Message
A Report from the Desert
and the Rancho CASI de los Chisos
Diane and I arrived in the Terlingua area in late September
and the first three days we were here, it rained 3 inches. Prior to
this, the area had over 10 inches, give or take, in August and September. We had another 4 tenths
of rain this morning, which I hate to say we don’t need at this time, but Mother Nature does
what she wants. The desert is covered in a green carpet of blooming flowers and many green
plants. This is good. The bad news is the rain has also brought many tall weeds and grass to
the Ranch.
Diane and I, along with Tom & Dorathy Williams, have started cleaning up the cookoff
site, filling in holes, and planting new plants, which add to the over 2,000 plants Tom & Dorathy
already planted throughout the site. The removal of weeds, grass, left over junk, and any other
items that don’t belong will be our chores for the next couple of weeks. The judging, concession,
and pavilion areas will also be cleaned as Mother Nature usually covers these areas with mud
when we have significant rains as in the past couple of months. Who said there is nothing to
do out here; never a dull moment.
I spoke with Jimmy Taylor regarding the site. Our good friend and contractor Dale
Blackstock has offered to put a road grader and tractor on the site to rework, widen, level, and
do general cleanup due to the rain; a couple of days of machine work and labor at no charge to
CASI.
Jim Ezell tells me he has been swamped with last minute vendor requests, which
usually happens just prior to TICC. Jim continues to work with all of our sponsors. All of
the Board is working hard to make this year’s TICC a great success.
As far as the road construction on Highway 170, the contractor is working on a fourmile stretch from the Ghost Town to the entrance of the CASI Ranch. For those of you going
up Peppers Hill, it won’t be quite as difficult a trip this year. They have lowered the hill by
about 8 feet and widened much of the road. Tom and I paid a visit to the State Highway
Department in Alpine and were told that the road construction will be put on hold from the
Sunday before the cookoff to the Sunday after the cookoff, or October 31 to November 8. We
hope the road will be in good shape for TICC week, but only time will tell. I know they will
do what they can in the time they have. If anybody has questions or concerns, please contact
me.
As you know, the water company down here will again be selling water during the
TICC week. Water will be TEN CENTS PER GALLON, not the 5 cents in the packet. That’s
the same amount that was charged last year. The hours this year will be on Tuesday, Wednesday,
and Thursday (November 2-4) from 1:00 p.m. – 5:00 p.m.
Please remember the Christmas gifts for the Terlingua area children. They are so
appreciative of everything they receive.
Diane and I wish all of you who survived the recent storms and floods out east well.
Our sincere condolences to those who have lost loved ones recently. We hope all have a safe
trip to the desert; we look forward to seeing you.

ED Ponderings
Greetings from the chili trail. Susan and I are on the
road cooking chili, and visiting new and old chili friends on the
way toward Terlingua. By the time we get home for a cookoff
in December, we’ll have been gone for close to two months
and attended eleven cookoffs. This is really exciting for us to
have the extended time to visit, and we’re really looking
forward to this trip as we’re planning the next tour for
springtime.
Speaking of Terlingua, the Directors have been working hard for many months to make
TICC better than ever. There are a number of improvements that have been put in place for this
year. We hope you’ll be there to enjoy them.
If you haven’t already volunteered, please consider giving a little of your time to assist
with judging on Friday, helping at the gate, at one of the concessions, or at registration. TICC is
a large event and takes the best efforts of many to run smoothly.
I look forward to seeing many of you in Terlingua, and I hope you’ve all had a
successful start at accumulating points to qualify for next year.

Last month I promised to write briefly about the first Great Peppers Meeting in 1980. And
I will, but first I can’t resist putting in my two cents worth about the Twenty Seventh Annual CASI
Great Peppers Meeting in Austin, Texas in 2006. I know some of you think it is early for us to be
meeting and planning for an event that is not until two years hence. But that is not the way we do
things around here. Just because we talk a little slow does not mean we don’t react fast. Slow talking
was invented to fool our Yankees brethren into thinking they were smarter than us.
The second meeting of the committee to prepare for the 2006 Great Peppers Meeting in
Austin met on September 21, 2004. It was a lot more fun and sometimes just as sensible as a Kinky
Friedman novel. Someone brought up that we needed a theme for the meeting. Some wanted western,
some music, some Mexican, and I suggested Chinese. From there it went down hill and was tabled.
It is hard for some people to put a tag on Austin being known for anything specific. I guess it is your
own individual image and we all have a different one. To a San Antonio writer it is Babylon on the
Brazos. It’s Esters Follies, Sixth Street and western music to some. But to me, it’s CHILI. That’s
what I think of when I think of Austin. Specifically 1977 when the 65th Texas Legislature met in
session. Even more specifically when the House Concurrent Resolution No. 18 passed and CHILI
became the state dish of Texas.
Ben Z. Grant of Marshall and Ron Rice of San Antonio cosponsored the resolution that
made chili the state dish. There was a big push from West Texas to make Bar-B-Que the dish. The
golden triangle of Beaumont and Port Arthur wanted gumbo; the Mexicans wanted Menudo and on
it went. Sound like the theme scenario mentioned previously? It was finally decided that chili was
developed in San Antonio and the only contender that had a Texas birthright. Making chili the Texas
state dish has some fun and entertaining history and Terlingua Cookoff connections. Look it up, there
are many sources for information.
After all of that, am I missing something or isn’t the Great Peppers Meeting about CHILI?
The chili pepper has always been the integral part of chili cooking. What chili cook do you know
that doesn’t have a room full of stuff with chili peppers on them? They will also darn sure buy the
next item involving a chili pepper the next time they see one they don’t have. The chili pepper has
many themes. I think of cowboy boots and tennis shoes, country music to rock and roll, Dorals or
roll your own, Armadillo races and Armadillo hunts, lemon roll to bowling, doctors and lawyers and
Indian chiefs. Anglo, Latino, Black or a what, who cares. Friends with mostly first names. How
large can this kaleidoscope get, just thinking of the chili pepper. I can tell a chili tale about any of
the above.
I thought the parallel was worth mentioning

