A NEW MEXICO PERSPECTIVE
Super Bowl XLII Chili Championship
Volume 21 Issue 4
Maritime Republic of Eastport
Saturday night in Annapolis is always party time, but things get jacked up to new heights
of debauchery when the Maritime Republic of Eastport is involved. This year the microrepublic invited chili cooks from the Mason Dixon Pod to help them entertain and feed an
appreciative crowd at their Mardi Gras themed Ambassadors Ball at the Annapolis
Democratic Club.
If you happen to be a New Mexico Chile cook, the CASI world can be fast paced and more
than a little daunting. Bordered on the right by Texas and on the left by Arizona we often
suffer from what I will term “chili dementia” derived from constantly turning our head one
way or the other and then traveling in the direction our head last turned. Such was the case
for me this month. For reasons only the leprechauns can explain, I wound up in Glendale,
Arizona.
Way back in October, Mr. “Ricky Ticky” Thomas walked up to me, asked for a cold beverage,
and then asked if I could help him put together a chile cooking team for Super Bowl XLII.
I didn’t take the question seriously at the time but I told him I’d do what I could. While we
stood there enjoying our beverages, Ms. Eve “The Diamond” DuMond walked up and
joined in the conversation. As it turned out, she too had heard of this competition when
she attended the GP Meeting in September. Yup, she wanted to “play” as well. So we stood
around some more enjoying our beverages when Mrs. Karen “The Tasker” Thomas came
along and told us that the teams could be no larger than four. Alas, a team was formed. This
poor old New Mexico cook was “trapped”. Being that this was early in October, we decided
that we would cook Hatch green chile (green chili was in season) because we figured that
it would be something that no other team would think of and it would be different (some

If you have a cookoff coming up in the month of June
your cookoff information must be in the hands of the
CASI Upcomings Director by April 15th to meet the
30 day cookoff advertising requirement.
For three of the past four years the MRE has welcomed the addition of the CASI sanctioned
Heat by the Harbor Chili Cook Off to their annual Tug of War event against arch-enemy
Annapolis, or Westport, as East Porta Ricans prefer to call it.
To show appreciation for their continuing support and friendship, 8 Mason Dixon Pod cooks
whipped up huge batches of traditional Texas chili, Chile Verde, and several kitchen sink
freestyle chili along with fresh baked cornbread, cheese, fritos, chips and salsa and other
fixings to help the group celebrate their tenth year of community service with an emphasis
on fun.
Good times and good chili flowed, along with live zydeco music and a variety of refreshing
adult beverages, into the wee small hours.

Communications – they’re working! During the past
months I’ve been getting change of address notices and
have been notified of changes in cookoff referees. Keep
up the good work.
Here’s a summary of the CASI Scholarship Program this
year. I thought you might find the variety of applicants
and their goals to be interesting.
We received 162 applications. They came from all over
the United States: Maine, Maryland, North Carolina,
Florida, Alabama, Texas, Oklahoma, Arizona, Colorado,
Alaska, and more. Jim Tomlin, Ben Berry, and James
Espinoza deserve special credit for their efforts promoting
the Scholarship Program. At least 25% of the total applications were attributed to
these three gentlemen. Congratulations to them!
The scholarship applicants expressed desires to pursue a wide variety of fields,
ranging from technical schools to two-year programs to four-year degrees and
beyond. A small sampling of their study plans would include cosmetology, law
enforcement, biology, nursing, animal science, medical school, diesel mechanics
school, history, computers, international affairs, engineering, dental hygiene, music,
business, literature, education, broadcast journalism, and many more.
The task of picking and ranking the top candidates is very difficult. There are so many
deserving students based on achievement and need. The essays included with the
completed applications reveal what great people these young folks are. They also
show the need for scholarship help and how valuable a CASI scholarship would be
to them. The transcripts reveal what great students these folks are. Most applicants
are at or very near the top of their class.
Now, it’s also necessary that I communicate with you.
Usually, this comes in the form of a postcard informing
you that you have qualified for TICC. Most cooks really
like getting these postcards. However, if I don’t have
your mailing address, the USPS has a hard time getting
these to you and usually sends them back to me. There are many parts of our country where
home mail delivery is not available, so people must have PO boxes. I realize our forms all say
“Address.” Please understand this to mean “Mailing Address.” I don’t need to know your
street address, unless you’re inviting me over for a couple of beers.
The Referees get another pat on the back; this is the third month in a row with no delinquent
cookoff paperwork. We are now getting into the warmer weather and more cookoffs. Let’s
keep this streak going.

I encourage all of you to promote this program in your communities. Your efforts
will generate a lot of goodwill toward you, your Pod, and CASI.
Now, let’s get back to the business of cooking and having fun.

