Dallas Area Metroplex Pod (DAM) is proud to contribute a check for $1000 to
the CASI Scholarship Fund with proceeds from their annual New Year’s Eve
Chili and Black Eyed Pea Cook Off and Ring In The New Year Party.
Each year holds a new theme. Anything from Disco in the Tropics to a Frat House
Toga Party! This event is held on New Year’s Eve at the North Texas State
Fairgrounds in Denton, Texas. Cooks from as far away as Houston, Terlingua and
Snyder make the trek to this fun filled event yearly.
The chili is hot, the peas are lucky and the music is loud. But, the PARTY is not
to be missed!

Grace Lim, a graduating senior from Buena High School in Sierra Vista,
Arizona, was presented her four-year CASI scholarship for $1000 each year
on Monday, May 16, 2005 by Greg Monger, Pepper Popper from High Desert
Pod. Grace will attend Georgetown University in the Washington D.C. area
and study pre-medicine and hopes to eventually become a pediatrician. Grace
is a fine example of American youth today. She and her family thanked CASI
for the scholarship.

ED Ponderings
Susan and I decided it was time to look for a
motorhome that would afford us more living space
when we’re on the road for extended periods of
time. I felt that we should honor our sponsors by
starting at Ancira. We didn’t need to go anywhere
else. They were great. The entire process of
looking at vehicles and working out acceptable
terms was very pleasant and professional. I’m glad
we gave them a chance.
CASI has great sponsors and they deserve our loyalty. Please let them know you
appreciate their support and give them an opportunity when you decide to make a
purchase.
Let’s take a look at the timetable for Great Peppers Meeting preparations. Sammie
Plant and her committee have been working hard to arrange a great time for
everyone in San Angelo.
Great Peppers Meeting registration forms have gone out in the mail. To avoid a late
fee, these must be returned to Sammie Plant by August 2. The host pod needs to
plan meeting space, meals, and other details that vary depending on the number of
attendees. Please register early to make their task easier.
Rules change letters have gone out to all of the pods. I hope there is a lot of
productive discussion going on. To be considered, rules change proposals have to
be back to me no later than July 1. I will then compile the proposals and send them
to all Great Peppers before the end of July so they can be discussed at the August
pod meetings.
Pod Credentials forms will go in the mail in late June and will be due back no later
than September 1. Last year, everyone did a great job of getting their credentials
in so they could be processed in time. I thank you for that and hope we can do it
again.
This year, I will be typing your information into the live database on the CASI
Central Information System. Please be certain all of your pod officers and referees
have paid their dues through next year or include a check for their dues with your
packet. If you don’t, the CIS will reject them and we’ll have a lot of extra work
to get it cleared up. Again, let’s keep up the good work just like last year.
Candidate forms, included in the packet, are due back to me by July 25. If you need
one and you don’t have access to a pod copy, let me know and I’ll send one to you.
Phew! We all have lots to do in the next three months.
We’ll be at cookoffs in Texas, Wyoming, and Colorado this month. I hope to see
you on the trail. Thanks for all that you do.

Back in January, I wrote about notifying the
proper CASI entity (Membership, TallyMaster,
Alcalde) about any address or name changes. Right
after that, I was inundated by two address change
notifications. With the advent of the CASI Central
Information System and its merged membership/
cooks databases, it is even more vital to let us know
your current address. If you want to receive your Terlingua Trails and/or you want
to be invited to TICC, we need to know where to find you. Mikie, Ralph and I all
have our addresses, phone numbers and emails published in the Terlingua Trails.
Please think of us when you move.
By the time you read this, I will have mailed over 300 cook and show team
qualification cards. Are you saving these cards? They can be very useful. They can
remind you that you have to be somewhere on November 5, 2005. They can settle
an argument if someone doesn’t believe that you qualified. And, most importantly,
in the event you can’t make it to Terlingua, they might get you a contestant shirt.
I will go over the contestant shirt policy later when we are closer to TICC,
but here is a brief on why that qualification card could come in handy. The fact that
you qualified in Chili or Show does not guarantee you a TICC contestant shirt.
Registration for Chili and/or Show at TICC does. In ordering the shirts, our goal is
to make sure that every TICC participant gets a shirt, and it’s the size they want.
To do this, we order more shirts than our anticipated need. Allowing absent qualified
cooks or show team captains to have a shirt is our method of disposing of the extra
shirts. Presenting your card is our way of making sure we give the person
presenting your card a shirt intended for you.

