have a slightly salty, tangy, acidic flavor and
a delicate crunch. Sauté with garlic and
chopped tomatoes in olive oil.

candies, and tea or coffee.
HOJA SANTA
FLORAL
Has a pleasant anise flavor with aromas of
black pepper and herbal overtones. Often
used for tamales, fish, or meats wrapped
in fragrant leaves for cooking. An essential

dish of Mexico. Associated with the Puebla region, the
combination of tender chicken thighs in red mole is soul-warming
in more ways than one. The sauce blends raisins and nuts with
mulato, ancho, and pasilla chiles making for a much smokier,
sweeter, and spicier flavor.
