ith its elevated ramparts comprising 12 towers and 7 gates, as well as several bell towers, Langres stands as a proud fortress planted at the doors
of both Champagne and Bourgogne. Across 3.5 km of rampart path, which has remained standing for centuries, the town overlooks a vast green
panorama which allows you to catch a glimpse of the sparkles from the lake de la Liez. Follow the
labyrinth of little streets and recount the history of the city. This city is Gallo-Roman from its
antique arch to its mosaic of Bacchus. Its medieval roots can be seen the city’s layout and
in the prominence of its cathedral which is inspired by the Cluniac style. Renaissance
influences can be seen in the elegant town houses. From the 17th century
onwards, the installation of numerous religious communities in the city
Voie Bleue
meant that many different buildings were constructed in the style of
each particular era. Langres, birth town of Diderot and Jeanne Mance,
is like a living Art and History book. A town both welcoming and
generous, it is begging to be discovered..
Mit ihren hohen Stadtmauern, den 12 Türmen und 7 Toren sowie den
zahlreichen Glockentürmen präsentiert sich Langres wie eine stolze Festung
an den Toren zu Champagne und Burgund. Auf dem Weg über den 3,5 km
langen Wehrgang der Stadtmauer, welcher im Laufe der Jahrhunderte vor
Zerstörungen bewahrt wurde, eröffnet die Stadt ein sattgrünes Panorama über
die Landschaft und den See von Liez. Folgen Sie dem Irrgarten der Gassen
und lassen Sie sich die Geschichte der Altstadt erzählen. Diese zeigt ihre
galloromanischen Wurzeln durch ihre antiken Bögen und das BacchusMosaik. Das Mittelalter hinterließ seine Spuren in der Parzellierung und der
atemberaubenden Kathedrale, deren Erbauer sich von der Abteikirche von
Cluny inspirieren ließen. Die Renaissance entfaltet sich in den
eleganten herrschaftlichen Stadthäusern. Zahlreiche
Religionsgemeinschaften ab dem 17. Jahrhundert
begünstigten den Gebäudebau im Stil dieser Epoche.

The old religious quarter, which is bordered by
canon houses, is dominated by the Saint-Mammès
cathedral which was built between 1150 and 1196.

Maison des Lumières
Denis-Diderot
On the 5th October 1713, a man was born in
Langres who was to become one of the greatest
thinkers of the 18th century: Denis Diderot. Langres
pays homage to him in the “Maison des Lumières
Denis-Diderot”. As the only one of its kind in
France, this museum, set in a 16th and 18th century
town house, is dedicated to the philosopher, to his
most famous work, “l’Encyclopédie”, and to the Age
of Enlightenment.
With its modern architecture, the museum invites
you to discover the archaeological collections
(Prehistory, the Gallo-Roman era, Egypt), the
painting and sculpture rooms (17th-19th c.) and the
Decorative Art (Aprey pottery, cutlery…).

Built in the 16th century, this house is noteworthy
due to its superb façade on the garden side. You
can take the lane (firebacks, spiral staircase) to get
back onto rue Cardinal Morlot.
Inaugurated by François 1 in 1521, this spectacular
16th century stone defence ensemble boasts arched
rooms and a monumental structure. Thanks to
tricks of the light, audio-guides, video screens and
interactive information points, the tour comes to life
to tell the tales of the legends of Langres and the
history of its fortifications.

The rampart path goes around the old town. It offers
both a pleasant walk and the opportunity to see
some amazing panoramic views which stretch out
beyond the ramparts. It leads you through the 7
gates and 12 towers of the city.

Auberive (A-4) Abbey (12th century) Founded by the
Cistercian monks on the banks of the Aube. The
beautiful Auberive Abbey was rebuilt in the 18th century.
It was turned into a prison in 1856. Visit the 12th century
Cistercian chancel, the cloister, the 19th century façade,
the Jean Lamour gate, gardens, refectory and prison
cells.

