IRVING, TX - Well another year has come and gone, and what a good time was had
by all! If you did not have the opportunity to attend this event, please come next year and
accept the challenge to compete with some of the best Chili Cooks around.
We began Friday evening with a dinner provided by the Irving Elks Lodge. The
Lodge’s Chicken Fried Steak is the best around and truly has no equal. The Lodge provided
live entertainment and the bar was on top of their game as well. So, with cocktails in hand
and belly’s all full, the night came to an end in grand TOT fashion.
Saturday morning arrived a little too quickly, but what the heck, it was time to get it on!
First off, I was able to bring someone dear to us all, Dr. Ray Calhoun, for his annual attempt
to beat everyone, as he has been known to do. By 12 (High Noon) we had 6 Junior Cooks,
29 Beans, and 68 CASI Chilis registered with a full house inside and out of the Lodge. After
turn in, the judging was underway. The crew we had in place ran this Cookoff like “A
COLD LONE STAR POURING IN A FROSTY MUG WITH ICE AROUND THE
RIM” – sorry the heat must be getting to me, but it does sound good!!! I must give a thank
you again to all the Monitors, Talley Crew, Table Runners, and to Jim Ezell for Monitoring
Final Table. While the final tally was being done, we had a small auction, 50/50, and a raffle
with many great items. Then, the moment we all came together for - to see just who had
what it took to become the next 2012 TOT Champion and congratulations goes to Barbara
“Babs” Johnson, Irving, TX. Congratulations also goes to Ginny Williams, Bull Rush Chili,
for 1st Place Show; Vicki Sanders, 1st Place Beans; and Paige “Pea Pod” Brignon, 1st
Place Junior Chili (she finally won her first Wendell stove and believe me she is so very
proud of it).

It is almost here! CASI’s annual business meeting, the Great Peppers Meeting is Saturday
September 8, 2012. If you are a Great Pepper, CASI Official or someone interested in learning
more about CASI, please register by August 15th. See the Registration Form in this Trails or
online in the Resource Center. The Doubletree Hotel is reserving our room block until August
6th, so make your reservations with them by then to assure yourself a room at our favorable
rate.
This is the first year that CASI is hosting the meeting as voted upon by the Great Peppers.
We are still relying on Pods to handle certain functions, but they don’t have to raise funds as
in the past.
Bill Pierson and the Three-I pods will handle registration. If this is your first Great
Peppers Meeting to attend, be sure to let them know. They will place a colored dot on your name tag. Our “seasoned”
attendees and delegates will then be able to identify you and more readily help you answer any questions you may
have.
The Top of Texas Pod will be manning the bar in the Hospitality Suites. Donna Conrad will be working her magic
of presenting the food donated by HEB. After our Friday meetings, Jim Ezell has arranged for a hosted Happy Hour
Friday afternoon by the pool. You will be able to enjoy a cool soothing drink out in the “warm” Texas sun.
Of course, Saturday is the big day. Each Pod should be reviewing CASI business and submitting any agenda items
to Janice Miller. For those that have chosen to run for the Board, I thank you, as should everyone. Running for the
Board is a challenge and winning is a commitment. Good luck to all.
So, make your plans now to come join us in Irving Texas.