Scholarship Recipient Update
I would like to thank CASI for giving me a scholarship in 2002 to allow me to
pursue my degree in the teaching field. I am in my third year at Northlake College
obtaining a slow degree while working at the YMCA doing what I love: coaching,
umpiring, and being the Assistant Sports Director. After my time at Northlake,
I plan to transfer to the University of North Texas to pursue a degree in
Secondary Education. Thank you once again to all the people of CASI who have
facilitated my college education.

Hello to all from cool and chilly Lamar, Missouri.
Just when I thought it was time to forget about all the frost
and cold weather, here it comes again. Fortunately, we’ve
been able to save our tomato plants and several flowers. I
know our yard doesn’t look the best with old sheets and
bedspreads draped over everything, but it does the job.
And it’s a lot easier than getting up at sunrise and spraying

water on all the plants.
As I write this in May, school is out in Lamar. This year they didn’t have to miss
school days during the winter because of bad weather. I’m not sure if that’s good or bad;
it gives us the grandkids for two extra weeks. Harry made out a schedule of small jobs for
the kids to do, but if it’s like last year and the year before, he ends up doing more fussing
about the way they work, so I usually end up helping or doing most of the work.
I’m starting to fall back into my daily routine after my near encounter with serious
injury or possible death about 3 weeks ago. For those who have been to our shop, they
will know what I’m talking about and for those who haven’t, I will try to explain.
The building we have for our shop and detail business used to be the main office
for the area Phillips 66 agency. The agency closed several years ago, but the large 4X6
foot outdoor sign has remained as a landmark in Lamar. The sign was on a pole some 30
feet in the air and it came down without warning, missing me by about a foot. Harry and
I were finishing up a detail job when this occurred. I have no idea what the sign weighs,
but it took Harry and two other guys to carry it into the shop. I’m not sure when the sign
is going to get put back up.
Harry’s having problems with his hands and arms, and I have to do a lot of the
things that he normally does. This year is both of our 45th class reunions, but different
schools and towns. I’ve had to do about all of the work on Harry’s reunion and have now
been made chairperson of my class reunion.
Somehow in the midst of all this confusion, I have been successful in increasing
the amount of items donated for the Missouri State Chili Cookoff raffle. I’ve had this raffle,
as well as very large goody bags for the cooks, for the past 3 years and as I said, this year
looks super! This year, I have two ladies designer wristwatches, tickets and accommodations
to shows in Branson, Missouri, plus many more large items.
Oh, somehow I found the time to transport Harry back and forth to his specialist
in Springfield, to make sure Austin and Cheyene have clean clothes every day which
means extra laundry, scheduling time for rodeo practice and dance lessons, and summer
baseball.
I thought by now we would have made several cookoffs, but as bad luck or
whatever would have it, we’ve only been able to cook twice this year. I know and
realize that each and every one of you have just as many problems and difficulties as Harry
and I, but somehow when you hear others are having problems also, it makes you think
that what you have is not so bad.
Always remember that it doesn’t matter how well you have things scheduled or
planned, you always want to be ready for the unexpected. I have seen on television when
a sports star has to give up his profession for one reason or another and how emotional
and upset they become. I understand now what they are going thru when I see Harry
having to give up so much he loves and has done most of his life when he cannot do it
or has to ask for help. As I said, be ready for the unexpected and give thanks for what you
have each day.
In the morning starts a busy summer, so I have to get started planning menus,
making Kool Aid, and all the other good stuff that goes with being a Granny. So if the Lord
is willing and the creek doesn’t rise (and no more signs fall), I’ll talk to you about this time
again next month.