CASI INSURANCE
Please make note: the contact for obtaining insurance certificates for

Alan Dean’s Chili Hot News is now available on the
web at:
www.chotnews.blogspot.com/
This newsletter is updated almost daily with the latest
news about CASI, cookoffs, cooks, and much more.
If you are holding a cookoff, please make sure the venue has their own
insurance before having them listed as an additional insured on the CASI
certificate for that event. Holding a cookoff at a location that does not have
insurance, and basically sharing the CASI insurance for their liability, could
have catastrophic consequences to our insurance and ability to continue
holding cookoffs.
The purpose of CASI insurance is to protect CASI and is not to protect
those too foolish to protect themselves.

The 32nd Texas Open Chili
Championship
Greetings, everyone. It seems that there is some consternation in the schedule for the chili
year.
The 2008-2009 Texas Open was scheduled to open the chili year with an automatic qualifier
the first weekend in October of this year. However, even after checking multiple listings from
the Trails, GGG, and other sources, it seems that the schedule can’t squeeze in an automatic
qualifier that weekend so the Texas Open has been cancelled for that date.
The 32nd Texas Open will be held in May of 2009. The Texas Open planning is well underway
and we are looking forward to seeing everyone in May. The registration form for 2008 is
in this issue of the Trails.
The Texas Open has been moved this year to a new location, however because of the new
location, there are some parking restrictions. If you are planning on camping with someone
this year, you need to plan on traveling together so you arrive at the same time.
There can be no saving spaces. There are no hookups. Motorhomes can begin arriving
on Friday morning. Keep a lookout for more updates as the time approaches. Stay safe on
the chili trail. See you all soon.

Bess’ Best
Hello once again to all from Truman Corners in the northeast
part of beautiful Lamar, Missouri.
I hope all of you are like Harry and me, just counting the days
till the November election. Because regardless of who is elected
President, all kinds of changes are going to be made for the
good. Seems like something I have heard before; whatever, I
will be glad to see it all over with.
I don’t know what kind of changes they plan to make but to start with the price of gasoline
and groceries would be good. Harry and I have had to come out of retirement (partially) to
try and help make ends meet, and I know we are not in this boat alone.
On a lighter note, there will be a 2008 Missouri State Chili Cookoff and it will be held in Lamar,
Missouri. Now how many cooks we will have show up is the $64,000 question. I have
pondered raising the entry fee but it will remain the same as always - $20.00. It will be held
on the parking lot and grassy area across from St. Mary’s Catholic Church at 17th and Mill
Street in Lamar.
Between the wind, ice storms and, yes, a couple of tornadoes, it looks like good weather
is slowly coming back and with that the yearly April City-Wide Garage Sale. I am not going
to get cut short this year. Harry and I have already been sorting thru those valuable items
that we have held onto for so long thinking that we don’t want to get rid of something
because we just might need it.
Since we’ve been having some slow days at the shop, I got out the chili things out and
checked them out. We went thru and rebuilt two of our four Coleman Stoves. Took the
burners apart and cleaned them, checked the regulators for pressure, and installed all new
O rings. Harry has been working with a new paint gun and air brush and plans are for
repainting them if work stays slow at the shop. And if they don’t get painted, we can still
cook on them.
I have mentioned before about our classic cars, one being a 1965 Chevrolet Corvair. Plans
have been made to move this project forward as funds allow. With the price of gasoline,
Harry says we can drive this car two to three weeks on a tank of gasoline.
Another thing is that we are going to have to change our television sets around so that after
the first of next year, we will be able to watch television. If you apply now, you can get a
rebate for the converter box. They said on the news last night that they have 8 million
requests and it could be 6 to 8 months to get the rebate and box.
I guess if you have a lot of coins, just go buy a new television that is HD-equipped. But if
you do go to buy one, PLEASE check everything out! JR, our son, just went the HD route
and he is having trouble receiving the three local stations, especially in rainy weather. The
farthest station from his house is only 34 air miles. He contacted the three stations and all
they could tell him was they knew they had trouble. As of now they couldn’t give him an
answer as to how soon and if reception would improve with HD.
I don’t want to get on a soap box today, cause I got to go back to the shop and help Harry
put brakes on a 318 John Deere (told you we came out of retirement) and if he is listening
to his Oldies of the 50’s music, I’m going to be the one to do the brake job.
Well, the Dr. Pepper clock says 2:00, but it is really 3:00; Harry didn’t get it set for Daylights
Saving Time, so that means we’ve got to get this in the mail.