Reflections from the ED
It’s already August and it is the Annual Credentials’ Report time. It is due to me no later
than August 15. Please remember to have the dues for your officers must be paid until
September 30, 2013. I would like to have most of the reports before that date so that if we
identify a problem, we have time to make those corrections. Thank you to those Pods who
have already sent me their reports.
August 15 is also the date that the nominations package for those CASI members who
want to run for a position on the CASI Board of Directors and for the Executive Director
positions. We have four board positions as well as the Executive Director positions up for
election at this Great Pepper’s Meeting.
The position of Scholarship Program Administration will also need to be filled. If you are
interested in this position, please contact me and I will provide you with the required application package. This is an
important position.
If you are attending the Great Pepper’s Meeting, please be sure that you have sent in your registration. You can
find that registration form on the web page in the Resource Center.
We are currently identifying some breakout sessions that will be held on Friday. We plan on having the Monitor
and Referee Training again this year. We have had several requests for another session on this topic. We are also
exploring other topics for discussion. The breakout sessions will be held on Friday. These sessions will start around
9:30 Friday morning.
If you are a Regional Referee, please identify the referee assigned to the cookoffs in your region prior to the date if
the cookoff. Send this information to me. There have been several cookoffs that have had issues this year. By
identifying the referee prior to the cookoff so that it can be documented, it then provides us with a contact person. If
questions arise concerning a cookoff, we will then contact the appointed referee to assist in resolving any issue.
If you want a CIS log in, please send me an email. Be sure that your dues are current. They must be current or
you will be denied access. There is a great deal of information in CIS. If your personal information (telephone number
or email address) in CIS is not correct, please send me your corrections. This information is needed if someone needs
to contact you.
Here’s hoping that you are getting your points and are qualified for TICC. There is just another 60 days to get
them. The board is already planning TICC. We will need volunteers for various jobs. These jobs will be identified on
the blog and during the Great Pepper’s Meeting.
If you have something that you would like to have advertised or shared with our CASI members, please remember
that you can send them to me and I will include them in the blog. If it is a flyer, I need it as an attachment to your
email. I can convert word documents or PDF files to be posted. The best thing is to send it as a jpeg.
Summer has definitely arrived in West Texas. Pray for rain! Remember Chili, Charity and Fun!

I was told to write an article about the legendary Carroll Shelby, but I never met
the man and all I knew about him was what was in the newspapers. Oh, I did know he
lived in Highland Park at one time, because I dated a girl who lived down the street
and pointed out his house to me. That was about the time the Shelby Mustang was
making its debut. So I started research, I asked my friends and former TICC
Champions Bob and Doris Coats, what their recollections of Mr. Shelby were. Doris
provided me with many documents to review in my research, and both told me tales of
the old days cooking chili with Mr. Shelby.
According to an article in Texas Monthly (sorry can’t find a date of the article)
“CASI was founded in 1951 by an indefinite number of middle aged, middle class chili
lovers. They are publishers, newspaper editors, prosperous attorneys, columnists,
local television personalities and ranking public relations men.” This date would
mean that CASI is now 61 years old! Another source states CASI was formed in the
late 40’s.
Most all chili cooks have heard about the first cookoff in Terlingua, and all the
hoopla around it. All that hoopla had a purpose, it was to attract attention to the
200,000 acre Chiricaha Ranch owned by Carroll Shelby and Attorney David Witts, and
hopefully find a buyer for the Ranch. The main sponsor of Wick Fowler at that first
cookoff was the Chili Appreciation Society International. Fowler was later known as
the chief chef for Chili Appreciation Society International. It was supposed to be a
onetime event in 1967, but realizing what a great party it was, they decided to do it
again the following year. By the time of the second World Championship in 1968,
Carroll Shelby was the social director of the Terlingua Country Club.
Shelby was a judge at the World Championships from at least 1968 until 1972,
according to records. There was not a list of judges for 1973 & 1974.
From all the old articles written about chili, and original Chili Monthly
Magazines, Shelby got involved in chili cookoffs to raise money for charities. His
desire for this was prompted when he suffered heart problems and became aware of
so many people that needed assistance.
Richard Knight wrote in last month’s Trails about the ambulance Shelby helped
purchase for the Terlingua Medics. From Bob Coats I learned that the vehicle was
sent to Florida for a special paint job, costing much more than it would have cost
locally here in Texas. Dodge Truck Division, Stroh Brewing, and Pepsico were among
the sponsors who put up the $60,000 to buy and outfit the ambulance. Several other
sponsors backed out after a ruckus over the cookoff and Shelby made up the deficit
by acquiring Chili’s Restaurants as a sponsor, and including his own Original Texas
Chili Preparation mix as sponsors. There was a thank you letter to Shelby and the
other sponsors signed by most if not all residents of Terlingua at the time.
In the 1980’s Shelby had moved from Ford to Dodge and became a benefactor of
the Bottom of the Barrel Gang, Bob and Doris Coats, Richard & Carol Knight, Ken and
Dusty Hudspeth, Steve and Jan Frisch, Barbra & Monty Britton, Paul Brian, Paul &
Sylvia Wiseman, Doug Beigh, Bob and June Leclerc, Ken and Peggy Robbins, Jim
Kitterman, and Dr. John and Nita Winters, and got them a Dodge van for team
members use to and from cookoffs. If you check on these team members, you’ll find 4
TICC Champions!
From all I’ve read and heard about Carroll Shelby, he didn’t cook competitive chili
but was always there to help and support all cooks. He realized his fame would bring
attention to the cookoffs and help the charities, but he seemed to be happy in the
background, not always trying to be the one in the photos, just pleased to lend his
name, stature, and resources when needed, to a worthy cause.
Carroll Shelby’s approach to chili; “The beauty of chili to me is that it’s really a
state of mind. It’s just what you make it. You can put anything in there you want,
make it hot or mild, any blend of spices you feel like at the time. You make it up to suit
your mood.”
Carroll Shelby played a large part in the beginnings of competition chili cooking,
and the Chili Appreciation Society International.
And in the words of Billy the Kid, “Anyone who likes chili can’t be all bad.”

