Each serving will contain 3 corn tortillas Take the tortilla and dip it in hot oil or dip it in the red chile sauce and put on plate. Top this with cheese and onion and more sauce and nmchilijustaddwater sauce put another dipped tortilla on top and repeat this 2 times. Heat in the oven or under the broiler until cheese melts Garnish the plate with the lettuce and tomato. You can serve this with fried Spanish rice, potatoes or pinto beans, To make a casserole, you can layer the above in a baking dish with the lasl layer on top being cheese, Bake for 1520 minutes, until all is warm and melted. Garnish with lettuce and tomato. You can also serve with sour cream, over easy eggs on top or Carne Adovada. Ready to Eat Serves about 6-8 people Carne Adovada Carne Adovada Ingredients 1 Bag of NM Chili Pod Mix 5 lbs pork or chicken 1 dozen flour tortillas Directions Make NM Chili Pod Mix (Follow instructions on packet) Preheat oven to 300 degrees Cut meat into 1” x 3” pieces Put in roasting pan add chili to pork, cover cook In oven for 3 hours covered, Ready to serve Warm up torillas- Make burritos or Serve as main course, Serves 6-8 Red or Green Chili Stew (Caldo) Red Chili Stew (Caldo) Ingredients 1 Bag of NM Chili Powder or Pod Mix 2 lbs meat (beef, pork, chicken) 10 Potatoes (Medium size) 1 small onion 1 tablespoon of cooking oil 6-8 cups of water Directions Cut meat into 1”pieces Fry meat in pan until brewed Add onion (cut in ½ pieces) fry for one minute Add (cut in1” pieces) Add 6 to 8 cups water, Boil until potatoes are soft Add (amount -personal preference) NM Chili Power or Pod (Follow instructions on packet) Ready to serve, 8- 10 servings Red Chili Ribs Ingredients 1 Bag of NM Chili Pod Mix 1 Slab of pork spare ribs Directions Preheat oven 350 degrees (Grease or spray pan with Pam)-Put ribs in roasting pan Add (Prepared) 1 bag of NM Chili Pod Mix (Follow directions on packet-Change Blend only for 1 minute)Pour over ribs- front and back Cook in oven for two hours coveredAfter 1 hour flip ribs over, Gather and brush same chili- from roasting pan front and back on ribs Cook remaining hour left Ready to Serve (3-4 Servings) Red Chili Chicken Wings Ingredients 1 Bag of NM Red Chili Mix Pod or Powder 3 to 4 lbs chicken wings Directions Fry chicken wings in pan until-browned (Optional bake in oven for 1 hour at 350degrees) Add 1 bag of NM Red Chili Pod or Powder (Follow instructions on packet) Simmer on low heat 10 to 15 minutes Ready to serve, 8-10 Servings Posole Ingredients 1 bag NM Red Chili Pod or Powder Mix 1 medium onion-finely chopped 2 tablespoons of cooking oil 2-3 lbs of Pork (Pork neck bones optional)1 teaspoon of dried oregano 1 bag (2 lbs) or 105oz canned hominy Directions Boil Hominy (Follow instructions on bag or can) Fry meat in separate pan until browned-add onion sauté until softAdd meat mix to Hominy add oregano Add NM Red Chili Mix (as much as desired) Ready to Serve, 8-10 servings