New Mexico continued from Page 1
New Mexico continued
tasters called it “white chile”). We wound up calling ourselves the New Mexico Chili Team.
So there we were, two cooks from Arizona, one cook from Texas, and yours truly trying to
avoid the “chores” associated with such a venture all the while being known as the New
Mexico Chile Team. What with Ricky Ticky in Alto, NM, the Tasker in Tucson, AZ, the
Diamond in El Paso, TX, the coordination was exciting to say the least but, as a team, we
were able to produce 20+ gallons of green chili and another 12+ gallons of red for Super Bowl
Sunday.
complicate things the Colorado Chili Team didn’t show up, so it was decided that the New
Mexico Chili Team would be split in half!!!! Yup, Ricky Ticky and I represented the Colorado
team and we were on the other side of the facility! But all’s well that ends well! When all
the votes were tallied, the Diamond and the Tasker had scored 5th place outtalk 22 teams.
We went back to camp with the 5th place trophy and a check for $1000!!!!
We arrived in Glendale on the Friday preceding the big game and the party was already ongoing. Boy-oh-boy, can those Arizona cooks throw a party. All the AZ “Big Dogs” were
there, e.g., the Coultas’, the Banas’, the Klugs’, the Dunns’, Carson Smith, the Regans’, the
Fihtls’, the Ravens’, the Red Hot Chili Chicks, etc. I guess the only “Big Dog” missing was
his Highness Mr. Ben Berry (I’ll speak to him about this). Nevertheless, the first order of
business was defrosting frozen chile and clearing the security force. You got it! We all had
to have photo IDs for EACH day. It took us awhile to get our badges but once accomplished,
we returned to the chile cooking camp and continued to party. We didn’t get much sleep
Friday night what with all the helicopters around and all the other security forces out in mass.
So what do I remember most about Friday evening? Being scolded for not participating in
more Arizona CCOs (I sometimes get this from TX cooks too)!
On Saturday morning we traveled by special shuttle bus to the VIP Tailgate area to begin
our contest. Folks, it was absolutely amazing to see how the NFL had transformed your
standard “really big” parking lot into a party oasis! Acres and acres of parking lot were filled
in with decorative wood chip, artificial plants, water features, all side walks and the concrete
were covered with brand spanking new carpet, pavilions the size of foot ball fields were
erected as gourmet eating establishments (complete with fancy table cloths), concert stages
existed, and there were even facilities for massages. It was absolutely amazing! Pictures
are forthcoming. How much did all this cost the NFL? I’ll probably never know, but a bottle
of water was worth $4.00, a glass of draft beer cost $8.00 (much to my chagrin), and a T-shirt
sold for around $30.00 (nope, I don’t have one). Anyway, there were around 67 cooks on
Saturday all trying to do their best but for one. Me! I was involved with the high finance
associated with the sale of adult beverages. Nevertheless, yours truly was able to sneak
away with the second place trophy and a genuine NFL, Super Bowl XLII commemorative
football (and I have no idea what to do with this thing). I’ve got to thank Mrs. Karen “the
Tasker” Thomas for these points. She let my chile burn just long enough (while I was off
negotiating a cold beverage [several]) before she shut off the stove!!!!!
If we thought the helicopter and police were busy on Friday night, Saturday night was some
noisier (have you ever seen the movie “Armageddon?). I’m pretty darn sure that every law
enforcement helicopter available in a four State region was patrolling overhead and every
police siren was blaring. Yup, sound sleep was hard to find Saturday night. Making things
somewhat more challenging was the fact that we were expected to be alive and awake in time
to pick up our security badges for the day – at 5:30 in the stinking morning! Now as you
know, I’m an early riser and most cooks are (after all, I’m not sure we slept anyway). It was
amazing to see all the activity at 4:30 a.m. as all the cooks walked the half-mile to retrieve
our day’s badge. It was equally amazing to realize how quite it was at 6:15 a.m. because every
one went back to bed!
When we arrived on-site Sunday morning, we had to pass the security check. It was even
more severe Sunday than it had been on Saturday. Yup, the full deal complete with little
buckets for you metal objects, metal detectors, and metal detecting wands. Three of us made
it through with no problem. Then there was the “Diamond”. The first thing that had to be
thrown away was her camera case. She could take the camera in but not the case. This was
rather strange to me because the same security officer let me keep my pocket knife. When
she stepped through the metal detector gateway, the alarm went off and she was pulled to
the side. Keep in mind I was right behind her and I passed through with no alarm. The
security folks were doing the “wand deal” with the Diamond and the alarm kept going off.
So what was the deal? Well, by her own admission, it was her jean zipper (or something
in that area of her body) that kept setting the alarm off!!! To me this was rather odd! I had
a zipper on my jeans and I did not remove my belt and it has a metal buckle. I didn’t set off
any alarms? Kind of makes one wonder, huh?
So was it all “play” and no work? Hell no! We had to prepare the People’s Choice chile
in 22.5 quart roster ovens (which were provided and given to us). The AZ Health Department
was right there! The chile had to reach 165 degrees before we could serve. Folks do you
have any idea how long it takes 30+ gallons of chile to defrost and how long it then takes
to heat it up to 165 degrees? A darn long time! Just so you will know, I started defrosting
the chile on Thursday morning and this was Sunday! It was still partially frozen. To
So I’ve written the foregoing so I could tell you this.
I’m just a “poor ol’ chili cook” from New Mexico. I’ve
attended many GP Meetings, been to 17 “Big Dances”,
run for a CASI Directorship while serving as a delegate
for an Arizona Pod, AND (for Heaven’s Sake), cooked
at the very first Rankin and Synder, TX CCOs. From
a New Mexico Perspective, the bond amongst CASI
chile cooks is strong even across State lines. We are
friends and as team members we work extremely well
and effectively together. We should be proud of
ourselves. I know I am!!!! I know you are too!!!!