I would like to take this opportunity to
congratulate again the 2012 CASI Scholarship

to remind the CASI members to make contact

I am seeking re-election to the CASI Board of
Directors. During the three years that I have served as
your director, I have served as director of Krazy Flats
and now serve as Ranch Manager. A lot has been
accomplished in the past three years, but there is still a
lot more to be done. Working together we can take
CASI to the next level where CASI becomes a
household name across our nation- not just to chili
cooks. Thank you for your support, your vote and your
continued dedication to CASI’s goals and objectives.

My First Year of College
I want to thank you for selecting me as a 2011
scholarship recipient. After my two summer classes
I will be preparing to start my sophomore year at the
University of Arizona in Tucson. I had a lot of fun
during my freshman year but I also faced quite a few
challenges. I am an only child and this last year was
the first time I had been separated from my parents
for the amount of time that I was. Don’t get me
wrong the separation was fantastic and I definitely
enjoyed the freedom, but there were occasions where
I wish my parents were there to stand over my
shoulder to nag me about doing my homework or
studying for my tests. Academic wise the first
semester was rough and finding a balance was a
challenge, but by second semester things settled down and everything began to
improve.
As far as extracurricular activities are concerned, I was definitely involved.
Within the first few weeks I began volunteering at the school’s student run
mining laboratory. The lead instructor was very impressed and assigned me two
tittles, engineering foreman of our Saturday shifts and team captain of our Mine
Rescue girls’ team. I also got involved with the student chapter of the Society
for Mining, Metallurgy and exploration, doing recruitment at the local community
college and at the high schools around town. In the spring semester I was
elected the treasurer of the International Society for Explosive Engineers.
In the beginning of the school year I joined the University of Arizona
competitive Shotgun team. I started out on the development team, but by the
spring semester I was added to the travel team roster. Because I was on the
travel team I was able to go to San Antonio for the ACUI Collegiate Shotgun
Championships at the National shooting complex. In our division, U of A took
home 2nd place in international trap and 2nd place in American trap. At the end
of our shooting season, I was elected the President of the team.
This Summer I am taking two online summer classes while working a full
time internship at Resolution
Copper Mining in Superior
Arizona. I finally understand
what it’s like to be an adult. I
am very excited for the fall
semester to begin and I can’t
wait to see what I do for the

4TH OF JULY EVENTS
VIENNA, VA - The VIRGINIA STATE CHAMPIONSHIP, benefiting the
Vienna Volunteer Fire Department, was held July 4, 2012 at the Vienna Community
Center. Top honors went to Jack Windsor, Severna Park, MD. Top three VA
Cooks were Joan Kissal, Palmyra, VA; Dan Bauer, Alexandria, VA; and Dick
DeiTos, Fairfax, VA.
STONEWALL, TX - On July 4, Becker Vineyards was host to their
annual ALL AMERICAN COOKOFF. Hundreds of enthusiastic attendees
bought tasting cups and sampled chili from the thirty-four cooks assembled on
the winery’s verandah. Volunteers from the charity, Habitat For Humanity
and staff from Becker Vineyards worked with the Pod On the Pedernales to
make this event a success. In the six years this event has existed, close to
twenty thousand dollars has been raised for Habitat.

promotes CASI and chili
with handouts available
in their tasting room.

