It’s no secret that we love Ontario wine. Thanks to grapes that thrive in Ontario’s unique terroir,
and local winemakers who have elevated their craft to an art form, we’re blessed with a wealth of delicious choices
– from iconic Icewine, to our signature Riesling, Chardonnay and Pinot Noir, to stellar sparklers and more. While
these homegrown wonders continue to garner glowing praise from local and international critics, we thought it was
time to hear from another group of people who live and breathe wine – top restaurateurs, sommeliers and chefs
known for their Ontario-centric wine lists. We enlisted former Globe and Mail food and wine editor Cecily Ross
to find out firsthand why these local tastemakers are such proponents of the wine made in our own backyard. The verdict?
While promoting a “go local” philosophy is on everyone’s mind, these talents have taken a shining to Ontario wine
as much for its consistently high quality and delicious variety as for its inimitable local heritage.

Why do you feature Ontario wines at Stone Road Grille?
B RETT H EALEY > Essentially, because we are a restaurant in the middle of wine
country we have to support the vineyards. We make fantastic wines in
Ontario, so why not feature them? We serve local food at Stone Road Grille.
The restaurant raises its own pigs; we have two vegetable farmers within
a couple of kilometres who grow for us. Why not do the same for local wine?
V > Presumably you choose many wines on your list to complement the restaurant’s dishes, but are there also dishes created
specifically to pair with local wines?
BH > We often do that for individual wineries. Our list has more than 100
bottles on it that represent the best of Niagara and our menu is created to
match well with those wines. A specific example would be the annual wine
and herb festival. We chose a Coyote’s Run 2009 Syrah and paired it with a
braised beef with coriander on a flatbread. It was a bit of a challenge, but
the Syrah stood up well to the Mexican-flavoured dish.
How do you think Ontario wines stand up against wines
from other countries?
V>
BH > I think our wine is top notch. Our Riesling is definitely on a world-class
level and so are our sparkling wines. Still, I think we need to specialize a little
more. For instance, we make good Cab Sauvs but only once in a while. If we
weren’t trying to do everything then we could do one thing better. With reds,
we should concentrate on Cab Francs and Pinot Noirs because they’re more
suited to our climate.
Ontario is known for having the right climate and soil for
producing certain wines particularly well. Do you have a favourite
Ontario varietal? Or a favourite style that is produced here?
V>
BH > I think Rieslings from the Beamsville Bench have great minerality,
wonderful acidity and they’re not too sweet. Every year something stands
out; last year it was the Pinots and the Chardonnays. But I love our
Rieslings. The irony is that they can be a tough sell. People think they’re
going to be really sweet in the German style – but they’re not.
Can you give a specific example of an Ontario wine/food pairing
you might recommend at your restaurant?
V>

BH > I would serve Berkshire pork loin, slow-roasted with roasted asparagus,
beets and radishes and pork jus paired with the 2011 Charles Baker Picone
Vineyard Riesling. Berkshire pork has a lot of fat and the wine’s acidity
cuts it nicely. The wine also has notes of Granny Smith apples and a touch
of sweetness that goes very well with pork.

To make good Riesling it helps to have
a cool climate, which we have here
in Ontario. In this province, though, we
don’t make good Riesling…we make
exceptional Riesling. One big reason is
that our soils have a story to tell. Riesling
is arguably the best grape on Earth for
conveying the nuances of where it comes
from, which means that our dynamic
range of varied soils – from swaths of
escarpment hewn by enormous glaciers,
to ancient lake and river beds – creates
a dynamic range of varied wines.