Nobody Told Me
It seems that chili cookoffs are held in some of the most obscure
places possible. If you don’t believe that, may I submit Terlingua
for your consideration? Then, with a look at the Trails, I find a
cookoff in Wittmann, AZ. I can find Wittmann on the map but
the cookoff will be held at the Western Trails Ranch. Wittmann
is about 45 miles north of Phoenix, and I’ve been lost in Phoenix,
before.
But where is the Western Trails Ranch? So I tried the World Wide
Web, and, lo and behold, I found it! The web page even has a map.
I can probably find this one. The ad in the Trails even has a phone number and an e-mail address.
Here’s a cookoff in Cheraw, SC. The announcement says to “follow signs.” Oh, well, if I can find
Terlingua, I can find anyplace. There is a phone and e-mail for more information.
Now, I have been known to get lost while mowing the front lawn. No, I won’t stop and ask directions.
I don’t want to stop and read the map. I make a lot of wrong turns, but that’s because the sky is
cloudy and I can’t tell which way is north. I miss a turn now and then, too. Doesn’t everybody know
it’s bad luck to backtrack? So, how do I find my way to anywhere?
I’ve been a big fan of maps for most of my life. I’ve got a very large collection of maps from a lot
of places that I’ll never see again, but, if I do, I’ll have a map. Unfortunately, if this location wasn’t
there in 1972, it won’t show up on my old maps.
But in this age of technology, I do have a computer. I also have mapmaking software and Mapquest,
and Googlemaps and several other ways to get allegedly up-to-date maps of just about anywhere
on the face of the earth. Except, they still don’t know where Terlingua, or more specifically, Rancho
CASI de los Chisos, can be found. They can get me close, but not exactly there.
Not only do these maps show me where my destination might be, but they tell me what routes to
take, how long I’ll be on the road, when and where to stop for the night, the location of road
construction, and where all of the tourist attractions can be found, including the world’s largest ball
of twine in Cawker, Kansas. But they can’t find Krazy Flats!
Time passes and technology moves ahead. Now, I’ve got a device called a “GPS Receiver.” This
is my second such device. My first one was quite primitive, by comparison. My second one is
primitive relative to the ones that have been sold in the year since I bought mine. I don’t really know
how to use all of it, but I get by.
This machine talks to me. It’s not like the voices that “son of Sam” used to hear, and it’s not like
that still little voice in the back of my mind that says “Don’t do that.” Instead, it says things like
“In four hundred feet, turn right.” Then, it say’s “in 50 feet, turn right.” Its voice is always cool
and unperturbed and so pleasant. It’s a female voice, and I’ve named her “Sheila.” I’ve never known
a real, live Sheila, but this thing sounds like a Sheila would sound if there was a real Sheila. Except
that she never raises her voice, never calls me a name, and never pouts.
And she is really smart. She knows almost everything. She can probably find Snakenavel, Idaho,
and tell me how to get there. She can tell when I will arrive. She knows when the sun goes down,
and when daylight savings time starts. She tells me how fast I’m driving, but she doesn’t tell me when
the Highway Patrol is behind me. When I get started again, she sweetly says “Continue driving for
74 miles.” If I miss a turn, she simply says “Recalculating.’ If I miss several turns, she says
“Recalculating,” but I think I can detect some disgust in her voice. If I miss enough turns, she finally
says “As soon as possible, make a U-turn.”
I think she should develop an attitude. Something like “You men are all alike. You just won’t take
instructions!” Or maybe tell me to go to …. No live woman could hold her temper like Sheila.
You don’t want to know what Sheila looks like in my mind. I don’t want my wife to know what
Sheila looks like in my mind. She has never charged me $4,300, and she’s never got my name on the
evening news. I think she likes me.
But she still can’t find Krazy Flats.