FROM “HIGH IN THE
COLORADO ROCKIES”
GRAND LAKE, CO - The 29TH ANNUAL CASI STATE OF
COLORADO CHILI CHAMPIONSHIP was a memorable event. Cooks from
around the west gathered in beautiful Grand Lake, Colorado on June 23rd, 2012
to participate in the CASI Red Chili Championship, the State of Colorado Green
Chili Championship and the State of Colorado Salsa Championship.
We were blessed with some outstanding chili cooks and salsa preparers,
wonderful weather (although just a bit too hot this year for some of us “locals”)
and as always a huge crowd of spectators ready to sample some of the best chili
and salsa around.
We were glad to be able to once again put on a fun cookoff and one that
raises a great deal of money for the various charities involved! It sure does help
to have a strong local organizer (Mindy and Grand Lake Fire) and a “delicious”
beer sponsor (Grand Lake Brewing).
Congrats to (once again) an out-of-stater for taking the top CASI Red
award – Rolland Pate from Houston “snuck in” and grabbed the top place. The
top three Colorado finishers were Christi Batie (2nd place), Lyman Wilkinson
(3rd place) and John Montgomery (5th place). Following up his first place CASI
award in 2011, Bucky Seelig took another top award ( 4th place), Rocky Kimball
(6th place), Genee Joliffe (7th place) , Linda Wilkinson (8th Place), Wayne
Joliffe (9th place) and Mark Huft (10th place).
Joe Holt took the top award in the Green division, Mark Huft won the Salsa
division, and Rick Thomas won the People’s Choice division. Congrats to all!

Cornudas, Texas is close to nowhere, and further
than yonder will ever be. Check your Texas map, go
there, and you will know. About a month ago, I drove
out there to a chili cook-off, put on by The Pod of
The Pass. Mae Carson, the mayor of Cornudas, has
had a cafe and gift shop there for ages, and has had
chili cook-offs for 20 years. Cooks from El Paso,
New Mexico, Midland, and Odessa, made up most of
the contestants. The cook-off was held on Sunday
and the Saturday night before and a group of local ranchers and cowboys would
bring their fiddles, guitars, etc. and play music for folks to dance. They would
play mostly Bob Wills, Hank Williams, and other oldies. The dance floor was
the dirt and gravel parking lot, so unless you were pretty agile, you didn’t do any
fast dancing.
Anyway, the cook-off stopped a few years back as Mae had sold her place
and some acreage to a guy who built a theme park of an old Western Town and
called it Justice City. He built several structures, one of which is 2-story type
hotel, with rooms upstairs, and a lobby, bar, dance floor, and a bandstand area.
Of course, the guy went broke; as I said this place is a long place from any
place, and about the time he finished it, gasoline went to $3.75 a gallon. To
make a long story short (as Doc lied to Snow White, after a couple of drinks),
Mae carried the note on the sale of the property and now owns Justice City. So
this year she had the cook-off again with a goodly number of cooks. Mae hired
a band from Kermit called The Glory Road Band as Mae has formed sort of a
church thing now out of Justice City and renamed it Christ is The Answer.
Well, when I saw the sign on the bandwagon, I thought this is going to be great;
we’re going to have a bunch of beer and whiskey drinking chili cooks, sitting
around, singing Amazing Grace, Old Rugged Cross, Rock of Ages, etc. No sir,
this band was terrific! The bandleader could sing any Waylon, Willie, Merle, or
any other thing your heart desired him to do. It turned out to be a great time.
There was this tall thin gal, from Sierra Blanca who I called Slim Jim that could
dance your spurs off. I was getting along pretty good with her and then I
mentioned I was married. She said she had to go powder her nose and took a
powder she did, because I never saw her again.
Marathon is not quite as remote as Cornudas, but it is still out in the open
spaces of the Big Bend area of Texas. The chili cook-off there was resumed
again, after a one-year lapse, and it was well attended by cooks from several
areas of Texas, New Mexico, and Arizona. There was a fantastic supper
Friday night put on by Betty Ramirez and her lovely sisters and the nights
cooled down to a pleasant temperature for playing domino’s. Saturday night
Craig Carter and his band played and sang at The Post South of town. The Post
is a great place where local folks gather with family and friends and, not only
dance, but socialize with each other. It’s just pure Western Texas, as you will
ever see it, and I hope it stays that way.
The retired taxicab gals, Pat and Max, from Houston, were there and said
they were still looking for sponsors to launch their NASCAR venture. To date,
they have sponsors for a steering wheel, helmet, tires, and a gas cap. Pat said
they almost had STP signed on for $50,000, but after a background check, they
found out Max had an unpaid parking ticket in Terlingua so that nixed that deal.
Well, keep trying girls; you may get lucky one of these days, but probably not
physically, of course.