Why do you feature Ontario wines at East & Main?
D AVID O’C ONNOR > Wine is a very important part of our tourism industry. When visitors
come to Prince Edward County they want to enjoy wine from the region. It
has been 20 years since the industry started here and in the past 10 years it has
grown multifold. We now have three separate terroirs and there’s a lot of variety.
V > Presumably you choose many wines on your list to complement
the dishes you craft, but do you also create dishes specifically to pair
with Ontario wines you love?
DO > We hold winemaker dinners in the fall, which means we have to match the
food with the wine the winemaker is presenting. But we also do pairings on
request. For example, we have a 2003 Hillier Creek Estates Pinot Noir in our
cellar that has finally come around and is very presentable right now. PEC
Pinots are very food friendly because the grapes extract the minerality from the
limestone under the ground, which raises the acidity in the wine. Limestone
and Pinot make marvelous companions. The result is a medium-full-bodied wine
that goes beautifully with the kind of bistro food we serve – confit of duck or
braised lamb shank, say.
How do you think Ontario wines stand up against wines from
other countries?
V>
DO > They stand up very well. The whites in particular have been winning international awards. A Chardonnay from Prince Edward County won top honours in
London recently for cold-climate wines. Our Pinots are unique because of the terroir.
But if you expect a typical Burgundian Pinot, it’s not going to happen. What
you get here is Burgundian with a PEC twist. They’re not better or worse; they’re
completely different. Burgundy has been doing this for 10 centuries; we’ve only
been at it for 10 years. PEC produces just 3.5 per cent of Ontario’s wine. There are
30 vineyards, but they’re small, each producing only 2-3,000 cases a year.
The workmanship that goes into those wines is remarkable. Some of them are
very special, one of a kind.
V > Ontario is known for having the right climate and soil for producing
certain wines particularly well. Do you have a favourite Ontario varietal?
Or a favourite style that is produced here?
DO > We produce very good Rieslings. They’ve become quite luscious with a
nice feel on the tongue. I like to enjoy a glass of Riesling sitting on my back deck
watching the sun go down.
Can you give a specific example of an Ontario wine/food pairing
you might recommend at your restaurant?
V>

DO > Right now I’m getting excellent fresh pickerel from a local fishery. I would
serve it pan fried with a few simple steamed vegetables and winemaker Dan
Sullivan’s Rosehall Run Cuvée County Chardonnay. I like its light lemon colour
on the eye and its beautiful citrus acidity on the tongue.

Chardonnay is known as the “blank canvas”
grape. Why? For one, the grape itself can
show flavours ranging from crisp orchard
fruit to luscious tropical fruit, and a whole
taste spectrum in between. Then there’s

Why does Ruby Watchco feature Ontario wines?
L ORA K IRK > The concept of our menu is using food from local farmers and
growers within a 100-mile radius and that includes wines being produced
here. There are some wonderful wines in Niagara and Prince Edward County,
but not a lot of people know how great they are. I like to educate people
and raise their awareness about Ontario’s wines.
V > Presumably you choose many wines on your list to complement
the restaurant’s dishes, but are there also dishes created
specifically to pair with local wines?
LK > I think they go hand in hand. Because our food is local, it goes well with
Ontario wines. Usually I create the menus and then go through and pick the
wines that will go best, but when someone like Norm Hardie comes in late
in the day with zucchini and heirloom tomatoes he grows at his vineyard in
Prince Edward County, we get excited and will create something from them to
go with his wines. We’re always showcasing the wine in some fashion.
How do you think Ontario wines stand up against wines from
other countries?
V>
LK > I think we’re getting a better reputation. But still, not a lot of people are
educated about Ontario wines. I think they are kind of hard to compare with
the big shooters who have been doing this a lot longer than we have. Are we
there yet? Maybe. Will we be there soon? For sure. Ontario winemakers are
doing some amazing things.

Ontario varietal? Or a favourite style that is produced here?
V>
LK > I’m a wine lover in general. But I’m a huge fan of Pinot Noir from
Norman Hardie. Ontario has some great Rieslings too. I find them well
balanced and not super sweet, which makes them very food friendly. And
there are some very good sparkling wines here.
Can you give a specific example of an Ontario wine/food pairing
you might recommend at your restaurant?
V>
LK > Right now I would create a salad out of shaved zucchini, shaved Parmesan,

spiced almonds and a little scallion goat yogurt. Maybe some salt-roasted
grapes for a little oomph. It would be light and fresh and I would pair it with
Norman Hardie’s Chardonnay. The wine’s crisp citrus notes would give a

Why do you feature Ontario wines at Café Belong?
I am hard-core local and Ontario wines are part of my overall
philosophy. Our restaurant is located beside one of the best markets in
Toronto. We have so many good products in this country and I always try to
use what is close to home. Serving Ontario wines is a natural for me.
B RAD L ONG >
Presumably you include many wines on your list to complement
the dishes you craft, but do you also create dishes specifically to
pair with certain Ontario wines you love?
V>
BL > I subscribe to the theory that naturally occurring wines and foods go
together. There is a natural symbiosis with terroir. I craft dishes on my menu
all the time by seasoning my foods so that they will go with a particular wine.
If you achieve the right balance of sweet, sour, salt, umami, the dish will
complement any wine. Sometimes people come in and they say, ‘You don’t
have any big Cabs or Syrahs on your wine list.’ And I tell them these wines
don’t go well with the food that I serve. If they insist I say, ‘Okay, try this
Meritage from Niagara.’ Then I’ll back up on the acid and add more salt to
the food they’ve ordered to make it pair better.
How do you think Ontario wines stand up against wines from
other countries?
V>
BL > Without any hesitation, I would say we have cold-climate wines in Ontario
that are as good as anywhere on the planet. If you think Ontario wines are
inferior, then you haven’t tasted them. We have great winemakers, we have
great soils and we produce great wines.