An “Open” Invitation to the
25th Annual State of Colorado
CASI Chili Championship
We would like to invite all of you to attend our 25th Annual State Chili Championship! Who
would have thought that when this started in downtown Denver in the early 1980s that we
would be doing this 25 years later? It has been an amazing “ride”.
We were “started” by a bunch of dedicated Texans (led by Dr. Ray) and the United Way
of Denver who were convinced that an annual chili cookoff in Colorado and a Pod based
in the Denver area made sense. Many of the cooks have changed, the location of the event
has changed, and the date of the event has changed BUT the event is still happening and
it’s “better than ever”.
We would like to extend a special invitation to those of you who cooked with us ”in the early
years”. You know who you are - you remember cooking on the 16th Mall and the on Auraria
College’s “track”. Folks such as Don and Sandy, Mel and Diane, Dr. Ray, Lyman and Linda,
Tom, Bill and Cheryl and many, many more!
We cook in a park - on grass - on a site surrounded by trees under the beautiful blue skies
of Colorado. The park is surrounded by small quaint shops and bars/restaurants and is
within one block of the Lake. So if your schedule allows it and you would like to experience
one of those truly special chili events that is held in a beautiful location, please consider
the 25th Annual State of Colorado Chili Championship in Grand Lake, Colorado on June 21,
2008.
For full information, please contact John Montgomery at 1670 Broadway, Suite 3000,
Denver, Colorado 80202. You can also contact John through his e-mail address:
[email protected]. The Pod’s website is www.coloradochilipod.org.
The sharing of marriage...
The old man placed an order for one hamburger, french fries and a drink.
He unwrapped the plain hamburger and carefully cut it in half, placing one half in front of
his wife.
He then carefully counted out the french fries, dividing them into two piles and neatly placed
one pile in front of his wife.
He took a sip of the drink, his wife took a sip and then set the cup down between them . As
he began to eat his few bites of hamburger, the people around them were looking over and
whispering.
Obviously they were thinking, ‘That poor old couple - all they can afford is one meal for
the two of them.’
As the man began to eat his fries a young man came to the table and politely offered to buy
another meal for the old couple. The old man said, they were just fine - they were used to
sharing everything.
People closer to the table noticed the little old lady hadn’t eaten a bite. She sat there
watching her husband eat and occasionally taking turns sipping the drink.
Again, the young man came over and begged them to let him buy another meal for them.
This time the old woman said ‘No, thank you, we are used to sharing everything.’
Finally, as the old man finished and was wiping his face neatly with the napkin, the young
man again came over to the little old lady who had yet to eat a single bite of food and asked
‘What is it you are waiting for?’
She answered
‘THE TEETH.’