took the challenge Lorina gave me on the quality and taste of her
Margaritas and I can report that they definitely make one of the best.
Our Corporate Member this month is LORINA’S Stop by on your next trip to or thru Del Rio or for sure if you cook in Del Rio on your
CANTINA in Del Rio, Texas. Lorina Harris became a way to TICC.
Corporate Member by signing up for TWO years while
she was cooking at Texas Ladies State Chili
Championship.
This neat Cantina is 7.3 miles West of downtown Del Rio on Highway 90 on the
left side if you are heading West. If you're staying at Holiday RV park, then travel
East on Hwy 90 for 1.8 miles. The atmosphere makes it almost impossible to stop
“to have one” with the friendly welcome you receive from the staff and other
customers when you step inside. It is open Monday thru Saturday from 2:00pm until
2:00am and Sundays from 2:00pm until midnight.
Every day different food is prepared and set out for the customers to enjoy – from
Taco’s to BBQ and even spaghetti & meatballs. You never know what it will be
from day to day but one thing about the food stays the same – it is complimentary
for the customers.
You can enjoy a game or two of darts, pool, relax at a table top game machine to
try your skills at the different games offered on it or watch TV while enjoying your

TALES FROM THE RANCH

everybody? Pretty quiet here at the ranch.
Actually, not much going on here in Concho
County.
Well, I traveled on down to South Padre
Island for a homeowners meeting last week and
lo and behold, a chili cook-off broke out. So, being
down there already, I decided to attend the
festivities. Ran into some chili friends throughout
the chili world. Being familiar with the country
side, I decided to volunteer myself to be the designated tour guide. Mr. Bruce Pinnell and
his lovely wife Sharon came down Thursday and as soon as the motor home was parked
and hooked up, we headed for Mexico. I took Bruce and Sharon to a little town called Nuevo
Progresso, just across from Progresso, Texas. We did the usual turista thing. Went
shopping, drank some of the local beverages, and ate some very good seafood cuisine.
Had a good time in all. Friday, Bruce and I made a visit to the local establishments on the
island while Mrs. Sharon and Debbie Eiland (Ginger) Turner went shopping. Mr. (Fred
Astair) Wayne Turner was partaking in some R & R in his RV so we decided not to bother
him. Later Friday night, Bruce, Sharon and I went back to Mexico. This time we went to
Cuidad Matamoras Tamalipas, a little town across from Brownsville, TX. Once again, we did
the turista thing, went shopping, ate some good food, purchased some curiosidades and
came back to the island. Had a real good time with Bruce and Sharon. Next time you see Ms.
Sharon, ask her about the chicken. I can’t elaborate on it, cause what happens in Mexico,
stays in Mexico. You knowwhatimean Vern?
Saturday was cook-off day. I mingled around the area, visited with Bruce and Cindy
Wilkins, Mama Maxine, Bruce and Honey Jones, another couple from Houston, Ray King
and his wife pat, Clif Dugan, Mr. Bob Coats and his wife Doris C. Had a good time visiting
all day with all my chili friends. Next day was Sunday, Mothers Day, so I decided to treat
Mrs. Doris to a trip to Mexico. Bob, Doris, Clif Dugan and I got up early and headed for
Mexico. I took everybody to Nuevo Progresso since Bob and Doris C had never been there.
Again we did the turista thing. Went shopping, ate some good food, etc, etc, then went back
to the island. Everybody went to bed, got up Monday and everybody went home. I stayed,
still had some more business to tend to. I was glad to see some chili friends and visit. Don’t
see very many chili folks on the island very often.
Just had our Black Gold cook-off here in Odessa. Had several out of town folks drive
in for the fandango. Now some people have shenanigans, but down here in Odessa, we have
gala’s, fandango’s, pachangas, windmill fixins, nut cuttins, an occasional wedding, once
in a while a couple in their mid fifties decide to elope, and then we have lots of rodeos. The
cook-off went well. Our GP, Mr Leroy Childress and his wife Patsy had their hands full. My

provided covered dishes for the occasion. Good job everybody. Hats off to all those who
received the coveted pump jack. The 2005 Texas Ladies State champ flew in for the affair.
We thank Dana for making the long trip. Sunday’s cook-off was cancelled due to inclement
weather otherwise we would have had another great cook-off. Way to go to the winners of
the domino tournament. Thanks to everyone involved. Couldn’t have done it without you.
More happenings. It seems that we have a dedicated chili cook that has decided to take
up farming, along with cooking chili so to speak. The man in question is no other than Mr.
Green Acres, Future Farmer of America, Steve Nadeau. Yo Rita. Scuttlebutt has it that Mr.
Nadeau has this forty foot tractor that can plow a row straighter than anyone can imagine,
and this is according to some veteran farmers that were present. It all came about at a chili
cook-off where Mr. Nadeau was demonstrating his farming skills and had one of his rows
on display. Yea buddy. Folks from all around came to see this display of modern farming
technology. His wife Margaret was interviewed about the instant fame and all she could say
was that she was proud to be married to a blond husband. What can I say folks. Next time
you see Steve, ask him about his hydraulic jacks on his new motor home. Who knows, you
might even get to see a straight row. To go along with this subject, Mr. Tex Riley has just
purchased a new tractor and it seems that there may be a farming venture in the works
between Tex and Steve. Nobody knows about what type of crop production these two
farmers will produce but for more up to the latest news, click on chiliphoto.com for your

members with undisputed, impeccable taste.

A View from the Top of an Ole Chilihead
I’m still having pink dreams. Bud was right on
about the Texas Ladies State Cookoff. I have never
seen so much pink. I think Colleen Wallace has started
a new tradition with the pink decorated hats parade. I
hear ladies already discussing what they are going to
wear next year.
Congratulations, ladies. Your cookoff is now the
largest cookoff in the world except for Terlingua. There
were 207 cooks registered. You surpassed Texas Men’s State for the first
time. Guys, we have to make a concerted effort to get more cooks to Johnson
City for Men’s State. They run an excellent cookoff. We need to give them
our full support.
The Texas Ladies State Board has made some changes. After many
years of hard work, three members have retired from the board. They are Bob
& Ava Horan and Sherrie Davis. The three new members are: James Bauer Registrar, Donna Conrad and Jim McKee.
Here’s some information you need to mark on your calendar for next
year’s Ladies State weekend. As you may or may not know, the date has
always been predicated by the date Easter falls. It is always the third weekend
when Easter is not on the third weekend. Next year, Easter falls on the third
weekend, so Ladies State will be moved up a week as in the past. The date
for Texas Ladies State next year will be April 8, 2005 and the Classic Pod
cookoff will be on Sunday April 9, 2005.
The TLS board tells me they will keep on making your cookoff better
each year. I’m already looking forward to being there.

ANCIRA CHILI COOK OFF
Hello all you chiliheads out there!
Well it’s been another whole month.
It sure seems like the time is just
dragging by. Well did any of you
figure out what a woman’s yet is? If
I don’t forget, I’ll tell you at the end
of the letter.
I don’t know but I’ve been
told that the Trails is going to print a
registration form in it. I wouldn’t know for sure because I’m not getting mine!
And I’ve been told I can’t feed you any tree rats, either! I told them if they didn’t
want me to come up with all these delicious exotic delicacies to just quit asking
me about the menu. Anyway, I am in charge of hospitality and when I get
through with you, you won’t care if we feed you tree rat or escargot! Hey, how
about that, a Frenchy two-dollar word out of my two bit brain! Here’s a little
something from our Great Pepper.
Good morning! I’m supposed to write something for the Terlingua
Trails but not to the point of discrediting anything Bill has written. He’s only in
training and no one else could do the jobs I’ve imposed on him. We’re having
a great time putting together this Great Peppers’ Meeting. The SACA Pod
probably has the best of the best members when it comes to something of this
magnitude. Sometimes they even tell me NO! Can you imagine? They think
I’m at the point that maybe I can keep my mouth shut a little and not tell
everything we’re doing. I just love secrets, don’t you? We’ll have three
smoking and one non-smoking room on the 4th floor for hospitality. Only chili
people will be on that floor, so it should keep down the complaints. If you don’t
want to be there, let me know as I do have a little pull with the hotel. We are
looking forward to seeing you and showing all of you some old fashioned San
Angelo hospitality.