BL > I love the Burgundies, in particular Chardonnay and Pinot Noir. I love the
Chardonnays from Hidden Bench and Tawse. I love Pinots from the County.
And Charles Baker’s Riesling – he does it with such love. Hinterland is producing
wonderful sparkling wines, and 13th Street too.
Can you give a specific example of an Ontario wine/food pairing
you might recommend at your restaurant?

BL > I buy wild mushrooms from a place near Collingwood called Northern

Why do you feature Ontario wines at Allen’s?
J OHN M AXWELL > My aim is to present the widest selection of VQA wines. Our
wine list is exclusively VQA and 90 per cent of the 50 or 60 bottles on it are
Ontario wines. With what’s in our cellar, we have without question the largest
number of VQA wines ever assembled in the world. I live in Ontario. I work
in Ontario. I find it absolutely insensible that restaurants here would not present
the wines of this region. The very idea of not drinking the wines of one’s own
country is incomprehensible.
V > Presumably you choose many wines on your list to complement
the dishes you craft, but do you also create dishes specifically to
pair with Ontario wines you love?
JM > We do wine events and when winemakers ask us to do food pairings
we do that. But I feel that those dinners are too contrived and they make people
feel that wine is only for special occasions. The idea of pairing intimidates
people and makes them less adventurous. I encourage people to be less formal,
to believe that good wine goes with good food. Pomposity has to be removed
from the enjoyment of wine. All food/wine decisions are right as long as you
enjoy the experience.
How do you think Ontario wines stand up against wines from
other countries?
V>
JM > They’re as good as the wines of any other country. We have critics from
all over the world coming to visit our vineyards but many consumers aren’t
aware of it. We’re such a young region but winemakers from across the world
come to be part of this adventure. I want to be part of this adventure, too.
I’m so proud to be operating where such brilliant wines are being made.
Ontario is known for having the right climate and soil for
producing certain wines particularly well. Do you have a
favourite Ontario varietal? Or a favourite style that is produced
in the province?
V>
JM > I would say we should focus on our Rieslings and Cab Francs because
they do extraordinarily well in our climate and soil. Unfortunately consumers
are not particularly enthusiastic about either. I’m in favour of blended wines.
I buy a lot of them because of my own preferences. Varietal wines are often
one dimensional.

Why do you feature Ontario wines at Canoe?
W ILLIAM P REDHOMME > Canoe is a Canadian restaurant. We use locally sourced
ingredients because we are trying to define our national food culture. It’s only
appropriate that we feature Canadian wines. We have a wine list of about
500 and we try to make sure at least 20 per cent of our list is local.
V > Presumably you choose many wines on your list to complement
the dishes you craft, but does Canoe also create dishes specifically
to pair with Ontario wines you love?
WP > Our chef is very open-minded and if a guest requests something to go
with a certain wine we do that all the time. We also hold winemakers’ dinners,
which means creating menus to highlight specific wines.
How do you think Ontario wines stand up against wines from
other countries?
V>
WP > I think they’re as good as they’ve ever been. In some instances we are at
a world-class level. Ontario is a cool-climate region and the varietals that do
well are Riesling, Chardonnay, Pinot Noir and Cab Franc. Still, Ontario is like
a newborn at this and we need to try and figure out what we do best. But
we’re progressing extremely fast. We’ve barely scratched the surface of what’s
possible. A big challenge is getting the right price-quality ratio. We’re just
finding our footing on this in Ontario. There’s a whole world of wines out there
and if they’re too pricey people won’t buy them.

V>
WP > We do sparkling wines very well. We also do a very good job with Chards
as long as they’re not over manipulated. Often we’re tempted to make
Chardonnay too oaky or buttery, or even too lean. Cab Franc is doing very
well in Ontario too, and Syrahs are definitely showing promise. They’re a
personal favourite of mine.