Tales from the
Ranch
Orale CASI, que pasa y how’s everybody? Hope all
is well with everyone. Not much to report here on the
ranch; things are so quiet, I can hear a leak in one of the
tires in the barn.
The chili year looks to be doing okay for now despite
the economy and the gas crunch. Things will get better
though. We’ve been through this before and somehow
made it. I’m ready to get stimulated with this stimulus package we’re supposed to get. I figure I
will get about three tanks of gas out of the deal.
Barb and I took some time off from the chili trail, but we did go to where chili peppers are grown.
Actually, we spent 25 days on the road driving through Mexico. We like to drive because if you
fly, you miss out on too much scenery and believe me, there is some beautiful scenery to behold.
Once you get close to the Sierra Madre, a whole new world opens up. Avocado plantations for miles,
pineapple trees, mango trees, orange and grapefruit trees, coconuts, peppers of every kind, corn, limes
- you name it, as far as the eyes can see. I didn’t see any apple trees though and when you get into
Jalisco, you see miles and miles of agave plants. The trip was long but it was fun. It was more of
an adventure and education than anything else. We had our moments after a few wrong turns and
some missing signs, but it was okay once we found the right roads.
For those of you wanting to drive and visit Mexico but are reluctant because of the language barrier
and the television coverage of the bad things that happen in Mexico, well don’t be. Your English,
or whatever language you wish to speak, will work fine. Whenever you get to your destination in
Mexico, you will find that you are not the only American visiting the country. Mexican people have
been catering to the American tourists since long before my generation. As for the crime coverage
in Mexico, I see the same here in the U.S.
Don’t let the Federales scare you at the checkpoints with their machine guns. Our swat teams over
here have the same weapons but they are in the car so you can’t see them. The Federales are just
making sure the main roads are safe to travel and are trying to keep the criminals off the roads. They
are just doing their job.
When I pass these officers on the road, I, for one, am glad it’s them instead of someone else not so
law abiding. Don’t let those old stories that you heard in years past get to you. Granted, some are
very true, but Mexico has come a long way to try to make the environment better for American and
foreign tourists.
Let me offer you some tips on traveling in Mexico. I ain’t no spert on the subject, but I’ve been on
those roads several times, so if you have a Mexican moment give a listen.
First off, don’t drive at night. Steel is a high commodity so there aren’t any cattle guards or fences,
therefore the cattle run loose and you cannot see them at night.
As soon as you come to a fairly good sized town, stop at a big grocery store such as Super Wal-Mart,
Commercial Mexicana, Costco, or Sorianna and buy you the latest Mexico Road Atlas. It is called
Guia-Roji, Gran Atlas de Carreteras. It costs $25.00 U.S. but it is well worth it. The old maps do
not have the new roads, and there are a lot of new roads and more being built. Stay on the main roads
if you can. For the most part, the roads are good. The 2-lane and the 4-lane roads are very good.
If you come to a fork in the road and there are two signs and one says ‘libre’ and one says ‘cuota’,
take the cuota; that means 4-lane and you have to pay a toll. Libre means free and you get to visit
every little out of the way town in Mexico and some are not on the map, not even the new maps.
It is very time consuming. Every town you go through has frequent school zones and you also have
‘topes’ everywhere. Topes are speed bumps and don’t try to speed through one; you’ll think you
ran over a cow.
Another good tip is green signs. Big green signs are good. They tell you where you are and where
you’re going. If you travel 30 or 40 miles and haven’t seen a green sign, chances are you have taken
the wrong road. You might want to stop at the first Pemex Station and get directions before you get
deeper in the jungle. The jungles are very scary at night, and believe me, you don’t want to know
what’s out there at night.
The main roads are patrolled by what are called guardian angels. These are guys in green utility trucks
that are paid by the state and the government to look for stranded motorists. If you happen to break
down, just lift up your hood and wait. They come by every couple of hours. These guys are trained
mechanics and are equipped with just about everything you might need and the service is free. You
can tip the men and I’m sure they would appreciate it, but if you are stranded in Mexico, a tip would

be no problem. Yea, buddy, remember the journey of a thousand miles begins with a broken fan belt
and a leaking radiator.
We checked out after a week then headed to Compostela in the state of Nayarit, then to Tequila, then
to Guadalajara. We were now back in the state of Jalisco. Guadalajara is the capital of Jalisco and
has a population of 6 million. It also has a lot of old history. Mariachi music was born there. It is
home to the largest mercado in Mexico, boasting 600 vendors under one roof.
When driving through a fairly good sized town, you will enter on the main road. You will notice there
are side roads on both sides of the main road. These are called laterals. Before you exit on a lateral,
be sure there is a sign saying that you can. This might save you a ticket. I know I’ve been there; it
ain’t funny. Also, you cannot make a left turn off of a main road. You have to be on a lateral in order
to do so and the lateral has to have a left turn arrow. This will also get you a quick ticket. These
apply all over Mexico, not just in the main towns. If you’ve gotten away with these violations in
the past, you’re lucky.
If you are planning a trip into Mexico, call me. I’ll be glad to share my experiences with you. I’ve
got some good stories to tell that I can’t mention in this article.
Our trip began in Brownsville, Texas, where we crossed the border into Matamoros in the state of
Tamualipas. We did our paperwork on the truck the day before in Progresso, about 30 miles up from
Matamoros; reason being is that the aduana (customs) in Progresso does not have the traffic that
Matamoros does. This will save you about two hours. From Matamoros we went to San Fernando,
to Cuidad Victoria, to San Luis Potosi, where we crossed into the state of San Luis Potosi and drove
to San Miguel de Allende in the state of Guanajuato. This is where we spent the night.
Our motel was downtown in an area called El Jardin (the garden). This is where artists from all over
the U.S. and Europe come to live and learn how to draw paintings. It was kind of interesting watching
everybody hanging out and painting.
The next morning, we gassed up and drove to Celaya, then on to Salvatierra, to Acambaro, then to
Morelia in the state of Michoacan. We spent the night there. Now San Miguel is out of the way
a few miles but I went there to visit a friend who lives there. Otherwise, I would have driven from
San Luis to Queretaro, then to Celaya. After Morelia, we went to Patzcuaro, then to Uruapan, to
Nuevo Italia, to Lazaro Cardenas in the state of Guerrero, and on to Ixtapa, Zihuatanejo, our final
destination. Yo, Rita, three days and 820 miles later, we finally got there.
Ixtapa is a resort town consisting mostly of American investors. It is not an old town. According
to the history, it was a computer model before it was a town and a few investors got together and
built it to what it is now. It is probably one of the most beautiful towns you will find in Mexico,
located right on the beach overlooking the Pacific Ocean.
Barb and I were guests of Bruce and Sharon Pinnell from Helotes, Texas. They own the wonderful
four bedroom condo that we stayed in, and I do mean wonderful! We got up in the mornings and
drank our coffee where the patio and dining area overlook the ocean. It was beautiful sunrises and
sunsets. The resort is called Bay View Grand. The complex is privately owned so we didn’t have
to worry about people from the street bothering us. If you’re not an owner, you don’t get past the
front gates. In our case, we just happened to know the owner.
Barb and I spent 6 days there hanging out by the pool or walking up and down the beach. At night,
we went across the street where you will find more than enough restaurants to please your palate.
If you ever want to visit this part of the world, just call Bruce and you can make arrangements. It
will be a trip that you will never forget.
We left Ixtapa and headed north. Our first stop was another resort town on the ocean called
Manzanillo in the state of Colima. We spent two days there in a very nice resort that I found on the
internet. It was built on a hillside overlooking the Pacific. We went shopping, ate the local cuisine,
and just hung out by the pool.
Just an FYI - except for Ixtapa, all the places where we stayed were found on the internet while in
Mexico. I took my laptop with me and about two days before we would leave, I would get on the
net and find us another place to stay. You would be surprised how much you can save by doing this
versus doing it before you leave the states. First of all, we did not know how long we would be staying
at these places. We were just playing it by ear. Once we figured out how long we might need, then
I would whip out the lap top and start surfing. Worked out great and I guess being retired kind of
helps out also.
We just went across the street, hopped on the chicken express, paid the driver 50 cents (Americanos)
and went to the market. Yea, we did. Beats all I have ever seen. There ain’t a calculator big enough
to count the sombreros that were on sale there at the Mercado, not to mention the jewelry and pottery.
Like I said, over 600 vendors under one roof and I think all 6 million people were shopping that day.
I maxed out my comfort zone the first 30 minutes.
There are tour companies that will arrange to pick you up at the motel and take you on whatever
tour you desire, so we did that. One of the tours that we signed up for was to a town called Tequila
about 35 miles, or 350 kilometros, and where Cuervo Gold has their distilleries. This was an all day
tour. We had a very knowledgeable tour guide that explained the history of tequila and how it was
made. They also make sotol there which is far different from the bottles that my fellow rancher and
trusty companion, Mr. Dave Boone, and I used to get in Baja Lajitas. While at the distillery, I did
purchase a bottle of their family reserve for $84.00 U.S. I was told that you cannot get this in the
states, so I got one. As soon as I see one at Pinkies, I’ll take the hook out of my mouth and go fishing
with it.
Another tour we took was to the town of Chapala, home to the largest freshwater lake in Mexico.
It is 43 miles long and 12 miles wide. From there, the bus took us to the town of Ajiji. This town
is made up of local people and also has a settlement of American and German visitors who decided
to call Ajiji home a few years ago. It is a very good tourist stop if you are in the area and has good
shopping and the food is great.
Anyway, we did one other tour that week to the town of Tlaguepaque, Indian for ‘=p,<?::”_@#%.
This town had another Mercado but not like the one before. By now, Barb and I are mercado’ed out;
we’re maxed out with the shopping. Even the tour guide was about to get on my last nerve. This
was the end of week three and it was time to go home.
The next morning we checked out of the nice motel, that was beginning not to look so nice, and headed
home. We drove as far as San Luis Potosi and spent the night. The next day we got up early and
drove non-stop to South Padre Island. We went through customs looking like the Beverly Hillbillies.
I don’t know where we accumulated all this stuff but the customs people either felt sorry for us or
they didn’t want to bother unloading 3 1/2 weeks worth of souvenirs. We checked into La Quinta
and headed for the nearest Whataburger. God, the burger with cheese tasted good and the fries were
18 karat gold.
Well, folks, this ended our journey. We were glad to get back to Paint Rock. Our cats even missed
us. Hope to see you at the next cookoff. We’re ready.
AND NOW, WORDS OF WISDOM:
1. Life is simpler when you plow around the stump.
2. The best sermons are lived, not preached.
3. You cannot unsay a cruel word.
Louis and Barbara
Mattheisen Ranch
Paint Rock, Texas
After two days of fun in the sun, we loaded up and headed north again. This time we drove nonstop to Puerto Vallarta. I’m sure you all have heard of this place. We stayed there for a week at a
resort called El Embarcadero Pacifico on the Marina. This is where the Carnival and all the other cruise
lines do liberty. Embarcadero was nice but nothing like Ixtapa. The food was good. We went allinclusive so if you don’t get enough to eat, it’s your own fault. While there, we took the local chicken
express downtown and went shopping at the old Mercado. It was a good little trip. We got away
from the tourist hoopla at the hotel for a while.