The Highland Lakes Chili Pods 34th Annual Howdy-Roo Chili Cook Off has
come and gone. This year was a record number of cooks with 118 CASI cooks,
18 business cooks, 65 beaners and 45 Bar-B-Q cooks. Congratulations to
Norma Homesley for winning 1st and also to all the winners. Ours charities Seton
Care-A-Van worked hard at the concession and Older Adults Rural Services
handled the silent auction. Thanks to everyone that came and we hope you had
fun and enjoyed beautiful Marble Falls. Put the 1st Saturday of May 2006 on your

To CASI Members, Great Peppers and Board Members:
I come to you asking for your consideration in re-electing me to the CASI Board.
I want to continue on the Board of Directors because I believe I still have much
to contribute.
As your Public Relations Director, I responded to over 100 e-mails requesting
information relative to CASI, and wrote and disseminated press releases
relative to the National Scholarship Program, the Great Peppers’ Meeting, and
TICC. The Terlingua Passport was updated while I served as Public Relations
Director. I also started a CASI Press Scrapbook to store articles relative to the
organization.

To the CASI Great Peppers, Board of Directors and Members:
Yes, I’m back again! It is with great pleasure that I announce my plans to run for a Directors
position on the CASI Board of Directors at the 2005 CASI Great Pepper’s Meeting in San
Angelo, Texas.
I have served as the Great Pepper of the State of Texas Pod, Editor of the SOT Pod Newsletter
and Chairperson of the Nominating Committee. I am currently serving my third year as an
Area Referee, and on the SOT Pod Stirring Committee, along with being on the TMS
Committee for 2 years. I am a Lifetime Member of CASI and an Old 320 Member. Last year,
I volunteered to run the 2004 Bean Championship Cookoff at TICC, which was bigger and
better than the year before and have volunteered to do it again in 2005.
I have been around and involved with the Chili World for approximately 30 years and have
enjoyed every minute of it. I hope that I have the opportunity serve as a Director on the CASI
Board, so that I can give back to the Chili World what I have gain from it over the years and
to serve to the best of my ability the members of CASI. This still takes to heart the CASI
mission statement: “We are making a difference with Chili”.
We must maintain an open line of communication between the CASI members and the Board
to enable them to ask questions, express ideas and voice concerns. None of this means
anything unless the Board fulfills its responsibility to respond back to the members and work
as a team together to meet its goals and challenges.
I have the enthusiasm and energy needed in helping CASI and TICC grow. I am not afraid
of the hard work performed by the Board. CASI is a business and we must ensure that we
are prepared to address the issues of running the business side of CASI. I feel that my
background and experience has prepared me to take a leadership role to meet the challenges
that come with being a Director of CASI.
I ask for your support and vote at the upcoming 2005 Great Pepper’s Meeting in San Angelo,
TX. I look forward to serving the members of CASI and work to strengthen and grow CASI
as an organization.
I currently serve as your Secretary to the Board and have distributed all meeting
minutes well within the thirty-day mandated deadline. I also serve as Articles
Editor for the Terlingua Trails. I am responsible for the Memorial Board at
TICC. I am also responsible for the CASI store; Dorathy Williams and I have
worked hard to bring you new and varied items at TICC.
While there have been instances when we may not have totally agreed on
matters, I think you’ve found that I have been more than willing to listen to your
concerns and suggestions. I have always taken those issues to the Board in
order that your opinions and concerns could be heard. I feel the chili cooks’
opinions are very important to the organization!
I would consider it a great honor to continue serving as YOUR representative
on the CASI Board and hope you will consider me at the Great Peppers’ Meeting
in San Angelo.

to CASI Pods, State, Regional and
International Opens
As a CASI Pod you are required to put on a pod cookoff
once a year. To help you advertise your pod cookoff we allow
each pod to place one quarter page ad in the Terlingua Trails,
each year, free of charge. This ad should run the month before
your cookoff occurs. Should you decide that you need an ad
larger than a quarter page we will simply bill you for the difference
in price. This ad should not be confused with the article
advertising your cookoff in the "Cooking with CASI Calendar"
section in the Terlingua Trails. That article will start to run as soon
as you request your cookoff packet and will run until your
cookoff occurs.