Scholarship Recipient Update
I graduated from Big Bend High School in May 2000 and am attending Sul Ross State
University in Alpine, Texas. I have attended Angelo State University and Howard College.
My major is Range Animal Science and minor is Natural Resource Management. Upon the
completion of my Bachelor’s degree, I plan on pursuing a career relating to my field of study
or entering the United States Border Patrol.
While attending Big Bend High School, I was actively involved in many school
improvement projects. I helped improve the playground by building soccer goals, benches,
covered seating areas, basketball goals and sidewalks. I have also been involved in projects
regarding the community center.
I have been honored to be a recipient of the CASI Valedictorian Scholarship.
Scholarships awarded by CASI have helped so many students pursue their education.

Hello all! Boy how things have changed since last month.
Many of our cooks have suffered losses from hurricanes and other types
of storms. Harry and I continue to say our prayers for those affected,
because I am sure it is much worse than we can think.
Fall has fallen here in Lamar, Missouri, and it can be seen from all the leaves on the ground
and the smell of burning leaves in the evening. If you remember in the past I told you Lamar was
still a one-horse town, now with two stoplights. Lamar still lets people do a lot of things other towns
don’t allow and burning leaves is one of them.
Today was a beautiful day in Lamar so I finally got Harry out of bed and outside to work
in the yard this morning. Harry has his nights and days mixed up. He is up all night and then wants
to sleep all day. I have no idea how I’m going to deal with him at Terlingua, but he has his airplane
ticket so he’s going and going to cook.
I always like the fresh air smell of bed sheets after they’ve been washed and hung out on
the clothesline to dry. Yes, you guessed it. After we cleaned in the yard, I washed the bedclothes
and hung them out. Harry then decided to burn the leaves we raked up. Now I have to rewash the
clothes and dry them in the dryer.
Time is running out on me, and I have so much to try to get done by November 16. My
left knee didn’t last the two years the Doctor told me it would, so I’m scheduled for knee replacement.
I guess the extra stress I put on it after having my right knee done earlier this year caused it to go
out. I could have had it done the last of October but we couldn’t have made the trip to Terlingua
this year. I would rather endure the pain than miss the trip and seeing my chili family.
I notice many of you have cooked and placed for the new year. Congratulations! Harry
and I have not been able to make it out so far this year. Raising the grandchildren and them growing
older, it seems there are more and more school activities to plan our weekends around. Also, the older
they get the more expensive it becomes. Raising the grandchildren is a lot different than raising our
children 40 years ago. I am not complaining as God gave us two wonderful kids, and it’s the least
we can do to at least make a hard time in their life a little smoother.
Until Harry and I see or talk with you just remember: To start slow and then taper off.

I was a 2003 recipient of your scholarship. I wanted to take this opportunity to thank
you again for your support of my education. I’m currently a sophomore at Lycoming
College in Williamsport, PA. I’m triple majoring in Political Science, History, and
Spanish. I’ve maintained a 3.85 cumulative GPA. I also am VP of Pol Sci Club and

you can pull behind a pickup valued at $1,999.99 to the CASI Scholarship Fund.
The pit will be given away at the International Chili Cookoff on November 5
of 2004 in Terlingua, Texas, which is
CASI Scholarship Day. The tickets are
$5.00 each, and all proceeds go solely to

As a CASI Pod you are required to put on a pod cookoff
once a year. To help you advertise your pod cookoff we allow
each pod to place one quarter page ad in the Terlingua Trails,
each year, free of charge. This ad should run the month before
your cookoff occurs. Should you decide that you need an ad
larger than a quarter page we will simply bill you for the difference
in price. This ad should not be confused with the article
advertising your cookoff in the "Cooking with CASI Calendar"
section in the Terlingua Trails. That article will start to run as soon
as you request your cookoff packet and will run until your
cookoff occurs.