Faverolles (B-2) The monumental tomb of
Faverolles. The relics of the Faverolles Gallo-Roman
mausoleum form a precious archaeological record.
Admire the exceptional sculptures of this tomb
displayed in the museum in the centre of the village.
Masks, tritons, lions… After the tour, you and your
family can go to “the oil lamp” manual workshop, which
is inspired by the Gallo-Roman era. Next, travel along
the discovery trail laid out in the forest on the

Messerfabrikanten gehört Nogent seit dem 18. Jahrhundert zur
hochwertigen Klingenstadt. Heutzutage werden praktisches

Das Fort von Cognelot, das zum Festungsgürtel von Langres
gehört, besitzt eine Fläche von 29 Hektar, von denen 5000 m2

9 Chalindrey (D-3) The Cognelot Fort belongs to the
fortified ring of the Langres stronghold. With a total area
of 29 hectares of which 5.5 are buildings, it has
survived through time and evaded damage and can now
offer the visitor a look at the 19th century fortification.

Saint-Ciergues (C-3) The“Pointe de Diamant”
Fort makes up part of the fortified ring of Langres. With
an area of 13 hectares, it could accommodate up to 350
men. Antiques-bric-a-brac and museum section.
Das Fort „Pointe de Diamant“ gehört zum Festungsgürtel
von Langres. Mit einer Fläche von 13 Hektar, nehmen hier etwa
350 Personen Platz. Antiquitäten-Trödelwaren-Museum.
New/Neu 10 Peigney (C-3) Le Fort de Peigney. This
fort designed in 1866 is one of the eight detached forts
built to protect the town of Langres and the only one of
this generation to have preserved its bastion layout.
Characteristic: it has double ditches girdled with
ramparts. Guided tour: Barbicans, ramparts, shooting
galleries, powder stores, caponiers, barracks…
Dieses im Jahre 1866 entworfene Fort ist eines der acht um die

the last centre in France for the production of floral
accessories created for Haute Couture and decoration.
The 19th-century water-wheel turbine produces
electricity for the workshops and provides renewable
electricity for a part of the village.

Frankreich, das blumenartige Accessoires und Dekorationen für

15th April-30th September: the Nautical ski
school welcomes boarding amateurs and offers them a
range of activities: baby-ski for children aged 4-12;
wakeboarding for all, bi-skiing and mono-skiing for
beginners; slalom and figures for more experienced
skiers; slalom, figures and jumping for competitors;1,2
or 3 seat rubber rings for thrill-seeking amateurs. The
club has a nautical skiing boat (Malibu Zero with 330hp
equipped with a wakeboard tower), a specially equipped
baby-ski boat and, for competitors, a slalom and RL
approved jumping course.

was opened to traffic in 1907. In order to cross the
watershed, a 4 821 m tunnel was required as well as
the completion of the 4 lakes in the Pays de Langres. It
is one of the most beautiful canals for discovering
France (fishing possible).

lakes are famed for the large pike and carps catches. If
you prefer the peace and quiet of a small trout river, you
can find your ideal place amongst the numerous
streams which begin on the Langres plateau or along
the canal.
The 4 lakes and the canal belong to the public domain
and any holder of a fishing license, wherever it may be
from, can go one line-fishing there. To fish with multiple
lines, you must get a local card either for the day or year.

jour”, whose entry gate originated from the abbeychurch of Morimond, opens out onto a picturesque

a classic arrangement comprising a basin, arbour and
small maze.

The English Garden of “the Escargots de
pierre”, route de Bourg. This garden, which is perfect
for walking, dates back to 1808. It has two follies as well
as stone spirals known as “Escargots” (snails). The big
snail (16m in diameter) is circular at the base and the
Mastaba (which harks back to the Egyptian tombs) has
a square base.