Last year, we reported on some of the very positive press
coverage and stellar reviews Ontario wines were getting
abroad. The excitement hasn’t died down, as a tasting of
100+ Canadian wines this past May in London, England,
showed. There, the praise flowed freely as top sommeliers,
wine writers, and critics sampled some of what we do
best here in Ontario: Rieslings, Chardonnays, Pinot Noirs,
Bordeaux varieties and blends, sparklers and Icewine.

regularly tastes the world’s finest wines. He counts Ontario
Riesling among them; here, he tells us why.
ntario is one of the premier cool-climate viticulture
areas of the world, especially relative to Pinot Noir and
Chardonnay. And of course there’s no battle with
Riesling. Ontario’s is already better than any other New World
winemaking region. In the many blind tastings I hold in Italy
where Ontario wines go head to head with other more famous
Pinot Noirs, Chardonnays and Rieslings, the fact is they score
extremely well, and are always in the same league as the other
famous names. And at times they’re the best of the lot.
Especially Ontario Riesling: I can’t even begin to tell you the
resounding success these wines have in tastings and dinners
held in Italy, which is a fairly Riesling-crazy country.
Ontario Rieslings are world-class – in my view the best of any
New World country. And I don’t mean just the Riesling
Icewines, which are world-class wines, but the dry ones too.
They represent a “third way” to Riesling, in between the alcoholic
structured versions of Alsace and the dainty floral versions
of the Mosel. The juicy, peachy
softness of Rieslings from the
Lincoln Lakeshore is completely
different than the steely minerality
of many wines from the Benches,
and even there, wines from
Twenty Mile Bench are completely
different from those of the
Beamsville Bench.

hardonnay reacts very well to its terroir – it does much
better in a cool climate, which you’ve got in Ontario.
A cool climate brings out lovely notions of white flowers
and yellow flowers in Chardonnay, and lovely crisp fruit.
Perhaps most importantly, it keeps its precision.

Ontario is making lemony, quite lean, very well-expressed
Chardonnays. Lean to me is a positive. When I use that word
about wine, I’m not talking about green or under-ripe wine.
When it’s negative it goes green. On the other hand, I don’t like
blowsy, inarticulate wine. A wine without acidity is a wine
without point, in my view. To me, lean is always a positive in
wine, because it means precision.

Chardonnay’s personality comes from the place it’s grown.
Chardonnay in my view is not a varietal wine, it’s a terroir wine.
People plant Chardonnay because it reacts according to
where it’s grown. At the same time, the Chardonnay grape has
an inherent acidity, which
lends itself to structure and
longevity. I like structure
and verticality in wines, and for
that, the acidity has to balance
the fruit. So much of what we
enjoy about wine – complexity,
longevity – is about balance.
Chardonnay
in my view is
not a varietal
wine, it’s a
terroir wine.
Wines are so individual and so
different depending on where
they’re grown. No wine region can successfully emulate
another, and nor should it try. The goal should be to express
one’s own terroir – one’s own individuality.

here are some really lovely wines in Ontario, and that’s
not an accident. You either have terroir or you don’t. The
regions of Ontario have a “there there,” that is, a sense
of identity tied to the place the wine is grown.
What intrigued me about Ontario
Pinot was that the better examples
had minerality to them – and that
is the hardest thing to get in wine.
Burgundy has it; you occasionally
see it in New Zealand; in California
you rarely see it, but when you do
it’s very impressive; and Oregon is
all over the map – some have it,
most don’t. In Ontario you have the
ability to get minerality, allied
with the acidity to make the wines
refreshing, plus get phenolic
ripeness. It’s the Goldilocks factor. What I call the razor’s edge.
The wines have energy, they have tension – they are alive in
your mouth.

The hardest thing for New World winemakers is to accept what
their vineyard has to say. If you have the perspective that
Pinot Noir is the messenger, and not the message, then it’s not
a varietal wine. You are using Pinot Noir to express something
in the soil that can’t be expressed otherwise. The challenge is
to find a voice that speaks uniquely of your specific vineyard
in Beamsville Bench or Prince Edward County. The exciting
thing about growing Pinot in Ontario right now is the sense of
discovery. People are figuring out what their vineyards have
to say. For someone who’s passionate about making wine,
that’s extremely exciting.

Veneto. Valpantena’s Torre del Falasco makes a
great introduction to Ripasso – but really, at this

miss this one. Look for dark cherry fruit framed
by silky tannins, milk chocolate and baking
spices. A natural with meaty pasta, grilled beef or
flavourful cheeses.

Ebro. … It offers an intriguing bouquet of dark
plum, black brambly fruit, strawberry jam and
fennel that is very controlled and well-defined. The
palate is soft and supple on the entry. It is understated, crisp, focused with light tensile tannins and
a linear finish of red currant and raspberry fruit.
This is very backward, yet it is very taut and fresh
and should age with style. Drink 2014-2020. Score:
