabletothrowthecookedchickpeatothewalland
itwillstick–splatter.Usingaslottedspoondrainthecookedchickpeasintoablender,settingaside
thecookingwaterandasmallamountofthewholechickpeas,approximatelyadozen.Addtothe
blenderthetahina,halfthelemonjuice,garlic,cumin,saltandpepper.Blendforatleastonetotwo
minutes.Atthisstagethemixturewillbetoothick,soinstagesaddamountsoftheremaininglemon
juice.Ifafteryouhaveused3lemonsthehummusmixtureisstilltoothick,thenbeginadding
spoonfulbyspoonful,someofthecookingwater.Onlyusesmallamountsatatime,andblendin
betweenspoonfuls,asyoudon’twantthehummustobetoorunny.Theidealconsistencyisone
thatspinsinyourblenderslowly.Ifyoufindittoorunnyaddmoretahinatothickenitup.Thefinal
consistencyshouldallowyoutomouldorsculptaholloworwellwithaspoonintothehummusinits
servingplatewithoutthehummusfallinginaheap.
Spoonthehummusintoitsservingbowl.Withacleanspoon,sculptthewellinthemiddleby
runningthebacksideofthespoonaroundthecentreofthehummus,pushingituptothesidesof
theplate.Itshouldbelikeacraterofhummus.Intothewellsprinkletheremainingwholechickpeas
withageneroussprinklingofpaprika.Thengiveitagoodlashingofoliveoilsothatitrunsintothe
well.Sprinklesomecutparsleyontopandservewithwarmpitabread.Delicious!Bonappetite.