See how she runs – or where is she now?
Jackie Brown once said that “If you see Johnye
sitting down, take notice – it doesn’t happen
often.” She was joking only a little. I have been
blessed with abundant energy and an overactive willingness to take on challenges, and
those gifts seem to be serving me well lately.
Many of you know I have participated in two
Breast Cancer 3-Day, 60-Mile Walks and will
participate again this year as a walker in San
Francisco and as a crew member in Dallas. I have
been involved with the Race for the Cure since
the early 1990s in El Paso and do several charity
5K runs a year. I even won my age division at a
small 5K run in San Antonio in October! Some
of you remember I was a Olympic torch-bearer
for in Austin a few years ago (what an honor that
was!).
My most recent challenge was participating in
the Austin Marathon. Before you begin questioning my sanity, be assured that I trained for the marathon and was diligent in my efforts
to build the strength necessary for the 26.2 mile run. I am by no means a natural or “pretty”
runner (think fullback).
The marathon was amazing! At the start, there were approximately 12,000 runners –
marathoners and half-marathoners – running down Congress Avenue. It took seven minutes
for me (toward the back of the starting area) to cross the start line. My time was a respectable
4:46 and I couldn’t be more thrilled. It was a spectacular event.
Otherwise, I am working fulltime plus. I have in progress the next update of the CASI Book
of Lists, Rules Evolution and Bylaws Evolution, so watch for those soon.
What’s next?
My best to you all.

Janita presents Guy W. Bates, 1st place winner, with the 1st Bronze Panther Trophy
We had a great time and a great cookoff!!!!! Thanks to everyone that made it happen. Some
of you do not know that Mother went into the hospital on Wed. And once again as you all
know the chili “people” came through in flying colors. Rick and Karen Thomas went around
and picked up checks when I could not go. They also pulled the mule and stuff to Comstock
for me. Don and Susie Weber drove my Motohome out and set it up. Black Gold and everyone
fell in and finished the supper and got everything ready for running the cookoff. I just cannot
tell you how much everyone did and name them all. But they know who they are and
hopefully how much I appreciate it. Kathy Killingsworth came and stayed with Mother so
I could go to Comstock. I got out there about 6:00 pm. Mother got out of the hospital Sat.
evening about 5:30 pm. My three kids came through with flying colors as well. You know
how Black Gold cooks those wonderful breakfasts? They did it again!! And Lorina Harris
cooked a wonderful Sunday breakfast for everyone. My son, Randel, cooked a whole hog
on site for Sat. night supper. So once again a feeding frenzy went on for two days and nights.
Guy W. Bates won the coveted first Lloyd Goldwire Bronze Panther Trophy on Saturday.
He made the trophies for Sunday with Larry George winning first place and qualifing. It looks
like we are going to bring in over $12,000.00 for the scholarship fund when it is all over.
$2,700.00 for the auction is included in the $12,000. Sunday cookoff will probably bring about
$250.00 to the Comstock School Library. 31 cooks on Sat. and 19 on Sun.
We had a special honor with Richard’s cousin Berry Hinds and his wife Peggy coming all
the way from Columbus, Mississippi to be with us. They say they will be back next year.
Berry also went to school in Comstock.
I know everyone did a lot more that I do not even know about. I cannot THANK EVERYONE
enough for all your participation, help, generosity, and consideration. Yes, chili folks are
just plain good folks. Mother is doing much better and actually said she felt good. Until the
next time. Love, Janita and CD ps CD thanks the Webers and Thomas’s for taking care of
him also. He loves his chili friends.

Free Quarter Page Ad
to CASI Pods, State, Regional and
International Opens
As a CASI Pod you are required to put on a pod cookoff
once a year. To help you advertise your pod cookoff we allow
each pod to place one quarter page ad in the Terlingua Trails,
each year, free of charge. This ad should run the month before
your cookoff occurs. Should you decide that you need an ad
larger than a quarter page we will simply bill you for the difference
in price. This ad should not be confused with the article
advertising your cookoff in the "Cooking with CASI Calendar"
section in the Terlingua Trails. That article will start to run as soon
as you request your cookoff packet and will run until your
cookoff occurs.