Larry Joe Taylor music festival, the Lone
Star BBQ competition, the Four Corners
Regional CASI red chili cook-off, the State

the Woodbridge Winery near Lodi, CA.
Lodi Wine Country is located about 90 miles
east of San Francisco, nestled at the base of
the Sierra Nevada foothills. Here you’ll enjoy
warm days and cool, pleasant evenings.
This event is the official Chili Appreciation
Society International (CASI) California State
Championship and proceeds will benefit the
Lodi Public Library Foundation. This year’s
cookoff will feature competition in five
categories: CASI-sanctioned chili, People’s
Choice chili, salsa, guacamole, and CASI
showmanship. This event will also feature
one of the largest car shows in Northern
California! The centerpiece of the cookoff is
chili and a traditional bowl of red is the goal.
This event will be sanctioned by the Chili
Appreciation Society Intl and the winning
cook plus the top three California-resident

in the legendary Terlingua International Chili

Championship. Held at Rancho CASI de los
Chisos. Must be qualified to cook. Thursday
is the BBQ Championship open to the public
to participate. Friday is National Scholarship
Day competition Beans, Salsa,& World
Championship Hot Buffalo Wings open to
the public. Public may dry camp all week for

Fun Fest & CASI Chili Cookoff. Location:
The Pavilion, Hwy. 175 east from Dallas to
Mabank Business 175, go approx. one mile
and turn right just before the Rodeo grounds.
RV’s are welcome but there are no hook ups.
You can back your vehicle up to the covered
Pavilion where you will be cooking. There
will be Jackpot Beans with a turn-in at 12
noon and the entry fee is $5.00. Top 3 will
split the proceeds by 50-30-20. Chili turn- in
is at 1 PM. The entry fee is $20.00. Chili grind
only. Make checks payable to Friends of the
Tri-County Library. Proceeds will be donated
to The Tri-County Library. This is day 1 of
a 2 day event. See Sunday information.

Odessa will host the 1st Annual CASI Chili
and Lonestar Bar B Que Cancer Cook- Off for
the Odessa Gifts of Hope to provide help for
cancer patients. There will be a silent auction,
and a 50/50 drawing. Chili entry fee is $ 20.00
(chili grind only). Turn in at 2:00PM. Bar B
Que entries are $ 25.00 each. Chicken turn in
at 12:00 noon, Ribs turn in at 1:00PM, and
Brisket turn in at 3:00PM. Payback on BBQ
50% and $100.00 to grand champion. Room
for RVs and Pits. Dry camping. Cooks party

As a CASI Pod you are required to put on a pod cookoff once a year. To help
you advertise your pod cookoff we allow each pod to place one quarter page ad in
the Terlingua Trails, each year, free of charge. This ad should run the month before
your cookoff occurs. Should you decide that you need an ad larger than a quarter
page we will simply bill you for the difference in price. This ad should not be
confused with the article advertising your cookoff in the "Cooking with CASI
Calendar" section in the Terlingua Trails. That article will start to run as soon as you
request your cookoff packet and will run until your cookoff occurs.