Terrace Garden, Access route de Bourg, The
terraces, which rise above the village, were originally
created in 1821 in order to grow vegetables, vines and
fruit. Their retaining walls are made of dry stone and are
sometimes over 6 m tall. A third snail dominates this
ensemble. An orchard with 17th,18th and 19th c. style
fashion trellis has been fitted.

on the top of a hill and built using alder wood shingles,
called “tavaillons”.

built as nests and perched on stilts, accessible via a
ladder. They are made out of wicker and are fitted with

The canal towpath “Entre Champagne et
Bourgogne” the veritable backbone of the department
which stretches out over 90 km. The towpath crosses
the Pays de Langres from north to south. This route
takes the tarmac banks, opening out onto the
landscapes of the valley of the Marne between Joinville
and Langres on one hand and between Heuilley-Cotton
and the northern limit of the Côte-d’Or on the other.

Recognised label and Controlled Origin (AOC) the
Langres cheese is made according to old traditional
recipes. Its yellowy-orange rind houses a light yellow
medium-strength cheese which becomes stronger
with age. A dip called the “fontaine” hollows out the
top of the cheese.
Mit einem kontrollierten Herkunftszertifikat (AOC) wird der
Langreskäse nach einem alten, traditionellen Rezept
hergestellt. Seine Kruste, orange-gelb, mit einem
hellgelben Mantel und einem milden Geschmack der durch

/ An Ihren Herd!
Langres Cheese Profiteroles / Käseprofiteroles (Käsewindbeutel) von Langres
For 4 people / Für 4 Personen
Ingredients / Zutaten:
- 2 Langres cheeses (2 x 200 gr) / 2 x Käse von Langres (2 x 200 g),
- 1 shallot / 1 Schalotte,
- 50 gr of butter / 50 g Butter,
- 1 glass of Chardonnay du Muid Montsaugeonnais (or dry white wine)* / 1 Glas Chardonnay
« Muid Montsaugeonnais » (oder ein anderer trockener Weißwein)*,
- 10 cl of chicken broth / 10 cl Hühnerbrühe,
- 10 cl of liquid cream / 10 cl flüssige Sahne,
- 1 tea-spoon of starch / 1 Kaffeelöffel Stärkemehl,
- 12 empty choux-buns / 12 Windbeutel als Fertigbackmischung.
Chop the shallot. Heat the butter in a pot and brown the shallot. Add the white wine. Simmer and reduce. Add chicken-broth and cook
for 15 minutes on a low heat.
Cut one of the Langres cheeses in big chunks and melt them in the broth while stirring. Dilute starch in cream and add to the melting
cheese while stirring with a whisk until shiny and smooth. Keep in a bain-marie.
Cut the top off the choux-buns and stuff them with the second Langres cheese separated into 12 pieces. Close them with their tops
and cook in the oven for 5 to 8 mins at 180°, thermostat 6.
Serve hot covered with the sauce.
Serve with a salad or potatoes and bacon.
Schälen und schneiden Sie die Schalotte klein. Butter in einem Topf erwärmen und die Schalotte darin fein anbraten. Löschen Sie mit
Weißwein ab. Auf kleiner Flamme weiter köcheln und reduzieren lassen. Geflügelbrühe hinzufügen und 1/4 Stunde lang köcheln
lassen.
Schneiden Sie den Langreskäse in große Stücke und geben Sie eine Hälfte zu der Brühe zum Schmelzen hinzu. Vorsichtig umrühren.
Geben Sie die Stärke, sowie die flüssige Sahne hinzu und rühren Sie um bis Sie eine glatte und homogene Soße erhalten. Wasserbad.
Teilen Sie die Windbeuteltaschen in zwei und geben Sie die zweite Hälfte der Langresstücke, welche Sie in 12 Teile unterteilten, hinzu.
Schließen Sie den Windbeutel und schieben Sie Ihr Kunstwerk in den Ofen (Thermostat 6, 180°C), 5 bis 8 Minuten.
Heiß und mit reichlich Soße servieren!
Salat oder Kartoffeln mit Speck sind ideale Begleiter.
