She started decorating cakes as a hobby twenty-two years ago by taking classes at the Youth Center in Kendallville. There were three classes offered altogether, starting with the basics and building up to tiered cakes. She started with the desire to bake her and her family’s cakes because of how expensive they are to purchase. With her artistic skills, decorating cakes came naturally. Her knowledge of mixing paint colors transferred over to mixing icing colors, so she never had any problems. The hardest colors for her are red and black. A tip from Ruth for mixing black is to start with chocolate icing so you have a darker base to work with. With red, she uses the no flavor food coloring, but according to her, it still comes out bitter. Buttercream is her favorite to work with, unlike fondant. Even though it makes a beautiful cake, she doesn’t like the texture of it. Fondant is used to cover a cake whereas gum paste is used to make flowers, bows, figures, or other decorations. According to Ruth, using gum paste is almost like sculpting. “The hardest thing I think I’ve ever done is use gum paste to do the pressed impressions,” Ruth Guthrie said, speaking of the impressions on her daughter’s wedding cake. She used edible glitter for the outside, pulled out the impression, and cut all the extra edges off before applying to the side of the cake. As far as the cake recipe goes, she uses a high-quality box cake and makes a few changes of her own. Instead of adding water like the recipe instructs, she uses milk. She also adds vanilla and not the cheap kind. She uses a high-quality product like Mexican vanilla, one teaspoon per box of cake mix. So, what does she use to bake the cake? “I usually use a metal pan,” said Guthrie. And while baking, she added that an important tip is to triple up aluminum foil and wrap the edges of the cake to avoid burnt edges. And forget the old toothpick trick. If the cake doesn’t jiggle, it’s done. After she bakes the cake, she lets it completely cool, wraps it in foil, and freezes it. Then she frosts it later. This little trick creates less crumbs and makes the cake easier to decorate. She has used all types of fillings in her wedding cakes. First, she spreads frosting around the edges of the bottom layer to create a border. Second, she fills the center with the filling, and third, she places the top layer to create a layered effect. After baking and decorating the cake, Ruth said transferring it to the wedding destination is the hardest part. She almost lost her first cake last year on a 98degree, 100-percent humidity day. She stacked the cake at the reception and later noticed it was tilting. Because of the weather, she had to change the five tier cake to a three tier and two tier plus put more icing on it. Just like anything else, weddings have trends. The trendy wedding colors last year were mint and peach. Her daughter’s wedding cake colors were mint and pastels with a top layer wrapped in a beautiful frosting sheet from Italy to set off the entire set of cakes. This along with the gum paste impressions and swirling roses created a very elegant look. While cake decorating is a booming and lucrative business with the current rate of $5 to $7 per piece of wedding cake, Ruth has no desire to decorate as a living.
